The truth of personal names
No full textPortuguese-speakers, when asked about their personal names, often respond with a notion of the
‘truth of’ their names. Basing itself on ethnographic data collected by the author in Macao (southern
China), Bahia (Brazil), and Portugal, the article interprets this notion of truth as a form of ontological
weighing that postulates the unitariness of the person by reference to a subjection to a bureaucratic
order and to a cultural and linguistic universe associated to it

PENGARUH JUMLAH SUKROSA PADA PEMBUATAN NATA DE PINA DARI SARI BUAH NANAS
No full textSalah satuupaya penganekaragaman makanan olahanbuah nanas di Indonesia selain untuk hidangan pencuci mulut, sirup, selai, dan buah kalenganadalah pembuatan Nata de Pina dari sari buah nanas.
Penelitian ini bertujuan menentukan penambahan sukrosa optimum pada pembuatan Nata de Pina dari sari buah nanas dan menyelidiki kelayakan dari produk yang dihasilkan dengan uji organoleptis.
Nanas dikupas lalu diblender untuk diambil sari buahnya.Sari buah nanas dididihkan, kemudian ditambahkan sukrosa 2, 4, 6, 8, dan 10 % berat. Kemudian campuran dijadikan pH =5, lalu disterilisasi dalam autoclave. Setelah dingin, larutan dicampur dengan starter.Kemudian media difermentasi selama 8 hari di dalam inkubator pada 30oC. Nata de Pina yang diperoleh dioven selama dua jam pada 110oC, kemudian ditimbang beratnya.
Kondisi optimum dicapai pada penambahan sukrosa 6%,denganyield 26,4%. Korelasi yield (y) dan persen sukrosa (x): y = - 0,2632x2 + 4,2736x + 9,474.Uji organoleptis melibatkan fermentasi Nata de Pina dengan penambahan sukrosa 6%. Nata hasil fermentasi dibandingkan teksturnya dengan nata yang ada dipasaran.Dari metode Inverted Beta F Distribution diketahui bahwa Nata de Pina yang diperoleh tidak mempunyai perbedaan dengan Nata yang ada dipasaran.

Variations on the Author
No full text“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
