Pairing beer and food in social media: Is it an image worth more than a thousand words?
Food pairing has been widely studied to understand the patterns that explain how people pair different foods and ingredients and, therefore, to obtain successful pairings and good recommendations for consumers. Social media has become a common way of exchanging information; therefore, we proposed to use it as a tool for exploring beer-food pairing and eating behavior. Twitter and Instagram were selected as they are among the most popular platforms. Although texts from Twitter could provide an accurate verbal description of consumer's food experiences, Instagram could offer the possibility of exploring the consumption context through images, leading to a better understanding of consumers' eating behavior, with a focus on food and beverage combinations. We hypothesize that images from Instagram will provide further information than texts from Twitter, regarding beer-food pairing and consumption context. A social media study was performed in Mexico comparing texts vs. images, selected from a one-year period, and manually classified through content analysis. Foods extracted from images and texts were categorized into frequencies and analyzed using multiple correspondence analysis (MCA) and hierarchical clustering (AHC). MCA showed the most frequently mentioned foods paired with beer for each platform. Data extracted from images and texts about consumption context was also analyzed and categorized into frequencies according to several themes: consumption behavior, type of consumption, way of beer consumption, place of consumption, and consumption occasion. Data extracted from the two platforms was compared by using a chi-square test per theme. Several differences were found, depending on the social media platform, texts being the one with less extracted and meaningful information. In general, while texts provided less extracted and meaningful information, images offered more details regarding beer-food pairing and context of consumption, the same as beer information such as type, color, brand, and style. Overall, images gave more information on beer-food pairing compared to texts. The methods and results from this paper could be applied by culinary professionals, sommeliers, and researchers in the gastronomy and food and hospitality areas.acceptedVersio

Raman spectroscopy and NIR hyperspectral imaging for in-line estimation of fatty acid features in salmon fillets
Raman spectroscopy was compared with near infrared (NIR) hyperspectral imaging for determination of fat composition (%EPA + DHA) in salmon fillets at short exposure times. Fillets were measured in movement for both methods. Salmon were acquired from several different farming locations in Norway with different feeding regimes, representing a realistic variation of salmon in the market. For Raman, we investigated three manual scanning strategies; i) line scan of loin, ii) line scan of belly and iii) sinusoidal scan of belly at exposure times of 2s and 4s. NIR images were acquired while the fillets moved on a conveyor belt at 40 cm/s, which corresponds to an acquisition time of 1s for a 40 cm long fillet. For NIR images, three different regions of interest (ROI) were investigated including the i) whole fillet, ii) belly segment, and iii) loin segment. For both Raman and NIR measurements, we investigated an untrimmed and trimmed version of the fillets, both relevant for industrial in-line evaluation. For the trimmed fillets, a fat rich deposition layer in the belly was removed. The %EPA + DHA models were validated by cross validation (N = 51) and using an independent test set (N = 20) which was acquired in a different season. Both Raman and NIR showed promising results and high performances in the cross validation, with R2CV = 0.96 for Raman at 2s exposure and R2CV = 0.97 for NIR. High performances were obtained also for the test set, but while Raman had low and stable biases for the test set, the biases were high and varied for the NIR measurements. Analysis of variance on the squared test set residuals showed that performance for Raman measurements were significantly higher than NIR at 1% significance level (p = 0.000013) when slope-and-bias errors were not corrected, but not significant when residuals were slope-and-bias corrected (p = 0.28). This indicated that NIR was more sensitive to matrix effects. For Raman, signal-to-noise ratio was the main limitation and there were indications that Raman was close to a critical sample exposure time at the 2s signal accumulation.publishedVersio

Norwegian Consumers’ Skepticism towards Smoke-Flavoring of Salmon—Is It for Real?
The aim of the present study was to explore Norwegian consumers’ attitudes toward smoke-flavoring of cold smoked salmon (CSS), by conducting a digital survey and focus group discussions. Some of the smoke-flavoring techniques, like atomized purified condensed smoke, is considered healthier than conventional smoking. Manufacturers of CSS are, however, hesitant to use all kinds of smoke-flavoring due to expected consumer skepticism. In the digital survey, the expected skepticism was confirmed (n = 487). Only 15% of the respondents were positively oriented toward smoke-flavoring of CSS. The selection criterion for the focus group discussion was based on the results from the survey and resulted in three attitude-oriented focus groups (negative, neutral, and positive). The negative focus group considered smoke-flavored CSS to be unnatural and out of the question to buy or eat. Unlike the negative focus group, the neutral group was curious to learn more and open to potential smoke-flavor benefits. However, credible information or science was crucial to influence CSS choice. Future studies may investigate whether the existent of this large group of curious neutral consumers (47% of the respondents) influence manufacturers (of CSS) skepticism or how various types of product information could steer consumer acceptance of smoke-flavoring of CSS.publishedVersio
Oxidized Dietary Oil, High in Omega-3 and Omega-6 Polyunsaturated Fatty Acids, Induces Antioxidant Responses in a Human Intestinal HT29 Cell Line
When oxidized, dietary oils generate products which have the potential to cause adverse effects on human health. The objective of the study was to investigate whether lipid oxidation products in an oxidized dietary oil can be taken up in intestinal cells, induce antioxidant stress responses and potentially be harmful. The in vitro cell model HT29 was exposed to camelina oil with different extents of oxidation, or only 4-hydroxy-2-hexenal (HHE) or 4-hydroxy-2-nonenal (HNE). The cellular content of HHE increased with an increasing extent of oxidation of the camelina oil added to the cell’s growth media, whereas HNE did not show a similar trend. Deuterated HHE was taken up by the HT29 cells, with 140 μM HHE metabolized within 0.5–1 h. The low oxidation degree of the camelina oil increased the gene expression of antioxidant markers (GPX, ATF6, XBP1). The increase in the gene expression of SOD at medium oxidation levels of the oil might indicate different regulation mechanisms. Highly oxidized camelina oil and a low concentration of HHE, over time, induced SOD and catalase enzyme activity in HT29 cells. Oxidized camelina oil contains multiple oxidation products which can be responsible for the intracellular responses observed in HT29 cells, while HHE and HNE in combination with other oxidation products induce antioxidant defence responses.publishedVersio
