Why use component-based methods in sensory science?
This paper discusses the advantages of using so-called component-based methods in sensory science. For instance, principal component analysis (PCA) and partial least squares (PLS) regression are used widely in the field; we will here discuss these and other methods for handling one block of data, as well as several blocks of data. Component-based methods all share a common feature: they define linear combinations of the variables to achieve data compression, interpretation, and prediction. The common properties of the component-based methods are listed and their advantages illustrated by examples. The paper equips practitioners with a list of solid and concrete arguments for using this methodology.publishedVersio
Salt content in herring – How the salt content in herring changes during capture and catch handling
Brazil applies a threshold limit value for the amount of salt that is accepted in natural herring, namely 134 mg sodium per 100 g fillet. Compared with the salt content values found in the relevant literature, and the measurements that are routinely performed in Norway, this is a low value that would be difficult to fulfil. RSW (Refrigerated Sea Water) is a quick and appropriate agent for chilling large catches – of herring, for example. However, when fish are stored in RSW after capture, they may assimilate salt from the cooling medium. Another factor that can increase the salt content in herring is stress. When herring are subjected to stress, as happens during capture, the salt content in their blood will increase. Bringing down barriers to children’s healthy eating: a critical review of opportunities, within a complex food system
This narrative review revises the scientific evidence of recent years on healthy eating in children and adolescents, making sense of promising avenues of action, from a food system perspective. A conceptual framework is provided to better understand how eating habits of children and adolescents are shaped to identify key multisectoral approaches that should be implemented to promote healthier diets. The following influencing factors are discussed: individual factors (physiological and psychological factors, food preferences and food literacy competencies), factors within the personal and socio-cultural food environments, external food environments, and the supply chain. In each section, the main barriers to healthy eating are briefly discussed focussing on how to overcome them. Finally, a discussion with recommendations of actions is provided, anchored in scientific knowledge, and transferable to the general public, industry, and policymakers. We highlight that multidisciplinary approaches are not enough, a systems approach, with a truly holistic view, is needed. Apart from introducing systemic changes, a variety of interventions can be implemented at different levels to foster healthier diets in children through fostering healthier and more sustainable food environments, facilitating pleasurable sensory experiences, increasing their food literacy, and enhancing their agency by empowering them to make better food related decisions. Acknowledging children as unique individuals is required, through interpersonal interactions, as well as their role in their environments. Actions should aim to enable children and adolescents as active participants within sustainable food systems, to support healthier dietary behaviours that can be sustained throughout life, impacting health at a societal level.publishedVersio
Nasal responses to elevated temperature and Francisella noatunensis infection in Atlantic cod (Gadus morhua)
We report the histological and transcriptomic changes in the olfactory organ of Atlantic cod exposed to Francisella noatunensis. Experimental infection was performed at either 12oC or 17oC. Infected fish presented the classic gross pathologies of francisellosis. Nasal morpho-phenotypic parameters were not significantly affected by temperature and infection, except for the number of mucus cells in the 12oC group seven weeks after the challenge. A higher number of genes were altered through time in the group reared at 17oC. At termination, the nasal transcriptome of infected fish in both groups was similar to the control. When both infected groups were compared, 754 DEGs were identified, many of which were involved in signalling, defence, transmembrane and enzymatic processes. In conclusion, the study reveals that elevated temperature could trigger responses in the olfactory organ of Atlantic cod and shape the nasal response to F. noatunensis infection.Nasal responses to elevated temperature and Francisella noatunensis infection in Atlantic cod (Gadus morhua)publishedVersio

Pilot project for the short-time live storage of bluefin tuna — Trials onboard MS Vestbris 2023
Norway was historically a major bluefin tuna (BFT) harvesting country. However, fishing for this species has experienced low profitability. One potential solution is short-term live-storage so that the market can be supplied on demand. Further, storing BFT allows a more controlled slaughtering of the fish, resulting in better quality and fish welfare. A pilot project was established in 2020 to address knowledge gaps related to BFT live-storage in Norway. Norwegian Farmed Salmon: A Commodity in Need of Differentiation?
Despite much innovation and development in the Norwegian salmon industry, the focus has largely been on building volume and reducing costs. Limited attention has been paid to develop value added products and differentiation strategies in Norway to reap stable profits associated with such strategies. In depth-interviews with a supply chain containing Norwegian salmon producers, one exporter and one feed producer, industrial buyers representing two Polish processing companies and two German retailers, aimed to provide insight into why more differentiation is not happening in the Norwegian salmon industry. Results from this supply chain reveals lack of communication and asymmetric power-dependence relations between the Norwegian salmon business actors and their industrial buyers.publishedVersio
