Fermented and unfermented brown macroalgae as partial salt replacers in sodium-reduced dough and bread
Bread can be a major contributor to sodium intake, but sodium chloride reduction poses difficulties since it influences the functional properties of dough and flavor of bread. This study evaluated dough and bread properties in reduced-sodium systems containing fermented or unfermented macroalgae Saccharina latissima or Alaria esculenta. Recipes contained equal amounts of sodium (4 mg Na+/g flour), where sodium chloride contributed 3 or 3.5 mg Na+/g flour and 8.9–33.3 mg macroalgae/g flour contributed the remaining 0.5 or 1 mg Na+/g flour. A full-salt and three salt-reduced controls (6, 4, 3.5, and 3 mg Na+/g flour) were used for comparison. Empirical dough rheology, stickiness, ratios of polymeric to monomeric proteins, and bread characteristics (specific volume, crumb structure, and firmness) were measured. A trained sensory panel conducted a descriptive sensory analysis. Macroalgae addition increased water absorption and decreased dough development time, dough stability, the polymeric to monomeric protein ratio, and specific volume in a dose-dependent manner. Macroalgae addition increased the perception of saltiness, but also algae flavor and odor. Bread with fermented S. latissima received lower scores for certain undesirable sensory attributes than other bread with algae.publishedVersio

Histological Hyperspectral Glioblastoma Dataset (HistologyHSI-GB)
Hyperspectral (HS) imaging (HSI) technology combines the main features of two existing technologies: imaging and spectroscopy. This allows to analyse simultaneously the morphological and chemical attributes of the objects captured by a HS camera. In recent years, the use of HSI provides valuable insights into the interaction between light and biological tissues, and makes it possible to detect patterns, cells, or biomarkers, thus, being able to identify diseases. This work presents the HistologyHSI-GB dataset, which contains 469 HS images from 13 patients diagnosed with brain tumours, specifically glioblastoma. The slides were stained with haematoxylin and eosin (H&E) and captured using a microscope at 20× power magnification. Skilled histopathologists diagnosed the slides and provided image-level annotations. The dataset was acquired using custom HSI instrumentation, consisting of a microscope equipped with an HS camera covering the spectral range from 400 to 1000 nm.publishedVersio
Exploring land use conflicts arising from economic activities andtheir impacts on local communities in the European Arctic
The European Arctic is commonly thought of as a pristine and homogeneousarea. In reality, it is a diverse region experiencing growth relying on naturalresource extraction. Despite local communities being primarily affected byindustry activities, most socioeconomic impact assessments are conducted atthe macro level. This study addresses this gap by examining the impacts ofeconomic activities on local communities. Using secondary data and semi-structured interviews from 15 hubs in five European Arctic countries, thestudy draws on locally relevant insights. Findings indicate that many activitiesfocus on economic growth, and existing strategies do not adequately addressbiophysical boundaries. Furthermore, alternative activities need to be devel-oped in a more balanced manner that aligns with the needs of indigenousand local communities. Finally, participation of various actors in future devel-opments is critical to reduce the negative impacts of industry activities. Denne rapporten søker å belyse innholdsstoffer i erter og åkerbønner og en beskrivelse om hva som skjer når disse råvarene behandles og prosesseres mot proteinkonsentrater. I prosessene inngår avskalling, finmaling og separasjonssystemer drevet av luft som gjør oss i stand til å skille stivelseskorn fra protein. Vi undersøker sentrale næringsstoffer og viser mengden av disse i frøene og i fraksjonene som dannes under prosesseringen. Samtidig diskuteres aspekter ved råvarene som størrelse og form, dyrking og arealbruk samt problematikk rundt skadedyr og soppangrep. Vi vil med rapporten belyse hva disse prosessene mekanisk går ut på i pilotskala som er direkte overførbart til industriell skala. Environmental Sustainability, Food Quality and Convertibility of Bio-Based Barrier Coatings for Fibre-Based Food Packaging: A Semisystematic Review
The ongoing legislative drive to reduce plastic consumption and promote the circularity of materials in Europe is reshaping foodpackaging market dynamics and making sustainability a key competitive factor in the sector. Legislation accelerates researchand innovation in bio-based, biodegradable and recyclable alternatives and motivates the industry to adopt sustainable designswhile enhancing compliance with environmental standards. Renewable and natural resource-based materials, such as polysac-charides, nanocellulose, lignin, lipids, phenolic compounds and proteins, have been extensively investigated in the last decade.Their use in dispersion coatings and biopolymer compounds for paper and paperboard barriers is often referred to as a sustain-able packaging solution. This semisystematic review compiled available quantitative and qualitative data on the environmentalsustainability, food quality and convertibility of novel bio-based barrier coatings for food packaging. The results highlight aresearch gap in assessing environmental performance and the overuse of the term ‘sustainable’ and ‘biodegradable’. However,convertibility and film formability issues remain major obstacles that must be overcome before the scaling up of production ofsuch coatings. Although bio-based coatings demonstrate potential to extend the shelf life of certain fruits and mushrooms com-pared with uncoated paper or paperboard, numerous studies lack direct comparisons with conventional packaging methods.Further exploration of these aspects will facilitate science- and data-driven innovation and decision-making in industry, policyand academia in the development of sustainable bio-based packagingpublishedVersio
