    Sensory quality, favorability, and antioxidant activity of red bean mochi with addition of skin flour and red dragon fruit flour

    Deteriorating environmental conditions in urban areas cause the body to be continuously exposed to free radical compounds. Dragon fruit contains high antioxidants that have potential as anti-free radicals. This research aimed to determine the effect of red bean mochi formulation on sensory characteristics of mochi, nutritional content test and antioxidant activity analysis on red bean mochi with the addition of skin flour and red dragon fruit flour. This study used a completely randomized design (CRD) with four treatment ratios of glutinous rice flour to dragon fruit peel and fruit flour (30:10, 30:20, 30:30, 30:40). The variables measured were sensory and hedonic quality using organoleptic test by 30 semi trained panelists. Data analysis using Kruskal Wallis test and Mann-Whitney test. Determination of the selected formula using the exponential comparison method then analyzed proximate and antioxidant activity. There is a significant difference in sensory quality on the parameters of skin color, filling color, aroma, taste, and mouthfeel, the selected formula based on the organoleptic test is formula 3. The antioxidant activity test result is 12.78 mg/100 g. Water content test 41.45%, ash content test 1.48%, total energy 256,26 Kcal/100 g, protein 5.62%, fat 5.6%, carbohydrates 45.85%. The red bean mochi formulation with a 30:30 ratio was found to have moderate antioxidant activity

    Analysis of differences in viscosity of coconut milk and milk

    A viscosity or viscosity test is a measurement method to see a liquid product's viscosity level. In the process of making food products, liquids are used as additional ingredients to bind other ingredients or as a way to cook food. The viscosity level of the liquid used during the cooking process or when making the product affects the quality of the product. Recently, there have been many modification processes in food and cooking techniques, starting from modifying the use of liquids such as replacing coconut milk with milk, or vice versa. Therefore, researchers are interested in studying whether these two materials can replace each other in terms of their viscosity. This research was carried out in the IPB University food experiment laboratory using laboratory experimental methods, and viscosity testing using a Brookfield brand viscometer with spindle no. 1 and a speed of 100 rpm. The test results will be analyzed using a paired t-test to see whether there are differences between each sample. Based on the analysis, it was found that skim milk (F2) was not significantly different from coconut milk F7 (400g grated coconut: 800ml water). So it can be concluded that coconut milk F7 can be replaced by milk F2 in terms of viscosity

    Nutrition Status and Psychosocial Stimulation with the Development of Infants Aged 6-12 Months

    One of the factors influencing growth and development is nutritional status. Growth and developmental disorders in infants may result in delays in neuromuscular development, speech ability, emotional regulation, socialization, auditory sensory function, and even autism. This study aimed to examine the relationship between nutritional status and psychosocial stimulation with the growth and development of infants aged 6–12 months in the working area of Tabaringan Health Center, Makassar. A cross-sectional design was employed. The sample consisted of 30 mothers with infants aged 6–12 months who met the inclusion criteria, selected using an accidental sampling technique. The collected data included maternal characteristics, nutritional status, and infant characteristics. Psychosocial stimulation data were obtained through interviews using the HOME questionnaire, consisting of 17 questions. Infant social-personal and language development was assessed using the Denver Developmental Screening Test II (DDST), which included 20 items. Data were analyzed using the Pearson correlation test (Chi-square). The results showed no significant relationship between psychosocial stimulation and both language and personal-social development. However, there was a significant relationship between nutritional status and personal-social development in infants, while no significant relationship was found with language development. Further research is recommended to explore other factors that may influence infant language and personal-social development

    Nasopharyngeal Cancer (NPC) is a life-threatening illness. Early palliative care approach is essential to improve the quality of life of patients and families. However, in the clinical settings, health professionals often consider families as providers who provide care for patients. Whereas in palliative care the family is a unit of care that have to be seen as a patient who needs support. This article is a case report nursing care to a family of a patient with advanced nasopharyngeal cancer. It is found that family needs include physical, psychological and health information. Based on the literature, there are several assessment and intervention guidelines such as the CARES intervention framework that can be applied by nurses in providing palliative care approach to families, especially in the health care system

    Improving the Competitiveness of Culinary Businesses through Education on Halal Certified Food and Beverage Products in Masaingi Village

    In the era of globalization, halal certification has become a crucial element in the marketing of food, beverages, and pharmaceuticals, particularly for culinary businesses. This is due to the increasing demand from Muslim consumers who require products that comply with halal standards. In Islam, consumed food and products must be halal and thoyyib, as prescribed in the Qur'an and Hadith. However, most SMEs businesses in Desa Masaingi have yet to obtain halal certification, which ensures that their products and services meet the halal standards set by the Halal Product Assurance Agency (BPJPH). This community service aimed to enhance the knowledge and awareness of both the community and business actors about the importance of halal certification, halal production processes, and the market opportunities that can open up by obtaining such certification. The methods used included location observation, inspection of home industries, education on halal and thoyyib products, and registration for Business Identification Numbers (NIB) and halal certification through the OSS application and BPJPH official website. The results of this community service showed that these activities successfully improved the community's understandingof halal principles and motivated culinary business actors to obtain halal certification. Consequently, culinary business actors in Desa Masaingi, particularly in the Pangi tourist area, are expected to be more open to the halal certification process and enhance their product competitiveness in broader markets

    Improving Knowledge and Behavior through Cataract Education in the Pre-Prosperous Community of Tangerang

    Cataracts are one of the main causes of blindness in Indonesia, especially in lower-middle class communities who have limited access to eye health information. Through an education program in the pre-prosperous communities of Tangerang, an intervention was carried out to improve participants' knowledge and behavior regarding cataracts. This program involved collaboration between eye specialists (ophthalmologists), as the main resource persons, and optometris health workers who actively participate. The methods used included providing interactive education by ophthalmologists regarding the causes, symptoms, prevention, and treatment of cataracts, which were complemented by discussion sessions and knowledge evaluation through pre-test and post-test questionnaires. A total of 80 participants filled out a questionnaire containing 10 closed questions before and after education. The results of the analysis showed an increase in the average score of 30,3%. All participants showed an increase in understanding after receiving education, marked by no scores below 67 on the post-test. This activity shows that an educational approach that was adjusted to the community's literacy level is effective in increasing awareness of eye health, especially in preventing blindness due to cataracts

    Stunting Prevention through Training of Mothers in Processing Catfish into Dim Sum in Ranah Singkuang Village

    Ranah Singkuang Village in Kampar Regency continues to face cases of stunting among toddlers, despite the local stunting prevalence rate being below the national target. One of the mitigation efforts involves utilizing local food sources, specifically catfish (Pangasius), as an accessible and affordable source of animal protein for the community. This Community Service Program aimed to improve the knowledge of mothers with toddlers through nutrition education and training in processing catfish into supplementary food in the form of dim sum. Evaluation through pre-test and post-test assessments indicated a significant improvement in mothers’ knowledge regarding stunting and nutrition. Additionally, training participants demonstrated adequate skills in preparing catfish-based dim sum. These findings suggest that educational activities and cooking demonstrations are effective in enhancing mothers’ knowledge and skills in utilizing catfish as supplementary food for toddlers

    Public Speaking Skills Training for Foster Children at UPT Wiloso Projo Child Care Home

    This training activity aimed to enhance the self-confidence and public speaking skills of foster children at the Wiloso Projo Child Care Center through an interactive introduction to English idioms by lecturers and students from LPP Yogyakarta Polytechnic in collaboration with Ahmad Dahlan University. The activity was part of the CHAIN (Chemical Engineering in Action) event series and served as a program of the Community Service Division of HIMATEKIM (Chemical Engineering Student Association) of LPP Yogyakarta Polytechnic. It aimed to improve communication confidence as a vital asset for foster children in pursuing their future, especially considering the current trend that views English communication as prestigious. The training utilized lecture methods and picture-guessing games to enhance participants' understanding of idioms and their pronunciation. The results showed that participants were enthusiastic, actively responded, and demonstrated increased motivation to speak. Ultimately, this activity was expected to inspire similar contributions from academics in other fields

    Halal Certification Training and Assistance for Micro Business Actors through the Sihalal Platform in Blega Bangkalan

    The majority of products produced by micro business actors in Lomaer Village, Blega District, had not been halal-certified due to limited understanding and a lack of socialization, education, and assistance regarding halal certification. This condition encouraged the community service team to address the issue through a structured program. The purpose of this activity was to conduct training and mentoring on halal certification to help micro business actors improve their product quality and obtain halal certificates. The implementation methods included observation, idea planning, and a series of activities consisting of training and mentoring. The process began with the creation of a Business Identification Number (NIB), completion of business actor data onhttp://ptsp.halal.go.id, submission of facilitation registration data through the LPH Halal Center UTM, and registration of Sihalal business accounts. The outcomes of this program included increased awareness and understanding of the importance of halal certification, improved knowledge of the certification process among micro business actors, and their ability to identify halal and non-halal ingredients. As a result, five products from business actors in Lomaer Village successfully obtained halal certification

    Socialization of the Use of Long-Term Contraceptive Methods (LTCM) in Women of Reproductive Age (WRA)

    Long-term contraceptive methods (LTCM) are methods designed to prevent pregnancy over a long period of time. According to WHO (2019), of the 1.9 billion women of childbearing age (15-49 years) in the world, around 1.1 billion require family planning services. There are 406 million modern contraceptive users, consisting of 159 million IUDs, 23 million implants, 74 million injections, and 150 million pills. This activity aimed to increase Women of Reproductive Age (WRA) knowledge about LTCM through socialization. The activity began with the licensing process, preparation of leaflet media containing LTCM information and scheduling of implementation. The activity was carried out at the integrated health post in the Bara-Barayya Health Center working area on June 28, 2024 assisted by a coordinating midwife and cadres with 23 WRA participants. The socialization carried out included pre-tests and post-tests, delivery of material on the types, benefits, risks, and how to use LTCM, as well as interactive discussions and questions and answers to encourage active participation of participants. Evaluation was carried out to measure the increase in knowledge. Before socialization, 18 (78,3%) had good knowledge, 5 (21,7%) had poor knowledge. After socialization, 21 (91,3%) had good knowledge and only 2 (8,7%) had poor knowledge. In conclusion, there was an increase in knowledge after socialization. Continued support and attention are needed so that the use of LTCM P is effective in regulating pregnancy spacing and preventing unwanted pregnancies. WRA are advised to continue to increase their knowledge of contraceptive methods
