Food Label Reading Education "Makmin Detective" Improves Knowledge, Attitude, and Ability to Read Food Labels Among Adolescents
The increasing prevalence of degenerative diseases such as hypertension and diabetes in adolescents is a serious concern, mainly due to the consumption of foods high in sugar, salt, and fat (GGL) and the low habit of reading food labels. This community service activity aims to improve the knowledge, attitudes, and abilities of adolescents in reading food labels in an effort to prevent degenerative diseases. The education was conducted at MTSS Al-Hasanat, Sigi Regency, through “Detective Makmin” interactive media in the form of modules and wall magazines, accompanied by demonstrations and label reading practice competitions. Evaluation was carried out through pre-tests and post-tests on 24 students using instruments that had been tested for validity. The results of the paired t-test and Wilcoxon showed a significant increase in knowledge (p < 0,001), attitudes (p < 0,001), and the ability to read food labels (p < 0,001) after the intervention. The education provided was proven effective in improving adolescent nutritional literacy, especially in understanding the GGL content on food and beverage packaging. A participatory approach, the use of local media, and active student involvement played an important role in the success of the activity. Similar programs are recommended to be expanded to other schools with digital media development and parental involvement to strengthen long-term impact

Visualization of Village Fund Budget Realization to Improve Transparency of Information to the Community
Generally, village fund information is delivered in manual format or through printed materials. This type of information delivery is difficult for certain groups to understand, resulting in low community participation in village development planning and evaluation. A new approach is needed, involving the application of information technology through the visualization of village fund planning and budget realization data. This community service program aimed to increase the transparency of village fund management through training in data visualization of planning and budget realization, thereby providing village officials, neighborhood associations, family welfare programs, youth organizations, and young people with an understanding of the importance of information disclosure and the skills to process budget data digitally. The activities are carried out through a combination of theory, practice, group discussions, and monitoring and evaluation. Participants were trained to use Microsoft Excel to present data in the form of infographics, tables, and diagrams that are easy to understand. In this way, the community can obtain a clearer picture of village fund management. The community service activity was designed to last for 6 months (June to November 2025) and the training was conducted over 2 days with a duration of 10 hours, divided into 5 hours per day. The results of the activity showed an average increase in participants’ knowledge and skills of 34 points. This activity can improve participants’ skills and knowledge in visualizing village fund planning and realization data

Shelf-life estimation of dried pasta based on sago starch and oyster mushroom powder using a critical water content model
Dry pasta, such as spaghetti, is a hygroscopic food product susceptible to quality degradation due to moisture absorption from the environment. This study aims to predict the shelf life of an innovative dry pasta made from a sago starch and oyster mushroom composite using the critical moisture content method (Labuza Model). The shelf life estimation was conducted based on the Labuza equation with input parameters including an initial moisture content (Mi) of 0.139 g/g solids, equilibrium moisture content (Me) of 0.218 g/g solids, and critical moisture content (Mc) of 0.164 g/g solids. The product was packaged in aluminum foil with an effective surface area (A) of 0.024 m² and a packaging permeability (k/x) of 0.024 g/day.m².mmHg. The results showed that at a storage temperature of 30 °C with a saturated vapor pressure of 31.80 mmHg and a slope value (b) of 0.227, the product has a predicted shelf life of 11.86 months (355.89 days). These findings indicate that the use of aluminum foil packaging is effective in maintaining the quality of sago starch and oyster mushroom-based pasta for long-term storage

Level of Preference and Protein Analysis of Patin Dimsum Substituted with Red Bean Flour as Additional Food for Toddlers
The supplementary feeding program (PMT) is a crucial nutritional intervention aimed at improving toddlers' nutritional status and meeting their dietary needs. Patin fish, a local food commodity from Riau, has potential for development into attractive processed food, such as dim sum. This study aimed to evaluate the acceptability and protein content of patin fish dim sum with red bean flour substitution. A Completely Randomized Design (CRD) was used, comprising one control (100% patin) and three treatments with varying patin fish and red bean flour ratios: 95%:5%, 90%:10%, and 85%:15%. Sensory evaluation was conducted with 30 panelists and analyzed using the Kruskal-Wallis test, followed by the Mann-Whitney test if significant differences were found. The results showed a significant difference in color (p-value=0,002), while taste (p-value=0,445), aroma (p-value=0,694), and texture (p-value=0,341) showed no significant differences. The most preferred formulation was the control (without red bean flour). However, the formulation with 10% substitution (F2) had the highest protein content at 9.45%, equivalent to 9,45 grams per 100 grams of product. With this level of protein, the patin dim sum qualifies as a high-protein food product. This innovation highlights the potential of locally sourced, nutritious food for children and supports the success of supplementary feeding programs in regions like Riau that rely on local resources
