Designing the Hybrid and the Fragmentary. Four participatory planning projects at the fringe of Italian cities
Fringe areas and their restrictions are different from the inner city. Often they require an entirely new approach toward urban planning. Our author reports on four different planning projects in Italy. What connects them is their location at the fringe of metropolitan cities, the relevance of indeterminacy, the attention to the continuity of ecological and public networks and the attempt to build new scenarios with the materials found at the project site, following very short supply chains
Pizza dough differentiation by principal component analysis of alveographic, microbiological, and chemical parameters
We contrast two types of pizza dough produced in Naples. One was prepared in accordance with pizza dough regulations drawn up by the Ente Nazionale Italiano di Unificazione (UNI). Different pizza doughs were studied using a set of parameters linked to mechanical, microbiological, and chemical properties. The pizza doughs were analyzed by alveographic tests following Approved Methods of AACC International. In particular, alveographic values of parameters Delta P-max, V-r, Delta P-max/V-r, E-r1, E-r2, E-rT, as well as the nondimensional ratios E-r1/E-rT and E-r2/E-rT were obtained. Microbial counts of bacteria and yeast were determined and the bacteria-to-yeast ratio was also calculated. Total titratable acidity (TTA) and pH were determined by standard methods. Principal component analysis (PCA) applied to some technological parameters (V-r, E-r1, E-r1/E-rT, bacteria-to-yeast ratios, pH, and TTA), preliminarily selected on the basis of the variance explained by the components, allowed us to discriminate typical pizza dough of Naples from the other types considered in the study, demonstrating that PCA could help recognize different types of pizza dough. Hence, this method could be used to reduce the empirical component of the pizza-making process to produce pizza dough with standardized quality

Technological and productive optimation of grape cryomaceration plant
This research program has been aimed to the technological and productive optimization of grapes cryo -maceration plant.
The procedure consists in the injection of the liquid CO2 in the mashed grapes, during the potting phase, in the outlet section of the grape mashed pump.
The thermal exchange it is performed in the whole grape mass, without additional mechanical treatments. Besides the oxygen dissolved in the must during the mashing process, it is sent away by the CO2 flow and therefore the mashed grape is sent to the tank with inactive environmental. The cooling of 1°C of 120 Kg of mashed grape need 0.8 Kg of CO2.
Insofar the total consumption of CO2 depends on the final temperatures of the considered plant. With this study, it has been possible to obtain helpful indications to utilize for reducing at the minimum the CO2 consumption, with the same quality of the final product.
By mean experimental tests performed on the grapes cryo-maceration plant the obtained data results have been examined and compared, considering different final temperatures of 12, 8, 6, 4 °C.
The temperature and the pressures distribution on the considered plant have been evaluated,
during the operative phase, to characterize the thermodynamic and structural load conditions in which the considered process happens. All this can be used in the feasibility study for using material innovative for some component of the considered plant
These results have also been used to validate the numerical model of the considered process.
All of this can also be used to determine, for the considered grape's type, the minimum temperature value, below which qualitative improvements of the final product are negligible.
In such way, it is possible to obtain the optimization of the energy and CO2 consumption reducing the costs and the polluting factors
Stability Analysis of Self-propelled Hydrodynamic Irrigation Machines Used for Food Industry Crops
Some critical limit conditions for the stability of the self-propelled hydrodynamic irrigation machine used for food industry crops, have been studied, and experimental and numerical tests have been carried out for their determination. The strength forces necessary for the machine overturn have been calculated by a computer code realized in Matlab R2019a, and the corresponding values are listed as function of the soil slope angle ψ of the weight W and the pipeline strength force., With this aim, different operative conditions for the considered machine have been examined so that the pipeline strength force, under the following conditions: water filled pipeline of and empty pipeline;dry and wet soil. By analyzing the data measured in the open field, on a considered machine with a coil diameter of 3 m, the different contributes to the total rewinding strength have been examined during the considered tests. Further, it has been possible to deduce that by changing; only the value of the water pressure, the total value of the rewinding strength force increased by 100 daN, which is clearly due; to the changing pressure which increases the stiffness of the polyethylene pipeline. Moreover, other very dangerous limit conditions were determined during the rewinding phase of the pipeline on overflooded soil (also due to a rain storm), with a pipeline completely unwound on the soil and sunk into it. In these critical conditions, it has been noted that, to perform the operating phase, it is possible to reach a very high T value, which can cause the machine overturning even for ψ = 0 (horizontal case)
Circular planning and adaptive design strategies to recycle wasted landscapes: The per-urban territories of campania plain as a case study
The Campania Region, in the South of Italy, is a territory where numerous Wasted Landscapes (WL) are recognisable, as the result of serious socialand governmental problems.Through the last decades, many factors have been overlapping in this complex palimpsest: illegal developments and the measures to legitimizethem can be paradoxically understood as real cornerstones for the local planning system; the traces of the post-Fordist abandoned landscapes aremixed with the historical remains, showing the deep sense of identity that still persists in the territory. On the other hand, the Campania Plainis a porous territory characterised by an adaptive resilience. This is interwoven with the presence of areas of outstanding natural beauty, with aresilient interstitial agriculture, and with a fragmented but resistant economy.In this paper, two emblematic case-studies are discussed (Casaluce and Est-Naples), understanding WL as an additional category of waste withthe urgent need to be recycled, in order to: reactivate urban metabolism; to improve the quality of life, the spatial quality of the territory, and theregional economy.Environmental Technology and Desig
