    Legumes as basic ingredients in the production of dairy-free cheese alternatives: a review

    Research into dairy-free alternative products, whether plant-based or cell-based, is growing fast and the food industry is facing a new challenge of creating innovative, nutritious, accessible, and natural dairy-free cheese alternatives. The market demand for these products is continuing to increase owing to more people choosing to reduce or eliminate meat and dairy products from their diet for health, environmental sustainability, and/or ethical reasons. This review investigates the current status of dairy product alternatives. Legume proteins have good technological properties and are cheap, which gives them a strong commercial potential to be used in plant-based cheese-like products. However, few legume proteins have been explored in the formulation, development, and manufacture of a fully dairy-free cheese because of their undesirable properties: heat stable anti-nutritional factors and a beany flavor. These can be alleviated by novel or traditional and economical techniques. The improvement and diversification of the formulation of legume-based cheese alternatives is strongly suggested as a low-cost step towards more sustainable food chains. © 2021 The Authors.     Role of nitrogen uptake and grain number on the determination of grain nitrogen content in old durum wheat cultivars

    Old durum wheat cultivars are attracting renewed attention due to their suitability to low input agricultural systems. Fourteen old durum wheat cultivars were analyzed in two field trials to assess the effect of grain number and N absorbed and translocated by the crops on grain protein percentage. The mean grain yield was below 3 t ha−1 and strongly associated with the number of grains m−2 (GNO) (r = 0.97 ***). Grain yield displayed a low sensitivity to severe terminal stressful conditions due to the ability of the old durum wheat cultivars to maintain high grain weights despite the high temperatures and short time available for grain filling caused by their late anthesis. The N source for the growing grains was mainly dependent on pre-anthesis N uptake, which was positively associated with the total biomass produced by anthesis. The tall cultivars generally left a greater amount of N m−2 (8–15 g m−2) in their straw compared with shorter ones (5–6 g m−2). The low and variable GNO modulated the amount of N potentially available for each grain and probably limited the possibility of delivering the large N source to the grains. The large grains played a positive role in determining both grain yield (by compensating for the low GNO) and grain protein percentage, as their high grain filling rate was associated with a high N accumulation rate, and hence with a high grain N content and protein percentage

    Is the technological quality of old durum wheat cultivars superior to that of modern ones when exposed to moderately high temperatures during grain filling?

    The growing interest in old durum wheat cultivars, due to enhanced consumer attention on traditional products and low-input agricultural systems, partly relies on their different quality characteristics compared to modern cultivars. Nine Italian durum wheat cultivars from different breeding periods were compared in two late-sown (January) field trials in order to subject their grain filling period to high temperatures similar to those expected in the future. Late sowing moved anthesis forward by about 10 days and increased the mean temperature during grain filling by 1.3 °C compared to that obtained when using the common sowing period of November–December. In these conditions, old cultivars were on average less productive than modern ones (2.36 vs. 3.54 tons ha-1, respectively), had a higher protein percentage (13.8% vs. 11.1%), a lower gluten index (24.3% vs. 56.3%), and a lower alveographic W (baking strength) (64 vs. 100 J 10-4). The differences were partly associated to variations in the gliadins:glutenins ratio. It depended on the genotype whether the grain and semolina protein percentage and gluten strength compensated one another in terms of alveographic indices to give the dough a strength similar to that of the modern cultivars in the range of moderately high temperatures, which resulted from delayed sowing.     From seed to bread: variation in quality in a set of old durum wheat cultivars

    BACKGROUND: Old durum wheat varieties are being appreciated again because of their interesting genetic diversity and low fertilizer needs. RESULTS: The agronomic and bread-making performances of 14 old Italian durum wheat varieties grown under two low nitrogen (N) inputs (46 and 86 kg ha −1 ) were determined and the relationships among grain, semolina, dough and bread quality parameters were established. The old varieties yielded similarly to the check modern variety Svevo under both N levels. Increasing N fertilization from 46 to 86 kg ha −1 did not increase grain yield or the mg of N in the grain, although grain protein percentage increased as a result of a decrease in grain weight and an increase in gliadin content. Despite the resulting decrease in the gluten index, dough and bread quality improved at the higher N rate, highlighting the influential role of protein percentage and gliadin in bread quality. The genotypic variation in grain protein percentage among old varieties was more strongly associated with glutenin than with gliadin content. Variation in the gluten index was high (4–54); indeed, it was the most variable semolina parameter, and proved to contribute the most to variation in bread quality. This variation was independent of the glutenin alleles (HMW 20, 20*, 7, 13+16, 6+8) and was linked to the quality of the grain in terms of grain weight and the associated mg of N per grain. Remarkably, two old varieties, namely Calabria and Cappelli, were able to produce both a good yield and high-quality bread. CONCLUSION: Old Italian durum wheats continue to boast significant biodiversity and are worth exploring in low-input production systems. © 2019 Society of Chemical Industry

    Going Beyond Counting First Authors in Author Co-citation Analysis

    The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed.     Corn and barley protein concentrates: effects of fractionation and micronization on the chemical, functional, and thermal properties

    The present study intends to investigate the impact of fractionation and micronization on the compositional, functional, and thermal characteristics of two protein concentrates derived from corn and barley. Fractionation of protein concentrates (by sieving) resulted in three fractions, i.e., fine (< 100 mu m), medium (100-300 mu m), and coarse (> 300 mu m), while micronization resulted in an average particle size of 30 mu m. No specific pattern was observed between particle size and chemical composition of corn and barley protein concentrates due to the complex interplay between particle size, surface area, structural changes, and botanical origin. Protein solubility varied depending on the pH and particle size, showing that the coarse fraction exhibited higher solubility than the fine fraction. For both corn/barley protein concentrates, coarse fraction had higher water-/oil-holding capacity. The barley fine fraction showed high foaming capacity, while all proteins lacked emulsification ability. Across all samples, a trend of increasing enthalpy with decreased particle size was observed, except for micronized barley, where enthalpy decreased, indicating possible protein structural changes. Thus, variations in properties among fractions highlight the importance of particle size in determining the proteins' functionality for potential applications in food systems

    Variations on the Author

    “Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship

    Appropriate Similarity Measures for Author Cocitation Analysis

    We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature.     Dispelling the Myths Behind First-author Citation Counts

    We conducted a full-scale evaluative citation analysis study of scholars in the XML research field to explore just how different from each other author rankings resulting from different citation counting methods actually are, and to demonstrate the capability of emerging data and tools on the Web in supporting more realistic citation counting methods. Our results contest some common arguments for the continued use of first-author citation counts in the evaluation of scholars, such as high correlations between author rankings by first-author citation counts and other citation counting methods, and high costs of using more realistic citation counting methods that are not well-supported by the ISI databases. It is argued that increasingly available digital full text research papers make it possible for citation analysis studies to go beyond what the ISI databases have directly supported and to employ more sophisticated methods
