    AKUSI (ayam Kampung unggul Sinjai) merupakan jenis ayam Kampung yang memerlukan perlakuan khusus agar menghasilkan daging yang lembut. Kelembutan daging ayam bisa ditingkatkan melalui penambahan enzim bromelin. Proses marinasi dengan menggunakan serbuk kulit nanas diharapkan dapat meningkatkan mutu keempukan daging. Tujuan penelitian ini adalah untuk melaksanakan proses marinasi menggunakan bubuk kulit nanas dengan variasi waktu marinasi guna mengamati kualitas keempukan daging yang diukur dengan nilai daya ikat air (DIA), daya putus daging (DPD), dan susut masak (SM). Penelitian ini dilaksanakan secara eksperimen dengan menggunakan rancangan acak lengkap (RAL) pola faktorial, yang melibatkan tahapan penelitian melakukan proses marinasi menggunakan bubuk kulit nanas pada variasi waktu marinasi yang berbeda. Variabel yang dianalisis dalam studi ini adalah nilai DIA, DPD, dan SM. Hasil penelitian menunjukkan nilai DIA dan DPD optimum pada pemberian bubuk kulit nanas sebanyak 20% selama 90 menit waktu marinasi sedangkan nilai susut masak optimum pada pemberian bubuk kulit nanas sebanyak 20% selama 120 menit waktu marinasi pada daging AKUSI. Hasil penelitian menunjukkan bahwa penambahan bubuk kulit nanas sebanyak 20% dari berat daging AKUSI dan dimarinasi selama 90 menit dapat meningkatkan kualitas keempukan daging AKUSI

    Ayam Kampung Unggul Sinjai (AKUSI) is a type of native chicken that is slaugthered when culled,has tough and easily rancid. The marination process using pineapple peel powder is expected toreduce meat rancidity. The purpose of this study was to carry out a marination process usingpineapple peel powder at different times and its effect on meat rancidity. This study used aCompletely Randomized Design (CRD) factorial pattern with 2 factors, namely the marinationprocess using pineapple peel powder and different times. The variables tested in this study werethe pH and TBA value. The data obtained were analyzed by analysis of variance and further testedthe Least Significant Difference (LSD). The results showed that culled AKUSI rancidity could bereduced by marination process using pineapple peel powder. The provision of pineapple peelpowder at 15% with 90 minutes marination time was the best marination to reduce the meatrancidity

    Ayam Kampung Unggul Sinjai merupakan fenomena baru dalam perkembangan pemeliharaan di dunia perunggasan. Ayam Kampung Unggul Sinjai yang lebih dikenal dengan sebutan AKUSI . AKUSI merupakan jenis ayam kampong jika dipotong pada umur tua memiliki daging yang alot, sehingga memerlukan perlakuan khusus dalam proses pengolahannya, agar diperoleh daging yang empuk. Pemberian enzim yang bersifat proteolitik merupakan suatuperlakuan khususu untuk mengempukkan daging. Keempukan daging ayam dapat ditingkatkan dengan penambahan enzim bromelin yang terdapat dalam buah nenas, Pemberian kulit nanas diharapkan mampu meningkatkan kualitas produk ternak melalui kandungan antioksidan yang terdapat di dalamnya, sehingga perlu dilakukan penelitian mengenai pengaruh pemberian kulit nanas sebagai bahan marinasi daging AKUSI. Tujuan dari penelitian ini adalah mengetahui efektivitas marinasi bubuk kulit nanas sebagai pengoptimalisasi antoksidan daging AKUSI. Tahapan penelitian ini melakukan proses marinasi menggunakan bubuk kulit nanas dengan waktu marinasi yang ditentukan. Sampel diuji pengoptimalan antioksidan denganmengukur protein terlarut dan aktivitasantioksidan. Hasil penelitian menunjukkan aktivitas antioksidan dan protein terlarut meningkat seiring meningkatnya level bubuk kulit nanas dan waktu marinasi. Berdasarkan hasil tersebut dapat disimpulkan bahwa optimalisasi antioksidan daging AKUSI terdapat pada level 20% selama perendaman 120 menit

    Goat livestock business that is carried out by the community has the potential as a source of income, but it is still considered a sideline because agricultural business is still the main focus. The agricultural business undertaken is still dependent on chemical fertilizers which are fairly expensive steps in Kompang Village. In addition, public knowledge of the dangers of chemical fertilizers is very minimal or even practically nonexistent. Likewise, the knowledge of the utilization of goat waste in the form of feces or urine has not been utilized as sufficient organic fertilizer. Knowledge and pregnancy enhancement are carried out with counseling methods and training in processing goat waste in the form of goat urine. The activities carried out are the preparation stage in the form of a location survey, the distribution of questionnaires to see the initial knowledge of farmers/breeders, the provision of material or training on wastewater treatment, and the direct simulation of how to make organic liquid fertilizer. The preparation phase of tools and materials that will be needed in the process of making organic liquid fertilizer (POC). The next step is the procedure for making POC. The last stage is the harvesting of POC, packaging, and marketing of POC that has been produced. The output of this community service is the utilization of livestock waste in the form of goat urine as liquid organic fertilizer. Farmers and livestock enthusiastically participate in this activity so that their knowledge and understanding of integrated livestock waste management

    Going Beyond Counting First Authors in Author Co-citation Analysis

    The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed

    “Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship

    Appropriate Similarity Measures for Author Cocitation Analysis

    We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature.     Dispelling the Myths Behind First-author Citation Counts

    We conducted a full-scale evaluative citation analysis study of scholars in the XML research field to explore just how different from each other author rankings resulting from different citation counting methods actually are, and to demonstrate the capability of emerging data and tools on the Web in supporting more realistic citation counting methods. Our results contest some common arguments for the continued use of first-author citation counts in the evaluation of scholars, such as high correlations between author rankings by first-author citation counts and other citation counting methods, and high costs of using more realistic citation counting methods that are not well-supported by the ISI databases. It is argued that increasingly available digital full text research papers make it possible for citation analysis studies to go beyond what the ISI databases have directly supported and to employ more sophisticated methods
