Acceptability of Adding Inulin to Fudge Brownies
More than 90 percent of Americans do not meet the recommended dietary allowance (RDA) of fiber that ranges from 25-35 g per day.1 The aim of this work was to investigate the acceptability of fudge brownies enriched with inulin and to study the effects of inulin on the chewiness, hydration, and textural properties of fudge brownies. Three levels of inulin batter were tested: an unaltered control (515 g brownie mix:0 g inulin), a first experimental formulation (E1) (515 g brownie mix:50 g inulin), and a second experimental formulation (E2) (465 g brownie mix:50 g inulin). Analysis of extended triangle tests indicated that sensory judges distinguished significant differences between the control brownies and E1 (p\u3c0.001) and between the control and E2 (p\u3c0.001). The preference test showed that E1 was preferred over E2. The chewiness intensity test revealed no significant differences among the brownie formulations. Hydration brownie properties were investigated by analyzing the moisture content. The control brownies had a significantly higher moisture content than E2 (p\u3c0.05). Textural properties of brownies were studied by penetration, compression, and retraction force. Brownie penetration, compression, and retraction force was significantly increased with E1 than the control (p\u3c0.01). E2 compression and retraction force was significantly increased compared to the control (p\u3c0.01). However, there were no significant differences in textural properties between E1 and E2. The addition of inulin to a commercial fudge brownie mix may be considered acceptable to consumers

Making Claims for Migrant Workers: Human Rights and Citizenship
Migrant workers claims for greater protection in a globalized world are typically expressed either in the idiom of international human rights or citizenship. Instead of contrasting these two normative frames, the paper explores the extent to which human rights and citizenship discourses intersect when it comes to claims by migrant workers. An analysis of the international human and labour rights instruments that are specifically designed for migrant workers reveals how neither discourse questions the assumption of territorial state sovereignty. Drawing upon sociological and political approaches to human rights claims, I evaluate the Arendtian-inspired critique of international human rights, which is that they ignore the very basis ‘right to have rights’. In doing so, I discuss the different dimensions of citizenship and conclude that international rights can be used by migrant workers to assert right claims that reinforce a conception of citizenship that, although different from national citizenship, has the potential to address their distinctive social location

Dispelling the Myths Behind First-author Citation Counts
We conducted a full-scale evaluative citation analysis study of scholars in the XML research field to explore just how different from each other author rankings resulting from different citation counting methods actually are, and to demonstrate the capability of emerging data and tools on the Web in supporting more realistic citation counting methods. Our results contest some common arguments for the continued
use of first-author citation counts in the evaluation of scholars, such as high correlations between author rankings by first-author citation counts and other citation
counting methods, and high costs of using more realistic citation counting methods that are not well-supported by the ISI databases. It is argued that increasingly available digital full text research papers make it possible for citation analysis studies to go beyond what the ISI databases have directly supported and to employ more

Quantitative analysis of beta-d-glucopyranoside of 3-methyl-4-hydroxyoctanoic acid, a potential precursor to cis-oak lactone, in oak extracts using liquid chromatography-tandem mass spectrometry based stable isotope dilution analysis
The beta-D-glucopyranoside of 3-methyl-4-hydroxyoctanoic acid (glucoside), exists in oak wood and is a potential precursor to cis-oak lactone. A method for the quantification of the glucoside in extracts of oak wood using liquid chromatography-tandem mass spectrometry was developed. The [(2)H(4)]-labeled analogue of the glucoside was synthesized and used as internal standard for the method which was subsequently applied to the analysis of extracts of both American and French oak woods. The concentration of the glucoside in the extracts varied widely from less than 0.1 up to approximately 50 microg/g-oak wood. Not AvailableThree variations of tomato fudge were prepared using tomato powder at different proportions with sugar, whole milk and honey and evaluated for sensory quality, antioxidant activity, microbial count and consumer acceptability. It was observed that the fudge prepared by using 1-3 g of tomato powder were having higher sensory scores while antioxidant activity was found highest in fudge having 5 g of tomato powder. Consumer acceptability was checked for the variation having highest scores for sensory characteristics i.e. fudge prepared by using 1 g of tomato powder and it was seen that the product was preferred by most of adults and children selected for the trial.Not Availabl
The Right to Strike under the United States Constitution: Theory, Practice, and Possible Implications for Canada
Answering critics of the Canadian Supreme Court's judgment in B.C. Health, the author argues that the Court laid the foundation for a principled and durable doctrine protecting constitutional labour rights, one that goes directly to the heart of the matter — the inequality of workers’ power in the employment relation. In the author’s view, two paths could lead from B.C. Health to the recognition of Charter protec- tion for a right to strike: one that treats the right as an accessory to col- lective bargaining, and one that upholds the right directly on the basis of the Charter values of equality and participation. The author supports the latter approach, contending that constitutional rights should be defined in relation to fundamental values, in a way that is not contingent on time-bound or fact-sensitive assessments about the role of strikes within a particular collective bargaining regime. Although a Charter right to strike may involve the courts in difficult choices about when to defer to legislative policy decisions, and courts may lack the institutional capac- ity to deal effectively with labour law issues, the author points out that judges can look to ILO standards for expert guidance. Noting that the U.S. experience in this area might be of considerable use to Canadians, the author concludes by providing an overview of American case law concerning a constitutional right to strike.Peer reviewe
