    Tese (doutorado) - Universidade Federal de Santa Catarina, Centro de Comunicação e Expressão, Programa de Pós-Graduação em Literatura, Florianópolis, 2013.A presente tese investiga as escrituras de Macedonio Fernández e de Elsa Morante, tendo como objetivo montar um arquivo de semelhanças dissemelhantes, desestabilizando aquilo que se costuma chamar de representação. Nessas escrituras ao invés de mimese temos mimetismos, que propiciam uma abertura contínua de novas singularidades e multiplicidades. Assim, elas não se fundam em um referente dado desde sempre a priori, pois a arché, com a qual se confrontam, não é uma substância, mas, sim, uma ambivalência. Então, provocam uma mancha na realidade, dada a sua necessidade de tocar o real. A tarefa aqui é, portanto, lê-las como vestígios. E nesse percurso surge uma decisão que provoca uma experiência de ruptura: reler noções como a de paródia e de figura não mais vinculadas a uma origem fundacional. O gesto paródico e figural provoca desvios e cortes, possibilitando montagens disparatadas e impensáveis. No trabalho de arqueologia proposto pela presente tese há uma relação da qual não podemos nos esquivar, dada a tarefa que o nosso presente, no qual o passado não cessa de passar, nos coloca, a saber: pensar a relação entre vida e morte.     Art and the artist in the literary works of Elsa Triolet

    This thesis takes a representative selection of Triolet's works to study the themes of writing and creativity as they are presented in the novels. These are all portraits of artists and the accounts of the search for a synthesis of aesthetic freedom and ethical responsibility. It considers Triolet's importance as a foreign writer, adopting a new creative language to be adopted by a different cultural environment, to be essential in understanding her importance to the French literary tradition. By emphasising her formative years in the avant-garde circles of prerevolutionary Russia, my study demonstrates her considerable contribution to the meeting of Russian and French aesthetic theories. I extend this with close textual readings of certain works to demonstrate her techniques in novelistic construction which reveal many Formalist practices before Formalist works in translation made their official influence on creative methods. The introduction considers the reasons for Triolet's neglect as a writer. It then considers various contemporary and recent critical appraisals which indicate the interest she has received until present and which allow me to define my own critical approach. Part One traces Triolet's literary evolution from her formative years in Russia, through exile to her first publications in Russian. It then considers her insertion into French literary activity, and her association with the schools of socialist realism and the "nouveau roman". Part Two examines two traditional novels which portray the creative and metaphorical roles of the artist and his work, showing the constant conflict between private and public lives. In Part Three, I show how aspects of novelistic traditionalism are gradually foregrounded so that the work develops a dual-sided character where it both narrates and examines the processes of its own narration. In Part Four, this move to highly self-conscious aesthetics demonstrates an idiosyncratic exploration of new paths for the novel that bring visual, auditive and cinematographic media into the traditional domain of written art. Accompanying the very post-modernist experimentation, I show how this research within the novel into the novel's own future has an ethical and redemptive purpose whose final conclusion is that creativity and human freedom are inexorably interwoven

    Tämän opinnäytetyön tarkoituksena oli kehittää kesäkahvila Café Elsan kahvilatuotteita. Café Elsa oli toiminnassa Hatanpään kartanolla kesän 2019 ajan. Kehitettäviksi tuotteiksi valittiin banaanikinuskijuustokakku, suolainen välimeren piiras, kanelikierre, falafelbagel ja porkkanakakku. Tämän opinnäytetyön tekijät toimivat Café Elsassa itse yrittäjinä. Työn aihe valikoitui mielenkiinnosta tuotekehitystä kohtaan ja halusta kehittää Café Elsan liiketoimintaa. Työn teoreettinen viitekehys koostuu neljästä pääkohdasta, joissa perehdytään tuotekehitykseen, kahviloihin ja kahvilatuotteisiin, kahvilatuotteiden hinnoitteluun ja kehittämistyöhön. Kehittämistyön osuus koostuu asiakaskyselyistä, aistinvaraisesta arvioinnista ja menuanalyysistä. Paperisia asiakaskyselylomakkeita jaettiin pop up -kahvilalla järjestetyn tuotetestauskerran lisäksi Café Elsassa kahden viiden päivän mittaisen tarkastelujakson ajan aina, kun kyseinen tuote ostettiin. Aistinvarainen arviointi suoritettiin työn ohella tämän työn tekijöiden toimesta numeerisesti (1-5). Menuanalyysin avulla tarkasteltiin koko kesän ajan porkkanakakun ja kanelikierteen myyntiä. Asiakaskyselyiden tulokset osoittivat, että suurin osa Café Elsan asiakkaista olivat tyytyväisiä kehittämistyön kohteeksi valikoiduista tuotteista. Tuotekehitystyön tekijöiden oman aistinvaraisen arvioinnin avulla tuotteita pystyttiin kehittämään tasalaatuisemmiksi, sekä vertailla niitä asiakaskyselyiden vastauksiin. Menuanalyysin tuottamilla tuloksilla saatiin tietää yksittäisen tuotteen kannattavuutta annoskohtaisella myyntikatemäärällä ja myyntivolyymiä myydyillä annosmäärillä. Menuanalyysiin päätyivät kanelikierre ja porkkanakakku, koska ne täyttivät menuanalyysiin vaadittavat kriteerit. Asiakaskyselyiden ja kehitystyön tekijöiden oman aistinvaraisen arvioinnin tuloksia hyödynnettiin jo kesän aikana kahvilatoiminnassa, jotta tuotteista saatiin mahdollisimman asiakaslähtöisiä ja myyviä. Menuanalyysin avulla nähtiin, että kanelikierre sai luokituksen lypsylehmä eli sen kysyntä ylitti keskiarvokysynnän, mutta myyntikate jäi keskiarvoa alhaisemmaksi ja porkkanakakku ylsi tähtituote-kategoriaan, joka tarkoittaa, että sekä myyntikate että kysyntä ylittävät keskiarvon. Tämän työn tuloksia voidaan hyödyntää tulevina kesäkausina Hatanpään kartanolla.The purpose of this thesis was to develop the products of summer cafe Café Elsa. Café Elsa was in action in summer 2019 at Hatanpää Mansion. As products to be developed were chosen banana caramel cheesecake, salted Mediterranean Sea pie, cinnamon roll, falafel bagel and carrot cake. The researchers of this study were entrepreneurs in Café Elsa. The subject of this study was chosen for the interest in product development and desire to develop Café Elsa’s business. The framework of this study consists of four main points which orientate in product development, cafes and cafe products, pricing of cafe products and methods of development work. The development work consists of customer surveys, sensory evaluation and menu analysis. Customer survey questionnaires in paper form were distribute in the cafe during the period under the review always when the particular product was bought. There were two periods under review and both of them lasted about five days. Sensory evaluation was performed numerically from one to five along with the work by the creators of this work. Throughout the summer, with the menu analysis, the sales of a carrot cake and cinnamon roll were examined. The results of the customer surveys indicated that most of the clients of Café Elsa were satisfied with the products selected for the development work. With the sensory evaluation, it was possible to develop the products to be of more uniform quality and to compare them to the feedback from customer surveys. With the results of the menu analysis it was possible to know a single product’s profitability of the sales margin on one portion and sales volym with sold portions. Only cinnamon roll and carrot cake got into the menu analysis because they were the only products that filled the criterions of the menu analysis. To make the products as sellable and customer-oriented as possible, the results of the customer surveys and sensory evaluation was already utilized in cafe during the summer. With the menu analysis were already utilized in the cafe during the summer. With the menu analysis, it was found that cinnamon roll got the best rating which was a cash cow, which means that its demand was over average demand but sales margin was lower than average. Carrot cake reached the star product category, which means that its sales margin and demand were over average. The results of this thesis can be utilized in future summer seasons in Hatanpää mansion
