Investigating the chemical basis of functionality differences between beet and cane sugar sources in model egg white foams and other products
Though often used interchangeably, researchers have identified differences in functionality between beet and cane sugar sources in some food products. For example, previous research reported sensory differences between meringue cookies made with beet and cane sugar. Beet sugar meringue cookies were more marshmallow-like than cane meringue cookies. However, these sensory differences have not been instrumentally quantified and the underlying cause has not been determined. Thus, the objective of this research was to instrumentally quantify and investigate the chemical basis for the sensory differences between beet and cane meringue cookies. To instrumentally quantify differences between beet and cane meringue cookies, moisture content and water activity was obtained for unbaked meringues and meringue cookies. Additionally, texture profile analysis, three point break analysis, and differential scanning calorimetry was carried out on beet and cane meringue cookies. To gain insight into factors causing differences between beet and cane meringue cookies, heat denatured sugar-egg gel texture, unbaked foam stability, and water loss during simulated baking were obtained. No meaningful difference was found between beet and cane meringues in moisture content, water activity, and foam stability prior to baking. After baking, however, beet meringue cookies where shown to have higher moisture content, water activity, and cohesiveness values, and lower hardness and force to break values. During simulated baking, cane meringues were shown to lose water notable faster than beet meringues, causing moisture and textural differences after baking. These differences during and after baking are likely associated with higher amounts of sulfite in beet sugar compared to cane sugar. Sulfite has been shown to inhibit browning and cleave disulfide bonds, which may causes functional differences egg white proteins during the baking of meringues. To account for differences between beet and cane sugar functionality, a longer baking time for beet sugar meringue cookies is required, though this may lead to undesirable browning and loss of foam volume. Additionally, functional differences between beet and cane sugar were explored in rock candy, crème brûlée, and angel food cakes. This work highlights differences in functionality between beet and cane sugar sources, and raises issues regarding sugar source choice, in addition to market price.Submission published under a 24 month embargo labeled 'U of I Access', the embargo will last until 2018-08-01The student, Nicholas Reitz, accepted the attached license on 2016-07-07 at 14:05.The student, Nicholas Reitz, submitted this Thesis for approval on 2016-07-07 at 14:23.This Thesis was approved for publication on 2016-07-11 at 13:35.DSpace SAF Submission Ingestion Package generated from Vireo submission #9799 on 2016-11-10 at 12:24:58Made available in DSpace on 2016-11-10T18:42:48Z (GMT).

Deneys Reitz: “South African First, Dutchman Second” – A Case Study of the Evolution of South African Identity in South Africa in the First Half of the Twentieth Century
This thesis considers the life of Deneys Reitz, a South African soldier, author and politician who was a key member of the Afrikaner ruling elite in South Africa in the first half of the twentieth century. This was a seminal period in South African history, which included the formation of the new Union of South Africa in 1910. During this time, a distinctive new South African identity, known as “South Africanism” developed, centered around reconciliation between the two primary white linguistic groups in South Africa, and an acceptance of South Africa’s place within the British Empire. Over time, under the influence of his mentor and future Prime Minister Jan Smuts, Reitz became a fervent advocate of this new philosophy and an ardent Anglophile. Through a biographical examination of Reitz’s life and works (and that of certain of his contemporaries), this thesis considers the factors that influenced moderate Afrikaners like Reitz to embrace this new identity. It contends that these factors were complex and multifaceted, and, at least initially, had more to do with personal loyalties and internal Afrikaner politics than a genuine ideological belief in the importance of reconciliation and the values of Empire. In some cases, like Reitz and Smuts, the ideological belief evolved over time. However, this thesis argues that at the heart of many other moderate Afrikaners’ acceptance of South Africanism lay a more transactional trade-off – a willingness to reconcile with their English-speaking countrymen and accept British sovereignty, in exchange for a restoration and protection of Afrikaner political and cultural rights and the economic and security benefits of being part of the British Empire. For many Afrikaners (particularly those who didn’t necessarily share Reitz and Smuts’ Anglophilia) this trade-off was arguably made more palatable in the years between the two World Wars by the increasing degree of autonomy afforded to the Afrikaner-controlled South African government as a result of Britain’s slow-motion retreat from Empire after the First World War. This thesis further contends that a key motivating factor underpinning the philosophy of South Africanism was a belief in the necessity of white racial solidarity between Afrikaners and English South Africans of British origin, which was ultimately prioritized over other linguistic, ethnic and class divisions. Finally, this thesis considers the role played by moderate South African women in creating this new South African identity, with a particular focus on Deneys Reitz’s wife Leila (a strong advocate for women’s rights and South Africa’s first female parliamentarian). It argues that women, both South African and British, played a key role in encouraging Afrikaner / English reconciliation. It also seeks to show how white racial unity became an important justificatory factor in the fight for female rights such as suffrage and birth control, and ultimately helped ensure a political alignment across the gender divide.Extension Studie
Review: "Die Energiesicherheit Deutschlands und Polens im Kontext der EU" / Sybille Reitz. Leipzig: Leipziger Universitätsverlag, 2017. ISBN: 978-3-96023-071-7
Die Energiesicherheit Deutschlands und Polens im Kontext der EU is the author's published master thesis. The aim of the book is to make a contribution to the ongoing discussion about the European Union's energy security strategy. Sybille Reitz's focus is on the cases of Germany and Poland, which are meant to represent "old" and "new" EU member states (p. 22). The author points out the differences and similarities of both cases and highlights potential solutions to improve energy security. While the analysis focuses on the 2000s and especially the first half of the 2010s, according to Reitz, however, the most significant difference between the Polish and German approaches to energy security results from their respective historical experiences
