PRODUKSI MALTODEKSTRIN DARI PATI UMBI TALAS (Colocasia esculenta) MENGGUNAKAN ENZIM α-AMILASE
Telah dilakukan penelitian tentang produksi maltodekstrin dari pati umbi talas (Colocasia esculenta) menggunakan enzim alfa amilase. Tujuannya adalah untuk menghasilkan maltodekstrin dengan variasi berat pati terhadap enzim dan waktu hidrolisis terbaik yang diperlukan untuk memperoleh maltodekstrin dengan rendemen dan nilai DE ≤20. Penelitian menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari 2 faktor yaitu berat pati dan waktu hidrolisis yang masing–masing dilakukan sebanyak 3 kali. Hasil penelitian menunjukan bahwa rendemen maltodekstrin tertinggi diperoleh pada berat pati terhadap enzim 25 g dengan nilai 54,93% dan DE 12,56. Waktu hidrolisis pati yang menghasilkan rendemen maltodekstrin tertinggi adalah pada waktu 180 menit yaitu 64,29% dengan nilai DE maltodekstrin yang diperoleh yaitu 11,37.Kata Kunci :Enzim α- amilase, maltodekstrin, pati umbi talas
FORMULASI PAKAN UNGGUL BERBASIS BIOTEKNOLOGI LIMBAH ORGANIK LOKAL UNTUK IKAN LELE ORGANIK KUALITAS EKSPOR
Research on Superior Feed Formulations Based on Local Organic waste Biotechnology for Export quality organic Catfish. Research Objective: The discovery of feed types of tilapia and organic catfish that have export quality nutritional content based on the best quality local marine organic waste through a touch of biotechnology. Furthermore, the complete chemical composition of the waste used and feed components is obtained. Research Methods: Determine the best composition of biomass of marine organic waste and local onshore organic wastes with the highest levels of protein and carbohydrates and integrated with other wastes. The nutritional content is analyzed, namely: Carbohydrates, fats, proteins, and supporting minerals, namely: Fe, K and Ca. Instrumentation used to support the research objectives is AAS and HPLC. Research Results: Export quality organic catfish pellet feed in the form of waste: marine fish, sea shrimp waste, sea crab waste, rice bran waste, corn waste, mixed organic waste, golden snail waste, seaweed waste and coconut water waste respectively (27; 15; 7.5; 33; 3; 2.5; 5; 2.5 and 2) %b/ b, starch 2% b/b and marine phytoplankton biomass 0.5% b/b. The nutritional content of organic catfish pellets that have been produced, namely: 51% protein b/b, 24% carbohydrate b/b, 9% fat b/b, crude fiber 8%b/b, water content 2 - 2.5%b/b, mineral Fe 1% b/b, mineral K 1% b/b, mineral Ca 1%b/b, ash content 2 - 2.5%b/b. Feed packing for export quality organic catfish pellets is given the "SANTARI-KU" label.

MIKROENKAPSULASI EKSTRAK LIKOPEN BUAH TOMAT (Lycopersicum pyriforme) TERSALUT TEPUNG RUMPUT LAUT Eucheuma cottonii
Likopen merupakan senyawa bahan alam yang mudah mengalami kerusakan akibat perubahan suhu dan waktu simpan. Kerusakan tersebut dapat diatasi dengan proses mikroenkapsulasi menggunakan penyalut, salah satunya tepung rumput laut. Tujuan dari penelitian ini untuk menentukan efisiensi penyalutan tertinggi berdasarkan rasio likopen terhadap tepung rumput laut. Metode penyalutan dilakukan menggunakan freeze dryng, dengan rasio likopen terhadap tepung rumput laut 1:5; 2:5; 3:5; 4:5 atas dasar (b/b). Analisis kadar likopen dalam mikrokapsul dilakukan selama 4 minggu. Hasil analisis menunjukan bahwa efisiensi penyalut tertinggi pada rasio 1:5 dengan persentase 10,686% dan kinetika degradasi likopen tersalut tepung rumput laut mengikuti kinetika reaksi orde nol.Kata kunci: Ekstrak likopen,tepung rumput laut, mikroenkapsulas
EKSTRAKSI PEKTIN PADA KULIT BUAH KLUWIH (Artocarpus camansi Blanko) PADA BERBAGAI SUHU DAN KONSENTRASI ASAM SITRAT
Telah dilakukan penelitian tentang ekstraksi pektin pada kulit buah kluwih (Artocarpus camansi Blanko) pada berbagai suhu dan konsentrasi asam sitrat. Penelitian ini bertujuan untuk mengetahui konsentrasi dan suhu ekstraksi yang menghasilkan pektin dari kulit buah kluwih (Artocarpus camasni Blanko) dengan rendemen tinggi. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan empat variasi suhu (90 oC, 100 oC, 110 oC dan 120 oC) dan empat variasi konsentrasi (5%, 7%, 9%, dan 11%), dengan menggunakan metode ekstraksi meserasi. Hasil penelitian ini menunjukan rendeman tertinggi didapatkan pada konsentrasi 9% sebesar 35,65% dan suhu 90 oCÂ sebesar 40,69%. karakteristik terhadap pektin adalah kadar metoksil 8,12 %, kadar galakturonat 41,88 %.Kata Kunci : Ekstraksi pektin, kadar metoksil, kadar galakturona
PENGGUNAAN KULIT UBI KAYU (Manihot utillisima Pohl) TERHADAP PENYERAPAN LOGAM Fe (III) PADA AIR PAYAU
The absorption of Fe (III) metal in brackish water in the Balaroa Village, West Palu District using Cassava peels (Manihot utillisima Pohl) has been carried out. The aim of this study is determining the lifetime of cassava peels (Manihot utillisima Pohl) on the absorption of Fe (III) ions in brackish water. The research was conducted in a simple purification water system. Brackish water was flowed through the simple purification water system containing Cassava peels (Manihot utillisima Pohl) with a volume of brackish water is 10 liters per day (measured flow rate) and been analyzed every 2 days using UV-Vis spectrophotometry for less than 1 month. The results of the study show that cassava peel could be used as biosorbent to absorb and reduce level of Fe (III) ions in brackish water for 2.821 months. The concentration of Fe (III) ions in brackish water in Balaroa Village, West Palu District is 1.666 ppm.

ANALISIS KLT BIOAUTOGRAFI EKSTRAK KULIT BATANG TANAMAN KAYU JAWA (Lannea coromandelica) TERHADAP BAKTERI Staphylococcus aureus DAN Shigella dysentriae
Java wood plants (Lannea coromandelica) is a traditional medicinal plant which is still often used by people to treat internal and external wounds. The study aims to determine the effect of solvent polarity in Javanese stem bark extract on Staphylococcus aureus and Shigella dysenteriae, and to identify the compound groups which had an antibacterial activity against Staphylococcus aureus and Shigella dysenteriae with KLT-Bioautography analysis. The results show that the n-hexane extract of Javanese bark is not showing an antibacterial activity against Staphylococcus aureus and Shigella dysenteriae, whereas the ethyl acetate extract and methanol of Javanese bark show an antibacterial activity against Staphylococcus aureus and Shigella dysenteriae. The results of the TLC-Bioautography test show negative results for Staphylococcus aureus and Shigella dysenteriae.

KAJIAN AKTIVITAS ANTIOKSIDAN MIKROKAPSUL EKSTRAK KULIT TERONG UNGU (Solanum melongena L)
Study about antioxidant activity of microcapsule of purple eggplant (Solanum melongena L) peel extract has ben done. The research aimed to find the best pH and coating ratio for yielding microcapsule with the highest antioxidant activity. It was done by applying 5 levels of both pH variation of 2, 3, 4, 5, 6 and maltodextrin ratio of 1:1, 2:1, 3:1, 4:1, 5:1 (w/v). The determination of antioxidant activity was done by DPPH method. The result showed that at pH 2 and 1:1 of maltodextrin coating ratio were the best condition to yield the highest antioxidant activity i.e 32.54 % and 96.31 %, respectively.

PERSEN DEGRADASI EKSTRAK ETANOL KELOPAK BUNGA ROSELLA (Hibiscus sabdariffa L.) SELAMA PENYIMPANAN THE PERCENTAGE OF ETHANOL EXTRACTS OF ROSELLE PETALS (Hibiscus sabdariffa L.) DURING STORAGE
Ethanol extract of roselle petals (Hibiscus sabdariffa L.) is more stable in low pH than in high pH. The research aims to monitor and determine the effect of ratio content in ethanol extract of roselle petals (Hibiscus sabdariffa L.) in tomato sauce and the pH effect on the percentage of ethanol extract degradation during storage. Two independent variables implemented in this study, are ratio content of ethanol extract of roselle petals (Hibiscus sabdariffa L.) in tomato sauce and pH. Ethanol extract of roselle petals (Hibiscus sabdariffa L.) in tomato sauce with ratio content 0,5:1; 1:1; and 1:0 (w/w) and adjusted to pH 2, pH 3, pH 4, pH 5 and pH 6, respectively were investigated. The absorbance measurement of Ethanol extract of roselle petals (Hibiscus sabdariffa L.) in tomato sauce was depend on each treatment, then analyzed using completely randomized design. The percentage of ethanol extract of roselle petals (Hibiscus sabdariffa L.) degradation in tomato sauce decreased in ratio content 1:0 (w/w) at pH 2 with percentage content of degradation is 30.09%. Furthermore, after 10 days of storage, the highest percentage of ethanol extract of roselle petals (Hibiscus sabdariffa L.) in tomato sauce degradation is 93.33% with ratio content is 0.5:1 at pH 6 and the lowest is 30.09% with ratio content 1:0 at pH 2.

STUDI ADSORPSI LOGAM Pb PADA TANAH TERCEMAR ABU TERBANG (Fly Ash) DENGAN MENGUNAKAN TANAMAN KANGKUNG DARAT (Ipomoea reptans Poir)
Pb metal adsorption studies on land water spinach (Ipomoem reptans poir) have been carried out. The method of analysis was carried out using a completely randomized design with two independent variables, i.e amount of Pb metal concentration adsorb on the roots of land spinach and the lifetime of the land spinach roots. The results show that the amount of Pb metal adsorp on the land spinach roots with variations in the age of 2-5 consecutive weeks was 0,023 µg/g; 0,03 µg/g; 0,084 µg/g; 0,099 µg/g, respectively. The results of both statistical tests, F test and LSD test, show that there was a significant difference in the concentration of Pb in each age of harvest, which in the fifth week showed the highest Pb level. BCF test results show that Pb metal adsorption takes piace with a phytoextraction mechanism.

STUDI PERBANDINGAN RENDEMEN PRODUKSI XANTOFIL DAN KAROTEN KAPANG ONCOM MERAH PADA BERBAGAI WAKTU INKUBASI
Telah dilakukan penelitian tentang studi perbandingan rendemen produksi xantofil dengan karoten kapang oncom merah pada berbagai waktu inkubasi. Penelitian ini bertujuan untuk mengetahui jumlah rendemen fraksi kelompok xantofil dan karoten dari berbagai waktu inkubasi kapang oncom merah pada medium tongkol jagung. Pengujian dilakukan dengan mengukur absorbansi ekstrak xantofil dan karoten pada instrumen spektrofotometer uv vis, parameter yang diamati adalah waktu inkubasi spora kapang oncom merah. Waktu inkubasi yang digunakan adalah dimulai dari hari ke 2, 3, 4, 5, 6, dan ke 7. Hasil penelitian menujukkan bahwa waktu inkubasi yang menghasilkan jumlah rendemen xantofil efektif pada hari ke 3 dengan rerata rendemen sebesar 4,435%. Sedangkan jumlah rendemen karoten efektif pada hari ke 5 dengan rerata rendemen 4,532%.Kata kunci: Xantofil, karoten, kapang oncom merah, waktu inkubasi, rendeme
