    Über die Art des Messens und Proportionierens herrschen im Kochen unterschiedliche Meinungen. Soll ein Koch präzisesten Mengen- und Maßangaben folgen oder soll und kann er sich auf seine eigenen Sinne beim Messen noch verlassen? Historische Quellen zur Kochkunst – von der Antike bis zur Industrialisierung – sprechen mit allen Sinnen, offenbaren einen reichen Fundus an sinnlichen Qualitäten. Köch:innen beschreiben, was sie sehen, fühlen und schmecken: Größen, Farben, Formen und Konsistenzen. Die Kochbuchsprache ist anschaulich und motivierend – bis zur Umstellung auf die Metrik im Laufe des 19. Jahrhunderts. Skizziert wird eine Entwicklung der abendländischen Welt, die Kochen als eine künstlerische Disziplin ausweist.Debates on the principles of measuring and proportioning in cooking have long persisted. Should a cook adhere strictly to precise quantitative specifications, or may they legitimately rely on their sensory judgment in the act of measuring? Historical sources on the culinary arts – from Antiquity through the Industrial Era – address all the senses, offering a rich repository of sensory qualities. Cooks articulate what they perceive through sight, touch, and taste: dimensions, colors, forms, and textures. The language of cookbooks emerges as vivid and persuasive, until the adoption of the metric system in the course of the nineteenth century.     In Deutschland setzte Ende der 1860er Jahre zeitgleich mit den ersten vegetarischen Vereinsgründungen eine rege Publikationstätigkeit zum Thema ein. Kochbücher waren von Beginn an ein Teil davon. In der Habsburgermonarchie dauerte es etwas länger, bis vegetarische Kochbücher erschienen. In diesem Beitrag stehen die Leser:innen der Kochbücher im Zentrum: Die vegetarischen Kochbücher vor dem Ersten Weltkrieg waren von Vegetarier:innen für Vegetarier:innen verfasst. Sie dienten als praktische Helfer im Alltag für all jene, die sich bereits für eine Ernährung ohne Fleisch entschieden hatten. Wie unterschiedlich dieser fleischlose Lebensstil sein konnte, machen die Rezepte deutlich. Rohkost und vegane Mahlzeiten waren darin ebenso vertreten wie Mehlspeisen oder fleischlose Schnitzel. Für Schrebergärtner:innen findet sich gleichermaßen Inspiration wie für Reformhauskund:innen. Eine große Rolle spielte die Regionalität. Die Zuständigkeit von Frauen für die Zubereitung vegetarischen Essens wird in allen Kochbüchern vorausgesetzt.In Germany, coinciding with the founding of the first vegetarian societies, a lively publication activity on the topic began in the late 1860s. Cookbooks were a part of this from the very beginning. In the Habsburg Monarchy, it took a little longer for vegetarian cookbooks to appear. This article focuses on the readers of the cookbooks: The vegetarian cookbooks before the First World War were written by vegetarians for vegetarians. They served as practical everyday manual for all those who had already decided on a meat-free diet. The recipes demonstrate how diverse this meat-free lifestyle could be. Raw food and vegan meals were represented, as were pastries and meatless „Schnitzel“. Consumers of home-grown vegetables and health food shop customers alike found inspiration here. Regionality played a major role. All cookbooks assume that women are responsible for preparing vegetarian food

    Sunda–Sahul floristic exchange and pathways into the Southwest Pacific: New insights from wet tropical forest trees

    Aim: Recent investigations on the floristic exchange between Southeast Asia and Australia have shown a clear dispersal directionality bias (West to East) of wet-adapted plant taxa. However, dispersal routes and directions of wet forest taxa into the South Pacific remain insufficiently known. We here aimed to establish the most likely routes and directions of plant dispersal into the Southwest Pacific islands. Location: Southeast Asia, East Asia, Australia, Southwest Pacific. Taxon: Dysoxylum s.l. (Meliaceae). This includes Dysoxylum s.s., Didymocheton, Epicharis, Goniocheton, Pseudocarapa, and Prasoxylon. Method: We sampled 75% of the species diversity in Dysoxylum s.l., covering the en- tire distribution range, all genera and major lineages. Phylogenetic relationships of 149 accessions were reconstructed using Bayesian Evolutionary Analysis and two internal constraints. The dispersal–extinction–cladogenesis variant, founder- event speciation (DEC+J), was used for reconstructing the biogeographic history, and 100 Biogeographical Stochastic Mappings were simulated. Results: Dysoxylum s.l. originated and firstly diversified in the western part of its cur- rent distribution range (including Indochina) during the Miocene to Pliocene, followed by an overall eastern range expansion towards Malesia, Australia and the Southwest Pacific in the Pliocene. Main Conclusions: The south-eastward expansion of lineages into Wallacea and Australia is in temporal agreement with the convergence of the Asian and Australian tectonic plates since the Miocene. Long-distance dispersal is the main mechanism that led to the current distribution. Two dispersal pathways into the Southwest Pacific are identified, (1) through New Guinea and the Solomon Islands to Fiji, and (2) from New Zealand to Fiji. For both routes, Fiji was an important secondary source area for dis- persal into the Southwest Pacific
