    Bakasang is one of the traditional products of North Maluku, this product has not been studied scientifically. The purpose of this research is to know the organoleptic characteristics of bakasang to be known and accepted by public. This research was fermented using 25% of salt with duration (0, 2, 4, 6, and 8 days), and storage with duration (0, 30, 60, and 90 days).Bakasang’s have organoleptic tested include: appearance, odor, taste and texture. Bakasang elected to compared with commercial bakasang are usually consumed by people in North Maluku.This research shown that: fermentation treatment 4 days at 0 days storage (F4P0) and fermentation bakasang 8 days at 0 days storage (F8P0) was chosen.Paired comparison test results show that bekasang tuna has the advantage of taste and smell unique because it is more preferred by panelist

    The using of fish by-products has not been optimally developed in food processing. The objective of this research was to study the using of catfish\u27s head flour as a part of material in formulating crackers to increase its calsium content. The method for making this flour was based on thermal process using drum dryer. The physical and chemical properties were analysed. Crackers was formulated by using catfish\u27s head flour with trial and error method. The formulations were then F0 (0:100), F1 (7,5:92,5), F2 (12,5:87,5), F3 (17,5:82,5), and F4 (22,5:77,5). F1 and F2 crackers were chosen formulations based on organoleptic test. The result of chemical analysis were respectively: moisture 2,4-3,3% (wb), ash 3,7-4,97% (wb), protein 9,9-11,4% (wb), lipid 19,2-20,5% (wb), carbohydrate 63,9-69,6% (wb), and energy 480-484 kkal (wb). F1 crackers contained 0,3634% of calcium (wb) while F2 crackers contained 0,3147% of calcium (wb). The phospor\u27s content in F1 and F2 crackers were respectively: 0,2362% (wb) and 0,3147% (wb). The contribution of calcium content in crackers were calculated based on RDA (Recommended Dietary Allowance) for children, adolescents, and adults. F1 crackers fulfilled calcium’s RDA respectively : 25,8% for children; 15,5% for adolescents, and 19,3% for  adults. F2 crackers fulfilled calcium’s RDA respectively: 39,9% for children; 23,9% for adolescents, and 29,9% for adults. The amount of crackers that should be consumed was at least as much 44 gram/day.     Malnutrition may decrease in human resources work capacity which is lead to regional economic lost. The study was aimed to find the relationship between severe underweight, GDRP and poverty level and to estimate economic lost due to severe Protein Energy Malnutrition (PEM) among underfive children in various districs/cities at Java and Bali Islands. A descriptive study designed was implemented and a set of secondary data was used in the study. The data uses are prevalence of PEM among underfive children from 2007 Riskesdas, Gross Domestic Regional Product (GDRP), population by sex and age group, and poverty level. Data processing and analysis were conducted in Bogor, from April to July 2010. The result showed that economic lost due to PEM was highest in Bekasi Regency, West Java and lowest in Kepulauan Seribu Regency, DKI Jakarta. Higher GDRP per capita means lower severe PEM prevalence and higher poverty level means higher severe PEM prevalence. Percentage of total economic lost due to severe PEM among under five children was ranged from 0,039% GDRP - 0,177% GDRP

    Severe malnutrition and linear growth retardation during early childhood were prevalent in developing countries. Objectives of this study was to study adolescent characteristics with the severe malnutrition and linear growth disorder history in early age. A followed-up study were caried out among 93 adolescents aged 10-17 years in Bogor. Subjects admitted to Nutrition Clinic Bogor at the age of below three years, suffered from severe malnutrition as well as stunted at first enrollment. Data collected including weight and height, socio economic status, parent’s weight and height, subject’s characteristicts and secondary data at first enrollment to the clinic from medical records including weight, height, diagnozed, parent’s characteristics. As many as 36.6% subjects were categorized as normal base on height for age (HFA), higher among males (45.3%) than females (32.3%). Higher proportion of normal HFA adolescent were found on farmer or driver father, house keeper mother and mother with junior high school education background. There was no relationship between aged at first enrollment to nutrition clinic as well as puberty status with HFA during adolescent. As many as 52% of adolescents achieve normal HFA whose mother’s height > 150 cm, in the opposite 73.8% of stunted teenage with mother’s height <150 cm. There is a linkage achieving linear growth among adolescent experienced severe malnutrition and linear growth disorders during early childhood with parental employment, maternal education and maternal height

    KETAHANAN PANGAN KELUARGA PESERTA PROGRAM PEMBERDAYAAN MASYARAKAT DI PEDESAAN

    The research objectives were to analyzed the family food security and its factors of the participants in the community empowerment program at rural area. The research design was crossectional study and the data collection technique used a survey method toward 300 families, and their specification were 140 families from the National Program of Community Empowerment (PNPM), 107 families from The Keluarga Harapan Program (PKH), 31 families from the Raksa Desa Program and 22 families from The Business Development Program of Rural Agribusiness (PUAP). The highest percentage (52.0%) of the family categorized into food vulnerable and as many as 37.3 percent was insecure category. It was found 10.7 percent families categorized into secure category. Base on the program, more than a half families of PKH group (50.5%) and PUAP (63.6%) are insecure category. Food vulnerable category is in PNPM group (60.0%) and Raksa Desa group (61.3%). The highest percentage (15.0%) thar categorized into secure category is in PNPM group.     ISOLASI OLIGOSAKARIDA MADU LOKAL DAN ANALISIS AKTIVITAS PREBIOTIKNYA

    The objective of this study was to isolate oligosaccharides from local honey of Pulau Sumbawa and province of Kalimantan Timur and to analyze its prebiotic activity in vitro. Oligosaccharides were isolated with activated charcoal adsorption and ethanol treatment. Effectiveness of this method was evaluated by Thin Layer Chromatography and colorimetry. The isolates were then being a sample to prebiotic examination. Honey from Sumbawa forest has higher oligosaccharides content than honey from Kalimantan. Qualitative and quantitative assays showed that oligosaccharide isolation method was effective to concentrate the oligosaccharide with high degree of polymerization but ineffective for mono- and disaccharides removal. The highest percentages of hydrolysis of oligosaccharide from Sumbawa and Kalimantan by mimic gastric juice were 1.78% and 0.59 %. Whereas, the hydrolysis was higher with amylase, 11.87% for Sumbawa and 21.03% for Kalimantan honey oligosaccharides. Prebiotic activity was 0.32, and 0.09 for honey oligosaccharide from Sumbawa and Kalimantan respectively. Honey oligosaccharide from Sumbawa presented higher prebiotic activity than inulin as prebiotic reference (0.11). GC-MS chromatogram showed L. acidophilus cultured in media added with Sumbawa honey oligosaccharide produced lactic acid as the highest metabolite (48.01%)

    The aims of study were to analyze the ecological factors such as food availability, land capacity, population density, poverty, GDP, education; and their association to the consumption of carbohydrate food sources in some rural and urban areas of Indonesia. This ecological study was conducted by analysing the 62 districts in Indonesia. The data of food consumption was part of set Riset Kesehatan Dasar (Riskesdas 2007). The data of food production, population density, poverty, GDP, and education collected from the Central Statistic Agency (BPS). The statistical test was pearson correlation and stepwise linear regression. The study shows that consumption of carbohydrate food sources in rural more than in urban area and dominated by rice. Energy contribution from carbohydrate food sources is a half of total energy contribution (55.9% in rural and 48.05% in urban). In rural area, consumption of rice, corn, cassava, and sweet potato per capita per year were 109 kg, 4.69 kg, 2.51 kg, and 0.66 kg. While in urban area, consumption of rice, corn, cassava, and sweet potato per capita per year were 95 kg, 1.24 kg, 3.51 kg, and 0.209 kg. The food availability was significantly affected to the consumption of carbohydrate food sources in rural and urban areas

    This study aimed to analyze the impacts of feeding practices on underfive children’s nutritional status in different level of household food security. The study design was a cross-sectional study. Data on feeding practices were collected through personal interviews used questionnaire and nutritional status was calculated by using WHO-NCHS z-score. The average scores of feeding practices among samples were categorized as low (54.4%) and children of group very food-insecure had the lowest score of feeding practices. There was a significantly difference among the groups in the scores of sample’s feeding practices. The study showed that about 86 percent of children were categorized as normal (BB/TB indicator), but there were 11.6 percent categorized as wasting, while 32.0 percent and 54.3 percent categorized as underweight and stunting, respectively. Statistical analyses showed significant difference in term of nutritional status. There was a significant correlation between child’s nutritional status (BB/U, TB/U and BB/TB) and household food security. The study showed that child’s nutritional status (BB/TB) was influenced by energy’s adequacy level

    The purpose of this study was to analyze the model of farmer empowerment for household food security. Research design was cross sectional, it was conducted in Lebak District on March- November 2010. The data collected was household characteristics, consumption, level of farmer empowerment, and household food security. A systematic stratified random sampling was applied to select 95 farmer households. The path analysis was applied to analyze Model of Farmer Empowerment for Household Food Security. The results showed that 42.1% of farmer household are food insecure, and most of them (52.6%) have low level of empowerment. Model of farmer empowerment for food security can be started with the development and strengthening of megapolitan environment, followed by strengthening the means of production and capital
