Effect of Nutrition Education and Supplementary Food on the Weight of Wasting Toddlers in Percut Sei Tuan
The aim of the study was to analyze changes in body weight after an intervention. The research design was a quasi-experimental pre- and post-test with a sample of 40 wasting toddlers divided into a group that received tuna meatballs mixed with moringa leaves supplemented with nutrition education and a group that received nutrition education only for 4 weeks. The test results obtained an average weight gain in the first group was 0.79 kg and in the second group was 0.37 kg. The study conclude that meatballs consumption and nutrition education can increase nutritional intake and weight gain in wasted toddlers
Analysis of Physicochemical Properties and Volatile Compound of Black Sapote Wine Produced with Saccharomyces cerevisiae Yeast
This study aimed to develop black sapote wine and alayze its physicochemical properties and volatile compounds. The wine was produced by fermentation using Saccharomyces cerevisiae yeast at different concentrations (0%, 0.5%, and 1%) for seven days. Physicochemical analysis showed pH values of 4.35%, 3.56%, and 3.83%, and titratable acidity values of 0.09%, 0.25%, and 0.2%. Gas Chromatography-Mass Spectrometry (GC-MS) analysis identified several volatile compounds, including alcohols, organic acids, alkanes, and esters. The alcohol group comprised of 20.28%, 61.57% and 34.54%, organic acids 25.5%,14.2%, 20.94%, alkanes 0.69%, 4.44%, 30.61% and esters 2.19%, 12.67%, 6.64% respectively. Fermentation in the production process of black sapote wine has been successful based on its acidity and volatile compound profile
Tempeh as a Cultural Heritage in Indonesia: Intergenerational Perception
This study aimed to assess how people perceive tempeh. The study was conducted using an online self-administered questionnaire among 340 respondents aged between 11 and 58 years. The results showed that respondents perceived tempeh as an Indonesian cultural food (97.70%), a highly nutritious food (99.41%), and a superfood (86.47%), and 51.76% of respondents consumed 50 g of tempeh daily. Most respondents perceived tempeh to have economic impact (91.7%) and used it as a food for celebrations (95.29%), and there was no significant differences between generations (p<0.05). The conclusion is that tempeh is perceived as an Indonesian cultural food that has cultural, economic, and nutritional value
Properties of an Emulsion Gel with Gracilaria fisheri Agar, Whey Protein Isolate and Black Seed Oil
Gracilaria fisheri agar has beneficial potential for human health; however, its application in food products needs to be incorporated into an emulsion gel due to its low gel strength. A response surface methodology with a central composite design was utilized to prepare emulsion gels containing 4–6% Gracilaria fisheri Agar (AGF), 4–8% Whey Protein Isolate (WPI) and 10–20% Black Seed Oil (BSO). The optimum levels of AGF, WPI, and BSO were determined to be 6%, 4% and 10% respectively to give the preferred gel strength of 966.24 g, water holding capacity of 96.12%, and DPPH antioxidant activity of 59.16%
Association of Central Obesity and Salty Food Consumption with Small Dense LDL-C in Middle-Aged Indonesian Adults
This study aimed to investigate the association between central obesity and salty food consumption with the elevated of Small Dense Low-Density Lipoprotein-Cholesterol (sdLDL-C) among middle-aged Indonesian adults. Dietary behavior, together with the presence of obesity, leads to an increase in sdLDL-C. The study selected 8,611 subjects aged 49–64 years, from secondary data of a population-based survey conducted by the Ministry of Health of the Republic of Indonesia. The sdLDL-C concentration was determined using the Sampson equation. A significant association was observed between salty food consumption (OR=1.20; 95% CI: 1.04–1.38), general obesity (OR=2.59; 95% CI: 2.23–30), central obesity (OR=2.39; 95% CI: 2.11–2.70) and sdLDL-C. Diabetes and hypertension were positively associated with sdLDL-C, whereas Physical Activity (PA) was negatively associated with sdLDL-C. This study showed that obesity and consumption of salty food is associated with the increase of sdLDL-C, whereas PA is associated with the decrease of sdLDL-C
Relationships between Nutritional Status, Beverage Consumption Habits, and Disease Frequency in High School Students
This study aimed to analyze the relationship between nutritional status, beverage consumption habits, and disease frequency in high school students. Data were collected through an online questionnaire to explore the characteristics of the subjects: weight, height, beverage consumption habits, and disease frequency. The subjects were 78 students at SMA Muhammadiyah 25 Pamulang, Banten. This study has discovered nutritional status and nutritious beverage consumption habits are not related to disease frequency (p>0.05). Meanwhile, herbal beverage consumption habits are related to disease frequency (p<0.05). The herbal drink contains antioxidants that can improve immunity and cause less frequent disease
Nutrient Profiling of Snack Bars According to Indonesian Healthier Choice Criteria
This study aims to evaluate the nutrient profiling profile of snack bars according to Indonesian healthier choice criteria for healthier choice. Snack bars were purchased and classified into soy-, cereal-, and other -based snack bars. Nutritional information were was compared with the healthier choice criteria. Soy-based snack bars had the highest protein content (20.94±6.12 g/100 g) compared to others-based snack bars (11.21±5.13 g/100 g) and cereal-based snack bars (8.36±3.55 g/100 g) with p<0.001. Others-based snack bars (15.30±5.54 g/100 g) had the highest dietary fiber content compared to soy-based (8.91±2.11 g/100 g) and cereal-based snack bars (7.06±3.26 g/100 g) with p<0.001. Only two snack bars passed the criteria as “healthier choice” while others need to be reformulated to pass the criteria
Nutrition Adequacy Level and Stunting in Children Aged 48‒59 Months in the Coastal Area of Kendari City, Indonesia
This study aims to explore the relationship between nutritional adequacy and height-for-age z-scores (HAZ) in toddlers in Kendari City\u27s coastal region. This cross-sectional analysis involved 96 children aged 48‒59 months. Height measurements was converted to HAZ, while a 24-hour dietary recall was conducted to assess nutritional intake. Data were analyzed using Pearson product moment test and multiple linear regressions. The study revealed a significant HAZ correlation with calcium, iron, and copper adequacy levels (p<0.05). Notably, in Kendari City\u27s coastal area, stunting is found in toddlers aged 48‒59 months due to nutritional inadequacy
