    短期大学調理系の実習(食品開発実習)において反転授業を試みた事例報告

    application/pdf本FD研究の目的は調理系の実習において反転授業の効果を明らかにする事であった.本学の食品開発実習を履修する47人を対象とした.この実習は1班あたり5~6人に分かれ,班単位で缶詰やレトルト,瓶詰などの殺菌済みの加工品を作るものである.予習動画は,前年度以前にデジカメにて撮り貯めた動画データを元にWindows Movie Makerを用いて制作した.動画の内容は,実習製品が材料から完成するまでのダイジェストを5分程度にまとめた.動画にはテロップを入れ,何の作業中であるのかの簡単な解説を加えた.予習動画はwmv形式で作成し,基本的に各実習の一週間前に CD-R にダビングしたものを配布した.実習の中間期 (第8回) において,実施した全5回 (第2~5回,第7回) の反転授業に対するアンケート調査を実施した.結果として,46人より回答を得たアンケートにおいて,平均視聴率は89.1~100%,平均視聴回数は1.1~1.6回であった.視聴時期は実習の前日(54.3~68.9%) が,視聴場所は自分の部屋 (76.1%) が最も多かった.自由意見では 「作業の流れが理解できた」が最も多かった (36.2%).なおこの実習における学生の満足度は高かったが,重回帰分析の結果,実習中に各人が感じていた 「作業効率の上昇」 が満足度向上に繋がっていた事が明らかとなった.本学は資格系のコースが多く,必然的に実習が多くなっている.国内の高等教育では主として四年制大学で普及している反転授業であるが,今回実習系の科目においても反転授業は有効であったため,短期大学でも実習系の科目などをきっかけに実施を検討していく必要があると考える.departmental bulletin pape

    Time Course Changes in Freshness of Ostrich Meat in Cold Storage

    application/pdfContents of adenosine 5'-triphosphate (ATP) and its related compounds were examined in ostrich meat stored at 4℃ for 16 days. The amounts of ATP and adenosine 5'-monophosphate (AMP) were about 0.1μmol/g meat at 4 hours in the storage, and the former disappeared on 2 days after and the latter tended to decrease in the experimental storage time. Adenosine 5'-diphosphate(ADP) level was maintained to be about 0.3μmol/g meat throughout the experimental period. The amount of inosine 5'-monophosphate (IMP) which was a product analyzed from ATP was about 3.3μmol/g meat constantly during the first 4 days, after that sharply decreased to 1.3μmol/g meat during 16 days in the storage. That of inosine(HxR) which was the product from IMP tended to increase to 1.6μmol/g meat during the first day and then unchanged until the 10 days in the storage, after that it decreased to 0.9μmol/g meat on 16 days of the storage. On the contrary, hypoxanthine (Hx) and xanthine (X) concentrations increased gradually in the storage, to about 0.6 and 0.9μmol/g meat on the 16 days, respectively.  The K value was calculated by the following:K (%)=(HxR+Hx)×100/(ATP+ADP+AMP+IMP+HxR+Hx).     高校生を対象とした性教育を実施した助産学生の学びと課題

    application/pdfA短期大学で助産学を学んでいる学生 (以下, 助産学生という) が高校生に性教育を実施する機会を得た.実施後,同意を得られた助産学生6名の学びの結果から今後,助産学生が高校生を対象とした性教育を効果的に行うための検討を行った.事前準備では高校生を対象とすることを意識し内容も考えられていたが,具体的な実施内容と方法が曖昧で戸惑いも見られた.性教育は高等学校の指導要領に基づいた内容調整が必要であり,依頼者側 (高等学校) との調整の場が必要であることが明らかとなった.授業内容では女子生徒を対象とした助産学生の方が,ライフプランに関する内容まで広く話題に上がっていた.男子生徒を対象とした助産学生は運営に困難を感じており,男子生徒の興味がどこにあるのか把握が難しかったと考えた.異性への理解を深め,正しい知識の提供と生命の大切さを効果的に伝えられる授業内容と技術習得の教育を検討していく必要性が示唆された.departmental bulletin pape

    抗酸化食材摂取をテーマとした日本人自転車ロード選手へのブログを用いた個人栄養サポート研究

    application/pdfAbstract:It is important for athletes who need stamina to take antioxidants. There are many findings that they can reduce muscular pain and fatigue. They are however,usually taken in the form of supplements and there are few studies on the nutritional instructions to take antioxidant-rich food.This study gave a Japanese male amateur bicyclist nutritional instructions through his team's official blog to increase antioxidant concentrations in his blood. The antioxidants assisted him in diminishing his muscular pain and fatigue. The blog-based instructions were followed seven times in one month. In each survey, the cyclist posted a photograph of his dinner on the blog. A nutritional adviser replied with the meal's nutritional calculations and advised him to consume antioxidant-rich foods like vegetables, fish, and nuts. The bicyclist then replied to the advisor's recommendations.Eating habits, blood test results, and fatigue level were compared before and after the survey.The result showed that the bicyclist improved his nutritional balance by eating more antioxidant-rich food. The subject's serum creatinine-kinase and fatigue level decreased after instructions.In conclusion, even though we studied only one individual, our data indicated that blog-based nutritional instructions for antioxidant-rich food can be an effective methodology for Japanese male bicyclists.departmental bulletin pape

    女子短期大学生の運動有能感の実態と関連要因の検討 ―身体的有能さの認知と受容感に着目して―

    application/pdfAbstract:This study examined women's junior college students' sport competence and the factors influencing perceived physical competence and peer and teacher acceptance. A total of 100 freshmen-all members of the Early Childhood Care and Education Department (mean: 18.14±0.45 years)-from a women's junior college participated in the study. A survey was conducted to assess the students' sport competence (perceived physical competence, feeling of receiving acceptance by peer and teacher, and locus of control for exercise), affection for exercise, pleasure in exercise, and extracurricular activities at junior or high school. Further, the effect of the students' locus of control for exercise, affection for exercise, pleasure in exercise, and extracurricular activities at junior or high school was investigated using multiple regression analyses.The results were as follows. While the students showed a decreased awareness of perceived physical competence and an increased awareness of feeling of receiving acceptance by peer and teacher. For women's junior college students, their locus of control for exercise, affection for exercise, and extracurricular activities at junior or high school were significant and direct predictors of their perceived physical competence. In relation to their feeling of receiving acceptance by peer and teacher, locus of control for exercise and pleasure in exercise were significant and direct predictors. Therefore, in order to raise perceived physical competence and feeling of receiving acceptance by peer and teacher, it is especially important for women's junior college students to raise their locus of control for exercise.departmental bulletin pape

    甘茶と一緒に食べる菓子作りに関する研究 ―子どもに食べさせる保育者の視点から―

    application/pdfAbstract:Although hydrangea tea is one of the oldest teas Japanese people have been drinking since the Edo period, it is not the number one variety young people who have been eating sweets since from childhood enjoy. Our research goal was to find out which sweets go well with hydrangea tea so that children will start to drink it.We surveyed seventy-three junior college students who study to be childcare workers with questionnaires concerning food for children. The questionnaire results showed a significant positive correlation between childhood and adulthood in their preference of hydrangea tea. Another result showed that the students strongly desired sweets to go well with hydrangea tea more than the sweets mixed with hydrangea tea.They specifically requested sweets that were Japanese, chilled, but not too sweet.Based on the questionnaire results, we researched sweets that we think would correspond well to hydrangea tea. We developed two Japanese sweets of manjyu (steamed bun with red-bean paste inside) and yashouma (salty rice dumpling), and two western sweets of cookies and sweet potatoes. The sensory test concerning food for children results taken by the students as childcare workers stated that they preferred manjyu to yashouma between the two Japanese sweets in terms of flavor, ease of consumption, and quality of sweetness, whereas they did not show a significant preference between cookies and sweet potatoes.In conclusion, manjyu is recommended more than yashouma as a Japanese sweet for children to enjoy hydrangea tea with. Both cookies and sweet potatoes were preferred as western sweets. Our next step is to have children actually taste those sweets with hydrangea tea and evaluate the results.departmental bulletin pape

    児童生徒の心因性の健康相談に対して養護教諭が抱えている困難とその対応

    application/pdf第一章においては, 健康相談における養護教諭の役割がますます期待されている中,児童生徒の心因性の健康相談 (以下, 心因性相談) において, 養護教諭がかかわる上での現状と困難を明らかにし, 児童生徒を支援する養護教諭の役割と心因性相談のあり方を検討することを目的とした. 研究方法は, 小学校, 中学校の養護教諭10名を対象に,インタビューを行った. その結果, 養護教諭が抱えている心因性相談の困難には,《児童生徒は訴えにくい》《保護者の協力が得られない》《チームでの支援体制の不備》《関係機関との連携不足》《養護教諭の力量不足》があった. それに対して,《教職員と連携する》《関係機関と連携する》《クラスメートから読み取る》《客観的データから読み取る》《時間をかけて経過を観察》《保護者との連携》《自己開示できる配慮》の対応を行い, 養護教諭独自の対応を編み出していた. また, 養護教諭として望まれる心因性相談のあり方は,《普段と違う》など児童生徒が発するサインを見逃さないで,【心因性と判断する根拠】があった場合,《児童生徒は訴えにくい》という現状を十分に認識した上で, 児童生徒を取り巻く関係者と連携し相談枠を広げ, 児童生徒が自律していけるような支援をしていくことであると示唆された. 第二章においては, こうした調査結果及び考察の趣旨を踏まえ, 「健康 (病気) とは何か」 という哲学的考察が試みられる. なんとなれば, 養護教諭が関係者との連携をはかるにあたってその基礎的共通前提となるべき 「健康」 の意味が不明瞭であって, それが 「困難」 の原因となりうるからである. この試論により, 現状では, 「健康」 には主観的・相対的定義が求められると推測され, 養護教諭が抱える 「困難」 を解決することに向けた基礎的な試論と位置づけられる.departmental bulletin pape
