Microbiological and Chemical Characteristics of Smoked Tuna
Smoked fish is traditionally processed by fish through an open process of hot smoked. Smoked fish process in Indonesia, especially in Maluku, is still carried out traditionally with capital and small business scale so that the use of tools is still simple, besides the sanitation and hygiene of handling and processing are still low. The raw material used in this study is smoke tuna loin produced by Dusun Air Manis,Laha village. This study aims to determine the microbiological and chemical quality of the smoked fish that was produced from Dusun Air Manis, Laha village. The test parameters carried out consisted of microbiological tests: 1) Total microbes on frozen tuna loin, washing water, immersion water, bamboo, smoked racks and smoked tuna, 2) Escherichia coli test on frozen tuna loin, washing water, soaking water, smoked tuna, 3) Salmonella test on smoked tuna. Chemical analysis of smoked tuna included moisture and pH. The results showed that the total plate count (TPC), Escherichia coli and Salmonella on tuna loin smoke still met microbiological standards according to SNI 2725: 2013. Moisture of smoked tuna was 59% and still meets the quality standard according to SNI 2725: 2013 which is a maximum of 60%. The pH of smoked tuna was 5.8
Characteristics of Peel Off Gel Mask From Seaweed (Eucheuma cottonii) Porridge
The aim of this study was to determine the best concentration of E. cottonii seaweed porridge in the formulation of peel off gel masks. The main materials used in this study were E. cottonii and other basic substances of peel off gel mask. The analytical methods used were the total microbial and antioxidant test on the E. cottonii slurry preparation. Mask preparations were analyzed for physical stability, pH, duration of preparation, drying, viscosity and homogeneity. The experimental design used was a Completely Randomized with four treatments by adding E.cottonii porridge 0%, 10%, 15% and 20% respectively with two replications.The results showed that the best peel off gel mask was formulation with the addition 20% of E.cottonii. Microbes were not found in E. cottonii porridge. The antioxidant activity of E. cottonii porridge had IC50 value of 137.35±0.35 μg / mL. Consumer acceptance of products through sensory testing in the category of likes. The peel off gel mask has good physical stability, proven by no changes in color, odor as well as gel texture. The pH value of the preparation of peel off gel mask is in line with SNI and pH balance of normal human skin. The best viscosity value of peel off gel mask is 14,003 cps. The time needed for the mask to dry for an average of 25 minutes and homogeneity is characterized by the absence of secondary particle aggregation
Effect of Pectin on the Characteristics of Edible Film from Skin Gelatin of Red Snapper (Lutjanus argentimaculatus)
The aim of this research was to determine the effect of addition of pectin on characteristics of edible film from gelatin of red snapper (Lutjanus argentimacalatus) skin. Concentration of pectin used were 0%, 0.2%, 0.4%, 0.6%, 0.8% and 1%. Water content, thickness, tensile strength, elongation, and the transmition rate of the water vapor of edible film were analysed. Results from analysis of variance showed that different concentration of pectin significantly affected (P<0.05) on the water content, thickness, tensile strength, elongation, and transmition rate of water vapor of edible film. Therefore, it was suggested that addition of 0.6% of pectin showed a good quality of edible film and in accordance with the Japan International Standard (JIS)
Snakeskin Gourami (Trichogaster pectoralis) Stick High in Protein and Calcium as of Fish Product Diversification
Snakeskin gourami (Trichogaster pectoralis) is a freshwater fish often consumed by the people of South Kalimantan. The meat and the bones of this fish can be processed into protein and calcium-rich fish sticks. This study was aimed to analyze the sensory and chemical characteristics of snakeskin gourami stick. The meat and bones of the fish were added into sticks ingredients with the proportion of 0; 20; 40 and 60%. The results showed that the addition of fish meat and bones significantly affected the sensory characteristics particularly on the aroma and the taste of fish sticks, as well as the chemical quality including protein, fat, carbohydrate, water, ash, and calcium content. The sticks made with 60% of the fish meat and bones were more preferred and gave better chemical characteristics than those made with the other proportions
Effects of Alkaline Pretreatment on the Characteristics of Collagen from Mangrove Conch (Telescopium telescopium)
The horn snail (Telescopium telescopium) is a gastropod living in mangrove forests and is considered as a pond pest. This study was aimed to determine the effects of alkaline and acetic acid pretreatment on the characteristics of collagen from the horn snail meat. The immersion of the meat in NaOH 0.20% for 10 hours gave a significant reduction in non-collagen protein content (α = 0.05). Further immersion with acetic acid 0.05% for 6 hours also significantly affected (α = 0.05) the swelling degree and the collagen solubility. The extraction yield was 1.08±0.21%, with 72.23% of brightness, and the viscosity was 16.34 cP. The proline content of the collagen was 9.21%
Formulasi dan bioaktivitas suplemen tablet berbasis Spirulina dan hidrolisat kolagen kulit ikan nila
Spirulina is a microalga known as a superfood which contains high protein and is used in cosmetics, foods, and supplements industry. Collagen hydrolysate is the result of hydrolysis of collagen by protease. This study was aimed to determine the antioxidant activity and inhibition of tyrosynase from Spirulina, collagen hydrolysate and tablet formulated by combination of Spirulina and collagen hydrolysate. This research was conducted in three stages. The first stage was the extraction and hydrolysis of tilapia skin collagen, while the second stage was culturing and harvesting of Spirulina, and the third stage was determination of tablet formulation based on Spirulina and collagen hydrolysate followed by analysis of the antioxidant activity and inhibition of tyrosinase by selected tablet. Three formula with different ratio between Spirulina and collagen hydrolysates namely formula A (25%:53.75%), formula B (28.125%:50.625%), formula C (31.25%:47.5%) and additive such as vitamin C (12.5%), talk (1.25%), magnesium stearate (0.625%), aerosil (1.875%), avicel (5%) were developed. The result showed that formula A was the selected formula meeting the requirements of Ministry of Health based on the physical characteristics. The antioxidant activity of tablet A was 843 ppm and the tyrosinase inhibition was 163.56 ppm
Chemical and Microbiological Properties of Buduk, A Commercial Fish Sauce from West Kalimantan
Buduk is a fish sauce prepared by fermenting fresh small fish with various ingredients such as sugar,roasted rice, vinegar or wine. This study was aimed to assess the physicochemical and microbiologicalproperties of commercial buduk in the Province of West Kalimantan. The Buduk had pH 5-55, moisture52.35%, salt 1.96%, titrated acid 10.80%, free amino nitrogen 1.83 mmol/g, free fatty acid 17.96%, ethanol0.95%, total of mesophilic bacteria 4.81 log CFU/g and lactic acid bacteria 2.09 CFU/g, but no pathogenicbacteria detected. Each commercial buduk showed different physicochemical properties probably causedby variation in recipe of each producer. Protein Fortification in Melarat Crackers with Protein Hidrolyzate Flour of Tilapia (Oreochromis niloticus) Meat
Melarat crackers is typical crackers in the Priangan area, West Java that rich in carbohydrate but poor in protein. The purpose of this study was to determine the level of addition of tilapia meat protein hydrolyzateflour which is appropriate in the manufacture of melarat crackers to produce the most preferred product, to determine the chemical composition and the level of cracking of the preferred product. The method used was an experimental study using a completely randomized design of four treatments and repeated 4 times. The four treatments were 0%, 5%, 10% and 15% levels of addition of flour protein tilapia hydrolyzate from tapioca flour used. The parameters observed included the chemical composition, the level of organoleptic preferences and the cracking level of melarat crackers resulting from the various treatments. The results showed that melarat cracker with the addition of 10% tilapia protein hydrolyzate flour was the most preferred by panelists. The content of water, protein, fat, ash and carbohydrates of these melarat crackers was 5.99%; 5.50%; 0.12%; 5.63%; and 82.79%. The level of cracking was 55.3%
Enhancement of Textural Quality From Daggertooth Pike Conger Fish Surimi with Sodium Tripolyphosphate and Transglutaminase Activator
Dagger-tooth pike conger fish (Muraenesox cinerus) is known to have high edible portions and white meat, thus can be used as a surimi raw materials. However, the textural quality of this fish meat is relatively poor after washing process of surimi. This reserch was aimed to analyze the effects of TGase activator and STPP addition to increase the textural quality of surimi malong. The method used is a factorial experiment with the addition of activator TGase 0.2; 0.4 and 0.6 and STPP at concentrations 0; 0.2; 0.5 and 0.8. Parameters observed were texture profile analysis (TPA), water holding capacity (WHC) folding test, bite test, and scanning electron microscopy (SEM). The results showed that the addition of STPP and activator TGase (Ca) has significant effect on increasing the hardness, fracturability, chewiness, gumminess, bite test and the folding test. Furthermore, microscopies structure (SEM) of malong surimi showed smooth and solid surfaces
Determination of Formaldehyde Lizardfish (Saurida tumbil) during Freezing Storage
Formaldehyde (FA) in fish is formed as a result of fish quality decreasing, in particular the freshness of fish. The level of fish freshness can not be increased but maintained. Quality of fish can be maintained by proper handling processes, one of them is handling with low temperatures. The purpose of this study was to determine the formation process of FA lizardfish (Saurida tumbil) during freezing storage. The treatments applied were gutted and ungutted. Observations were made every 2 weeks for 22 weeks. The parameters measured were sensoric, pH, total volatile base (TVB), trimethylamine (TMA), formaldehyde (FA) and dimethylamine (DMA). The results obtained showed that FA formed after two weeks. Levels of FA formed in gutted lizardfish are 12.96 ppm and 17.77 ppm for ungutted. Formaldehyde (FA) formation occurs when the condition of the fish is still fresh with TVB content of below 20 mg N/100 g. Dimethylamine (DMA) levels when FA is formed of 7.99 ppm for gutted lizardfish and 5.50 ppm for ungutted. Formaldehyde (FA) formation also accompanied by the increation of other decay indicators
