รายงานวิจัย -- มหาวิทยาลัยเทคโนโลยีราชมงคลพระนคร, 2559This research aims to 1) develop pork roll product from cultivated banana flesh and banana flour for vegetarian food business; 2) develop suitable and unique packaging for food product using cultivated banana flesh and banana flour instead of meat; and 3) transfer technology in developing food product using cultivated banana flesh and banana flour instead of meat for vegetarian food business. Regarding suitable amount of
banana flour used in place of isolated soy protein in pre-emulsion preparation, from 4
levels of banana flour used at 0, 10, 15, and 20 percent, it was found that increasing
amount of banana flour used in place of isolated soy protein caused significant increase
of L* value in the product (p<0.05). Moreover, hardness and flexibility in texture profile
of the product were not significantly different from the control product (p>0.05). In
terms of sensory evaluation, tasters gave the highest score for meat-emulated reducedemulsion
product that used banana flour in place of isolated soy protein at 15 percent. For packaging of pork roll product, it was found that Model-A package was the most suitable, with recommendations to add tight-closed material to prevent contamination from outside and to print expiry date as well as food safety certified sign. Furthermore, consumers’ overall satisfactory in packaging model was found to be highest at the mean of 4.31. Finally, transferring of technology in a form of training workshop in developing
food product from banana flour for vegetarian food business for Ban Lak Khon Bakery Housewife Community Enterprise and entrepreneurs in Nonthaburi province showed that post-training test scores were significantly higher than pre-training scores at .05 level. This indicated that technological transfer in a form of real-practice workshop provided increasing knowledge in developing food product from banana flour for vegetarian food business. Moreover, it was also found that trainees were highly satisfied in both overall service (mean of 4.85) and by-aspect: servicing staff (4.93), procedure/steps (4.87),

“Everyone does it”, to assess the media suitability of an interactive short film “Everyone
does it” and to assess the audience's satisfaction with the medium of the interactive short
film “Everyone does it” using 2 groups of samples 1) a group of experts to assess the
suitability of 3 people, divided into experts. opus and editing; 2) a group of high school
students Nawaminthrachinuthit Benchamarajalai, Mathayomsuksa 6, Room 2, 30 people
were obtained by using a specific method. by using questionnaires to collect data The
statistics used to analyze the data were mean and standard deviation. The results showed
that Interactive short film “Everyone does it” was overall very appropriate (=4.20, SD=0.53)
and viewers towards interactive short film medium. “Everyone does it”, overall satisfaction

รายงานวิจัย -- มหาวิทยาลัยเทคโนโลยีราชมงคลพระนคร, 2564The research on “News content management of mass media In the fake news
situation” aims to study the management of content and news content and
reporting form of mass media in a fake news situation. The study is qualitative and
employs an in-depth data interview. In this research, the interviewees are the top,
middle, and operational management of Thairath Online, Dailynews Online, Thai Post
Online, and Manager Online, who are responsible for organizing the news program for
the public report.
The finding revealed that in respect of the content management of mass
media in fake news situations, the mass media organization that plays a role in
setting the news agenda should prudently verify the accuracy and completeness of
the news content prior to reporting and take into account the role and duty of the
news report.
Regarding the news reporting, the findings indicated that the mass media
organization must strategically manage the organization to be related and
compatible with the changing external environment, both internal and external
factors relating to the production of the mass media’s news programs to be used for
analysis, in order to ensure that the organization can manage and attract the
attention.
In addition, the mass media must be cognizant of the effect they have on the
way of life of society members by widening and narrowing the communication gap
and by encouraging viewers to engage with the media rather than adopting and
blindly trusting the substance of false news.Rajamangala University of Technology Phra Nakho
การพัฒนาแอปพลิเคชัน 3 มิติ สำหรับการเรียนการสอนภาษาอังกฤษแบบบูรณาการด้วยเทคโนโลยีดิจิทัลและการฝึกปฏิบัติจริง
รายงานวิจัย -- มหาวิทยาลัยเทคโนโลยีราชมงคลพระนคร, 2564It is a must for Thai citizens in this digital era to be able to absorb internationalization skills to survive in the connected world. The study entitled "The development of a 3D application for teaching English with integrated digital technology and practical training" aims to develop a 3D application for integrated English teaching with digital technology and practical training. Academic literature about 3D application systems, the achievability of problems, and instructional system design frameworks were reviewed. Additionally, in- depth interviews were conducted with 10 key informants using a snowballing technique. The informants were English-teaching experts, teachers, and social science students. The main findings from the in- depth interviews revealed that most participants did not use HMD VR to learn and practice English language skills, while traditional styled teaching was used more often. There had not been much technology-integrated learning compared to language- related games and applications were used. Moreover, VR was not applied much to English learning. Accordingly, with the devices of Unity, Oculus, Blender, and C# language, the development of 3D applications for teaching English with practical training has been developed as an appropriate and optional tool for Thai students with an educational opportunity in English communicative skill practice in the virtual world and accessibility to the useful technology.Rajamangala University of Technology Phra Nakho

รายงานวิจัย -- มหาวิทยาลัยเทคโนโลยีราชมงคลพรระนคร, 2561The purpose of this study is to study the statement of problems in English writing and its relevant factors. The population and sample are students in the faculty of Business Administration in Business English Program Rajamangala University of Technology Phra Nakhon. The samples were 116. The research methodology is suNey research which is mixed method using both qualitative and quantitative method. The research instrument is questionnaire in English writing problems. The analysis of data conducted both descriptive statistics which are frequency, percentage, average, and standard deviation and inferential statistics which are student-t and F statistics to analyze pair statistical differentiation of Shaffe method and the analysis of correlation coefficient.
The results of the study can be depicted as follow: the highest frequency of the sample are sophomore students, the high school grade of 12, average GPA in the range of 2.50-3.50, having experience in a Language school. The descriptive statistics of the sample' parents are self-employed, average monthly income of 30,000 baht. The results about English writing problems are: incentive to write English at a high level, English writing problems of overall sample at a high level.
Sort the problems as follows: sentence structure, grammatical and the use of words. Factors related to the writing problems in English showed that gender and parents' occupation are statistically significant at 0.05 in writing English. The motivation to write English is related to problems in writing English without statistical significance.Rajamangala University of Technology Phra Nakho

การพัฒนาผลิตภัณฑ์พานาคอตต้าน้ำนมธัญพืชเสริมซอสสับปะรดภูเก็ต
วิทยานิพนธ์ (คศ.ม.) -- มหาวิทยาลัยเทคโนโลยีราชมงคลพระนคร, 2564The objectives of this research were to 1) select a basic cereal formula suitable for milk production from cereals. 2) Study the appropriate amount of sugar used in the development of panna cotta formula from cereal milk. 3) Study the appropriate amount of sweetener (erythritol) in the Phuket pineapple sauce recipe. 4) Study the proper ratio of Phuket pineapple sauce for topping on cereal milk panna cotta. 5) Study the nutritional value of panna cotta Topped with Phuket pineapple sauce. The sensory quality was assessed using a 9-point liking score (9 - Point Hedonic Scale) tasting method. It was found that 1) the tasters accepted the grain ingredients used in the production of cereal milk formula containing 500 g of corn. and millet, soybean,
mung bean, black bean, red bean, and white bean, using the same amount of 50 g of each type. 2) The tasters accepted the ratio of 10% sugar to the ingredients in the cereal milk panna cotta recipe. 3) The tasters recognized the use of 6% erythritol of pineapple in the Phuket pineapple sauce recipe. 4) The tasters recognized the ratio of Phuket pineapple sauce in the cereal milk panna cotta recipe of 1: 2 or the amount of 10g of sauce for topping 20g of panna cotta per cup. The scores of liking for appearance, color, smell, taste, texture and overall liking were 8.2, 8.07, 7.77, 8.27, 8.00 and 8.30, respectively, which were in a high level of liking. 5) The nutritional value of basic panna cotta, panna cotta from cereal milk formula and panna cotta from cereal milk with Phuket pineapple sauce formula had protein content of 3.17%, 2.54%
and 2.79 %, respectively. Carbohydrates were found to be 27.44%, 16.03% and 21.63%, respectively. Fat content were 8.17%, 0.44% and 0.27%, respectively, and fiber were 0.00%, 0.55% and 0.71%, respectively. Therefore, cereal milk panna cotta topped with Phuket pineapple sauce recipe is suitable for the health-conscious consumers due to its reduced fat content and in Phuket pineapple sauce using erythritol as a sweetener grammar the energy of nutrients. It is also suitable for consumers who are allergic to milk as it does not contain cow's milk and also has good nutritional value.Rajamangala University of Technology Phra Nakho
