Comprehensive analysis of brewed tea: Boron content, total antioxidant and oxidant capacity, oxidative stress, and ph value
Tea is widely recognized as the most consumed beverage in the world after water. In recent years, the connection between tea and health has gained growing attention as a signifcant research topic. In this study, we evaluated the relationship between tea and health by analyzing the boron content, total antioxidant capacity (TAC), total oxidant capacity (TOC), oxidative stress index (OSI), and pH levels of teas commonly consumed in Türkiye. A total of 42 samples were created from various tea brands and diferent tea types that are widely consumed in Türkiye. The determination of boron in pulverized and brewed tea samples was carried out using the carminic acid method. Additionally, boron transfer was determined in brewed teas. Brewed tea samples were also examined in terms of pH, TAC, TOC, and OSI. It was determined that all teas contained an average of 11.73 mg/L boron, the amount of boron in domestic teas was lower than in imported teas. It was determined that boron transfer into brewed tea was approximately 30%. The pH values ranged between 4–5. No diferences were detected in terms of TAC, TOC, and OSI. Our research shows that tea consumption is safe in terms of boron levels and helps meet daily needs. The OSI of teas is less than 1, so their antioxidant efects can be considered quite good. However, it should be noted that excessive tea consumption can lead to the demineralization of tooth enamel due to low pH levels
Türk çeviri dizgesinde yeniden yerlileştirmeye bir örnek: Texier’in Küçük Asya’sı
Anatolia, as the cradle of civilizations, with its rich cultural, historical, and natural heritage, has attracted not only the peoples living on its lands but also travelers, researchers, and scholars from different geographies. This study examines the translations of French archaeologist Charles Texier’s Asie Mineure, written after his travels and observations in 19th-century Anatolia, into Turkish. The Turkish translations of the work are analyzed within the framework of the concepts of re-domestication, cultural textless back translation, and paratextuality. Originally published in French in 1839, the work was translated into Ottoman Turkish in 1923, and later, in 2002, this version was revised, simplified, and adapted into Modern Turkish Language. During this process, various paratexts were added, and editorial modifications were introduced. A striking aspect of the study is that the significant temporal gap between the two translations is reflected in both the linguistic structure of the work and the translation policies applied. Comparative analysis suggests that the agents of the modern Turkish translation system, finding the domestication of the first translation insufficient, may have adopted a re-domestication policy in the second translation. Ultimately, the study argues that it makes an important contribution to understanding the rich translation and cultural activities spanning from the late Ottoman period to the early Republican era, and that it constitutes a valuable case for translation studies. Thus, the work is regarded not only as a written and linguistic translation product, but also as a source reflecting the diversity of translation policies within their historical context.
Introduction: COVID-19 has been associated with various neurological complications, including cognitive impairments such as memory deficits, attention difficulties, and executive dysfunction. These symptoms raise concerns about potential long-term effects, particularly in individuals with preexisting neurodegenerative conditions. Emerging evidence suggests that systemic inflammation, blood-brain barrier (BBB) dysfunction, and neuroinflammation may contribute to cognitive decline in COVID-19 patients. However, the impact of COVID-19 on functional brain connectivity, particularly in dementia patients, remains unclear. This study aims to investigate the differences in functional connectivity across different frequency bands (delta, theta, alpha, beta, and gamma) in dementia patients with and without a history of COVID-19 (D-COVID and D-nCOVID) compared to a healthy control (HC) group. The study explores whether COVID-19 accelerates neurodegenerative processes by disrupting functional brain networks. Methods: Functional connectivity was assessed using electroencephalography (EEG)-based network analysis in three groups: D-COVID, D-nCOVID, and HC. Connectivity metrics were compared across frequency bands, with a focus on local efficiency (LE) and global network alterations. The Kruskal-Wallis test assessed statistical significance, while the Dunn test was used for post-hoc analysis. Results: Findings indicate a significant reduction in functional connectivity across multiple brain regions in dementia patients, with the D-COVID group exhibiting more pronounced declines. The observed decrease in connectivity suggests that COVID-19 may accelerate neurodegenerative processes. Additionally, the HC group demonstrated stronger connectivity and higher LE metrics, highlighting the widespread impact of dementia on brain networks. Conclusion: These findings support the hypothesis that COVID-19 contributes to cognitive decline by exacerbating neurodegenerative mechanisms. The disruption of functional brain connectivity observed in D-COVID patients aligns with previous studies suggesting that SARS-CoV-2 may indirectly promote neuronal degeneration. Further longitudinal studies are needed to determine the long-term cognitive consequences of COVID-19 and potential therapeutic interventions to mitigate these effects
Sustainable valorization of yellow cherry juice using natural propolis and non-thermal techniques
This study investigated the effects of propolis enrichment and thermosonication conditions on bioactive components, amino acid profile, antioxidant capacity and sensory properties of yellow cherry juice. Temperature (40–50°C), time (4–10 min), amplitude (40–80%) and propolis concentration (40–80 mg/100 mL) were optimized as independent variables using response surface methodology (RSM). Principal component analysis (PCA) analysis revealed that thermosonicated samples (TS-YCJ) were positively correlated with functional components such as chlorogenic acid, caffeic acid, epicatechin and total soluble solids (TSS). The malic acid content reached its highest level at 1,174.38 mg/L in thermosonicated optimized propolis yellow cherry juice (TS-YCJ), whereas this value remained at 1,078.34 mg/L in the pasteurized samples. Thermosonication application significantly increased the antioxidant capacity measured by total phenolic content (TPC), total flavonoid content (TFC) and DPPH radical inhibition. While TPC content reached 268.72 mg GAE/L in thermosonicated optimized propolis yellow cherry juice samples, it remained at 256.27 mg GAE/L in control samples. Among the phenolic compounds, chlorogenic acid (35.42 mg/L) and caffeic acid (12.67 mg/L) increased significantly after thermosonication. In terms of amino acid profile, components such as proline (42.21 mg/L), glycine (38.45 mg/L) and phenylalanine (24.32 mg/L) were found at higher levels in control samples. In sensory analysis, thermosonication samples received high scores in terms of taste, odor and overall acceptability. High R2 values (98.94–99.80%) reveal the strong explanatory power and reliability of the model. These findings indicate that thermosonication and propolis offer an effective combination to improve the functional properties, sensory quality and phenolic compound profile of yellow cherry juice. The author(s) declare that financial support was received for the research and/or publication of this article.

AI-guided optimization of traditional bulgur pilafs: Enhancing sensory and bioactive properties through rsm-pso modeling
This study aimed to enhance the sensory and bioactive properties of pilafs prepared from three geographically indicated bulgur varieties—Siyez, Firik, and Karakilçik—through an AI-guided optimization approach combining Response Surface Methodology (RSM) and Particle Swarm Optimization (PSO). Different bulgur (130–150 g) and water (350–450 mL) ratios were tested to determine optimal formulations. Sensory evaluation revealed that Firik bulgur pilaf achieved the highest overall acceptability (8.49), while Karakilçik bulgur pilaf scored highest in color (7.68) and aroma (8.58), and Siyez bulgur pilaf received the highest taste score (7.50). In terms of bioactive properties, Karakilçik bulgur pilaf showed the highest antioxidant capacity (75.57% DPPH radical scavenging activity), whereas Firik bulgur pilaf had the highest total phenolic (842.39 mg GAE/kg) and flavonoid contents (6.38 mg CE/g). Color analysis indicated that Siyez bulgur pilaf had the lightest color (L=52.18), while Firik pilaf exhibited the most intense red hue (a=8.12) and Karakilçik pilaf the darkest appearance (L=35.42). PSO-based validation confirmed the accuracy of RSM models by reaching global optima within 40 iterations and minimal deviation from experimental values. This is the first study to apply an integrated RSM–PSO modeling approach to traditional bulgur pilafs, enabling the prediction and optimization of their sensory and bioactive characteristics. The results provide a novel framework for enhancing the nutritional value and consumer appeal of heritage cereal-based foods and support the development of standardized, functional bulgur products for the food industry
