    International audienceLe programme « Perméabilité des espaces agricoles », démarré en 2016, est aujourd’hui terminé. Ce projet, dont l’acronymeest PERMAGRI (www.permagri.fr) a bénéficié du support financier de la région Auvergne-Rhône-Alpes et du fonds européen de développement régional (FEDER). Son objectif a été double : tout d’abord améliorer la connaissance sur la perméabilité écologique des plaines d’Auvergne-Rhône-Alpes et en second lieu appuyer la mise en œuvre des politiques en faveur de la trame verte et bleue en identifiant des solutions innovantes.A qui ce cahier technique est-il destiné ? A toutes les personnes et structures (collectivités, chambres d’agriculture, associations et bien sûr agriculteurs) concernées par les thématiques de la biodiversité, de l’agriculture et de l’aménagement du territoire. S’il aborde des notions complexes comme celles de continuité écologique et de paysage, il s’appuie sur de nombreux exemples concrets et un langage simple. Il ne s’adresse donc pas seulement aux spécialistes mais bien à un public large, qu’il soit décideur, animateur, technicien ou encore en formation

    International audienceThe autonomy for Protein-Rich resources of poultry feed in France is around 40%, due in particular to massive imports of soybean meals, which are economically and nutritionally competitive. The study ofnew French Protein-Rich Feedstuffs (FPRF) within the framework of VOCALIM has shown that technological processes make it possible to better exploit fiber-rich resources (rapeseed and sunflower meals), without affecting the performance or health of the animals. The genetic selection of animals could be a lever to further improve the valuation of these resources. Simulations up to 2023 showed a gain of 17 protein autonomy points in broilers production and a reduction in food costs of 2.8% thanks to these FPRF. Their use allows, according to the scenarios studied, to gain in protein efficiency and to reduce overall environmental impacts.L’autonomie protéique de l’alimentation des volailles est en France d’environ 40%, en raison notamment d’importations massives de tourteau de soja, très concurrentiel sur le plan économique et nutritionnel. L’étude de nouvelles Matières Premières Riches en Protéines françaises (MPRP) dans le cadre du projet VOCALIM a permis de montrer que des procédés technologiques permettent de mieux valoriser des ressources riches en fibres (tourteaux de colza et tournesol), sans altérer les performances ou la santé des animaux. La sélection génétique des animaux pourrait être un levier pour encore améliorer la valorisation de ces ressources. Des simulations à l’horizon 2023 montrent un gain de 17 points d’autonomie protéique dans la filière poulet de chair et une réduction du coût alimentaire de 2,8% grâce à ces MPRP.     This thesis undertakes a long-term follow-up of cheese production under Geographical Indications (GI) in Auvergne (Cantal, Salers, Laguiole, Saint-nectaire, bleu d'Auvergne and fourme d'Ambert), from the end of the Second World War to the present day. Tracing the history of Auvergne cheeses prompts us to question the legacy of a General Supply, the performance of "progress" in the decades that follow, and the emergence of "typicality" and "terroir" products at the heart of territorial development from the 1990s onwards. Through a geohistorical approach, the challenge of the thesis lies in understanding the decisions of the actors accessing the governance of the appellations (and thus the normative power) according to the agricultural, agri-food and societal evolutions. In addition to cheese producers, processors and ripeners, our work highlights the constant efforts to structure products in conjunction with scientific research, primarily by Inra. Producers, scientific research, public authority, but also consumers, the construction of the quality of cheese products in Auvergne is an ongoing process with the aim of ensuring the sustainability of dairy farms. This objective of viability first of all encourages cheese producers to believe in "progress", productivism, and the lowering of production and product costs, and, above all, to build a competitiveness guaranteed by the monopoly offered by the designation of origin. Governance then imposes a generic quality, a single model that was sufficiently inclusive and not very restrictive. The 1980s, marked by the seal of milk quotas, the reorientation of the CAP and the beginnings of territorial development in connection with a "quality" agriculture and criticism of intensive agriculture, brought about a change in doctrine, a new vision that was then validated by a new player, the Inao. Therefore, from the 1990s onwards, individually or on a collective scale, locally or within the appellation, various initiatives aim to make agricultural activity viable through a singularization by promoting typicality, including a typicality "linked to the terroir". Although imperfect, these initiatives contribute to the territorialisation of agriculture and the construction of a specific quality. This construction is first of all based on links thought with a current, pragmatic terroir, on the basis of a compromise between societal demands and production realities, but also between anteriority of practices and innovation, and not on a 'return' to possible practices carried away by productivism. Finally, our thesis demonstrates a quality which is co-constructed, plural and constantly evolving, and also conflictual, with its 'territorialisation' remaining one of the avenues explored by the actors. The different perceptions of quality and the support of distinct agricultural models fuel tensions, sometimes within the same appellation. However, the territorialisation of quality weakens the old mechanisms of governance, which do not disappear for all that. Finally, territorialisation raises questions about the coherence of the scales of action between those, localized, allowing the strengthening of links to the terroir and the more encompassing scale of the appellation.Cette thèse entreprend un suivi au long cours des productions fromagères sous Indications Géographiques (IG) en Auvergne (Cantal, Salers, Laguiole, Saint-nectaire, bleu d’Auvergne et fourme d’Ambert), depuis la fin de la Seconde Guerre mondiale à nos jours. Retracer l’histoire des fromages auvergnats incite à questionner les legs d’un Ravitaillement Général, la performativité du « progrès » des décennies qui suivent jusqu’à l’émergence de la « typicité » et des produits de « terroir » au cœur du développement des territoires à partir des années 1990. Par une approche géohistorique, l’enjeu de la thèse réside dans la compréhension des décisions des acteurs accédant à la gouvernance des appellations (et donc au pouvoir normatif) au gré des évolutions agricoles, agroalimentaires et sociétales. Au-delà des acteurs fromagers (producteurs, transformateurs, affineurs), notre travail met en avant les efforts constants de structuration des produits opérés en liens avec la recherche scientifique, l’Inra en premier lieu. Acteurs productifs, recherche scientifique, puissance publique, mais aussi consommateurs, la construction de la qualité des produits fromagers en Auvergne se fabrique en continue avec comme finalité la durabilité des exploitations laitières. Cet objectif de viabilité incite d’abord les acteurs fromagers à croire au « progrès », au productivisme, et à l’abaissement de coûts de production et des produits, et surtout à bâtir une compétitivité garantie par le monopole offert par l’appellation d’origine. La gouvernance impose alors une qualité générique, un modèle unique mais suffisamment englobant et peu contraignant. Les années 1980, marquées du sceau des quotas laitiers, des réorientations de la PAC et des prémices d’un développement territorial en lien avec une agriculture de « qualité » et d’une critique de l’agriculture intensive impulsent un changement de doctrine, une nouvelle vision validée ensuite par un nouvel acteur, l’Inao. Dès lors, à partir des années 1990, individuellement ou à l’échelle d’un collectif, localisées ou au sein de l’appellation, diverses initiatives entendent viabiliser l’activité agricole par une singularisation à travers une mise en avant de la typicité, dont une typicité « liée au terroir ». Imparfaites, ces démarches participent à une territorialisation de l’agriculture et la construction d’une qualité spécifique. Cette construction passe d’abord par des liens pensés avec un terroir actuel, pragmatique, à partir d’un compromis à la fois entre exigences sociétales et réalités productives, mais aussi entre antériorité des pratiques et innovation, et non sur un « retour » à d’éventuelles pratiques emportées par le productivisme. Notre thèse démontre en finalité une qualité coconstruite, plurielle et en constante évolution, conflictuelle aussi où sa « territorialisation » reste une des voies explorées par les acteurs. Les diverses perceptions de la qualité et soutenant des modèles agricoles distincts alimentent les tensions, parfois au sein d’une même appellation. Cependant, la territorialisation de la qualité fragilise les mécanismes anciens de gouvernance qui ne disparaissent pas pour autant. La territorialisation questionne enfin sur la cohérence des échelles d’action entre celles, localisées, permettant le renforcement des liens au terroir et l’échelle, plus englobante, de l’appellation

    National audienceBiodiversity conservation is a major issue of our society and the confrontation of actors in public spheres outlines this public problem. The media plays a role in the agenda-setting and analyzing the media coverage of the relations between agriculture and biodiversity is a fresh look on human-nature relationships. We analyze seven national French newspapers and one regional French newspaper (Le Progrès) from 1999 to 2017. We confirm that agriculture and biodiversity constitute a major public problem. The high number of regional press articles since 2003 shows that the globalization of the biodiversity problem is completed by a local care. On regional newspapers, the articles introduce a positive view of agriculture. The spatial dimension between biodiversity and agriculture is dominant in the last articles. The media exposure of urban and natural territories makes the media coverage of agricultural areas difficult while agricultural landscapes become nowadays the place of news biodiversity conservation measures.La conservation de la biodiversité est un problème public dont les contours se dessinent par la confrontation d’acteurs au sein d’arènes publiques parmi lesquelles les médias jouent un rôle important. Porter attention aux différentes modalités de médiatisation des relations entre la biodiversité et l’agriculture permet d’apporter un regard nouveau sur les transformations des relations homme-nature. À travers l’étude de sept journaux nationaux et d’un journal régional français (Le Progrès) entre 1999 et 2017, nous confirmons qu’agriculture et biodiversité forment un problème public majeur. Le nombre important d’articles régionaux depuis 2003 montre que la globalisation du problème de la biodiversité s’accompagne également d’un traitement local. Contrastant avec la presse nationale, plus encline à évoquer la crise de la biodiversité, la presse régionale trace les contours d’une image positive de l’agriculture. La dimension spatiale de la relation biodiversité-agriculture est devenue incontournable. Cependant, l’exposition médiatique forte des territoires urbains et naturels rend difficile la mise en lumière des espaces agricoles qui deviennent pourtant aujourd’hui le lieu de nouvelles mesures de conservation

    Life cycle assessment and energy comparison of aseptic ohmic heating and appertization of chopped tomatoes with juice

    International audienceThe energy balance and life cycle assessment (LCA) of ohmic heating and appertization systems for processing of chopped tomatoes with juice (CTwJ) were evaluated. The data included in the study, such as processing conditions, energy consumption, and water use, were experimentally collected.The functional unit was considered to be 1 kg of packaged CTwJ. Six LCA impact assessment methodologies were evaluated for uncertainty analysis of selection of the impact assessment methodology. The energy requirement evaluation showed the highest energy consumption for appertization (156 kWh/t of product). The energy saving of the ohmic heating line compared to the appertization line is 102 kWh/t of the product (or 65% energy saving). The energy efficiencies of the appertization and ohmic heating lines are 25% and 77%, respectively. Regarding the environmental impact, CTwJ processing and packaging by appertization were higher than those of ohmic heating systems. In other words, CTwJ production by the ohmic heating system was more environmentally efficient. The tin production phase was the environmental hotspot in packaged CTwJ production by the appertization system; however, the agricultural phase of production was the hotspot in ohmic heating processing. The uncertainty analysis results indicated that the global warming potential for appertization of 1 kg of packaged CTwJ ranges from 4.13 to 4.44 kg CO2eq. In addition, the global warming potential of the ohmic heating system ranges from 2.50 to 2.54 kg CO2eq.This study highlights that ohmic heating presents a great alternative to conventional sterilization methods due to its low environmental impact and high energy efficiency

    Lipid profile of bovine grade-1 blastocysts produced either in vivo or in vitro before and after slow freezing process

    International audienceCurrently, in vitro embryo production (IVP) is successfully commercially applied in cattle. However, the high sensitivity of embryos to cryopreservation in comparison to in vivo (IVD) embryos slows the dissemination of this biotechnology. Reduced cryotolerance is frequently associated with lipid accumulation in the cytoplasm mainly due to in vitro culture conditions. The objective of this study was to evaluate the lipid composition of biopsied and sexed embryos, produced either in vivo or in vitro from the same Holstein heifers before and after a slow freezing protocol. Lipid extracts were analysed by liquid chromatography-high resolution mass spectrometry, which enabled the detection of 496 features. Our results highlighted a lipid enrichment of IVP embryos in triglycerides and oxidised glycerophospholipids and a reduced abundance in glycerophospholipids. The slow freezing process affected the lipid profiles of IVP and IVD embryos similarly. Lysophosphatidylcholine content was reduced when embryos were frozen/thawed. In conclusion, the embryonic lipid profile is impacted by IVP and slow freezing protocols but not by sex. Lysophosphatidylcholine seemed highly sensitive to cryopreservation and might contribute to explain the lower quality of frozen embryos. Further studies are required to improve embryo freezability by modulating the lipidome

    Inability of total antioxidant activity assays to accurately assess the phenolic compounds of date palm fruit (Phoenix dactylifera L.)

    International audienceBackground : Phenolic compounds in date palm fruit (dates) contribute to the color, antioxidant activity, and nutritional value of the fruit. This study aimed to compare the accuracy of the Folin–Ciocalteu, 2,2′-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS.+), ferric reducing antioxidant power (FRAP), and 1,1-diphenyl-2-picrylhydrazyl (DPPH) methods for measuring the total antioxidant activity of date fruit extracts.Methods : A total of 26 date varieties from the United Arab Emirates and Pakistan that varied in color and shape were analyzed in terms of their total phenolic content and antioxidant activity using the Folin–Ciocalteu, ABTS.+, FRAP, and DPPH methods. Two extracts were obtained from each date variety to study the soluble and insoluble phenolic fractions.Results : The total phenolic content varied 46–397 mg GAE/100 g fresh weight (FW) using the Folin–Ciocalteu method, 0.9–4.3 μmol TE/100 g FW using ABTS.+, 355–2421 μmol TE/100 g FW using FRAP, and 0.0–1.8 mg/mL using DPPH. These results suggest large variations in total phenolic content and antioxidant activity among the date varieties. However, the results of the four total antioxidant activity assays were not correlated with each other and exhibited large disparity.Conclusions : These findings put in question the ability of these total antioxidant activity assays to accurately assess the phenolic compounds of dates

    International audienceDepuis 1989 est développée au sein de l’ISARA, école d’ingénieurs en agriculture, alimentation, environnement située à Lyon, une spécialisation de fin de cursus orientée vers les métiers du développement local. Pourquoi et comment l’ISARA développe-t-elle un cursus orienté vers le développement local ? Quelles évolutions du curriculum ? Quelle place pour des ingénieurs agronomes dans le développement territorial ? Cet article retrace les grandes phases d’évolution de cette spécialisation, témoigne des ambitions pédagogiques portées aux différentes périodes par les équipes. Le travail historique permet de mettre en perspective des ruptures et continuités dans le projet de cette spécialisation, sous l’influence de plusieurs facteurs : le contexte régional, national, international des politiques publiques, du développement territorial et de la coopération ; les équipes pédagogiques impliquées dans le Domaine d’Approfondissement (DA), leurs sensibilités et disciplines ; et les étudiants, révélateurs par l’expression de leurs attentes et projets professionnels, des transitions sociétales
