2011 年東北地方太平洋沖地震では，平野部の広い範囲で強い揺れと津波による
被害を受けた．一方，沿岸部の道路では、海岸線と平行に敷設された道路盛土が
津波高さ 5ｍを超える津波の遡上を抑制し，周辺地域の浸水被害を軽減しただけで
なく，高台の少ない地域の避難場所としても機能した．このような背景から，切
迫性の高い南海トラフ巨大地震に対して，道路や防潮堤などの盛土構造物の津波
抑制効果が注目されるようになった．沿岸部に敷設する盛土構造物は，地震によ
る揺れと地震後の津波が複合的に作用する可能性が高い．特に沿岸部には河川堆
積物による沖積層が広く分布しており，基礎地盤の液状化による影響が懸念され
る．地盤の液状化や津波外力が作用する場合の盛土構造物の崩壊メカニズムは，
既往の研究により明らかにされつつあり，設計手法や対策工法は実務でも取り入
れられている．しかし，実際には各事象が連続的に生じる可能性が高く，複合的
に生じる災害を受ける盛土構造物の被災メカニズムや耐震性能評価手法を体系的
に整理した研究例はほとんどない．本研究は，地盤の液状化と津波の複合災害を
受ける盛土構造物に着目し，現地調査や数値解析などから被災メカニズムを整理
し，特に沿岸部の道路盛土設計における耐震性能評価の考え方や留意点を纏めた
ものである．  
はじめに，液状化地盤上に敷設する盛土構造物の例として，2016 年熊本地震に
おいて液状化被害を受けた道路盛土に対して現地調査および数値解析から被災に
至るメカニズムと被害の傾向を分析した．さらに，液状化地盤上に敷設する盛土
の天端沈下量に影響を及ぼす主たる要因を特定するため，盛土の諸条件および基
礎地盤条件をパラメーターとした数値解析を実施した．その結果，道路機能を阻
害する様な段差は橋台背面付近で生じるが，それ以外の区間では盛土自体の沈下
量は大きいものの相対的な沈下量は小さく，道路機能には影響を与えないことが
確認された．数値結果から，同一連続した地盤条件では盛土天端の沈下量は盛土
高や天端幅，基礎地盤の PL 値との間に相関性が見られることが分かった．

次に，液状化と津波の複合災害を受けた盛土構造物について，2011 年東北地方
太平洋沖地震で被災したコンクリート被覆盛土と補強土壁を例に，現地調査や水
槽模型実験結果から被災メカニズムを分析した．その結果，沿岸部に敷設された
盛土構造物は，表面に被覆が施されている場合であっても，液状化による盛土の
沈下及び天端高さを超える津波外力を同時に受けることにより、形状が保てない
ほど大きく損傷する可能性が高いことを明らかにした．一方，補強土壁は，壁面
に津波が作用し堤体内へ水が浸透したとしても，裏込め材が流出しない条件では
補強土壁としての安定性が損なわれないことが明らかにされた．  
一連の検討結果から，沿岸部に敷設する道路盛土について，液状化と津波の複
合災害を見据えた新たな耐震性能評価手法を提案した．道路盛土に求められる排
水機能を確保した状態では，地震時の基礎地盤や堤体の変形により津波来襲時に
おける盛土材の流出を防止する対策を取ることにより，液状化と津波の複合災害
対策に効果的であることを示した．道路盛土ではレベル 2 地震動に対して道路の
復旧性に着目した性能が必要であるが，沿岸部では地震後に来襲する津波に対す
る避難道としての機能が求められるケースが想定される．本研究成果に基づき，
道路縦断方向の沈下量の推定手法を従来の設計手順に取り込むことにより，今後
敷設される沿岸部の盛土構造物に対して耐津波性能を兼ね備えた合理的で安全性
の高い耐震設計が期待される．

Introduction 
 
Emulsifiers based on natural ingredients have a significantly important role in the development of healthy 
food. Several types of starch are used as an emulsifier or a thickener after prior physical modification, such as 
pregelatinized waxy maize starch as a thickener (Bortnowska et al., 2014), and pregelatinized potato starch as a 
stabilizer for meat emulsion (Genccelep et al., 2015). Some gelatinized starches show the ability as an emulsifier such 
as waxy rice, non-waxy rice, and waxy maize starch (Kasprzak et al., 2018). In this research, the physically modified 
waxy rice starch (0% amylose) was used as the raw material of the emulsifier.  Amylopectin, the main ingredient in 
waxy rice starch, is capable of hydrophobic binding guests in aqueous solution (Lundqvist et al., 2002), but its potential 
has not yet been explored. On the other hand, the structure of amylopectin is sensitive to shear stress (Chen et al., 2007); 
consequently different applied shear stress during emulsification will produce different properties of an aqueous phase 
and emulsion system, then next the different properties of aqueous phase influence the characteristics of emulsion, as 
well as its stability. In this study, the characteristics of pregelatinized waxy rice starch (PWRS) dispersion produced 
from the different temperature of gelatinization, and their correlation with the properties and stability of emulsion were 
studied. In addition, the influence of stirring speeds and types of oils was also investigated. The main objectives of this 
study were: to determine the appropriate gelatinization process of waxy rice starch for producing pregelatinized starch 
that can be used as an emulsifier; to investigate the influence of PWRS concentration on the characteristics and stability 
of the emulsions; to determine the appropriate emulsification process that produced stable emulsion; and to investigate 
the influence of the type of oils on the properties and stability of emulsions. 
Materials and Methods 
 
The study was conducted in 2 steps. Waxy rice starch (0% amylose) was used as a raw material of emulsifier.  
In the first of the study, the dispersed phase was 20 wt% of coconut oil. PWRS were produced at different

gelatinization temperature (65, 75, and 85°C) for 10 min, then dried at 40°C, the relative humidity of 20% for 
12 h.  The obtained dried flake was meshed to obtain 100 mesh of PWRS. Coconut oil emulsion was made at 
different PWRS concentrations (3, 5, 7, and 9 wt%.) and emulsification was carried out at a stirring speed of 
11000 rpm. The structural changes of waxy rice starch due to the gelatinization process were revealed by the 
small-angle x-ray diffraction method, the rheological properties of PWSR dispersion and emulsions was fitted 
by Herschel-Bulkley equation, and droplet size was obtained by measuring more than 500 droplets using 
ImageJ. 
Hexadecane oil and coconut oil were used as the dispersed phases in the second study.  Emulsification of 
emulsion contained 10% oil and 5% PWRS (gelatinized at 85°C) was done at the stirring speed of 8000, 11000, 
and 15000 rpm. The emulsion stability was investigated under two different circumstances, under the static 
condition and thermal treatment using differential scanning calorimetry (DSC) at −30 to 50°C for three cycles. 
Besides the rheological properties and stability analysis, H NMR was conducted on the PWRS, oil, and 
emulsions to find out the interaction between PWRS and oil. 
 
Result and Discussion 
Pregelatinized waxy rice starch characteristics 
The gelatinization temperature of 65°C produced PWRS dispersion contained many granules. The presence of 
granule was greatly affecting the characteristics of both PWRS dispersion and emulsion. The higher degree of 
gelatinization resulted from the higher temperature of gelatinization produced the denser polymer network in the 
dispersion. Consequently, the higher the gelatinization temperature, the higher the viscosity of PWRS 
dispersion results in a more stable emulsion. The PWRS dispersion exhibit shear−thinning behavior, where 
gelatinization at 75 and 85°C produced PWRS dispersion that more pseudoplastic than those of gelatinization at 
65°C at a concentration of 7wt% and lower. The SAXS profile of PWRS dispersions denoted an attractive 
interaction was occurred in PWRS dispersion gelatinized at 65°, while the repulsive interaction was occurred in 
PWRS dispersion gelatinized at 75 and 85°C. 
The characteristics of emulsion with PWRS under influence temperature gelatinization and PWRS 
concentration 
Emulsions stabilized with PWRS showed the shear−thinning character with the value of the flow behavior 
index ranged from 0.593 to 0.795. The yield stresses of emulsion with PWRS gelatinized at 75 and 85°C were 
unnoticed, while those of emulsion with PWRS gelatinized at 65°C was increased with the increased of PWRS

concentration. PWRS gelatinized at 65°C produced emulsion that seems stable to creaming, but changes in 
droplet size occurred severely. Emulsions with PWRS gelatinized at 65 and 85°C had good creaming stability at 
PWRS concentrations of 5 wt% or higher, whereas emulsions with PWRS gelatinized at 75°C at all 
concentration showed creaming of emulsion between 0.39 and 0.58 after 21 days’ storage. The stable emulsion 
toward coalescence was produced in emulsion with PWRS gelatinized at 85°C.  The ability of gelatinized 
waxy rice starch was also reported by Kasprzak et al. (2018), who used gelatinized waxy rice starch at a starch 
concentration in the emulsion of 1–4 wt% and produce unchanged droplets size during three months of storage. 
 
The characteristics of emulsion with PWRS under influence stirring speed, and the type of oil  
The stirring speed influenced the characteristics of emulsions with PWRS during emulsification and the type of 
oils. The smaller droplet size has resulted from the faster stirring speed, in which coconut oil emulsion having 
the larger droplet size than those of hexadecane emulsions. Generally, the decrease of droplets size followed by 
the increase of viscosity − such as in the case of a medium chain triglyceride emulsion stabilized by a polymeric 
emulsifier (Pemulen TR-2 NF) (Simovic et al., 1999) and in crude oil vacuum distillation residues with a 
nonionic surfactant (Peralta-Martínez et al., 2004) − but in an emulsion with PWRS was the opposite, where the 
decrease in viscosity with the decrease in droplet size might be caused by the high sensitivity of the structure of 
amylopectin polymer to shear stress. The sensitivity of amylopectin polymer to shear stress has been previously 
reported (Chen et al., 2007; Liu et al., 2017).  The stirring speed at 11000 rpm produced the highest value of 
consistency coefficient, while the yield stress was unnoticed at the stirring speed 11000 rpm and higher for 
coconut oil emulsion, and at 15000 rpm for hexadecane emulsion.  
 
The stability of emulsion under influence stirring speed, the type of oil, and environmental condition 
Stirring speed, the types of oil, and environmental conditions influenced the stability of emulsion.  Th
e stirring speed at 15000 rpm, result in the separation of emulsion into opaque and transparent layer 
for both, coconut oil and hexadecane emulsions. Under the static condition, coconut oil emulsions em
ulsified at 8000 and 15000 rpm showed the lower ability to prevent coalescence than hexadecane em
ulsion that showed excellent stability at all stirring speed. However, under thermal treatment, hexadeca
ne emulsions were less stable than coconut oil emulsions. The irregular shape with the sharp edge of
 hexadecane crystal was thought of as the cause of the low ability to prevent partial coalescence.  T
he droplet size changes in hexadecane emulsion were signified by the shifting peak of the crystallizati

on temperature peak to the higher temperature in the thermogram, while in coconut oil emulsion, the 
crystallization peak was not depended on droplet size. H NMR analysis shows that PWRS was better
 absorbed on the surface of coconut oil than on the surface of hexadecane, which was characterized 
by the stronger interaction. The interaction was signed from the decrease of component mobility with 
the increase of emulsifier concentration indicated by the increase of line-width, the shifting peak to a 
higher frequency, and the decrease of peak intensity. (Awad et al., 2018; Day et al., 2007; Wang et 
al., 2017). Emulsion instability involved complex processes influenced by several factors, such as the 
characteristics of the aqueous and the dispersed phase, environmental conditions, and interactions betwe
en the components of the emulsion. 
Conclusion  
Pregelatinized waxy rice starch gelatinized at 85°C for 10 min can be used as an emulsifier for oil in water 
emulsion. The emulsion stability of emulsion with PWRS was influenced by the type of oil, emulsification 
process, and environmental condition. The low viscosity of oil, hexadecane, showed excellent stability under the 
static condition at all stirring speed, while coconut oil emulsion has better stability under thermal treatment than 
under static conditions.

有害赤潮プランクトンが赤潮を形成する条件の解明については，水温，塩分，
光，栄養塩等の環境条件が栄養細胞の増殖やシストの発芽等に与える影響などの
生態学的な研究が精力的になされている（例えば，山口ほか  1991; Yamaguchi 
1994；Smayda, 1998; Imai and Yamaguchi 2012; Shikata et al . 2015）。一方で，有害
赤潮プランクトンに対する捕食者の影響については，室内実験におけるその摂食
速度などの報告はあるが（例えば，Uye 1986; Nakamura et al . 1992; Jeong et al.  
1999），実環境中で捕食者の影響について検討した研究は限られている（Nakamura 
et al. 1995b; Nakamura et al. 1996; Matsuyama et al.  1999; Jeong  et al. 2010）。従属
栄養性渦鞭毛藻は幅広い生物を多様なメカニズムで摂餌し（例えば，Hansen and 
Calado 1999），沿岸生態系において重要な役割を担うことが指摘されている。そ
こで，沿岸域で生物量の大きい従属栄養性渦鞭毛藻 Noctiluca scintillans（Tada et al.  
2004）と，様々な赤潮の衰退期に出現した観測例の多い従属栄養性渦鞭毛藻
Gyrodinium dominans（例えば，Nakamura et al. 1995b）を対象として，これらの時
空間的に詳細な摂餌生態を明らかにすることを目的とした。  
本研究では従属栄養性渦鞭毛藻の有害赤潮プランクトンや珪藻類への摂餌生態
に関して検討，考察した。瀬戸内海・播磨灘においては N.  scintillans の摂食が珪
藻類のブルームを終焉させ，広島湾では G. dominans の摂食が Heterosigma 
akashiwo の高密度化を未然に防いだことを示した。しかし，食胞中の摂餌物を光
学顕微鏡による観察で特定することは困難であるため，簡易な同定法が必要と考
えられた。そこで，N . scintillans が摂食した有害赤潮プランクトンを検出する手
法 と し て ， 簡 易 な 遺 伝 子 増 幅 法 で 高 額 な 機 器 を 必 要 と し な い LAMP 法
（ loop–mediated isothermal amplification）の適用を検討した。まず，本手法を用い
た室内実験を行い，N.  scintillans は摂食した Karenia mikimotoi の DNA を 3 時間以
内に消化することや明期前半に活発に摂食することを見出した。また，三重県・
英虞湾において K. mikimotoi および Chattonella spp.の赤潮発生時に，夜間よりも
昼間に高い確率で N. scintillansの細胞内から両種を検出した。以上のことから， N.  
scintillans による有害赤潮プランクトンの摂食解析には LAMP 法を用いることが

有効であると考えられた。但し，その際には結果の解釈に消化や摂食リズムなど
を考慮する必要があることも明らかとなった。次に，確立した LAMP 法による摂
食解析を実環境中の N. scintillans に適用した。Chattonella  spp.と H.  akashiwo が混
合赤潮を形成した福山湾田尻港において 24 時間観測を実施し，N. scintillans，
Chattonella  spp.および H.  akashiwo の鉛直分布の時間変化を 2 時間おきに把握する
とともに，LAMP 法を用いて N. scintillans の両種に対する摂餌生態を明らかにし
た。調査期間中，一貫して N.  scintillans および Chattonella  spp.は表層から密度躍
層付近に多く分布し，N.  scintillans は Chattonella  spp.を活発に摂食していた。特
に午前 8 時に Chattonella  spp.を摂食した N.  scintillans 細胞割合と，Chattonella spp.
細胞密度の間に有意な正の相関関係が認められ（p  < 0.05），室内実験で得られた
摂食リズムと一致した。一方，H. akashiwo は密度躍層を越えて日周鉛直移動を行
い，昼間は表層に，夜間には底層に到達した。H.  akashiwo を摂食していた N. 
scintillans は，2 時，8 時，14 時でのみ検出され，摂食した N.  scintillans 細胞の割
合も低かった。また，Chattonella  spp.と H. akashiwo の細胞密度比が約 200：1 以
上になると H.  akashiwo に対する摂食は認められず，餌密度比も N.  scintillans の摂
食に影響を与えることが考えられた。  
以上の成果を総合して考察すると，従属栄養性渦鞭毛藻の珪藻類や有害赤潮プ
ランクトンへの摂食の影響については以下の様なことが考えられる。本研究から，
従属栄養性渦鞭毛藻の摂食は，珪藻類のブルームを衰退させたり，有害赤潮プラ
ンクトンの高密度化を未然に防いだりするポテンシャルがあることが明らかとな
った。また，LAMP 法が実環境中における N. scintillans の摂餌生態の把握に有効
であることが示された。  
N. scintillans は，英虞湾における観測では Chattonella  spp.に対して昼間に活発
に摂食し，福山湾田尻港における観測では Chattonella  spp.を摂食した N. scintillans
細胞割合は H.  akashiwo よりも高かった。Chattonella antiqua や C. marina を餌とし
て与えた場合の N. scintillans の増殖は良好だとされており（多田ほか  2004），実
環境中における Chattonella spp.赤潮の衰退には N.  scintillans の摂食が大きく寄与
する可能性がある。福山湾田尻港における観測では，日周鉛直移動が観察された
H. akashiwo を摂食した N.  scintillans の細胞割合は低く，摂食回避があったと推察
された。一方で，日周鉛直移動が観察されなかった Chattonella  spp.に対しては活
発な摂食が認められた。また，餌密度に注目すると，Chattonella  spp.の細胞密度
比が H.  akashiwo の約 200 倍以上になると H. akashiwo に対する摂食は認められず，
餌密度比も N.  scintillans の摂食に影響を与えることが考えられた。  
以上を総括すると，従属栄養性渦鞭毛藻 N. scintillans による有害赤潮プランク
トンの摂食を考える上では，①餌生物の密度，②摂食者の日周リズム，および③
餌生物の鉛直移動の影響を考慮する必要がある。摂餌生態の解析には LAMP 法が
有効であり，今後，この方法を用いた摂餌解析によって捕食者の摂餌生態の解明
が進み，沿岸生態系における役割が明らかになることが期待される。

ブリ養殖業は、現在のわが国における魚類養殖業のなかで最も生産量が多い。しかし、飼料価格の
高騰や国民の水産物の消費量の減少などによりブリ養殖業者の経営は厳しい状況が続いている。この
現状を打破するために、付加価値の高い養殖ブリを生産、販売する取組みが各地で広がっている。ブ
リの品質保持における大きな課題として、血合肉の褐変が挙げられる。ブリの血合肉は褐変の進行が
速いため切身の状態で保存できる期間が短いという欠点があり、血合肉の褐変の進行を抑制し、色調
を良好な状態で長時間保持することは、ブリの販売上重要な課題となっている。褐変抑制対策の一つ
として、抗酸化物質を添加した飼料を投与して肉質を改善する方法が注目されている。 
 わが国においてオリーブは、香川県小豆島を中心に、各地で経済栽培が行われている。オリーブの
葉には、オレウロペイン（OLP）などの高い抗酸化作用を有するポリフェノール（PP）が豊富に含ま
れており、茶やエキスなど健康飲料として一部利用されている。しかし、せん定の際に大量に発生す
る枝葉の利用はあまり進んでいない。 
本研究では、オリーブ葉を飼料の一部として与えると、ブリの肉質がどうなるかを明らかにするた
め、まず、オリーブ葉粉末配合飼料の開発に取り組んだ。次に、オリーブ葉粉末配合飼料の給餌によ
るブリの成長への影響の確認と、同飼料の給餌によるブリの血合肉の褐変抑制効果を明らかにするこ
とを目的に養殖現場での給餌試験を行った。さらに、オリーブ葉を給餌したブリの筋肉の呈味性や抗
酸化性について調べ、その特徴を明らかにすることを目的とした。 
 
オリーブ葉粉末配合飼料の開発 
香川県産オリーブ葉のPP含量と、オリーブ生葉中（枝付き）および葉粉末中でのPPの安定性を調
べるとともに、モイストペレット（MP）飼料中でのオリーブ葉由来PPの安定性を調べた。 
香川県小豆島におけるオリーブの主要栽培品種のMission、Nevadillo blancoおよびLuccaのオリーブ
葉のPP含量は100 gの乾物あたり没食子酸換算で7.3～8.2 gの間にあり、品種間での差は比較的小さ
かった。OLP含量はせん定してから乾燥処理を行うまでの保存状態や保存時間によって著しく変動し
た。すなわち、屋外温室や冷凍室に保存するとOLP量は減少してしまうが、室内に保存し2週間以内
に乾燥することで高いOLP含量を保持できることがわかった。また、乾燥・粉末化したものは、密封・
暗所で常温保存すると1年間はOLPを安定的に保つことができることがわかった。オリーブ葉粉末を
添加したMP飼料中のPPは数時間以内に分解され、抗酸化能も低下するため、飼料作製後は出来るだ
け速やかに給餌する必要のあることが示唆された。 
 
オリーブ葉粉末配合飼料がブリの成長に及ぼす影響 
オリーブ葉が強力な苦みを有することから、飼料摂取量が低下しブリの成長を抑制する可能性があ
るので、オリーブ葉粉末の給餌によるブリの成長成績を調べた。ブリ1歳魚（平均体重3.6 kg）を鋼
管式小割生簀（10 × 10 × 3.5 m）2台に約3,200尾ずつ収容し、基本のMP飼料にオリーブ葉乾燥粉末
を1.7%加えた飼料を給餌した区と、オリーブ葉粉末無添加の基本MP飼料のみを給餌した区を設けた。
2007年10月30日～12月11日の42日間、週4～7回飽食給餌し、給餌試験開始0日目、14日目、27日目お
よび42日目に各区の生簀から10～15尾を取り揚げ、体重と尾叉長を測定した。また､給餌試験から42
日目の試験終了時に、肝臓重量測定用に各区5尾を取り揚げた。さらに、採血用に各区5尾をそれぞれ
追加して取り揚げた。 
オリーブ葉粉末を添加したMP飼料は、無添加の基本MP飼料と同様に活発に摂餌する様子が観察さ
れた。体重、尾叉長、肥満度について、いずれの取り揚げ日においても添加区と無添加区の間で有意
（様式５）(Style5) 
差は認められず、成長への影響はみられなかった。42日経過後のブリの体重は、添加区4.05±0.37 kg
（平均±標準偏差、以下同じ。）、無添加区4.09±0.44 kgであった。また、試験終了時のブリの比肝重
値は、両区間で有意差は認められなかった。血清成分は、添加区の血糖濃度が無添加区より有意に高
かった。一方、全タンパク質、中性脂肪および全コレステロール濃度の有意差は認められなかった。 
 
オリーブ葉粉末配合飼料がブリ血合肉の褐変に及ぼす効果 
オリーブ葉粉末を混ぜた飼料の投与によって養殖ブリの血合肉の褐変化が抑制可能かどうかを調
べた。基本のMP飼料にオリーブ葉乾燥粉末を1.7%加えた飼料を給餌した区と、オリーブ葉粉末無添
加の基本MP飼料のみを給餌した区を設け、保存中の血合肉のミオグロビン（Mb）のメト化率を測定
するとともに、切身表面の血合肉の色調を解析し、赤の色合いの相対的位置（赤色色調r）を求めた。 
オリーブ葉の給餌試験を開始してから14日目のブリでは、解体当日から氷蔵24時間までのmetMb生
成率に添加区と無添加区で差がなかったが、72時間氷蔵したものでは、オリーブ葉添加区の血合肉の
方が、無添加区のものよりも、metMb生成率が有意に低かった。このことより、オリーブ葉を14日間
摂取したブリでは、氷蔵24時間以上経過した血合肉のMbのmet化が抑制されることが示唆された。オ
リーブ葉給餌試験開始から27日目のブリでは、添加区のmetMb生成率が24～72時間の氷蔵期間および
解体当日において、無添加区のmetMb生成率よりも低かった。このことから、27日間オリーブ葉の給
餌を続けると、14日間の給餌に比べ、メト化の抑制効果がより顕著になることが判明した。オリーブ
葉の給餌開始後42日目でも、添加区の血合肉のmetMb生成率が氷蔵48時間後および72時間後で無添加
区の値よりも有意に低かった。切身の血合肉表面における赤色色調rの保存中の低下は、給餌試験を
開始して42日目に有意に抑制された。metMb生成率では14日目から両区間で有意差が検出されたのに
対し、赤色色調rでは有意差が見られたのは42日目と、分子レベルでの効果よりも実際の色調に効果
が表れるにはより長時間オリーブ葉を給餌する必要があることがわかった。以上より、オリーブ葉の
給餌を開始してからの期間によって効果の度合いに違いがあるものの、オリーブ葉のブリへの摂取は
metMb生成率の低下、とりわけ保蔵によるmetMb生成率の上昇を抑える効果があると示唆され、血合
肉の褐変抑制に一定の効果のあることが明らかになった。 
 
オリーブ葉粉末配合飼料を給餌したブリ筋肉の化学的特性 
オリーブ葉粉末配合飼料のブリへの投与効果を評価するために、オリーブ葉乾燥粉末を2%添加し
た飼料を給餌して育てた養殖ブリとオリーブ葉粉末を加えていない飼料で育てた対照用の養殖ブリ
から筋肉を回収して、血合肉および普通肉の脂質特性、呈味性および抗酸化性を調べた。 
①脂質特性 
血合肉の粗脂肪含量は、添加区（18.2±1.6 g/100 g）が無添加区（24.4±2.1 g/100 g）よりも25%も
低かった。背肉普通肉では、両区ともほぼ同等の値であった。腹肉普通肉では、添加区（23.3±3.4 g/
100 g）が無添加区（27.8±4.0 g/100 g）より低い傾向を示した。脂肪酸組成については、数種類の脂
肪酸組成に添加区と無添加区とで有意差が認められたが、その差は0.7%以下であり、全体的にみると
両区間の脂肪酸組成に大きな違いはないものと判断された。 
②呈味性 
遊離アミノ酸のうち甘味を有するアラニン(Ala)について、背肉普通肉では添加区（148.9±8.1 mg/
100 g）が無添加区（106.1±21.8 mg/100 g）の1.4倍であった。同様に腹肉普通肉でも添加区（145.5±
8.2 mg/100 g）が無添加区（114.9±15.7 mg/100 g）の1.3倍であった。腹肉普通肉のエキスを味認識装
置の味覚センサーで測定した結果、添加区のうま味は1.03倍、塩味は2.48倍、それぞれ無添加区より
も有意に高かった。 
さらに、筋肉の水溶性成分のメタボローム解析により、オリーブ葉を給餌したブリ筋肉の呈味の特
徴を調べたところ、腹肉普通肉の塩味に関しては、乳酸は添加区の方が1.1倍少なかったものの、グ
リコール酸は添加区の方が1.4倍、アスコルビン酸は1.5倍それぞれ多かった。これら3つの成分は、陰
イオンとなり味覚センサーで塩味として反応すると考えられることから、オリーブ葉を給餌したブリ
の塩味の強さに関与していると推察された。うま味に関しては、グルタミン酸は添加区の方が1.7倍
多く、味覚センサーでの結果と同じ傾向であった。甘味に関しては、味覚センサーでは両区間で差は
認められなかったが、メタボローム解析の結果では、Alaは1.4倍、グリシン（Gly）は2.0倍、セリン
（Ser）は2.7倍、添加区の方が多かった。また、糖類、糖アルコールについて、グルコースは1.1倍、
イノシトールは1.2倍、それぞれ多く、甘味を示す多くの成分で違いのあることが示され、オリーブ
葉を給餌したブリの呈味を特徴付けていると考えられた。主成分分析の結果でも、添加区を特徴付け
る主要な成分として、血合肉ではグリセロール、トレオニン、Ser、腹肉普通肉ではSer、Gly、Alaな
ど、甘味を示す成分が占めていた。特にSerの値は、血合肉で1.5倍、腹肉普通肉で2.7倍それぞれ多く、
オリーブ葉の投与がSerの代謝に影響を及ぼしていることが推察された。以上より、オリーブ葉粉末
を添加した飼料で飼育したブリの筋肉成分は、アミノ酸だけでなく有機酸や糖アルコールにおいても、

オリーブ葉粉末を与えていないブリ筋肉と違いがあり、それらの成分もオリーブ葉を給餌したブリの
呈味の特徴に寄与していると考えられた。 
③抗酸化性 
筋肉の水溶性画分の抗酸化性について、血合肉のH-ORAC値は両区間で有意差は認められなかった。
腹肉普通肉のH-ORAC値について、添加区は51.3±10.1 μmol TE/g、無添加区は37.8±5.76 μmol TE/g
で、添加区が無添加区に比べ1.36倍高かった。 
メタボローム解析による添加区のアスコルビン酸の数値は、無添加区より1.53倍多かったことから、
アスコルビン酸が腹肉普通肉の抗酸化性の高さに関与していると考えられた。久保ら（2018）は、ブ
リの血合肉と普通肉の境界面付近から褐変が生じる要因は、血合肉のグリコーゲンが普通肉の解糖系
酵素によって分解され、乳酸が生成することにより、境界面でのpHが低下したためと考察している。
血合肉の乳酸の数値はオリーブ葉添加区および無添加区で差は認められなかったが、腹肉普通肉では
添加区の乳酸の数値が有意に低かった。ブリの血合肉の褐変は、普通肉との境界面から進行すること
から、普通肉の乳酸量が低かったことが、褐変抑制に有利に作用していたものと考えられた。これら
のことから、オリーブ葉を給餌したブリの腹肉普通肉には無添加の同じ部位の普通肉に比べて抗酸化
物質が多く含まれ、抗酸化性が高く、そのことが血合肉の褐変の抑制に寄与していることが示唆され
た。 
 
 本研究の結果より、オリーブ葉乾燥粉末を給餌したブリの成長成績は、オリーブ葉無添加の通常の
飼料で飼育したものと変わらず、オリーブ葉に含まれるPPの効果によって筋肉の抗酸化性が高まり、
オリーブ葉無添加の通常の飼料を給餌したブリに比べて血合肉の褐変の進行が抑制されることが明
らかとなった。さらに、オリーブ葉乾燥粉末を給餌したブリの筋肉は、オリーブ葉無添加の通常の飼
料を給餌したブリに比べて脂質含量が低く、甘味、うま味が強かった。以上のことから、オリーブ葉

【背景】心臓 CT 検査は冠動脈狭窄やプラーク性状など冠動脈の器質的病変の評価に有用であ
り、循環器診療で汎用されているモダリティである。虚血性心疾患の診断において冠動脈の解
剖学的評価は重要であるが、治療方針決定、予後改善のためには生理学的な心筋虚血評価がよ
り重要視される。経胸壁ドプラ心エコー(TTDE: transthoracic Doppler echocardiography)は、
冠血流速予備能（CFVR: coronary flow velocity reserve）として、非侵襲的に心筋虚血を測
定することが可能な検査法であり、心筋シンチグラフィと同等の虚血診断能を有することが報
告されている。そして、これまでの報告から、CFVR 2.0 未満で有意な心筋虚血を検出できる
指標として確立されている。近年、アデノシン三リン酸(ATP: adenosine triphosphate)負荷
心筋 CT perfusion(CTP) による心筋虚血評価の有用性が報告されてきており、その定性評価
に加えて心筋血流量(MBF: myocardial blood flow) による心筋虚血の定量評価も可能となっ
てきた。心臓 CT 検査は、冠動脈狭窄と生理学的な心筋虚血の情報を一度に得ることができる
有望な検査として注目されている。 
【目的】 今回、我々は、左前下行枝(LAD: left anterior descending)領域において、TTDE
を用いた CFVR と、ATP 負荷心筋 CTP による定性および定量指標を用いた心筋虚血評価との関 
連について検討した。 
【方法】対象は 2013 年 1 月から 2016 年 3 月の間に ATP 負荷心筋 CTP と CFVR 計測を行った安
定狭心症 50 症例で、平均年齢は 69.4 歳であった。ATP 負荷心筋 CTP は Philips 社製の 256 列
CT を使用し、dynamic scan で撮影した。検査の 24 時間以上前からカフェイン摂取を中止し、

ATP 持続注入量は 0.16 mg/kg/min とした。心電図同期のもと呼気終末で息止めを行い、左室
収縮末期(RR 間隔の 40%)で連続 30 心拍の撮影を行った。CTP の評価は、グレースケールと CT
値によって色分けしたカラースケールを用いた視覚的な定性評価と、デコンボリューション解
析を用いた定量評価である MBF による評価を行った。グレースケールで低吸収域を呈し、カラ
ースケールで寒色を呈する領域を心筋虚血陽性と判断した。また、MBF は 17 分割モデルによ
って評価し、前壁中隔から心尖部を LAD 領域と規定して、その領域の平均値で算出した。TTDE
は GE 社製の Vivid E9 を使用し、5.0MHz の高周波プローブで冠血流の測定を行った。ATP 負荷
は CTP と同様の方法で行い、安静時と ATP 負荷時の LAD の冠血流から拡張期血流平均流速(MDV
: mean diastolic velocity)を計測、その比から CFVR(=ATP 負荷時 MDV/安静時 MDV)を算出し、
CFVR 2.0 未満を心筋虚血陽性と判断した。 
【結果】CTP の定性評価で LAD 領域に虚血を認めた症例は 25 症例で、その平均 CFVR は 1.9 ± 
0.6 であった。一方、CTP で心筋虚血を認めなかった症例の平均 CFVR は 2.9 ± 0.8 であり、両
群間に有意差を認めた(p＜0.0001)。CFVR 2.0 を予測する CTP 定性評価の診断率は、精度 84.0
%(感度 94.7%，特異度 72.0%)であった。CTP 定量評価である MBF は CFVR と良好な正の相関を
認めた。CFVR 2.0 未満を予測する MBF の ROC 曲線における AUC は 0.89 で、カットオフ値は 1.
43 mL/g/min であった。CFVR 2.0 を予測する MBF の診断率は、CTP 定性評価と同様であった。 
【結論】今回の検討で、LAD 領域において ATP 負荷心筋 CTP による定性および定量評価を用い
た心筋虚血の診断は、TTDE による CFVR との比較検討において良好な診断能および相関を認め
た。心臓 CT 検査時に ATP 負荷心筋 CTP を施行することは、1 回の検査で CTA による冠動脈の
解剖学的情報と生理学的な心筋虚血の情報を得ることが可能であり、虚血性心疾患の診断・治
療方針の迅速な決定に非常に有用である。同時に、今後の心血管イベントを予測する手法とし

有機材料は自由な構造設計が可能であり，柔軟性や軽さ等，無機材料とは異なる性質を
有する。その特徴を活かし，これまでに機能性有機材料として，機能性有機色素，電子材
料，磁性材料や光機能性材料等に対し幅広く応用されてきた。二分子および三分子のTTF
が縮合したTTP，TTPY分子系は強い分子間相互作用を実現しており，電子材料となる，
分子性導体や二次電池の正極活物質材料として研究されてきた。本研究では有機二次電池
の高性能化を指向した様々なTTFの合成を行い、電気化学的性質や充放電特性の評価を行
った。  
第一章は，緒言であり，本研究の背景と目的についてまとめている。 
第二章では 9,10-アントラキノイド拡張された融合型 TTF 三量体の合成、それらの電気化学的
性質を調べるとともに、正極活物質として用いた二次電池の電池特性評価を行った。酸化還元特
性に関しては、CV 法により、第 1 酸化還元波の形状が掃引速度によって変化し、コンフォメー
ション変化を有した特異な酸化還元挙動を示すことを明らかにした。いくつかの誘導体を正極活
物質として用いたコイン型リチウム二次電池を作製し、性能評価を行ったところ、初回放電容量
は 155 mAh/g であり、現行のリチウムイオン二次電池の正極活物質である LiCoO2(150 mAh/g)
と同程度であった。また、作動電圧を少し低くして利用電子数を抑えることによりサイクル特性
が飛躍的に向上することを見出した。 
第三章ではオンサイトクーロン反発の低減と電解液に対する耐溶解性の向上に期待し、ジチエ
ニルメチレンをスペーサーとした TTF 融合型[3]デンドラレンの合成を行った。CV 法により、
電位窓内に 7 電子が関与した酸化還元波を観測し、オンサイトクーロン反発の低減が示唆された。
二次電池の活物質として利用したところ、初回放電容量は 138 mAh/g を示した。活物質の割合
を増加させて充放電を行なっても容量の低下は見られないことから、非平面構造による多次元的
な分子配列が二次電池における活物質配分量増大に有効であることを見出した。 
第四章では正極活物質の高容量化を目的として、ドナー分子にアクセプター部位を挿入した分
子系を合成、その電気化学的性質、電池特性の関係について記述している。合成に成功した分子
は[3]デンドラレンに電子求引性のジシアノメチレン基を有する。酸化還元特性は CV 法により、
ジシアノメチレン由来の酸化還元波が低電位で、ドナー部位の最高酸化状態での電位が高電位側
で観測された。TTF と２つのジシアノメチレン含有[3]デンドラレンが融合した分子の充放電特
性を調べたところ、初回放電容量は 189 mAh/g と高容量を示し、10 サイクル後の放電容量は初
回満放電の 84%を保持することを見出した。 
第五章では正極活物質として、従来当研究室で注目してきたドナー系分子に代わるドナー・ア
クセプター融合型分子を合成し、その電気化学的性質と電池特性の関係について記述している。
ドナー部位として TTF、アクセプター部位として２つのナフタザリンが融合した分子の合成に
成功した。それを正極活物質として用いたコイン型リチウム二次電池の充放電特性を評価したと
ころ、初回放電容量は 263 mAh/g の高容量を示した。また、初回エネルギー密度は 763 mWh/g
と高エネルギー密度化に成功し、ドナー・アクセプター融合型分子が高容量または高エネルギー
密度化を目指すために、重要な分子骨格であることを明らかとした。 
第六章ではジベンゾ TTF と２つのベンゾキノンから成るドナー・アクセプター融合型三量体
の合成と電池特性について記述している。正極活物質として用いたコイン型リチウム二次電池の
性能評価を行ったところ、初回放電容量は 251 mAh/g の容量を示し、初回エネルギー密度は 703 
mWh/g であった。電池の作動電圧範囲内で最大電子が利用できていないため、電解液や電圧の
検討を行うことで、より高い容量の実現が期待できる。  
第七章では本研究を総括している。 
以上，本論文において、 TTF分子系に適切な化学修飾を施すことにより、二次電池の正極活
物質材料として十分有望であることが明らかにされており，得られた研究成果は構造有機化学、
固体物性化学、電気化学、材料化学等の研究分野の発展に大きく貢献するものと考えられる。よ

Chapter 1. General Introduction 
Net photosynthetic rate (Pn), defined as net CO2 uptake, is essential in diagnosing plant physiological 
activities as a response to the environmental factors. It is an indication of actual plant growth, as well as a guide 
tool for greenhouse control based on the speaking plant approach (SPA). Recently, Pn measurement techniques 
have advanced from single-leaf to whole-plant level under greenhouse conditions. Moreover, the current 
technology of real-time remote sensing devices enables high time resolution, non-contact, non-intrusive 
measurement systems like the novel photosynthesis chamber of Shimomoto et al. (2020) does.  
Cherry tomato is a particularly interesting case for the photosynthesis study by using the novel chamber 
system due to several reasons: (1) it is of high economic value, especially in the summer season, (2) not much is 
known about the whole-plant photosynthetic rate of cherry tomato, (3) its complicated canopy architecture with 
different light distribution within the vertical can be a model plant to represent other plants with the same 
canopy characteristics. The present study used and analyzed the high time-resolution Pn of cherry tomato (S. 
licopersicum var. cerasiforme) cv. Scarlet under greenhouse conditions measured by the chamber. The 
objectives were to develop a Pn estimation model for cherry tomato plants and to gain an understanding of how 
plants interact with their aerial environment.  
 
Chapter 2. The High Time-resolution Net Photosynthetic Rates of Cherry Tomato Plants 
Measurements of the whole-plant net photosynthetic rates of mature cherry tomato plants were conducted 
in spring, summer, and winter in a commercial greenhouse in Mie Prefecture, Japan, by using the 
aforementioned chamber (Fig. 1). The greenhouse environment was optimized by a commercial microcomputer. 
In spring and summer, the opening and closing of greenhouse windows depended on the greenhouse condition 
to maintain the right temperature and the right humidity. In summer, shading was applied on sunny days at noon 
around 11:00 to 14:00. In winter, heating was used to maintain the base air temperature of 17°C, and no 
supplemental lighting was applied. In addition, the rate of CO2 supply was 530 ppm to maintain the set point of 
500 ppm/day in all seasons. There was no fixed time for irrigation. It depended on the needs of the plants based 
on the water content of the slab measured by a sensing device.  
The continuous measurements in high time resolution with 5-min interval established typical diurnal 
changes in each season. Distinct diurnal changes occurred due to different lengths of daytime. Also, the

variation of the changes existed due to climatic factors and different greenhouse control applied in the season. 
Net photosynthetic rate generally increased significantly at the start of the day (after sunrise), maintained at a 
high level at noon, and then decreased during the afternoon hours as the sun went down. Plotting the 30-min 
moving average Pn with the corresponding I, T, C, RH, and VPD was useful to emphasize the diurnal pattern in 
CO2 exchanges. Under the prevailing greenhouse condition, photosynthesis was driven by I, enhanced by C and 
limited by VPD. 
A linear model to estimate canopy Pn (µmol chamber-1 s-1) by using the original 5-min interval of high 
time-resolution Pn resulted in a moderate accuracy (R2 = 0.63; RMSE = 3.799 µmol chamber-1 s-1). The Pn was 
expressed as a linear function of instantaneous PAR above the canopy (I, W m-2), air temperature (T, °C), vapor 
pressure deficit (VPD, mmol mol-1), and CO2 concentration (C, µmol mol-1). The study implied for further data

Chapter 3. Averaging Techniques in Processing the High Time-Resolution Photosynthesis Data of 
Cherry Tomato Plants for Model Development 
The next study of the model development encompassed averaging techniques in processing the original 
data by applying a moving average (MA) and simple average (SA) with several time frames (30-min, 1-h, 2-h). 
A multiple regression analysis in SPSS ver 25 was used to establish the models. Data on spring measurements 
were used for this study. Model accuracy generally increased with longer time frames; however, it can be varied 
depending on the datasets and the variables used in the models. The 2-h simple average datasets gave the best 
accuracy for both 5-variable model (I, T, RH, VPD, C) and 3-variable model (I, VPD, C) with R2 of 0.81 and 
0.67, respectively. This study indicated that datasets of a 2-h time frame with a simple average were promising 
to make a practical general linear regression model.

Chapter 4. Practical Photosynthesis Model for Cherry Tomato using the High Time-resolution 
Photosynthesis Data 
Further study was conducted by using a 10-day dataset processed with a 2-hour simple average to estimate 
the next five-day Pn. In this study, four linear models by four variables ((I, T, RH, C) were explored namely the 
general linear model (Model A), the linear interaction model (Model B), the linear-quadratic model (Model C), 
and the linear interaction-quadratic model (Model D). The regression learner application in MATLAB® R2019a 
was used to establish the models by using processed data of summer measurement. The stepwise method was 
used to select the variables included in each model. As a result, models A, B, C, and D correspond to Equation 1, 
2, 3, and 4, respectively. The Pn by Eq. 4 (Model D), which expressed as a linear function that incorporated the 
quadratic and interaction components of I, T, and C, resulted best. The model estimated Pn with high accuracy 
(R2 = 0.94, RMSE = 1.727 µmol chamber-1 s-1) and performed well on both sunny and rainy conditions, but 
with lower time resolution. The study implied that further data processing has succeeded in increasing model 
accuracy. The model is more suitable for long-term analysis meaning that under the prevailing optimized 
condition in summer, the dominant factors contributing to Pn were I, T, and C.

Chapter 5. Whole-plant Net Photosynthetic Rate Model for Cherry Tomato under Commercial 
Greenhouse using the High Time-resolution Photosynthesis Data 
For a higher time-resolution estimation, further study was conducted by using a 10-day dataset processed 
with a 5-point moving average of the original data to estimate the next five-day Pn. In this study, Model A, B, C, 
and D, as in Chapter 4, were trained with the processed data by using the regression learner application in 
MATLAB® R2019a. The stepwise method selected the significant variables for each model. As a result, models 
A, B, C, and D correspond to Equation 5, 6, 7, and 8. The whole-plant Pn (µmol plant-1 s-1), expressed as a linear 
function that incorporated the quadratic and interaction components of I, T, VPD, and C as in Model D (Eq. 8), 
resulted best. Estimations of Pn were agreed well (R2 = 0.89, RMSE = 1.471 µmol plant-1 s-1). Model validation 
with a sunny and rainy day showed that the model could predict well despite the dynamic changing of Pn as a 
response to the dynamic changing of environmental factors. Figs. 2 and 3 show the time course of measured and 
estimated whole-plant photosynthetic rate for test dataset on a sunny day on 24th June (n = 183) and a rainy day 
on 23rd June 2018 (n = 181), respectively.

Chapter 6. Summary 
The results of the present study suggest that whole-plant Pn of cherry tomato plants can be empirically 
estimated from aerial environmental factors without including the leaf area into the function by using the high 
time-resolution photosynthesis data. The study implied that by applying feature engineering, a linear model 
could fit the high time-resolution photosynthesis data and was able to estimate whole-plant Pn in reasonable 
accuracy. Further study to implement the model in process computer control at a greenhouse is needed. Once 
the system has been settled, the controlling of greenhouse environmental factors based on the SPA becomes 
feasible.
