Papermaking as Potential Use of Fibers from Mexican Opuntia ficus-indica Waste
The papermaking potential of Opuntia ficus-indica (OFI) waste fibers was studied in this research. Alpha cellulose, lignin, hollocellulose, ethanol/benzene extractives and ash content were determined as 53.7±0.1%, 2.4±0.3%, 61.6±5.7%, 7.1±0.3% and 26.4±0.1%, respectively. The average fiber length, width, lumen and cell wall thickenss were found to be 1.1±0.3 mm, 18.8±6.1µm, 12.1±5.4 µm, 4.3±1.0 µm. Soda pulping was conducted using 20 and 28% sodium hydroxide, cooking temperatures of 160 and 175 °C, cooking times of 60 and 120 min, and liquor- to fiber ratio of 9:1. Soda pulping with 28% sodium hydroxide, 175 °C and 120 min showed a lower Kappa number of 29.60±1.7 and a total yield of 32.2±1.6 %. In general, tensile strength index (36.0±5.0 Nm/g), stretch (1.7±0.3%), breaking length (3.7±0.5 km), burst index (3.2±0.4 KPa.m2/g), tear index (7.3±0.0 mN.m2/g), folding endurance (166 times) and porosity (> 120 s) of OFI pulp were comparable with wood and non-wood pulps
Efecto de termosonicación y pasteurización sobre propiedades fisicoquímicas, microbiológicas y nutracéuticas en bebidas de maíz
Maize is one of the main sources in human nutrition. Thanks to its nutritional contribution, it is used in the crafted or traditional beverages preparation. Since there is little information on the beverage formulation and their behavior in emerging or traditional preservation treatments, the objective of this work was to evaluate the effect of thermosonication as a preservation treatment, and a pasteurization traditional treatment, on color, microbiological quality, physicochemical parameters and nutraceutical properties of white and purple maize beverages. The results show changes in color and physicochemical parameters (pH, titratable acidity and total solids) and content of microorganisms. No differences were observed in phenolic compounds (95.23-128.29 mg EAG/L), flavonoids (43.41-72.30 mg EC/L) and anthocyanins (0.89-1.20 mg EC3G/L). The white maize beverage had a higher ferulic acid content (45.77-48.90 mg / L), while the purple maize showed higher chlorogenic acid values (37.14- 39.58 mg/L), caffeic (33.26 mg/L) and antioxidant capacity of DPPH (311.48-384.78 μmol ET/L) and FRAP (1093.33-1566.67 μmol ET/L). In conclusion, pasteurization in maize beverages favored the increase of the antioxidant capacity and a greater efficiency in microbiological quality.El maíz es una de las principales fuentes en la nutrición humana, y por su aporte nutrimental y contenido de azúcares fermentables es utilizado en la preparación de bebidas artesanales o tradicionales que pueden ser alcohólicas o no alcohólicas. La disponibilidad del maíz está determinada por la región, variación genética y condición geográfica donde se cultiva. Algunos tipos de maíz disponibles en las diferentes regiones poseen características propias como pueden ser tamaño, color, forma del grano y contenido de compuestos antioxidantes. Debido que existe poca información sobre formulación de bebidas y su comportamiento frente a tratamientos de conservación tradicional o tecnologías alternativas, el objetivo de este trabajo fue evaluar el efecto de un tratamiento alternativo de conservación con termosonicación y un tratamiento tradicional térmico de pasteurización a 85 °C sobre color, calidad microbiológica, parámetros fisicoquímicos y propiedades nutracéuticas de bebidas de maíz blanco y morado. Los resultados en las bebidas mostraron ligeras modificaciones de color y reducción de la cantidad de microorganismos, y no se observaron diferencias en las parámetros fisicoquímicos y compuestos fenólicos. En la bebida de maíz blanco se encontró mayor contenido de ácido ferúlico, mientras que en la bebida de maíz morado mostró un mayor contenido de ácido clorogénico, cafeico y mayores niveles de capacidad antioxidante. En conclusión, el tratamiento térmico tradicional de pasteurización resultó más eficiente que la termosonicación para la reducción de cantidad de microorganismos y no afectó las propiedades fisicoquímicas. Por otro lado, la capacidad antioxidante fue mayor en la bebida de maíz morado y esta se incrementó después del tratamiento térmico.  
Extraction of phenolic compounds from agro-industrial by-products by fungal fermentation with potential use as additives for meat and meat products. A review
The present manuscript reviews the findings of different research studies that evaluate the use of fungal solid-state (SSF) and submerged culture fermentation (SCF) with agro-industrial residues as substrates to enhance the production of polyphenols and their possible uses as food additives. Some agro-industrial residues (peels, pulps and seeds) are an important source of phenolic acids (p-coumaric, p-hydroxybenzoic, chlorogenic, cinnamic, ferulic, gallic, gentisic, protocatechuic, rosmarinic, salycilic, syringic, and vanillic acids) and flavonoid compounds (apigenin, chrysin, (+)-catechin, kaempferol, myricetin, quercetin, rutin, hesperetin, and naringin). In addition, the utilization of these residues as substrates in SCF and SSF enhances polyphenol production, improves biological function by increasing antioxidant and antimicrobial activities, and provides a potential alternative to synthetic antioxidant uses in the meat and meat products industry.El presente manuscrito revisa los hallazgos de diferentes estudios de investigación que evalúan el uso de la fermentación con hongos en cultivo sumergido (SCF) y sólido (SSF) con residuos agroindustriales como sustratos para mejorar la producción de polifenoles y su posible uso como aditivos alimentarios. Algunos residuos agroindustriales (pulpas, cáscaras y semillas) son una fuente importante de compuestos como ácidos fenólicos (p-cumárico, p-hidroxibenzoico, clorogénico, cinámico, ferúlico, gálico, gentísico, protocatecuico, rosmarínico, salicílico, siríngico, y vanílico) y flavonoides (apigenina, crisina, (+)-catequina, kaempferol, miricetina, quercetina, rutina, hesperetina, y naringina). Además, la utilización de estos residuos como sustratos en SMF y SSF mejora la producción de polifenoles, mejora la función biológica al incrementar la actividad antioxidante y antimicrobiana, y proporciona una alternativa potencial al uso de antioxidantes sintéticos en la industria de la carne y productos cárnicos
Efecto de la adición de cáscara y semilla deshidratada en la capacidad antioxidante de una pasta de tomate producida en Sinaloa
Studies showed that the removal of husk and seed from tomato affected the antioxidant capacity. The objective: to evaluate the effect of the addition of seed and dried peel in antioxidant capacity of tomato paste produced in Sinaloa. Saladette tomatoes (Solanum lycopersicum L.), for Control Pasta (PC), added with 1% (P1), 1.5% (P1.5) and 3% (P3) of dried husk and seed were used. Tomatoes were disinfected, scaled, pulped and evaporated, the by-product dried (70 ° C / 6 h) (SCS) to be added to P1, P1.5 and P3. Antioxidant capacity was evaluated at time 0 week 24 of storage by determination of total phenols, DPPH, TEAC and ORAC. The experimental design was one-way ANOVA and the differences between averages were evaluated by Tukey (p≤0.05). The total phenolic content was higher in SCS (58.92 ± 1.29a) to the other treatments (p≤0.05), which increased when adding seed and husk. The major DPPH inhibition was in SCS, followed by P3 (67.207 ± 0.52b), with a direct relationship between the addition of the by-product and the antioxidant capacity in P1 and P1.5 (p> 0.05). Total phenols, DPPH, TEAC and ORAC decreased over time. The addition of husk and dehydrated seed modifies the antioxidant capacity that deteriorates over time.Estudios demostraron que la eliminación de cáscara y semilla del tomate afectaron la capacidad antioxidante. El objetivo: evaluar el efecto de la adición de semilla y cáscara deshidratada en capacidad antioxidante de pasta de tomate producida en Sinaloa. Se utilizaron tomates saladette (Solanum lycopersicum L.), para Pasta control (PC), adicionada con 1% (P1), 1.5% (P1.5) y 3% (P3) de cáscara y semilla deshidratada. El tomate se desinfectó, escaldó, despulpó y evaporó, el subproducto se secó (70°C/6 h) (SCS) para agregarse a P1, P1.5 y P3. Se evaluó capacidad antioxidante en tiempo 0 semana 24 de almacenamiento mediante determinación de fenoles totales, DPPH, TEAC y ORAC. El diseño experimental fue ANOVA de una vía y las diferencias entre promedios se evaluaron mediante Tukey (p≤0.05). El contenido de fenoles totales fue mayor en SCS (58.92±1.29a) a los demás tratamientos (p≤0.05), que aumentaron al adicionar semilla y cáscara. La inhibición de DPPH mayor fue en SCS, seguido de P3(67.207±0.52b), con relación directa entre la adición del subproducto y la capacidad antioxidante en P1 y P1.5 (p>0.05). Fenoles totales, DPPH, TEAC y ORAC disminuyeron respecto al tiempo. La adición de cáscara y semilla deshidratada modifica la capacidad antioxidante que se deteriora con el tiempo.

Supplementation of corn tortilla with freeze-dried jumbo squid muscle flour: physicochemical properties and microbiological stability during storage
Corn tortilla is one of the most consumed foodstuffs in Latin America, representing a good nutrients source, although deficient in some essential amino acids. Jumbo squid (Dosdicus gigas) muscle possesses high-quality protein, useful for tortilla supplementation. Our objective was to elaborate corn tortillas supplemented with jumbo squid muscle flour (JSMF), using composite corn flours containing JSMF (2.5 and 5.0%), to improve their nutritional quality without affecting their physicochemical/sensory properties and storage stability. Supplementation with 5% JSMF increased (P<0.05) tortilla protein level, and the essential amino acids versus the control. The 2.5% JSMF tortillas were tasteful and acceptable (P≥0.05) as the control. JSMF addition showed an antimicrobial effect on mesophilic and psychrophilic bacteria; however, yeast and moulds grew beyond the permissible limit at day 5 of storage. JSMF addition did not affect (P≥0.05) the cutting force, with all tortillas tending to become harder to roll without cracking as storage elapsed. Tortilla storage stability (supplemented or not) was 3 days at 2–4 °C. Results suggest the feasibility of adding JSMF to corn tortilla, improving its nutritional characteristics without markedly affecting other parameters
Metabolite profiling and antioxidant capacity of lettuce Lactuca sativa var. longifolia grown in an aquaponic system irrigated with shrimp effluents
This paper focuses on the quality of lettuce var. longifolia grown with shrimp effluents from well water (WW), diluted seawater (DSW) and a hydroponic solution (HS). Results evidenced that WW and DSW effluents slightly decreased weight, foliage, and yield (5-9%) in plants compared to HS control. Furthermore, WW-lettuce showed a higher level of total phenolic compounds (~71%), flavonoids (~90%), and antioxidant capacity (0.7-3-folds) than HS-plants, mainly in the soluble fraction. WW-lettuce also showed a higher content of total soluble solids (~16%) and, a lower saturation of color, which correlated significantly (p <0.05) with chlorophyll a. WW-lettuce exhibited the highest concentrations of p-hydroxybenzoic, p-coumaric and ferulic acids, as well as quercetin 3-O-glucoside and quercetin 3-O-ramnoside. Whereas DSW-lettuce showed the highest levels of caffeic acid, isorhamnetin 3-O-glucoside, kaempferol 3-O-glucoside, kaempferol and quercetin. HS-lettuce showed a higher proline content than the lettuces from the other treatments. These results indicate that aquaponic lettuce culture with shrimp effluent from WW could be used as an alternative culture system to reduce land area requirements, decrease or eliminate the discharge and impact of shrimp effluents, and simultaneously improve the functional properties of lettuce.Este estudio evalúa la calidad de la lechuga var. longifolia irrigada con efluentes camaronícolas de agua de pozo (WW), agua de mar diluida (DSW) y una solución hidropónica (HS). Los resultados mostraron que WW y DSW disminuyen ligeramente el peso, follaje y rendimiento (5-9%) en las plantas comparado con el control-HS. La lechuga-WW mostró un nivel superior de fenólicos totales (~71%), flavonoides (~90%) y capacidad antioxidante (0.7-3-veces) que las plantas-HS, principalmente en la fracción soluble. La lechuga WW mostró un contenido mayor de sólidos soluble totales (~16%) y, menor saturación de color, el cual se correlacionó (p <0.05) con la clorofila a. La lechuga-WW exhibió las concentraciones más altas ácidos p-hidroxibenzoico, p-cumárico y ferúlico, así como de quercetina 3-O-glucósido y quercetina 3-O-ramnósido. Mientras que la lechuga-DSW mostró los niveles más altos de ácido cafeico, isorharmentina 3-O-glucosido, kaempferol 3-O-glucosido, kaempferol y quercetina. La lechuga-HS mostró un mayor contenido de prolina que las lechugas de los otros tratamientos. Estos resultados indican que el cultivo aquaponico con efluente camaronícola-WW puede ser usado como una alternativa para reducir los requerimientos de suelo, decrecer o eliminar la descarga e impacto de los efluentes camaronicolas, y simultáneamente mejorar las propiedades funcionales de la lechuga
Identificación molecular y evaluación de bacterias en el desarrollo vegetativo y producción de chile habanero
The production of habanero pepper includes the use of chemical fertilization, which contaminates the soil and aquifer mantles. This environmental damage has motivated the search for sustainable alternatives such as growthpromoting bacteria. This research aimed to isolate growthpromoting bacteria, identify them molecularly, and evaluate their effects on the vegetative development and production of habanero pepper. Five bacterial strains were isolated and identified from samples from different land uses; the agroforestry system recorded on average the most significant amount (3.5x105 CFU g-1) of bacterial strains. Analysis of the 16S ribosomal DNA gene indicated that the bacteria were associated with species belonging to the Bacillus genus; however, the phylogenetic study shows that the identification at a species level is not possible; these strains stimulated better the seedlings growth (6.86, 6.70 and 6.76 cm, respectively). In the macro tunnel greenhouse evaluation, the EAV2 strain best stimulated the development of plants (38.63 cm) and produced better fruit weight (6.45 g).La producción de chile habanero se realiza con fertilización química, lo cual contamina el suelo y los mantos acuíferos. Esto ha motivado la búsqueda de alternativas sostenibles como las bacterias promotoras de crecimiento. El objetivo de esta investigación fue aislar bacterias promotoras del crecimiento, identificarlas molecularmente y evaluar sus efectos en el desarrollo vegetativo y producción de chile habanero. Se aislaron e identificaron cinco cepas bacterianas a partir de muestras de distintos usos de suelo; el sistema agroforestal registró en promedio la mayor cantidad (3.5x105 UFCg-1) de cepas bacterianas. El análisis del gen ADN ribosomal 16S indicó que las bacterias se asocian a diferentes especies del género Bacillus, sin embargo, el estudio filogenético demostró que no es posible aún identificarlas a nivel de especie; estas cepas estimularon el crecimiento de las plántulas (6.86, 6.70 y 6.76 cm, respectivamente). En la evaluación en macrotúnel, la cepa EAV2 fue la que estimuló el desarrollo de plantas (38.63 cm) y mejor peso de frutos (6.45 g)
Soluciones hidratantes en dos cultivares de nardo (Polianthes tuberosa): respuestas físicas, fisiológicas y bioquímicas
Tuberose (Polianthes tuberosa) ‘Mexicano’ and ‘Perla’ spikes, were harvested with 5 or 1 open basal flowers, and then treated with hydrating solutions containing gibberellic acid, benzyladenine, amino oxyacetic acid, citric acid, sucrose or hydroxyquinoline citrate, to evaluate postharvest physical, chemical and physiological changes, for a later technological development to increase the useful life of this ornamental plant. We used a radomentized experimental design, with a spike as the experimental unit and six or eight repetitions. Our results indicate that in both varieties, the relative fresh weight and water consumption and the number of open flowers increased, while respiration and total sugars decreased, when treated with HS containing AC or BA. The appearance was good for five days in ‘Mexicano’ spikes hydrated with AC or BA + Sac, while in ‘Perla’, for seven days in all HS-applied treatments. Peroxidase, catalase and superoxide dismutase enzymatic activities were high in control spikes and low when hydrated with AC or BA. In conclusion, hydration with AC or BA improves the metabolism and quality of ‘Mexicano’ and ‘Perla’ spikes.Espigas de nardo (Polianthes tuberosa) ‘Mexicano’ y ‘Perla’ con 5 ó 1 flores basales abiertas, se trataron con soluciones hidratantes (SH) conteniendo ácido gibérelico (AG3), benciladenina (BA), ácido amino-oxiácetico (AOA), ácido cítrico (AC), sacarosa (Sac) o hidroxiquínoleina citrato (HQC) con el objetivo de evaluar los cambios físicos, químicos y fisiológicos durante poscosecha, para posteriormente desarrollar tecnologías que incrementen la vida útil de esta especie ornamental. Se utilizó un experimento completamente al azar, la unidad experimental fue una espiga con seis a ocho repeticiones. Los resultados indican que el peso fresco relativo, consumo de agua y número de flores abiertas se incrementó; la respiración y azúcares totales disminuyeron en ambas variedades, cuando se aplicaron SH con AC o BA. La apariencia fue buena por cinco días en ‘Mexicano’ en las espigas hidratadas con AC o BA+ Sac y en ‘Perla’ por siete días en todos los tratamientos donde se aplicó SH. La actividad de peroxidasa, catalasa y superóxido dismutasa fue mayor en las espigas testigo y menor cuando se aplicaron las SH con BA + Sac o AC. En conclusión, la hidratación con AC ó BA mejoran el metabolismo y calidad de las espigas de nardo ‘Mexicano’ y ‘Perla’ en poscosecha
Effect of dietary prebiotic inulin and probiotic Bacillus subtilis and Lactobacillus sp., on the intestinal microbiota of white shrimp Litopenaeus vannamei
Juvenile Litopenaeus vannamei (1.05 ± 0.1 g) were fed during 4-week with four experimental diets: control (Ctrl), inulin as prebiotic (5 g kg-1) (Pre), Bacillus subtilis and Lactobacillus sp. as probiotic (1 x 105 CFU g-1) (Pro), and a mix of inulin + B. subtilis and Lactobacillus sp. (5 g kg-1 + 1 x 105 CFU g-1) (Syn). Shrimps fed Syn diet showed significantly better feed utilization and higher growth than those in control diet (P < 0.05). The probiotic employed induced higher intestinal bacterial richness, whereas inulin in feed induced higher bacterial diversity in shrimp intestine. The most dominant bacterial phylum in the shrimp intestine among treatments was Proteobacteria with abundance ranging between 80 and 84 %. Prebiotic diet (Pre) increased relative abundance of Firmicutes in shrimp intestine (2 %) compared to the rest of the treatments (0.6 %). Nevertheless, when probiotics were included in the feed (Pro and Syn), a reduction between 3 and 13 % in the relative abundance of Vibrio sp. in shrimp intestine was observed respect to the control treatment, which represent an advantage to control potential pathogens of this genus.Juveniles de Litopenaeus vannamei (1.05 ± 0.1 g) fueron alimentados durante cuatro semanas con cuatro dietas experimentales: control (Ctrl), inulina como prebiótico (5 g kg-1) (Pre), Bacillus subtilis y Lactobacillus sp. como probiótico (1 x 105 UFC g-1) (Pro), y una mezcla de inulina + B. subtilis y Lactobacillus sp. (5 g kg-1 + 1 x 105 UFC g-1) (Syn). Los camarones con la dieta Syn resultaron en un crecimiento significativamente mayor y una mejor eficiencia de utilización del alimento que los camarones control (P < 0.05). El probiótico empleado indujo una mayor riqueza bacteriana intestinal, mientras que la inulina resultó en una mayor diversidad bacteriana en el intestino del camarón. A nivel de filo, Proteobacteria fue el más dominante en todos los tratamientos, entre 80 y el 84 %. La dieta Pre aumentó la abundancia relativa de Firmicutes en el camarón (2 %) en comparación con el resto de los tratamientos (0.6 %). El uso del probiótico (Pro y Syn), resultó en una reducción de entre 3 y 13 % en la abundancia relativa de Vibrio sp. en intestino de camarón respecto al tratamiento control, que representa una ventaja para el control de potenciales patógenos de este género
Dose-dependent effect of recombinant CHH-B1 on osmoregulatory capacity and Na+/K+-ATPase expression in bilaterally eyestalk-ablated shrimp Litopenaeus vannamei
Osmoregulation in crustaceans is under neuroendocrine control by the crustacean hyperglycemic hormones (CHHs), which modify water and ion concentrations in diverse species. Previous studies done by our group suggested that CHH variant B1 (CHH-B1) has effects on the osmoregulatory responses of the Pacific white shrimp Litopenaeus vannamei. For a better understanding of the molecular action mechanisms of CHH-B1 in osmoregulation, in this work, we established the dose-dependent effect of recombinant CHH-B1 on the gene expression of Na+/K+-ATPase (NKA) in gills, in contrast to changes in the osmoregulatory capacity (OC) of bilaterally eyestalk-ablated shrimp under hyper-osmotic conditions. The results indicate that CHH-B1 regulates the OC of shrimp during hypo-regulation by modulating Na+/K+-ATPase at a transcriptional level. Our results suggest that CHH has a direct participation in the control of osmo-ionic regulation mechanisms, not only in L. vannamei but in crustaceans in general.La osmorregulación en crustáceos está bajo control neuroendócrino por las hormonas hiperglucémicas de crustáceos (CHHs), las cuales han mostrado modificar las concentraciones de agua e iones en diversas especies. Estudios previos hechos por nuestro grupo sugieren que la CHH variante B1 (CHH-B1) tiene efectos en las respuestas osmorreguladoras del camarón blanco Litopenaeus vannamei. Para una mejor compresión sobre los mecanismos de acción moleculares de CHH-B1 en osmoregulación, en este trabajo, establecimos el efecto dosis-dependiente de la CHH-B1 recombinante sobre la expresión génica de la Na+/K+-ATPasa en branquias, en contraste con lo cambios en la capacidad osmorreguladora (CO) de camarones bilateralmente ablacionados del pedúnculo ocular bajo condiciones hiper-osmóticas. Los resultados indican que CHH-B1 regula la OC de camarones durante la hipo-regulación mediante la modulación de la NKA a nivel transcripcional. Nuestros resultados sugieren que CHH tiene una participación directa en el control de los mecanismos de regulación osmo-iónica, no solo en L. vannamei sino en crustáceos en general
