    The relationship between the softness and sugar content of kiwifruit was investigated using a penetrometer with a conical needle and a saccharinity meter at a temperature of 27℃ . A linear relationship was found between softness and sugar content in the sugar content range of 10.2–16.5. Sugar content increased by a value of approximately 0.9 as the conical needle was inserted 1 mm into the kiwifruit.departmental bulletin pape

    Carbohydrates and proteins bind with low affinity: their interactions are poorly understood. Photoaffinity labeling technology is the most efficient method used for elucidating carbohydrate–lectin interactions. Emmyguyacins B, which shows anti-influenza potential, was obtained from sterile fungus species in this study. However, as the relationship between hemagglutinin and Emmyguyacins B was unknown, we attempted to synthesize new molecular tools containing emmyguyacins B to elucidate their interactions.     Immunological effects of soy pulp (okara) extract containing ß-glucan

    In this study, we established an enzyme-linked immunosorbent assay (ELISA) to measure ß-glucan in soy pulp (okara) extracts using a ß-glucan-specific antibody developed in our laboratory. Using this ELISA, we first demonstrated that raw and powdered okara extracts contained ß-glucan. Raw okara extracts contained especially large amounts of ß-glucan. Interestingly, culturing human umbilical vein endothelial cells (HUVECs) with raw okara extract significantly enhanced secretion of soluble-form CD44 (sCD44) into the culture supernatants, and addition of a ß-glucan-specific antibody significantly suppressed the enhanced secretion of sCD44 from HUVECs cultured with raw okara extract. These findings strongly indicate that raw okara extract exerts specific immunostimulatory actions on HUVECs via modulation of ß-glucan. These findings also suggest that human consumption of okara may impart important physiological and immunological health maintenance benefits.自家製の酵素免疫アッセイ法(ELISA)を用いて、生おからと粉末おから抽出液のß-グルカンを測定した ところ、生おからと粉末おからにß-グルカンが含まれていることが明らかになった。特に、生おからには多 量のß-グルカンが含まれていた。興味深いことに、生おから抽出液で培養したヒト臍帯静脈内皮細胞 (HUVECs)は、可溶性CD44(sCD44)の分泌を有意に増強させた(P<0.001)。 さらに、sCD44 の分泌増強 は、ß-グルカン特異的抗体(IK-5856)で有意に抑制された (P<0.001)。以上の結果は、ß-グルカンを含む生お から抽出液はß-グルカンの特異的な刺激を介して、HUVECsに免疫賦活作用を与えることが明らかになっ た。おからを食することは、健康維持に大いに役立つ可能性があると考えられた。departmental bulletin pape
