Sobre o cozinhado dos alimentos que se não comem crus: Uma leitura das práticas culinárias segundo o Tratado Completo de Cozinha e de Copa de Carlos Bento da Maia (1904)
No full textO Tratado Completo de Cozinha e de Copa, written by Carlos Bento da Maia, is a seminal work that marked the dissemination of culinary knowledge throughout the first half of the 20th century. Despite the recognized importance of this book and its author in the panorama of Portuguese culinary literature, there have been few studies dedicated to it.
In this work, we reflect on Portuguese culinary practices in their historical dimension, focusing on the contributions of culinary literature and establishing relationships with the material and cultural aspects of food preparation. We present the results of a quantitative and qualitative analysis based on 490 recipes from the aforementioned book, supported by the assessments that Bento da Maia recorded in the section Sobre o cozinhado dos alimentos que se não comem crus. The characterization of the recipe collection, considering culinary methods and techniques, with special attention given to cooking and food preservation techniques, allowed an interpretation considering the chronology of the energy and technological transition of the early 1900s in Portugal, highlighting the role of these factors in the evolution of culinary practices.O Tratado Completo de Cozinha e de Copa, escrito por Carlos Bento da Maia, é uma obra de referência que marcou a difusão do saber culinário ao longo da primeira metade do século XX. Apesar da reconhecida importância deste livro e do autor no panorama da literatura culinária portuguesa são escassos os estudos que lhe foram inteiramente dedicados.
Neste trabalho refletimos sobre as práticas culinárias portuguesas na sua dimensão histórica, centrando-nos nos contributos da literatura culinária e estabelecendo relações com os aspetos materiais e culturais da confecção alimentar no espaço doméstico. Apresentamos os resultados de uma análise quantitativa e qualitativa com base em 490 receitas do livro em estudo, suportando-nos nas apreciações que Bento da Maia registou na secção Sobre o cozinhado dos alimentos que se não comem crus.
A caracterização do receituário, atendendo aos métodos e técnicas culinárias, e particularmente às técnicas de cocção e de conservação dos alimentos, proporcionou uma interpretação à luz da cronologia da transição energética e tecnológica das primeiras décadas de 1900 em Portugal, destacando o papel destes fatores na evolução das práticas culinárias

No full textThe themes of the so-called Palinode have often produced different levels of disorientation. For this reason, I considered it necessary to start from the relationship between the Palinode and the three metaphysical dialogues par excellence (Phd., R. and Smp.). In this relationship, factors of discontinuity no doubt prevail, but the memorable creativity of the Palinode powerfully suggests not to dismiss the issue hastily. However, once the Palinode is concluded, why does the enthusiasm with which Platonic Socrates had evoked “World 2” in the Palinode dissolve in an instant? The sudden distancing that follows seems unmotivated and is therefore difficult to account for. In view of that, I argue that the post-Palinode section of the Phaedrus is marked by a very clear desire to look forward, to the present, and not back, so as to say things that are (or could be) significant for Plato’s contemporaries. A special attention is then paid to the new, and impressively creative, idea of rhetoric that surfaces in Phdr. 261ab and 264c. A section on orality and writing follows. Here I maintain that this does not go at all in the direction indicated by the masters of the so-called Tubingen School. I then argue that the Phaedrus is aimed at several (but primarily two) different types of audience and that not every goal was fully reached by Plato – which, if you think about it, is not surprising

No full textUniversities are privileged institutions to spread awareness and to start debates about current issues, namely social political and minority topics. Also, recently, certain universities have needed to acknowledge previous (and current) problematic power relations and dissonant heritage within and related to their structures. The purpose of this research is to discuss how tourism is enabling universities to reflect internally and develop external discourses about their past positioning in political and minority issues and their current critical and educational role on the same issues, by identifying tourist initiatives and/or products explored in universities. The collection of examples is based on the consultation of forty-eight institutional websites of universities worldwide and complemented by direct observation in European universities and by previous literature. Results show that several themes are being explored – slavery, ethnic stories and indigenous representation, gender identity and sexual orientation, mental health, challenge to dominant powers, sociocultural diversity within political territories, and other social and territorial marginalised groups – through different tools and strategies. The benefits of the inclusion of minority narratives in university attractions, as well as some concerns and possible directions for future research, are discussed.As universidades são instituições privilegiadas para consciencializar e iniciar debates sobre questões atuais, nomeadamente tópicos sociopolíticos e de minorias. Recentemente, certas universidades tiveram a necessidade de reconhecer relações prévias (e atuais) de poder problemáticas e heranças dissonantes relacionadas com as suas estruturas. O objetivo desta investigação é discutir como o turismo está a permitir às universidades refletir e desenvolver discursos sobre o seu posicionamento passado e o seu papel crítico e educativo atual sobre questões políticas e de minorias, através da identificação de iniciativas/produtos turísticas/os exploradas/os nas universidades. A recolha de exemplos baseia-se na consulta de websites institucionais de universidades a nível mundial, complementada por observação direta e pela revisão da literatura. Os resultados demonstram que vários temas estão a ser explorados – escravatura, histórias étnicas e representação indígena, identidade de género e orientação sexual, saúde mental, desafio aos poderes dominantes, diversidade sociocultural dentro de territórios políticos e outros grupos sociais marginalizados – através de diferentes ferramentas e estratégias. Os benefícios da inclusão de narrativas minoritárias nas atrações universitárias, bem como algumas preocupações e possíveis direções para investigações futuras, são discutidos
