Radical Scavenging Activity of Fukinolic Acid
P(論文)今まで報告例のないフキノール酸(FA)のラジカル消去能について、クロロゲン酸(CGA)、エピガロカテキンガレート(EGCG)、没食子酸(GA)と比較して検討した。スーパーオキシドアニオン(HX-XOD反応で生成)、ヒドロキシルラジカル(フェントン反応で生成)、一酸化窒素(NOC-7より生成)およびDPPHラジカル消去能はESR法を用いて測定した。またDPPHラジカル消去能は吸光度法でも測定した。その結果、スーパーオキシドアニオン消去能はEGCG>GA>FA>CGAの順、ヒドロキシルラジカル消去能はEGCG>CGA>FA>GAの順、一酸化窒素消去能はEGCG>FA>CGAの順、ESR法で測定したDPPHラジカル消去能はEGCG>GA>FA>CGAの順、そして吸光度法で測定したDPPHラジカル消去能はEGCG>FA>CGAの順となった。本研究によりFAは抗酸化剤としての利用が期待できると考えられる。Radical scavenging activity of fukinolic acid (FA), chlorogenic acid (CGA), epigallocatechin gallate (EGCG) and gallic acid (GA) against superoxide anion (produced by HX-XOD reaction), hydroxyl radical (produced by Fenton reaction), nitric oxide (NO) (produced by NOC-7 with carboxy-PTIO) and DPPH radical was measured by ESR spectroscopy and OD method. The radical scavenging activity of these compounds was in the following order : (1) superoxide anion, EGCG>GA>FA>CGA, (2) hydroxyl radical, EGCG>CGA>FA>GA, (3) NO, EGCG>FA>CGA, and (4) DPPH radical, EGCG>GA>FA>CGA (ESR method), EGCG>FA>CGA (OD method). Survey of Eating on Daily meals to Female College Students
P(論文)女子学生の食生活の実態を把握し食教育の実践に生かすことを目的として、本学女子学生128名にアンケート調査を行った結果、以下のような食生活を取り巻く実態が判明し、今後の食教育のあり方について多くの助言が得られた。摂取頻度のもっとも高い食品は、その他の野菜で、次いで油類、牛乳・乳製品であった。また、摂取頻度の低い食品群として、海藻類、豆類・豆腐製品、魚・肉またはその加工品、緑黄色野菜が挙げられた。「改善の必要あり」および「放っておくと健康を損なう恐れあり」と判断された学生がそれぞれ27%および5%存在する一方、「健康状態が良い」が13%で、「まあまあ良い状態」が55%であった。また、80%の学生が米を主食としており、パンが10.5%、麺類が9.5%であった。今回の調査で初めて「外食」と「中食」の領域に共通な食べ物として「ハンバーガ」「サラダ」「寿司」が挙げられた。「外食」は、80%以上の学生が週に1~3回利用しているが、「中食」は、1日に1~2回利用している学生と、週に1~3回利用している学生とが半分ずつ観察された。飲料では「お茶」が60%以上の学生にもっとも高頻度で飲まれており、菓子では第1位に「チョコレート」が挙げられた。約50%の母親が食事作りをしており、学生自身が自分で作るが33%.で、そのうちの1人暮らしの2/3が「自分」で食事作りをしていることが判った。A questionnaire survey of food preference on daily meals was conducted for 128 second-year female students who belong to Seitoku nutrition junior college in Tokyo. For the intake of foods, whitish vegetables were the highest used and sea foods, soybeans or soybean products, fish or meat products and greenish vegetables were the lowest. 5% students earned a bad score who were judged to be completely "out of health" and 27% were needed to be further refined by scoring the above results. While only 13% were "good health" and 55% were neither good nor bad. 80% students live on rice as stable food on daily meals. The most used favorite beverage and confectioneries were tea and chocolate, respectively. "Gaisyoku (eat-out food)" was used once or three a week by 80% students. "Nakasyoku was used once or twice by about 50% every day. A hamburger, salad and sushi were appeared in both of them. The result of this survey showed some important contents about eating daily meals of female students, and that will give valuable advice to teaching of health and foods in our junior college.departmental bulletin pape
The dual mode sorption and diffusion of NaCI at 98℃ in pre-cooked egg white : Rapid communication
P(論文)The concentration profile of NaCl by the one dimensional diffusion with the FRITRUC method in pre-cooked egg white from the 3.0% solution was measured at 98℃. Fick's diffusion coefficient, D, calculated therefrom was 2-4 × 10^cm^2s^ and showed a maximum near 0.07mol kg^-1. This variation was quantitatively interpreted by applying the dual mode sorption and diffusion theory developed for the dyeing of Nylon with some anionic dyes. Two thermodynamic diffusion coefficients, D_T(p) and D_T(L), where p and L means partition and Langmuir mode species of NaCl, respectively, a parameter, a, derived from the equilibrium relations between the p and L species, and S, the concentration of the Langmuir adsorption site in the egg white, were estimated. D_T(p) was found to be 2.2 × 10^cm^2s^ and D_T(L) was 2.5 × 10^cm^2s^. These results were discussed with reference to the NaCl diffusion in Japanese radish.departmental bulletin pape
DPPH Radical Scavenging Activity of Chlorogenic Acid Related Compounds and their Effects against Mouse Macrophage-like Cells
P(論文)Green coffee contains a large amount of polyphenols, especially caffeoyl quinic acid (CQA) related compounds. Using TOYOPEARL HW-40F column chromatography, five fractions (I~V) were separated from green coffee bean extract. HPLC technique demonstrated that Frs. II and III were mainly composed of CQA, whereas Frs. IV and V were mainly cmposed of diCQA. We measured the DPPH radical scavenging activity of these fractions. Frs. III and V had higher DPPH radical scavenging activities than green coffee bean extract. We also investigated the effect of these fractions on the cytotoxicity and the nitric oxide (NO) production by LPS-activated mouse macrophage-like Raw 264.7 cells. Noncytotoxic concentration of Fr. III (CQA fraction) inhibited NO production by activated Raw 264.7 cells. Fr. IV (diCQA fraction) showed higher cytotoxicity and increased NO production at lower concentration. The present study demonstrated that green coffee bean extract contains numerous substance which regulate the function of activated macrophages.departmental bulletin pape

Melting Behavior of Nylon 6 Ultra Micro Fibers Having Different Diameters
P(論文)Melting behavior of Nylon 6 ultra micro fibers and micro fibers with 0.4~21.0μm diameters has been inbestigated. Two peaks were observed for the melting of the ultra micro fibers. One showed the lower initial melting temperature and the lower central melting temperature with the diameter reduction, and the other showed no variation of the temperatures with the reduction. It was inferred that the melting behavior of the crystal in the surface region of these fibers is definitely different from that of the central region. This surface effect of the fiber on the crystal melting is reported here for the first time.departmental bulletin pape
On Body Fat of Female College Students From the Viewpoint of Level of Physical Activity and Actual Condition of The Life Aspect
P(論文)The investigation was carried out for female college students of 182 persons of this junior college in the weekday in June the end of month, 2003, and level of physical activity of the subject was calculated from the motion and time study, and 4 was classified into the new level of physical activity independence, each life aspect was compared and was examined. There were body weight and BMI, body fat percentage high, as level of physical activity was lighter in the result of the anthropometry. In the physique index, the result was reverse at index and BMI, body fat percentage of VFA (visceral fat cross section index) between level of physical actibity II and III. Though the average of the walking number was a top from the national level, the proportion of the person over 10,000 walks was little. And, the average of physical activity IV and level of III has exceeded 10,000 walks. In living hours, it was the time of "part time job", and there was a significant difference between level of physical activity I and II and III and IV. In the correlation of living hours, level of physical activity independence respectively. Factor analysis result of living hours proved the correlation of living hours. There was a person who in the frequency of the meat skipping, there was the significance between intensity of physical activity II and IV, and who in hoop and II, it does not skip meal almost at 80.3%. And then the supper hour was compared with level of physical activity I and II, and there were slowly III and IV. From the above fact, there was some abounding the walking number, as life activity which affects level of physical activity is a part time job, and as the time is longer. And, it seems to be future problem that in the group in which level of physical activity is low, it increases daily active mass, and that it positively advises the utilization of living hours which raise the life activity.departmental bulletin pape
