Comprendere l’impatto dell’etichettatura nutrizionale fronte pacco sulle scelte e le preferenze dei consumatori. Il caso del Nutri-Score applicato alle Indicazioni Geografiche
Food and health are strictly intertwined concepts, with obesity and overweight emerging as some of the most pressing nutritional challenges worldwide. Indeed, according to the World Health Organization (WHO) statistics, in 2022, approximately 59% of adults and nearly one in three children were overweight or obese in the European context, causing over 1.2 million deaths. The prevalence of obesity in Europe is higher than in all the other regions, except for the Americas, forcing governments and institutions to adopt different strategies to mitigate and contain the problem. The European Commission has indeed outlined an integrated approach to reduce health issues caused by overweight and obesity, contrasting the obesogenic environment and reducing high-risk behaviors, such as improper dietary habits and lack of physical activity. In this context, Front-of-Pack (FOP) nutritional labels play a fundamental role, as they are intended to help consumers make healthier food choices easily and quickly. Through the Farm to Fork Strategy, the European Commission had initially set the goal of adopting a single mandatory FOP nutritional label, consistent across all Member States, by 2022.
Among the various nutritional labels currently adopted in the European context, the Nutri-Score (NS) seemed to be the most scientifically supported due to its ease of understanding. However, due to strong opposition to this labeling system, raised by major food industries and some politicians, especially at the Italian level, the European Commission was unable to choose which Front-of-Pack label to adopt at the Union level, with a consequent delay in the decision to the next European legislature. In fact, NS seems to "not ensure correct and complete information for consumers," as reported by the European Food Safety Authority (EFSA), while also potentially harming typical and traditional products, such as Geographical Indications (GIs). Despite the importance of delving into this issue, the scientific literature has not investigated the reasons behind this decision, making it even more challenging for the European Commission to make a cohesive and robust decision. This thesis aims to clarify this issue by outlining the state of the art regarding the NS debate at the European level, highlighting the differences between public opinion and scientific literature, and bringing to light the areas not investigated enough by scientific research (Chapter 3), after introducing the NS topic (Chapter 1), also considering its normative framework (Chapter 2). The contrast between NS and GIs has emerged as the main topic of discussion at the public and political levels, although it has not been adequately investigated by scientific literature. To bridge this gap, this thesis seeks to clarify the issue by analyzing consumer preferences for various GIs labeled with NS (Chapters 4 and 5), while also examining the real implications of this nutritional label on the prices and sales of GIs products (Chapter 6)
A Little Bird Told Me… Nutri-Score Panoramas from a Flight over Europe, Connecting Science and Society
Within the Farm to Fork Strategy, the European Commission ask for a unified Front Of Pack nutritional label for food to be used at the European level. The scientific debate identified the Nutri-Score (NS) as the most promising candidate, but within the political discussion, some Member States brought to attention several issues related to its introduction. This misalignment led to a postponement of the final decision. With the aim to shed some light on the current stances and contribute to the forthcoming debate, the objective of the present work is to understand to what extent scientific research addresses the issues raised by the general public. We applied a structural topic model to tweets from four European countries (France, Germany, Italy, Spain) and to abstracts of scientific papers, all dealing with the NS topic. Different aspects of the NS debate are discussed in different countries, but scientific research, while addressing some of them (e.g., the comparison between NS and other labels), disregards others (e.g., relations between NS and traditional products). It is advisable, therefore, to widen the scope of NS research to properly address the concerns of European society and to provide policymakers with robust evidence to support their decisions

La mia ricerca mira a scoprire come le opinioni, i timori o i comportamenti d'acquisto di un campione di consumati vengono influenzati dalle informazioni disponibili sugli additivi (etichette, campagne mediatiche e pregiudizi diffusi).
L'obiettivo è capire se le opinioni negative sugli additivi derivano principalmente da sentimenti e comunicazioni o se sono supportate da prove scientifiche.This thesis aims to analyze with an online questionnaire to one hundred participants the impact that food additives used widely in the food industry have on consumer perceptions, with a special focus on psychological, cultural, and communicative aspects. Additives can significantly influence purchase choices and trust in food products and are often considered artificial or harmful. My research aims to find out how the opinions, fears, or purchasing behaviors of a sample of consumers are influenced by available information about additives (labels, media campaigns, and widespread biases).

Exploring Culinary Innovation: How Eye-Tracking Reveals Consumer Preferences for Insect-Based Foods
reservedLa crescente esigenza di individuare fonti proteiche alternative e sostenibili ha portato ad un interesse sempre maggiore verso i novel food, in particolare gli alimenti a base di insetti, recentemente regolamentati nell'Unione Europea e considerati una possibile risposta alle sfide ambientali e nutrizionali globali. Tuttavia, la loro accettazione nel contesto occidentale, e ancor più in quello italiano, risulta limitata a causa di barriere culturali, psicologiche e percettive.
Il presente studio analizza la percezione dei consumatori italiani nei confronti dei novel food a base di farina di insetti, confrontati con un alimento innovativo ma culturalmente più familiare, l’alga spirulina. Poiché la letteratura mostra un gap nell’integrazione tra preferenze implicite ed esplicite, è stata adottata una metodologia combinata: l’eye-tracking per misurare l’attenzione visiva e un questionario validato per rilevare atteggiamenti, neofobia e disponibilità all’acquisto (WTB).
Il campione, composto da 92 partecipanti, è stato coinvolto in un esperimento con disegno between-within subjects. Ogni partecipante è stato esposto a una sola versione di packaging (between-subjects), selezionata tra le quattro condizioni previste dal disegno:
I) insetti senza immagine, II) spirulina senza immagine, III) insetti con immagine,
IV) spirulina con immagine.
Tutte le confezioni rappresentavano un pacchetto di patatine, ma differivano per il tipo di ingrediente innovativo utilizzato (farina di insetti oppure alga spirulina) e per la presenza o meno di un elemento visivo esplicito (immagine grafica dell’insetto o dell’alga). Nelle versioni “senza immagine”, il packaging riportava esclusivamente una descrizione testuale del prodotto, mentre nelle versioni “con immagine” era presente anche un richiamo visivo dell’ingrediente. Questa scelta nasce dal fatto che, nei contesti altamente neofobici (come l’Italia), i prodotti alimentari innovativi tendono a non includere nel packaging elementi visivi troppo espliciti del contenuto. Tutti i partecipanti hanno poi espresso la propria willingness to buy (WTB) in due momenti: prima e dopo aver ricevuto informazioni aggiuntive sul prodotto (within-subjects), poiché la comunicazione informativa rappresenta un fattore in grado di influenzare significativamente la WTB, soprattutto in presenza di ingredienti non familiari. I risultati dell’eye-tracking indicano che la descrizione del brand e quella del prodotto rappresentano le aree più osservate del packaging, mentre claim nutrizionali e sensoriali risultano meno salienti. L’immagine dell’insetto viene notata, ma non domina il processo attentivo. I dati dichiarativi mostrano che la WTB è sistematicamente più alta per i prodotti a base di spirulina; gli insetti risultano invece penalizzati da disgusto, bassa familiarità e maggiore neofobia. L’informazione aggiuntiva aumenta la WTB in tutte le condizioni, pur senza eliminare le barriere psicologiche verso gli insetti.
L’integrazione dei dati impliciti ed espliciti evidenzia una chiara coerenza tra reazioni automatiche e giudizi dichiarati: gli insetti generano evitamento visivo e valutazioni negative, mentre la spirulina riceve maggiore attenzione e atteggiamenti più favorevoli. Le ipotesi dello studio trovano così conferma solo parziale: la spirulina è preferita in tutte le condizioni; l’immagine non altera significativamente i pattern attentivi; l’informazione migliora la WTB ma non colma la distanza psicologica verso gli insetti.
Lo studio contribuisce alla comprensione dei fattori che guidano l’accettazione dei novel food e sottolinea il ruolo cruciale della comunicazione, del packaging e dell’educazione alimentare nel favorire l’apertura verso fonti proteiche sostenibili.The growing need to identify alternative and sustainable protein sources has led to increasing interest in novel foods, particularly insect-based products, which have recently been regulated within the European Union and are considered a potential response to global environmental and nutritional challenges. However, their acceptance in Western societies, especially in Italy, remains limited due to cultural, psychological, and perceptual barriers.
This study investigates Italian consumers’ perceptions of novel foods made from insect flour, comparing them with an innovative yet culturally more familiar option, spirulina. Since the existing literature reveals a gap in the integration of implicit and explicit preference measures, a combined methodology was adopted: eye-tracking to assess visual attention, and a validated questionnaire to evaluate attitudes, neophobia, and willingness to buy (WTB).
A sample of 92 participants was exposed to four packaging versions (insects/spirulina × image/no image). Eye-tracking results indicate that brand and product descriptions are the most frequently observed areas, whereas nutritional and sensory claims receive limited attention. The insect image is noticed but does not dominate the visual exploration. Declarative data show that WTB is consistently higher for spirulina-based products, while insect-based items are penalized by disgust, low familiarity, and higher food neophobia. Additional product information increases WTB across all conditions, although it does not fully overcome psychological barriers toward insects.
The integration of implicit and explicit measures highlights a strong coherence between automatic reactions and self-reported evaluations: insect-based products elicit visual avoidance and negative judgments, whereas spirulina receives greater attention and more positive attitudes. The study’s hypotheses are therefore only partially confirmed: spirulina is preferred in all conditions; the presence of an ingredient image does not significantly alter attentional patterns; and information improves WTB but does not bridge the psychological distance toward insect-based foods.
Overall, this research contributes to a deeper understanding of the factors shaping the acceptance of novel foods and underlines the crucial role of communication, packaging design, and nutritional education in fostering openness toward sustainable protein sources
From Social Media Posts to the Dinner Plate: The Influence of Food Influencers on Consumer Food Choices: Insights from a Consumer Survey in Italy

consumatori italiani, con l’obiettivo di capire in che modo i contenuti pubblicati sui social
possano influenzare atteggiamenti e comportamenti legati al cibo. La prima parte descrive un
quadro teorico sul marketing digitale e sull’evoluzione del consumatore, mostrando come i
social media abbiano trasformato il rapporto tra aziende e pubblico. Vengono analizzate le
figure degli influencer, in particolare quelli del settore alimentare, e i meccanismi psicologici
che rendono i loro messaggi così persuasivi.
Successivamente sono presentati i principali modelli che descrivono il comportamento del
consumatore e i fattori che influenzano le scelte alimentari: dalle motivazioni fisiologiche ed
emotive, fino agli aspetti sociali, culturali ed economici. Un’attenzione speciale è dedicata
all’impatto dei social nella formazione del gusto e delle abitudini, nonché agli effetti, spesso
impliciti, che l’esposizione costante a contenuti digitali esercita sul consumo e sugli acquisti.
La parte sperimentale si concentra su un questionario che ha come focus l’analisi di un
sostituto vegetale dell’uovo. Due gruppi di consumatori sono stati esposti a modalità di
comunicazione diverse: un video promozionale realizzato da un influencer e una semplice
immagine del prodotto, in modo da verificare le differenze nella disponibilità all’acquisto date
dall’esposizione ai diversi stimoli. I dati raccolti tramite questionario online mostrano una
generale propensione all’acquisto piuttosto bassa, ma anche un risultato inaspettato:
l’esposizione al video ha ridotto l’intenzione di comprare il prodotto, segnalando che la
presenza di un influencer non sempre aumenta l’attrattiva di un alimento, soprattutto se
innovativo e distante dalle abitudini tradizionali.
Le motivazioni che guidano le scelte restano legate soprattutto a fattori pratici come prezzo e
convenienza, mentre i valori etici e ambientali, pur riconosciuti come importanti, non risultano
determinanti nelle decisioni finali. Il lavoro evidenzia che i food influencer hanno la capacità di
incidere sulla percezione dei consumatori, ma che il loro effetto non è univoco: se funzionano
bene per cibi golosi o di tendenza, possono generare diffidenza quando si tratta di prodotti
plant-based innovativi. La vera sfida per le aziende è raggiungere il target giusto, cioè i giovani
e i giovani adulti, come visto dai risultati del questionario, puntando ad offrire un prodotto
accessibile ad un prezzo competitivo.This thesis explores the role of food influencers in guiding the food choices of Italian
consumers, with the aim of understanding how content published on social media can
influence attitudes and behaviours related to food. The first part describes a theoretical
framework on digital marketing and consumer evolution, showing how social media has
transformed the relationship between companies and the public. It analyses influencers,
particularly those in the food sector, and the psychological mechanisms that make their
messages so persuasive.
Next, the main models describing consumer behaviour and the factors influencing food
choices are presented: from physiological and emotional motivations to social, cultural and
economic aspects. Special attention is given to the impact of social media on the formation of
taste and habits, as well as the often-implicit effects that constant exposure to digital content
has on consumption and purchasing.
The experimental part focuses on a questionnaire that analyses a plant-based egg substitute.
Two groups of consumers were exposed to different modes of communication: a promotional
video made by an influencer and a simple image of the product to verify differences in purchase
willingness. The data collected through the online questionnaire show a generally low
propensity to purchase, but also an unexpected result: exposure to the video reduced the
intention to buy the product, indicating that the presence of an influencer does not always
increase the appeal of a food product, especially if it is innovative and far removed from
traditional habits.
The motivations behind these choices remain primarily linked to practical factors such as price
and convenience, while ethical and environmental values, although recognised as important,
are not decisive in final decisions. The study highlights that food influencers can influence
consumer perception, but that their effect is not unambiguous: while they work well for
gourmet or trendy foods, they can generate mistrust when it comes to innovative plant-based
products. The real challenge for companies is to reach the right target audience, i.e. young
people and young adults, as seen from the results of the questionnaire, by aiming to offer an
accessible product at a competitive price
Gluten-Free Products: a metter of need or preference? Understanding how coeliacs and non-coeliacs evaluate and perceive gluten free products
embargoed_20281007Con l’aumento della popolazione affetta da celiachia, il mercato dei prodotti senza glutine è in costante espansione. Oltre ai consumatori che hanno una reale necessità medica, come i celiaci e gli intolleranti al glutine, vi è una crescente quota di consumatori non celiaci che acquistano prodotti gluten-free senza un’effettiva esigenza clinica. In Italia, a fronte di circa 260.000 celiaci, si stima che vi siano oltre 6 milioni di consumatori abituali di prodotti senza glutine. Tuttavia, le motivazioni che spingono i non celiaci a orientarsi verso questi prodotti rimangono in gran parte poco esplorate; la letteratura scientifica ha solo parzialmente affrontato il fenomeno e, soprattutto, non è ancora chiaro quali siano gli elementi specifici dei prodotti gluten-free che risultano più rilevanti per i due gruppi di consumatori, rendendo necessari ulteriori studi sul tema. Per contribuire a colmare questa lacuna, il presente studio si propone di analizzare, attraverso un approccio integrato che combina tecniche di neuromarketing a strumenti di indagine tradizionali, il comportamento di acquisto e le preferenze (implicite ed esplicite) di consumatori celiaci e non celiaci nella scelta dei prodotti gluten-free. In particolare, la ricerca si focalizza sulle determinanti principali dell’acquisto e sugli elementi del packaging che catturano maggiormente l’attenzione visiva dei due gruppi.
Le preferenze implicite, ovvero quelle che agiscono a livello inconscio e non dichiarato, sono state rilevate mediante eye-tracking, uno strumento che consente di misurare con precisione quali elementi visivi attirano l’attenzione dei consumatori. I partecipanti sono stati sottoposti a quattro diversi stimoli visivi, utilizzando quattro diversi packaging (fronte e retro) di pan bauletto senza glutine, appartenenti a due categorie distinte: prodotti di brand specializzati nel mercato gluten-free e prodotti di marchi non specificamente dedicati a tale mercato. L’analisi dell’eye-tracking ha quindi fornito dati oggettivi sull’orientamento dell’attenzione visiva, evidenziando quali aree del packaging risultano più salienti per ciascun gruppo.
Le preferenze esplicite (o dichiarate) sono state misurate invece in modo classico, utilizzando un questionario strutturato che comprendeva domande relative alla percezione dei prodotti senza glutine, con particolare attenzione agli aspetti organolettici (sapore, consistenza, qualità, prezzo, salubrità, aspetto, livello di processamento), ai benefici percepiti della dieta gluten-free e al livello di conoscenza della celiachia e dei prodotti correlati. Inoltre, le preferenze monetarie sono state misurate attraverso l’indicatore di disponibilità all’acquisto (ovvero la willingness to buy), in linea con la letteratura sul tema.
I risultati mostrano che, in media, l’attenzione visiva dei partecipanti si concentra maggiormente sulla lista degli ingredienti, seguita dal brand e infine dalla grammatura del prodotto, senza differenze statisticamente significative tra i due gruppi. Tuttavia, i consumatori non celiaci tendono a osservare più attentamente la lista degli ingredienti, probabilmente per individuare specifici componenti di interesse (es. lattosio). Inoltre, i non celiaci evidenziano un carico cognitivo maggiore, ovvero una maggiore difficoltà nell’elaborazione visiva delle informazioni. I consumatori celiaci, invece, risultano più rapidi nel localizzare le informazioni rilevanti. Infine, la presenza del claim “senza glutine” rappresenta per i celiaci un attributo di fiducia, riducendo la necessità di leggere in dettaglio la lista degli ingredienti, grazie a una maggiore familiarità con il brand (attributo esperienza).As the population with coeliac disease increases, the market for gluten-free products is constantly expanding. In addition to consumers with a medical need, such as coeliacs and gluten-intolerant people, there is a growing share of non-celiac consumers who purchase gluten-free products without a real clinical need. In Italy, for instance, while the number of diagnosed celiac individuals is estimated at around 260,000, more than 6 million people consume gluten-free products habitually. However, the motivations behind the choices of non-celiac consumers remain largely underexplored. Existing literature has only partially addressed this phenomenon, and the specific product attributes that influence purchasing decisions among the two groups are still unclear, highlighting the need for further investigation.
Therefore, to address this gap, the present study adopts an integrated approach combining neuromarketing techniques with traditional survey methods to analyse the purchasing behaviour and preferences—both implicit and explicit—of celiac and non-celiac consumers in their selection of gluten-free products. In particular, the research focuses on the main determinants of purchase and the packaging elements that capture the two groups' visual attention the most.
Implicit preferences, which operate at an unconscious and non-declarative level, were measured using eye-tracking technology, which allowed for precise detection of visual attention during exposure to four gluten-free pan loaf packages (front and back), divided into two categories: products from specialized gluten-free brands and products from generalist brands. The eye-tracking analysis provided objective data on visual attention patterns, identifying which packaging elements were most salient for each group. Explicit (i.e., conscious) preferences were assessed through a structured questionnaire, which included items on consumers’ perceptions of gluten-free products. The questionnaire covered various product dimensions such as taste, texture, quality, price, healthiness, appearance, and level of processing, as well as perceived benefits of a gluten-free diet and overall knowledge of celiac disease and related products. In addition, monetary preferences were measured via the willingness to buy indicator, in line with established literature. The results show that, on average, visual attention is focused more on the ingredient list, followed by the brand and finally the product weight, with no statistically significant differences between the two groups. However, non-celiac consumers tend to look more closely at the ingredient list, to identify specific components of interest (e.g. lactose). In addition, non-coeliacs show a higher cognitive load, i.e. greater difficulty in visually processing information. Coeliac consumers, on the other hand, are quicker in locating relevant information. Finally, the presence of the “gluten-free” claim is a trust attribute for coeliacs, reducing the need to read the ingredient list in detail due to increased familiarity with the brand (experience attribute)
Going Beyond Counting First Authors in Author Co-citation Analysis
The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation
counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings
are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that
only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into
account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed
Variations on the Author
“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
