Desarrollo de un recubrimiento a base de exopolisacárido con adición de bacterias lácticas y su evaluación en las propiedades fisicoquímicas de fresas (Fragaria x ananassa)
No full textEn Colombia, según el último estudio sobre el desperdicio de alimentos publicado por el DNP en 2016, se desperdician cerca de 6,1 millones de toneladas de frutas y hortalizas al año, de las cuales un 20 % corresponde a pérdidas poscosecha. Las fresas son frutos altamente consumidos a nivel mundial y nacional dadas sus propiedades sensoriales y nutricionales, sin embargo, su comercialización enfrenta fuertes desafíos debido a su rápida tasa de degradación que a consecuencia genera pérdida del fruto, una mala experiencia para el consumidor y afectación económica al productor. Esta problemática resalta la necesidad de desarrollar tecnologías más eficaces para el almacenamiento y conservación de estos productos. Entre las estrategias emergentes se encuentran los recubrimientos comestibles (RC), elaborados a partir de compuestos naturales y biodegradables. Estos RC pueden incorporar componentes funcionales como bacterias ácido-lácticas (BAL), reconocidas como seguras (GRAS) por la FDA, que pueden otorgarle al alimento beneficios fisiológicos adicionales.
Con base en esta premisa, se diseñó un recubrimiento comestible para fresa con adición de Lactiplantibacillus plantarum A6, bacteria seleccionada por su potencial antifúngico frente a hongos fitopatógenos como Aspergillus niger, Botrytis cinerea y Rhizopus stolonifer, previamente aislados de fresa infectada. Este recubrimiento, cuya base fue el exopolisacárido (EPS) producido por Weissella confusa, permitió mantener la viabilidad de Lactiplantibacillus plantarum A6 y demostrar su efecto antifúngico a través de pruebas in vivo, donde se observó una inhibición completa del crecimiento de Botrytis cinerea en fresas recubiertas.
Para seleccionar la formulación con la mejor proporción de compuestos usados en la solución formadora del recubrimiento, se llevó a cabo un diseño de mezclas en el que se evaluó el efecto de los componentes principales (EPS, alginato de sodio y glicerol) en las propiedades fisicoquímicas del fruto (pérdida de peso, firmeza, acidez titulable, pH y color). Posteriormente se realizó una optimización y sobre la misma se evaluaron parámetros fisicoquímicos y la capacidad inhibitoria de crecimiento de hongos.
Se observó que Lactiplantibacillus plantarum A6 presentó la mayor inhibición de crecimiento micelial en los hongos de interés en las pruebas in vitro e in vivo (halo de inhibición Aspergillus niger: 50,03 ± 0,45 mm – halo de inhibición Rhizopus stolonifer: 22,90 ± 1,20 mm – Crecimiento radial Botrytis cinerea: 20,59 ± 3,66 mm / 90 mm). También se observó que EPS, alginato y glicerol tuvieron efectos estadísticamente significativos en la pérdida de peso (p = 0,024), el ángulo de tono (p = 0,007) y la firmeza (p = 0,008).
Finalmente se determinó que la aplicación de un recubrimiento comestible a base de exopolisacarido con la adición de bacterias ácido-lácticas en fresas, favoreció la conservación de factores directamente relacionados con la calidad del fruto durante el almacenamiento.PregradoINGENIERO(A) DE ALIMENTO

counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings
are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that
only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into
account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Variations on the Author
Get PDF“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
Appropriate Similarity Measures for Author Cocitation Analysis

We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature. Note that the objective for the hut study was to evaluate the IRS treatment applications for residual efficacy against Anopheles mosquitoes, including the local An. coluzzii mosquito population. Cows were only used to attract mosquitoes into the huts and no tests were carried out directly on the cows. The author checklist is intended for use with studies where experiments are carried out on animals, which is why we have had such difficulty in completing this for the hut study, as many of the questions do not relate to how the cows were used
