    CARACTERIZACIÓN DEL PROCESO DE PRODUCCIÓN DEL QUESO COCIDO ARTESANAL Y DE LAS PRINCIPALES BACTERIAS ÁCIDO LÁCTICAS GENERADORAS DE AROMA

    "En México se conocen por lo menos treinta diferentes tipos de quesos artesanales elaborados a partir leche cruda, práctica que contraviene lo establecido por la NOM-121-SSA1-1994. El queso Cocido es uno de ellos y se produce en el noroeste de México, particularmente en el estado de Sonora. La microflora nativa de este queso no se ha caracterizado y se sabe que el proceso de elaboración es heterogéneo, lo que genera que en el mercado exista con una gran variabilidad composicional y sensorial de este queso. Por lo anterior el objetivo de esta investigación fue Caracterizar el proceso de producción de queso Cocido artesanal e identificar los grupos de bacterias ácido lácticas involucradas en el desarrollo de sus características. Para alcanzar este objetivo el trabajo fue dividido en tres etapas: (1) se documentó y caracterizó el proceso de elaboración en diferentes queserías de la región con diferentes niveles de tecnificación de su proceso, (2) se aislaron las BAL involucradas en el proceso y (3) se identificó fenotípicamente la microflora aislada. Los resultados encontrados mostraron diferencia significativa (p<0.05) en la composición físico-química de los quesos y en su calidad sanitaria de acuerdo al nivel tecnológico de las queserías muestreadas. Se aislaron un total de 144 cepas de BAL de los diferentes puntos muestreados. Posteriormente las cepas aisladas fueron inoculadas en leche y por medio de evaluación sensorial por su capacidad de producir aromas típicos a lácteos. De acuerdo a la identificación fenotípica se encontró que los géneros predominantes fueron los Lactobacilli, Lactococci, Streptococci, y Enterococci, sobresaliendo por su abundancia Lb. acidophilus, Lb. casei, Lb. fermentum, L. lactis ssp. lactis y cremoris con la evaluación sensorial se logró seleccionar a 78 cepas que fueron capaces de producir aroma típicos lácteos. Nuestros resultados evidenciaron que los diferentes niveles de tecnificación en el proceso artesanal para la elaboración del queso Cocido, genera que los quesos obtenido sean muy variables en su composición y calidad sanitaria. Sin embargo, ha pesar de esto las BAL encontradas son coincidentes independientemente de las condiciones de las queserías.

    Aislamiento y caracterización de bacteriocinas producidas por cepas de lactobacillus spp. aisladas de queso cocido artesanal mexicano

    RESUMEN Los alimentos son susceptibles a contaminación por diferentes bacterias patógenas durante y posterior al procesamiento. Por lo tanto, es importante conocer nuevas alternativas naturales que ayuden a la conservación de estos. Las bacterias ácido lácticas (BAL) se han reportado como productoras de péptidos antimicrobianos tales como las bacteriocinas. Por lo anterior, el objetivo de este trabajo fue aislar y caracterizar bacteriocinas producidas por BAL nativas para su uso en la bioconservación de alimentos. Los resultados mostraron que los extractos obtenidos de la fermentación por Lactobacillus spp. en medio de cultivo presentaron actividad antimicrobiana contra bacterias patógenas indicadoras. Los extractos que presentaron la mayor actividad antimicrobiana (p < 0.05) obtenidos de Lactobacillus fermentum (J23 y J32), se separaron por ultrafiltración y se analizó la fracción ≤3 kDa por cromatografía líquida de fase reversa (RP-HPLC). Se evaluó la actividad antimicrobiana de las diferentes fracciones colectadas de RP-HPLC. La fracción F3 de J23 presentó actividad antimicrobiana contra E. coli y fue también inhibitoria contra S. aureus, L. innocua, S. typhimurium y S. cholerae. Por el contrario, las fracciones F1, F5 and F7, presentaron actividad antimicrobiana contra S. aureus y L. innocua pero no para el resto de los microorganismos indicadores. Similarmente, F1 obtenida de Lactobacillus fermentum J32, presentó actividad antimicrobiana contra S. aureus y L. innocua, pero no contra el resto de los microorganismos. Por otro lado, F3 and F4 de Lactobacillus fermentum J32 presentaron actividad antimicrobiana contra todos los microorganismos indicadores. De las fracciones de RP-HPLC colectadas J23 y J32, se identificaron las secuencias de 6 y 9 péptidos, respectivamente, por espectrometría de masas por trampa de iones (MS/MS). Posteriormente, se evaluó la capacidad antimicrobiana de las fracciones obtenidas de J23 y J32 en leche pasteurizada. Las cuentas microbianas de S. aureus, L. innocua, E. coli y S. typhimurium, fueron significativamente (p < 0.05) menores en la leche adicionada con las fracciones de J23 o J32 que en el grupo testigo (leche pasteurizada inoculada con el patógeno indicador). Por lo que, las fracciones de J23 y J32 presentaron bacteriocinas inhibitorias para los patógenos indicadores evaluados.     Going Beyond Counting First Authors in Author Co-citation Analysis

    The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed.     “Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship

    Appropriate Similarity Measures for Author Cocitation Analysis

    We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature.     Dispelling the Myths Behind First-author Citation Counts

    We conducted a full-scale evaluative citation analysis study of scholars in the XML research field to explore just how different from each other author rankings resulting from different citation counting methods actually are, and to demonstrate the capability of emerging data and tools on the Web in supporting more realistic citation counting methods. Our results contest some common arguments for the continued use of first-author citation counts in the evaluation of scholars, such as high correlations between author rankings by first-author citation counts and other citation counting methods, and high costs of using more realistic citation counting methods that are not well-supported by the ISI databases. It is argued that increasingly available digital full text research papers make it possible for citation analysis studies to go beyond what the ISI databases have directly supported and to employ more sophisticated methods

    We have done our best to complete the author checklist relating to the use of animals in the hut study. Note that the objective for the hut study was to evaluate the IRS treatment applications for residual efficacy against Anopheles mosquitoes, including the local An. coluzzii mosquito population. Cows were only used to attract mosquitoes into the huts and no tests were carried out directly on the cows. The author checklist is intended for use with studies where experiments are carried out on animals, which is why we have had such difficulty in completing this for the hut study, as many of the questions do not relate to how the cows were used
