Biosorción de plomo y arsénico utilizando biomasa vegetal inerte de tallos de puka kora (Rumex acetosella)
La contaminación de cuerpos hídricos con metales pesados como el plomo (Pb) y el arsénico (As) representa un grave riesgo para la salud pública y el medio ambiente, haciendo crucial el desarrollo de métodos efectivos de remoción. Este estudio evaluó la biosorción de Pb y As utilizando biomasa vegetal inerte de tallos de puka kora (Rumex acetosella), recolectada en el distrito de San Jerónimo, Andahuaylas, Perú. La biomasa fue activada mediante tratamientos de hidrolisis ácida (T2), alcalina (T3) y una combinación ácida-básica (T4) para ser utilizada en ensayos en batch. Se realizaron pruebas preliminares para determinar la capacidad de remoción de Pb y As en soluciones de 10 ppm a pH 5, utilizando 0.2 g de biosorbente en 800 ml de solución. Los metales en solución se analizaron mediante espectrofotometría de emisión óptica por plasma acoplado inductivamente, y se utilizó espectrofotometría infrarroja por transformada de Fourier para caracterizar los biosorbentes activados. Los resultados mostraron que la remoción de Pb osciló entre 76.90% y 94.38%, mientras que la remoción de As estuvo entre 17.73% y 23.52%, siendo el tratamiento mixto (T4) el más efectivo. En la aplicación del biosorbente en efluentes mineros de la Planta Los Chankas, se observó una remoción de 56.78% para Pb, 44.16% para Zn y 39.96% para Cu. Los resultados indican que los tallos de puka kora tratados secuencialmente por hidrolisis ácida y alcalina pueden ser utilizados como un biosorbente eficiente para la remoción de Pb y As.Tesi
Influencia de la implementación de planes de negocio de la cadena productiva de cuyes en el desarrollo económico y social, provincia de Andahuaylas, 2020
La presente investigación denominada “Influencia de la implementación de
planes de negocio de la cadena productiva de cuyes en el desarrollo económico
y social, provincia de Andahuaylas, 2020” persiguió como propósito principal
Analizar la influencia de la implementación de planes de negocio de la cadena
productiva de cuyes sobre el desarrollo social y económico de los beneficiarios
de la estrategia PROCOMPITE” de la provincia de Andahuaylas.
De modo que se empleó la metodología a través del enfoque cuantitativo y al
método hipotético deductivo, el tipo de estudio fue aplicado, empleando un
diseño no experimental. Se utilizó el cuestionario para la recolección de datos.
De acuerdo con el análisis de los resultados, se concluyó que existe correlación
alta entre la implementación de planes de negocio y el desarrollo económico y
social de los beneficiarios de la cadena productiva de cuyes del distrito de
Chiara, Andahuaylas, de modo que, dio un valor R de Pearson de 0.769,
aceptándose la hipótesis causal planteada en la investigación, por lo que la
implementación de los planes de negocio influye en el desarrollo económico y
social de los beneficiarios de la estrategia PROCOMPITE
Determinación de la capacidad antioxidante y compuesto bioactivos de cinco clones de papa nativa (solanum tuberosum) y del puré deshidratado.
La papa es un alimento básico y es fuente de compuestos con actividad antioxidante,
estas sustancias en pequeñas concentraciones son capaces de reaccionar con las
Especies Reactivos de Oxigeno (ERO), implicadas en numerosos acontecimientos
relacionados con enfermedades cardiovasculares y el envejecimiento, para proteger el
sustrato y combatir el daño celular. Los clones de papa nativa fueron producto del
trabajo de varios años dentro de la empresa SEMPAL y se encuentran a nivel de
cuarta y quinta generación, lo que originó que los valores de los compuestos
bioactivos se concentren, llegando a obtener valores muy altos. En el trabajo de
investigación se estudiaron a cinco clones de papa nativa (Solanum tuberosum), con
el fin de determinar la capacidad antioxidante y los compuestos bioactivos: fenoles y
antocianinas totales.
La capacidad antioxidante fue determinada a través de la prueba de DPPH (radical
2,2difenil-1-picrilhidrazil), método desarrollado por Brand-Williams et al. (1995). El
contenido de compuestos fenólicos, mediante el método de Folin Ciocalteu,
metodología descrita por Singleton y Rossi (1965) y el contenido total de antocianinas
presentes en los clones mediante el método del pH diferencial, método descrito por
Giusti et al. (2001). Para el análisis estadístico se empleó un DCA (Diseño
completamente al azar), seguido de las comparaciones múltiples (LSD).
De los cinco clones de papa nativa estudiadas; 304184-600 (A), 302285 - 608 (C),
303799 - 609 (E), 507600 - 129B (F) y Roja I (H); el clon C, fue el que presentó mayor
capacidad antioxidante, valores altos con respecto a los fenoles totales y al contenido
total de antocianinas. Se encontraron valores considerables de capacidad
antioxidante (1738,68 - 3554,44 μg Equivalente Trolox / g muestra b.s.), los cuales disminuyeron en 76,65% - 84,35%; al someter a los clones a procesos tecnológicos
para la elaboración del puré deshidratado, obteniendo valores entre 286,47 y 714,06
µg Equivalente de Trolox/g muestra b.s. Así mismo el contenido de fenoles totales fue
elevado (17025,32 - 27563,68 mg Equivalente de ácido gálico/100 g de muestra b.s.),
los mismos que disminuyeron en diferentes porcentajes (60,41% - 78,09%), llegando
a obtener valores entre 5821,2 - 6040,41 mg Equivalente de ácido gálico/100 g de
muestra b.s. Con respecto al contenido de antocianinas totales, los valores se
encontraron en rangos de 194,73 y 1154,37 mg/100 g muestra b.s., los cuales
disminuyeron (36,98% - 69,71%), obteniendo valores de 122,75 - 605,24 mg/100 g
muestra b.s.; los clones denominados H y E, tuvieron un contenido de antocianinas de
194,78 y 194,73 mg/100 g muestra b.s., respectivamente; los cuales estadísticamente
fueron iguales para un nivel de significancia del 5%.Tesi

Microencapsulation of Propolis by Complex Coacervation with Chia Mucilage and Gelatin: Antioxidant Stability and Functional Potential
Propolis is a bee-derived resin rich in phenolic compounds known for their antioxidant, anti-inflammatory, and antimicrobial properties; however, its limited solubility and stability hinder its incorporation into food matrices. This study aimed to optimize the microencapsulation of ethanolic propolis extract through complex coacervation using chia mucilage and gelatin as wall materials, followed by spray drying. A 32 factorial design was applied to evaluate the effects of coacervate concentration and inlet temperature on various microcapsule properties. The optimal formulation (3.13% coacervate and 120 °C) exhibited high phenolic retention (15.36 mg GAE/g), notable antioxidant capacity (60.10 µmol TE/g), good solubility, thermal stability, and sustained in vitro release. Phenolic compounds were identified and quantified by UPLC-PDA-QDa, including gallic acid, catechin, epicatechin, epigallocatechin gallate, rutin, myricetin, resveratrol, quercetin, and kaempferol. Incorporating the microcapsules into functional gummy candies significantly enhanced their antioxidant activity without compromising sensory attributes. These findings support the use of complex coacervation as an effective strategy for stabilizing propolis bioactives, with promising applications in the development of functional foods that offer potential health benefits
Stability in Aqueous Solution of a New Spray-Dried Hydrocolloid of High Andean Algae Nostoc sphaericum
There is a growing emphasis on seeking stabilizing agents with minimal transformation, prioritizing environmentally friendly alternatives, and actively contributing to the principles of the circular economy. This research aimed to assess the stability of a novel spray-dried hydrocolloid from high Andean algae when introduced into an aqueous solution. Nostoc sphaericum freshwater algae were subject to atomization, resulting in the production of spray-dried hydrocolloid (SDH). Subsequently, suspension solutions of SDH were meticulously prepared at varying pH levels and gelling temperatures. These solutions were then stored for 20 days to facilitate a comprehensive evaluation of their stability in suspension. The assessment involved a multifaceted approach, encompassing rheological analysis, scrutiny of turbidity, sedimentation assessment, ζ-potential, and measurement of particle size. The findings from these observations revealed that SDH exhibits a dilatant behavior when in solution, signifying an increase in with higher shear rate. Furthermore, it demonstrates commendable stability when stored under ambient conditions. Comparación taxonómica, fisicoquímica, fenólica y antioxidante en especies de frutos silvestres altoandinos: Rubus y Hesperomeles
Currently, humans are taking better care of their health. It is known that fruit consumption prevents degenerative diseases such as cancer and diabetes. On the other hand, the high Andean biodiversity is rich in various resources that have been undervalued up to now. In the present study, the botanical characterization, physical and chemical properties, phenolic compounds, and antioxidant capacity were compared in four non-climacteric high Andean wild fruits of the species Rubus (black siraca and red siraca) and Hesperomeles (pacra and capachu), collected in the Peru province of Andahuaylas, Apurimac region, between 3600 and 3900 m.a.s.l. The taxonomic identification was performed according to the catalog of angiosperms and gymnosperms by geographical location. Polyphenols were determined by the spectrophotometric method based on the use of the Folin–Ciocalteu reagent, and the antioxidant capacity by the DPPH reagent discoloration method. Data in triplicate were analyzed by a one-way analysis of variance (ANOVA) and a multiple-range test of least significant difference (LSD). The results showed significant differences (p < 0.05) in all properties studied. The maturity index and phenolic content directly affected the antioxidant capacity. The four wild fruits studied presented high values of polyphenols and antioxidant activity. Therefore, they should be considered in genetic improvement and field extension programs to promote their consumption, which would encourage healthy and nutritious eating.Actualmente, el ser humano cuida más su salud. Es bien sabido que el consumo de frutas previene algunas enfermedades degenerativas como el cáncer y la diabetes. Por otro lado, la biodiversidad altoandina es rica en diversos recursos que han sido infravalorados hasta el momento. En el presente estudio, se compararon la caracterización botánica, las propiedades físicas y químicas, los compuestos fenólicos y la capacidad antioxidante de cuatro frutos silvestres altoandinos no climatéricos de las especies Rubus (siraca negra y siraca roja) y Hesperomeles (pacra y capachu), recolectados en la provincia de Andahuaylas, región de Apurímac en Perú, entre 3600 y 3900 m s. n. m. Se realizó la identificación taxonómica según el catálogo de angiospermas y gimnospermas por ubicación geográfica. Los polifenoles se determinaron por el método espectrofotométrico basado en la utilización del reactivo de Folin-Ciocalteau, y la capacidad antioxidante, por el método de decoloración del reactivo DPPH. Los datos por triplicado se analizaron a través de un análisis de varianza de una vía (ANOVA) y una prueba de rangos múltiples de diferencia significativa mínima (LSD). Los resultados presentaron diferencias significativas (p < 0.05) en todas las propiedades estudiadas. El índice de madurez y el contenido de fenoles incidieron directamente en la capacidad antioxidante. Los cuatro frutos silvestres estudiados presentaron valores altos en polifenoles y actividad antioxidante. Por lo tanto, deberían ser considerados en programas de mejoramiento genético y extensión en campo para promover su consumo, lo cual favorecería una alimentación saludable y nutritiva
The influence of anthropogenic activities on the concentration of pesticides, physicochemical and microbiological properties in the Chumbao river, Andahuaylas, Perú
The province of Andahuaylas is located in the region of Apurimac, a Peruvian city located in the Andes. Andahuaylas has
three important districts: San Jerónimo, Andahuaylas and Talavera. These areas are highly populated, and their buildings are close to
the Chumbao River. This research aimed to determine the influence of anthropogenic activities on the concentration of pesticides,
physicochemical and microbiological characteristics in the Chumbao River. Five agricultural activities, 19 organochlorine pesticides,
and 25 organophosphorus pesticides were studied. Eighteen physicochemical properties and two microbiological properties were also
studied at seven sampling points along the Chumbao River during the rainy and dry seasons. Several veterinary and agricultural
products were identified in the agricultural activities studied. However, no significant concentration values of organochlorine and
organophosphate pesticides were found; no weed control products were found. In the case of livestock farming, albendazole and
ivermectin are frequently used as anthelmintics. Organophosphate and pyrethroid insecticides are used to control flies and other
ectoparasites. Several pesticides have been identified in the surveys in the case of quinoa, potato, and corn crops. Some of the
physicochemical and microbiological properties are above environmental quality standards according to current Peruvian regulations;
these properties increase at points where wastewater is discharged directly into the river. The study evidenced a progressive
deterioration of water quality in the Chumbao River caused by anthropic activities in the basin. These may cause infectious and parasitic
diseases in the urban population of the Chumbao river valley
Effect of Germination on the Physicochemical Properties, Functional Groups, Content of Bioactive Compounds, and Antioxidant Capacity of Different Varieties of Quinoa (Chenopodium quinoa Willd.) Grown in the High Andean Zone of Peru
Germination is an effective strategy to improve the nutritional and functional quality of Andean grains such as quinoa (Chenopodium quinoa Willd.); it helps reduce anti-nutritional components and enhance the digestibility and sensory aspects of the germinated. This work aimed to evaluate the effect of germination (0, 24, 48, and 72 h) on the physicochemical properties, content of bioactive compounds, and antioxidant capacity of three varieties of quinoa: white, red, and black high Andean from Peru. Color, nutritional composition, mineral content, phenolic compounds, flavonoids, and antioxidant activity were analyzed. Additionally, infrared spectra were obtained to elucidate structural changes during germination. The results showed color variations and significant increases (p < 0.05) in proteins, fiber, minerals, phenolic compounds, flavonoids, and antioxidant capacity after 72 h of germination, attributed to the activation of enzymatic pathways. In contrast, the infrared spectra showed a decrease in the intensity of functional groups –CH–, –CH2–, C–OH, –OH, and C–N. Correlation analysis showed that flavonoids mainly contributed to antioxidant activity (r = 0.612). Germination represents a promising alternative to develop functional ingredients from germinated quinoa flour with improved nutritional and functional attributes
Effect of Inlet Air Temperature and Quinoa Starch/Gum Arabic Ratio on Nanoencapsulation of Bioactive Compounds from Andean Potato Cultivars by Spray-Drying
Nanoencapsulation of native potato bioactive compounds by spray-drying improves their stability and bioavailability. The joint effect of the inlet temperature and the ratio of the encapsulant (quinoa starch/gum arabic) on the properties of the nanocapsules is unknown. The purpose of this study was to determine the best conditions for the nanoencapsulation of these compounds. The effects of two inlet temperatures (96 and 116 °C) and two ratios of the encapsulant (15 and 25% w/v) were evaluated using a factorial design during the spray-drying of native potato phenolic extracts. During the study, measurements of phenolic compounds, flavonoids, anthocyanins, antioxidant capacity, and various physical and structural properties were carried out. Higher inlet temperatures increased bioactive compounds and antioxidant capacity. However, a higher concentration of the encapsulant caused the dilution of polyphenols and anthocyanins. Instrumental analyses confirmed the effective encapsulation of the nuclei in the wall materials. Both factors, inlet temperature, and the encapsulant ratio, reduced the nanocapsules’ humidity and water activity. Finally, the ideal conditions for the nanoencapsulation of native potato bioactive compounds were determined to be an inlet temperature of 116 °C and an encapsulant ratio of 15% w/v. The nanocapsules obtained show potential for application in the food industry
