    Mango (Magnifera indica L) is grown in the tropical and sub tropical regions of India. The fruit has a high commercial value depending on the color, flavor and pulp characteristics of the cultivar. Sindura, Mallika and Totapuri cultivars grown in southern Karnataka were investigated for the physical chemical characteristics and the effect of processing on the quality characteristics. Sindura, Mallika and Totapuri mango cultivars had significantly different physico chemical and compositional characteristics. Sindura cultivar had a characteristic red color in the peel with high carotenoid content and slightly lower pulp content. Mallika contained higher pulp content with a pale yellow color in the peel and higher total soluble solids. Totapuri contained slightly lower pulp content than Mallika, lower total soluble solids and lower carotenoids among the cultivars. Sindura and Mallika pulps had significantly higher viscosity than Totapuri. Processing of the pulps resulted in significant decrease of carotenoids irrespective of the cultivar. Sensory quality of canned mango slices showed higher acceptability for Mallika followed by Sindura and Totapuri. Mango nectar prepared from Sindura was highly acceptable followed by Totapuri and Mallika. Processing of these underutilized mango cultivars into puree, nectar, juice beverages and slices, can result in value addition and popularization

    Kedelai hitam mengandung berbagai senyawa antioksidan yang bermanfaat bagi kesehatan. Pemanasan dalam pengolahannya diketahui dapat mengubah kandungan gizi, serta aktivitas dan kandungan berbagai senyawa antioksidan. Namun penyangraian dilaporkan mampu meningkatkan aktivitas antioksidan kedelai hitam. Penelitian ini bertujuan mempelajari pengaruh penyangraian terhadap kandungan gizi serta aktivitas dan kandungan senyawa antioksidan kedelai hitam varietas Mallika. Kedelai hitam yang disangrai pada suhu 150oC dan 200oC, masing-masing selama 15 dan 30 menit, dan non-sangrai diuji kandungan proksimatnya (kadar air, abu, lemak, protein, karbohidrat by difference, dan serat kasar). Aktivitas antioksidan diukur pada ekstrak etanolik kedelai hitam dengan metode penghambatan radikal DPPH. Ekstrak dengan aktivitas tertinggi kemudian diuji kandungan antioksidannya, yaitu total antosianin dengan metode perbedaan pH, total fenol dengan metode Folin-Ciocalteu, dan total flavonoid dengan metode kolorimetri. Hasil penelitian menunjukkan bahwa penyangraian dapat menurunkan kadar air dan protein, masing-masing pada kisaran 27,47 – 79,81% dan 5,73 – 15,73%, dan meningkatkan kadar lemak pada kisaran 3,21 – 3,81%, kadar abu pada kisaran 0,45 – 2,67%, dan meningkatkan proporsi karbohidrat, sedangkan serat kasar meningkat hingga 16,44% pada penyangraian suhu 150oC, namun menurun pada penyangraian suhu 200oC. Penyangraian meningkatkan aktivitas antioksidan hingga 82,5% dengan aktivitas tertinggi pada perlakuan 200oC selama 30 menit. Ekstrak kedelai hitam Mallika hasil penyangraian dengan aktivitas antioksidan tertinggi mengandung total fenol sebesar 56,96 mg GAE/g bahan kering, total flavonoid sebesar 14,39 mg QE/g bahan kering, dan antosianin sebesar 0,125 mg CE /g bahan kering. Dapat disimpulkan bahwa penyangraian pada suhu 200oC selama 30 menit dapat digunakan untuk mengoptimalkan sifat antioksidatif kedelai hitam Mallika yang bermanfaat bagi kesehatan

    Clinical outcomes and patient experience of biosimilar to biosimilar infliximab switching in patients with inflammatory bowel disease

    Background & aims:Regulatory pathways compare biosimilars with originator molecules only and not with other biosimilars. With the development of multiple infliximab biosimilars, patients may be asked to transition between them. Data is emerging but there is still a gap in the evidence on switching between infliximab biosimilars. Our aim was to conduct a full evaluation of switching a cohort of IBD patients from one biosimilar (CT-P13) to another (SB2) in a real-world setting including clinical, patient experience, molecular and drug immunogenicity aspects of the process. The study was sponsored by University Hospital Southampton NHS Foundation Trust and financially supported by Biogen Idec Limited.Method:Prospective, phase IV interventional study of patients on CT-P13 switched to SB2. Demographics, disease history, validated disease activity scores, patient reported outcome measures and laboratory measurements were collected. Semi-structured qualitative interviews were also conducted.Results:133 out of 158 patients agreed to participate. Thirty-five subjects discontinued. Mean disease duration was 9.2 years. There was no difference in mean haemoglobin, platelet count, albumin and C-reactive protein before and after switching. Mean faecal calprotectin at baseline and at week 30/32 was 306ug/g versus 210ug/g. Mean partial Mayo Clinic Score and modified Harvey Bradshaw Index at baseline were 1.54 and 3.14 versus 1.18 and 2.91 at week 30/32 respectively. There were 16 serious adverse events. Thematic analysis of interview transcripts from 26 participants identified six major themes that reflected the patient experience – trust, clinical status at the point of switching, past experience, general disposition, information provision and concerns/anxiety.Conclusions:Switching from CT-P13 to SB2 is safe and effective. Certain factors must be considered in supporting patient decision-making and enabling trust in the process. The results from this study support the development of a clear, stream-lined and well-monitored biosimilar switching programme

    Utilization of Partially Purified Papain Enzyme in Mallika Black Soybean Tempeh Hydrolysate as Umami Seasoning

    Tempeh made from Mallika black soybean (Glycine max (L.) Merr. var. Mallika) can be fermented for up to 4 days and can be further optimized by adding partially purified papain enzyme obtained from California variety papaya leaves (Carica papaya (L.) var. California). Enzyme can be added to the hydrolysates to degrade protein into short-chain peptides and free amino acids, contributing to umami taste sensory attributes. The study aimed to determine the best ammonium sulfate fractionation of crude papain enzyme and the best physicochemical characteristics of black soybean tempeh protein hydrolysate. The addition of ammonium sulfate fractionation used was 0% to 80%; fermentation time was 2 to 4 days; and the concentration of enzyme added was 0%(w/v) to 1.5%(w/v). The results showed that the 40% fractioned papain enzyme gave the highest protease activity value (0.98±0.04 U ml-1) and most of the papain enzyme was precipitated in this fraction leaving impurities. The black soybean tempeh hydrolysates with 4 × 1% showed the best physicochemical characteristic because it produced the highest umami substance. The best characteristics were moisture content (17.97±0.46%), glutamic acid content (171.58±5.72 mg g-1) that was caused by a transamination reaction, dissolved protein content (470.66±19.50 mg g-1), degree of hydrolysis (43.64±1.99%) and lightness (46.02±0.97). The umami substance’s amino acids are high in content, such as glutamic and aspartic acids (59.89±0.31 mg g-1 and 26.47±0.09 mg g-1). Sensory evaluation showed that treatment 4 × 1% demonstrated no significant difference in umami intensity with MSG (monosodium glutamate)

    Dispelling the Myths Behind First-author Citation Counts

    We conducted a full-scale evaluative citation analysis study of scholars in the XML research field to explore just how different from each other author rankings resulting from different citation counting methods actually are, and to demonstrate the capability of emerging data and tools on the Web in supporting more realistic citation counting methods. Our results contest some common arguments for the continued use of first-author citation counts in the evaluation of scholars, such as high correlations between author rankings by first-author citation counts and other citation counting methods, and high costs of using more realistic citation counting methods that are not well-supported by the ISI databases. It is argued that increasingly available digital full text research papers make it possible for citation analysis studies to go beyond what the ISI databases have directly supported and to employ more sophisticated methods

    The Right to Strike under the United States Constitution: Theory, Practice, and Possible Implications for Canada

    Answering critics of the Canadian Supreme Court's judgment in B.C. Health, the author argues that the Court laid the foundation for a principled and durable doctrine protecting constitutional labour rights, one that goes directly to the heart of the matter — the inequality of workers’ power in the employment relation. In the author’s view, two paths could lead from B.C. Health to the recognition of Charter protec- tion for a right to strike: one that treats the right as an accessory to col- lective bargaining, and one that upholds the right directly on the basis of the Charter values of equality and participation. The author supports the latter approach, contending that constitutional rights should be defined in relation to fundamental values, in a way that is not contingent on time-bound or fact-sensitive assessments about the role of strikes within a particular collective bargaining regime. Although a Charter right to strike may involve the courts in difficult choices about when to defer to legislative policy decisions, and courts may lack the institutional capac- ity to deal effectively with labour law issues, the author points out that judges can look to ILO standards for expert guidance. Noting that the U.S. experience in this area might be of considerable use to Canadians, the author concludes by providing an overview of American case law concerning a constitutional right to strike.Peer reviewe
