    Effect of oil source on oleogel structure

    The aim of the present research was to investigate the capability of different oleogelators to structure different type of lipid sources and to study the structural characteristics of the resulting oleogel. To this purpose, oleogels were prepared by mixing 5 % (w/w) of the structuring agents (saturated monoglycerides or mixture of β-sitosterol/-orizanol) in sunflower oil, extra virgin olive oil and triolein. The structural characteristics of the oleogels formed were evaluated by measuring their thermal, rheological and mechanical behavior at 20 °C. Results obtained in this study highlight that the self-assembly properties of the structuring molecules are affected by the physical properties of the lipid source. In particular, lipids characterized by high viscosity values translate in oleogels with low firmness. This behavior is probably associated to the formation of a less structured network as a consequence of an increase in the difficulty of oleogelator molecules to pack together. These findings could be useful to exploit oleogels in the production of health value-added foods with tailored functional properties

    Hygienic control of mass catering establishments: microbiological monitoring of food and equipmenmt

    During the period 2001-2002 a total of 236 inspections were performed on 27 catering establishments in the province of Ferrara (Emilia-Romagna Region, Italy), after a HACCP system was introduced and educational programs for food staff was undertaken for approximately 10 years. A total of 370 food samples and 140 surface swabs were taken and examined for microbiological quality. The surveillance system has brought to light various shortcomings regarding the equipment (36 corrective actions) and incorrect procedures (47 corrective actions). The tool and work surfaces showed an unacceptable contamination in 10% of samples. The data also highlight a certain percentage of unacceptable samples of foods, especially with regard to E. coli, ranging from 5.4% for the "first and second courses" to 10.8% for the "raw meats and meat preparations". Nevertheless, the hygienic quality of services and foods has improved in comparison with previous surveys, showing that the staff educational programs and the application of HACCP principles have increased the level of awareness regarding food hygiene in those working in catering services

    Lycopene bioaccessibility and bioavailability from processed foods

    Lycopene is one of the most abundant caroteinoids naturally occurring in red fruits and vegetables, especially tomato and its derivatives. It has potent antioxidant activity and can reduce risk of certain chronic diseases and cancers. A key limitation of lycopene use is that its intestinal absorption is far to be complete and highly variable depending on food processing. Consuming fat markedly increases efficiency of lycopene absorption, while other dietary components may reduce lycopene bioavailability. Heat treatment is quite effective in improving lycopene bioaccessibility by breaking down food matrix without affecting its content. High power ultrasound treatments of tomato pulp markedly decrease lycopene bioaccessibility, possibly due to lycopene entrapment in a stronger pectin network.     Going Beyond Counting First Authors in Author Co-citation Analysis

    The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed.     Variations on the Author

    “Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship

    Appropriate Similarity Measures for Author Cocitation Analysis

    We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature.
