Le fonti di variabilità ambientale della qualità tecnologica del latte di bovine di razza frisona
RIASSUNTO La presente ricerca ha avuto l’obbiettivo di analizzare alcune fonti di variabilità ambientale (epoca del prelievo, stadio e ordine di lattazione) che possono incidere sui parametri lattodinamografici del latte bovino indirizzato al consumo fresco e di tipizzarlo dal punto di vista tecnologico, allo scopo di esaminare l’adeguatezza del prodotto ad un suo eventuale utilizzo nella caseificazione. A tale scopo è stato analizzato qualitativamente il latte di 137 bovine di razza Frisona appartenenti ad un allevamento della Toscana. I parametri presi in considerazione sono stati quelli chimici (estratto secco, proteine, grasso, lattosio e ceneri), tecnologici (tempo di coagulazione, tempo di rassodamento e consistenza del coagulo a 45 minuti), le cellule somatiche, la carica batterica totale, il pH e l’acidità titolabile. Inizialmente sono stati individuati quattro “tipi di latte” principali (E, EF, F e FF) in base alla rilevabilità dei tre parametri lattodinamografici r, k20 e a30 e, successivamente, il Tipo E è stato suddiviso in ulteriori 6 sottotipi. Il latte è risultato complessivamente di scarsa reattività ed è stato inoltre evidenziato che tutti i fattori di variabilità ambientale determinano differenze soprattutto nella distribuzione delle tipologie tecnologiche, ma non sui singoli parametri. SUMMARY A trial was carried out on 137 cows of Italian Friesian, reared in one farm of the Tuscany with the aim to study the influence of some variability factors (season sample, parity and stadium of lactation) on the rheological parameters of the milk destined to fresh consumption and typifying it for the technological point of view, in order to examining the adequacy of the product to his possible utilization in the cheese making. Milk samples for qualitative analysis were taken over a time period of one year; only one sam- ple from each animal was taken from the morning milking. The following procedure were carried out on every sample of fresh milk: chemical composition (dry matter, fat, protein, lactose and ash), rheological parameters (clotting time “r”, curd firming time “k20”, curd firmness measured 30 min and 45 min after rennet addition “a30” and “a45” respectively), somatic cell count, pH and titratable acidity. Initially, on the base of the three rheological parametes (clotting time, curd firming time and curd firmness measured 30 min after rennet addition), four types of milk were identified (E, EF, F and FF) and, subsequently, the type E has been divided in further 6 subtypes. Milk resulted of scarce reactivity and it has been besides pointed out that all the factors of environmental variability determine difference mainly in the distribution of technological typologies, but not on single parameters

The phenomenon of jealousy in Latin language and literature: metaphors, scenarios and embodied experiences
This thesis explores the phenomenon of jealousy in Latin language and literature. Its principal aim is to gain further understanding as to how what we think of as ‘jealousy’ was expressed in Latin through more concrete and embodied experiences.
Building on embodied cognition theory applied to emotions, this thesis considers jealousy as a holistic process where mind, body, and cultural and natural environments are all entangled and integrated to make sense of a given phenomenon in a situated context. This entanglement is readily apparent in how often we describe and express abstract concepts, such as emotions, through more concrete and embodied ones, for example via metaphors. According to conceptual metaphor theory, metaphors disclose information about how human beings form and extend categories, especially abstract ones, from bodily experiences (Chapter 1).
In order to investigate the emotion of jealousy in Latin from this viewpoint, an integrated and multi-faceted methodology is required. To do so, I take into consideration a combined approach, which includes a corpus-based analysis focusing on some Latin lexemes related to jealousy, on the one hand, and a script-based analysis of key literary texts describing some relevant emotion scenarios, on the other. In both cases, I will look specifically at embodied semantics, and especially at embodied metaphors, through which this emotional phenomenon is expressed in different literary works (Chapter 2).
Moreover, both in my methodological choices and in the selection of the material to be investigated, I deal with the fact that Latin has no straightforward way of expressing what in English would be called ‘jealousy’. In this respect, the corpus-based analysis investigates lexemes which can express something close to this emotion in its broad sense, such as invidia, livor, malevolentia, obtrectatio, and aemulatio (Chapter 3). Through the script-based analysis, in turn, I delve into some exemplary literary texts describing something similar to ‘our’ episodes of jealousy, even in the absence of a lexical term which expresses it. Such texts display various representations of jealousy in different literary genres, including comedy (Chapter 4), elegiac poetry (Chapter 5), tragedy (Chapter 6), and satire (Chapter 7).
Ultimately, this thesis attempts to show to what extent a more general investigation of emotions in ancient cultures can benefit from an encounter with various research disciplines. Theories from cognitive studies, such as embodied cognition theory and conceptual metaphor theory, provide Classicists with new perspectives and methodologies for analysing emotional phenomena in the ancient world; conversely, research in the domain of ancient cultures, and evidence found in languages and texts from the past, can open up further stimulating challenges to contemporary debate around this cross-cultural experience we call emotion
