Designing Multisensory Dining Environments to Moderate Taste and Mouthfeel Perception: From Sensory Laboratories to Multisensory Restaurants
Dining is more than just a necessity; it is a multisensory experience shaped by the complex
interplay between our senses and the environments in which we eat. The way we perceive taste,
aroma, and texture is not solely a property of the food itself, but is profoundly influenced by
the surrounding context, the atmosphere, space, and sensory cues that frame the eating and
drinking activity.
This thesis investigates the dynamic relationship between indoor environmental design,
multisensory integration, and the perception of healthy foods, with a particular focus on
enhancing taste and mouthfeel through carefully designed multisensory interventions.
Approaching this topic from the perspective of an interior architect and designer, this research
sits at the intersection of indoor environment design, sensory science, and gastronomy. It seeks
to explore how the physical environment can be intentionally crafted to elevate the sensory
qualities of low-sugar foods and beverages, thereby supporting healthier eating without
compromising pleasure or enjoyment.
Bridging design practice with empirical sensory research, this thesis offers an applied
framework for integrating multisensory design principles into real-world dining spaces. The
aim is to develop creative, evidence-based strategies for shaping eating environments that
encourage healthier dietary choices.
Grounded in a multisensory design approach, this research is built upon six carefully designed
experiments conducted across a range of contexts, from controlled sensory laboratories to
immersive, quasi restaurant settings. The studies were carried out in the Sens i-Lab at the
University of Campania Luigi Vanvitelli (Italy), a laboratory in a non-Western context at the
University of Indonesia (Jakarta, Indonesia), and the quasi-laboratory multisensory restaurant
at Aistikattila®, Flavoria®, University of Turku (Finland). Each experiment examines a
different facet of how multisensory environmental cues can influence taste perception and
enhance the appeal of healthier foods and beverages, contributing to a growing body of
knowledge at the intersection of design, sensory science, and eating behaviour

Penelitian ini bertujuan untuk mengetahui pengaruh tourist experience terhadap behavioral intention di The Lodge Maribaya. Metode penelitian yang digunakan adalah deskriptif verifikatif. Adapun teknik pengumpulan data yang digunakan adalah melalui google form. Populasi dari penelitian ini adalah wisatawan yang sudah berkunjung ke The Lodge Maribaya. Teknik pengambilan sempel berdasarkan systematic random sampling diperoleh sempel sebanyak 150 responden. Analisis statistik yang digunakan dalam penelitian ini adalah teknik analisis regresi berganda dengan bantuan aplikasi SPSS 25 for Windows. Skala yang digunakan adalah skala likert. Berdasarkan pengujian diperoleh hasil secara simultan tourist experience berpengaruh signifikan terhadap behavioral intention. Hasil penelitian ini menunjukkan bahwa tingkat tourist experience berada dikategori tinggi dan tingkat behavioral intention berada dikategori tinggi. Serta tourist experience berpengaruh positif terhadap behavioral intention. Secara parsial, terdapat dua dimensi yakni sensory, dan intellectual berpengaruh signifikan terhadap behavioral intention. Sedangkan dua dimensi lainnya yakni affective dan relational tidak memiliki pengaruh yang signifikan terhadap behavioral intention.

This study aims to figure out the effect of tourist experience on behavioral intention in The Lodge Maribaya. The research method used is descriptive verification. Data technique that use for this research is google form. Population of this study were tourists who have visited The Lodge Maribaya. The sampling technique was based on systematic random sampling of 150 respondents. Statistical analysis used in this research is multiple regression analysis techniques with SPSS 25 for Windows application. This research scale use the Likert scale. Based on the test, it was found that the simultaneous tourist experience had a significant effect on behavioral intention. Results of this study indicate that the level of tourist experienve is in the high category and behavioral intention is in the high category. And tourist experience has a positive effect on behavioral intention. Partially, the twodimensions, namely sensory, and intellectual have a significant effect on behavioral intention. While the other two dimensions namely affective and relational do not have a significant effect on behavioral intention
Going Beyond Counting First Authors in Author Co-citation Analysis
The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation
counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings
are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that
only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into
account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed

The Resistance of Subaltern Class against Patriarchal Hegemony in Cantik Itu Luka by Eka Kurniawan
This study aims to examine patriarchal hegemony in the novel Cantik Itu Luka (Beauty Is a Wound) by Eka Kurniawan using the theories of Gramsci and Walby regarding colonial culture and ideology that controls the women who are classified as the subaltern classes under male power in various aspects of life. According to Spivak’s theory, subaltern class is an individual or social group that is marginalized under dominating power economically, socially, and culturally. This study also uses postcolonial approach by Tyson which serves to examine and respond to colonial influence on social structure, identity, and cultural continuity. The study of patriarchal hegemony in Cantik Itu Luka examines three main aspects: (1) the manifestation of patriarchal hegemony in the subaltern class; (2) the psychological and emotional impact of patriarchal hegemony on subaltern women; and (3) the forms of resistance against hegemonic. The research data are quotations from the novel contained in the form of words, phrases, sentences, and paragraphs that interpret the issue of patriarchal hegemony obtained from narration, dialog, characters' thoughts, and storyline. The data collection used literature study techniques, whereas the data analysis used qualitative descriptive techniques. The results of this study resulted in the discovery that patriarchal hegemony greatly influences society's ideology about subaltern women, all forms of community attitudes in the form of objectification, subordination, and marginalization of subalterns cause impacts, responses, and resistance by subaltern classes
Variations on the Author
“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
Appropriate Similarity Measures for Author Cocitation Analysis
We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature. Stock price movements can be influenced by several economic, noneconomic
conditions
and
political
events
of
a
country.
Events
that
have
a
high
impact
on changes in the value of a country's currency, will create market
sentiment. When the fact of an event is known, the stock price movement can
go up and down in a moment. The JCI had experienced a situation that showed
the sentiment of the Indonesian market. The case of blasphemy by Basuki
Tjahya Purnama caused market sentiment. Around the day before the Ahok
case court ruling, the JCI declined continuously.
This study aims to determine the differences in the JCI before and after
the decision of the Ahok case trial. The study used an event study, in which the
observation of the window period for the JCI for 5 days, 30 days and 60 days
before, event date, and 5 days, 30 days, and 60 days after the decision of the
Ahok case trial. This study uses secondary data obtained from the Indonesia
Stock Exchange, which includes daily closing stock prices. While the sample of
this study is JCI data for 120 days. The statistical test instrument used in this
study is a different Chi-Square test by using the SPSS 20 program.
From the results of data analysis on Chi-Square Output shows that in the
test 3 time periods namely 5 days, 30 days and 60 days before and after the
decision of the Ahok case trial the value of Asymp Sig. Greater than value. This
shows that there is no difference in the JCI before and after the decision of the
Ahok case trial.
