    L’UO si propone di ricercare i componenti bioattivi (proteine e peptidi) sia nel siero residuo alla lavorazione di Pecorino, di Cacioricotta e di formaggi tipici ovi-caprini, che nella scotta residua alla lavorazione della Ricotta di pecora. Saranno analizzati campioni di siero e scotta provenienti da caseifici campani assieme a quelli eventualmente forniti dalle altre UO che operano in realtà regionali diverse, per il raggiungimento dei seguenti obiettivi: - caratterizzazione delle proteine del siero e della scotta (alpha-lattoalbumina, beta-lattoglobulina, sieroalbumina, immunoglobuline, lattoferrina), mediante analisi quantitative (determinazione delle frazioni azotate) e qualitative con l’approccio proteomico (tecniche immuno-elettroforetiche accoppiate alla spettrometria di massa) (primo anno); - caratterizzazione dei peptidi derivanti dall’azione proteolitica delle attività enzimatiche agenti nel processo di caseificazione sulle frazioni caseiniche, presenti nel siero e nella scotta, per individuarne l’eventuale bio-attività, mediante HPLC/ES/MS/MS (secondo anno)

    Characterisation of the heterogeneity of ovine deleted variant alphaS1-casein E by a proteomic approach

    The micro-heterogeneity of the ovine αs1-CN E variant, occurring in Leccese ewe milk, was characterized using a bottom-up, shotgun proteomic approach by means of two-dimensional gel electrophoresis (2-DE) and RP-HPLC as separation techniques and polyclonal antibodies against αs1-CN and nano-liquid chromatography-electrospray ionization-time-of-flight tandem mass spectrometry nESI-QTOF/MS/MS as an identification methodology. Comparing results with the most common genetic variant αs1-CN C, αs1-CN E variant showed a reduced number of phosphorylated serine residues (αs1-CN E -4P vs αs1-CN C -9P) and a lower measured molecular weight (MW) (22241.7Da vs 23481.5Da). The MS analysis of protein tryptic digest ascertained that these differences were due to the αs1-CN (70-77) amino acid sequence deletion, coded by exon 10, thus triggering the phosphate loss on serine residues located at positions 64, 66, 68 and 75. The loss of four phosphate groups, associated with the lower content of αs1-CN E, could be negatively related both to cheese-making aptitude of milk and mineral carrier activity

    Los personajes como elemento transgresor en los productos culturales: análisis de “¿Qué hora es?” de Elena Garro

    The present work explores the elements that shape the features of the characters created by the Mexican author Elena Garro and define her production; characters who transgress established orders, the compliance of norms and values. It is the interest of this work to make inquiries on the shaping of characters as literary elements, whose significance in the narrative of Elena Garro may signal one of the characteristics that define her narrative and her value as a 20th Century author: transgression. In particular, the short story “¿Qué hora es? [What time is it?], in which Lucia Mitre will transgress her role of an adulterous woman, apparently neglected in her space-time dimension, is analyzed, as well as the thematic role of the characters.El presente trabajo explora los rasgos que configuran a los personajes del cuento de la autora mexicana Elena Garro. Se plantea indagar en la configuración del personaje como un elemento literario, cuyas características se definen con la trasgresión. En particular, se analiza el cuento “¿Qué hora es?”, incluido en La semana de colores, en el que Lucía Mitre traza una ruptura en el rol de la mujer adúltera y, aparentemente, desamparada en una dimensión espaciotemporal infringida y, hasta cierto punto, fragmentada
