    The perceived proximity toward a food product : a favorable factor for new food product acceptability through or without initial trust ?

    L’objectif de notre recherche est d’appréhender la proximité perçue par les mangeurs envers les produits alimentaires qu’ils consomment. Une revue de littérature et une étude qualitative par entretiens semi-directifs menée auprès de 40 mangeurs permettent tout d’abord de démontrer que le concept de proximité est multiforme et de nature explicite et implicite. Dans un second temps, une première étude quantitative conduite auprès de 277 mangeurs nous a permis de construire une échelle de mesure de cette proximité regroupant 45 items autour de quatorze dimensions : culture, enfance, traçabilité, local, plaisir, habitude, expertise, identité, singularité, convivialité, valeur, santé, nostalgie et dépendance. Dans un troisième temps, dans le cadre d’une deuxième étude quantitative relative au calisson, menée au musée du calisson à Aix-en-Provence, nous avons testé et validé notre échelle de mesure. Une dernière enquête en ligne auprès de 481 consommateurs français, relative à un nouveau calisson, a été conduite au cours du premier trimestre 2016. Cette étude a permis d’une part de confirmer l’échelle de proximité dans le cas d’un nouveau produit et, d’autre part, de tester notre modèle de recherche. Notre recherche, au moyen d’un modèle d’équations structurelles, ont permis de tester l’impact des différentes formes de proximité sur la confiance initiale et sur l’acceptabilité, attestant du pouvoir prédictif de la proximité et du rôle de médiation partielle de la confiance initiale entre la proximité et l’acceptabilité.The goal of our research is to comprehend the proximity between people and foods they eat. First of all, reviews of the literature and a qualitative study based on interviews of 40 people have allowed demonstrating that the concept of proximity is multifaceted, and explicit and implicit as well. A quantitative survey conducted on 277 people allowed to build a proximity measurement tool. The scale grouping 45 items around 14 dimensions namely, culture, childhood, traceability, local, pleasure, habit, expertise, identity, uniqueness, value, health, nostalgia, conviviality and dependence. In another calisson related quantitative study conducted at the Museum of the calisson in Aix-en-Provence, France, the proximity measurement tool was tested and validated. It showed that the proximity comes after the acceptance via the initial trust of consumers and can discriminate them based on the dimensions of proximity they look for. A new-calisson related survey of 481 French people was conducted online during the first trimester of 2016. This survey helped to confirm the local scale in the case of a new product and to test our research model as well. These studies allow, through structural equations, to test the impact of different forms of proximity on the initial trust and acceptability. This corroborates the predictive power of proximity. The results show that the initial trust is a partial mediator between the proximity and the acceptability

    Regulatory Focus as an antecedent of innovation adoption in the framework of food behavior

    Notre thèse envisage l’orientation régulatrice comme un antécédent explicatif du comportement d’innovation des individus dans le cadre alimentaire. La théorie de l’orientation régulatrice permet aux chercheurs de se focaliser sur les stratégies d’approche et d’évitement que le consommateur est susceptible d’utiliser dans un contexte de choix et sur leurs conséquences sur le jugement du produit en fonction de l’adéquation entre « qui nous sommes » et « comment nous effectuons notre choix ». Nous avons effectué un parallèle entre cette théorie et le comportement alimentaire grâce au paradoxe de l’omnivore qui permet de dissocier les individus en fonction de leur appétence pour les nouveaux produits alimentaires. La sensibilité au risque est un facteur explicatif tant du choix final effectué que de l’adoption de l’innovation. Fort de ce constat, nous avons conduit deux expérimentations dont l’objet était de mettre en avant les liens et l’impact de l’orientation régulatrice au travers de ses manifestations comportementales sur le risque perçu et sur la poursuite du besoin de stimulation exprimé par l’appétence pour le changement. Notre première expérimentation a mesuré les liens et les impacts de l’orientation régulatrice sur la perception du risque et sur l’innovativité hédonique et sociale. La seconde expérimentation a permis de mesurer l’influence de l’orientation régulatrice sur la recherche de variété et sur le risque alimentaire.Our thesis is considering regulatory focus as an explanatory history of innovation behavior of individuals in the food part. The regulatory focus theory allows researchers to focus on the approach and avoidance strategies that consumers may use in a contxet of choices and their consequances on product judgment based on the match between « who we are » and « how we make our choice ». We conducted a parallel between this theory and food behavior with the omnivore’s paradox which allows to separate the individuals according to their appetite for new food products. Risk sensitivity is an explanatory factor in term of the final choice made and of the adoption of innovation. With this in mind, we conducted two experiments whose purpose was to highlight the links and the impact of regulatory focus through its behavioral manifestations on the perceived risk and the continued need for stimulation expressed appetite for change. Our first experiment measured the links and the impacts of regulatory focus on risk perception and hedonic / social innovativity.     Nutritional Therapy Education of chronic patients in the light of the "Construal-Level Theory"

    Dans notre travail doctoral intitulé « L’éducation thérapeutique nutritionnelle des malades chroniques à la lumière de la « Théorie des niveaux de représentation » : une application dans le cas vietnamien », nous avons mené une revue de littérature et proposé les nouveaux concepts concernant l’alliance nutritionnelle, le bien-être, les niveaux de représentation de la nutrition et de la maladie des patients chroniques ; Construit et validé les échelles de mesure de ces variables. Nous avons également identifié les liens entre l’alliance nutritionnelle et les niveaux de représentation de la nutrition et de la maladie des patients chroniques ; et les liens entre l’alliance nutritionnelle et le bien-être des patients chroniques. A partir de ces résultats, deux sessions d’éducation thérapeutique nutritionnelle auprès de malades chroniques à Da-Nang, Viet-Nam ont été conçues et mises en place à l’aide du modèle de changement de comportement COM-B au profit d’une meilleure alliance nutritionnelle des malades chroniques.In our doctoral work titled « Nutritional Therapy Education of chronic patients in the light of the « Construal-Level Theory » : an application in the Vietnamese case », we conducted a literature review and proposed new concepts regarding nutritional alliance ; well-being ; construal-level of nutrition and disease of chronic patients ; constructed and validated the scales of measurement of these variables. We also identified the links between the nutritional alliance and the construal-levels of nutrition and disease of chronic patients ; and the links between the nutritional alliance and the well-being of chronic patients. From these results, two nutritional therapy education sessions for chronic patients in Da-Nang, Viet-Nam were designed and implemented using the COM-B behavior change model in favor of better nutritional alliance of the chronic patients

    Going Beyond Counting First Authors in Author Co-citation Analysis

    The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed

    Variations on the Author

    “Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship

    Appropriate Similarity Measures for Author Cocitation Analysis

    We provide a number of new insights into the methodological discussion about author cocitation analysis. We first argue that the use of the Pearson correlation for measuring the similarity between authors’ cocitation profiles is not very satisfactory. We then discuss what kind of similarity measures may be used as an alternative to the Pearson correlation. We consider three similarity measures in particular. One is the well-known cosine. The other two similarity measures have not been used before in the bibliometric literature.
