No full textAllo scopo di stabilire se la spettrofotometria NMR fosse utilizzabile nella determinazione della trans insaturazione nei grassi commerciali, sono stati analizzati con tale metodo quindici campioni di margarine commerciali, dure e spalmabili. La differenze fra l'acido oleico e l'acido elaidinico sono visibili solo nello spettro 13C; tali differenz, utilizzabili per la determinazione quantitava sono localizzate attorno a 130 ppm per i C etilenici, e attorno a 27-33 ppm per i C in alfa al doppio legame

No full textThe nutritional variations in some typical semi-cured Italian meats after the cooking process were investigated. Three raw and three cooked samples of Bondiola, Cotechino (Modena and Cremona), Salama da sugo (Ferrara) and lingua salmistrata (Veneto) were studied. For lingua salmistrata the root, centre and tip were analyzed separately. Water, NaCl and protein %, total lipid content and its characterization, nitrate and nitrite concentration and the energy supply were determined. The nutrient composition and energy supply did not change due cooking, while the NaCl, nitrite and nitrate concentration decreased

No full textÈ stata studiata la frazione lipidica di due specie autoctone della Sardegna: una appartenente alla famiglia dei suini, il cinghiale (Sus scrofa) e l’altra agli ovini: il muflone (Ovis ammon). Sono stati determinati i seguenti parametri: umidità % necessaria per il metodo di estrazione lipidica secondo Bligh e Dyer, lipidi totali % ...Lipids of two autochthonous species of Sardinia have been studied: wild boar (Sus scrofa) and mouflon (Ovis aminon). It has been determined: water content % for determination of total lipids (Bligh and Dyer); total and, for moufion tissues only, apolar lipids % (by SPE); fatty acids composition %, by derivatization and following GLC of methyl esters; unsaturation and polyunsaturation parameters from 1H-NMR spectra and GLC data; glyceridic forms by TLC (qualitative). We have utilized for analysis muscular tissues and entrails from 3 male mouflons (protected species) and muscular tissues from 15 different male and female wild boars. The lipid content is higher in boar than in mouflon muscular tissues, with a different ratio saturated: monounsaturated : polyunsaturated fatty acids; in muscle of wild boar the values are 2.3: 3.4 :1.0. In mouflon are 1.2 :1.1 :2.l for the muscle; 2 .1 :1 .1 :1 .0 for the brain, 1.8 :1.0 :1.3 for the liver and 1.6 :1.0 :1.2 for the kidneys

Going Beyond Counting First Authors in Author Co-citation Analysis
Get PDFThe present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation
counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings
are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that
only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into
account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed
Variations on the Author
Get PDF“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
