    Opening the black box of food quality in the short supply chain: Effects of conventions of quality on consumer choice

    In recent years new forms of food distribution organisation, known as short supply chains, have gained ground. The local nature of such distribution has positive effects on the environment and on the local economy. Consumers appear to trust the short supply chain, and it has achieved considerable success. However, the short supply chain has credence characteristics which, by their very nature, cannot be identified through a system of certification. The question we address in this paper is whether it is possible to identify the constituent elements of the credence trait in relation to food quality in the short supply chain. Our hypothesis is that the latter are linked to a range of socially constructed food quality criteria. To develop a more inclusive vision of how such criteria are coordinated in food quality assessment by consumers, use has been made of convention theory. In accordance with convention theory, quality is identified, in a social context and informally, as one of the spheres in which economic activity is regulated by procedures which go beyond regulation by price. The aim of our study was to measure the effects of coordinated conventions of quality in the context of one type of short supply chain: farmers’ markets specialised in the sale of organic products. An ordered logit model was implemented. Our results allow credence characteristics to be classified within conventions of quality and could help support strategies aimed at spreading sustainable forms of food distribution and consumption. Future research might go to the direction of validating our results based on a single form of supply organisation. Moreover, additional efforts should be made understanding the effect of situational factors on socio-demographic variables such as gender. Finally, an attempt should be made to merge different theories to better understand the issue of consumer choice

    The influence of country of origin on German consumer preferences for peaches: a latent class choice model

    Germany is an important world level market for fresh fruit. Spain and Italy are the main suppliers of fresh fruit on the German market while the main imported products are apple, grapes, peaches and oranges. The aim of this paper is to assess the role country of origin plays in the preferences of German consumers for peaches. Since German legislation requires fresh fruit sold on the market to clearly display the product’s country of origin, German consumers usually make their choice with this information to hand. How important is such information, and what is the trade-off between country of origin and price or organic production system? We attempted to investigate such concerns through a choice experiment approach conducted by means of a questionnaire-based survey administered to a representative sample of 300 German households. In the experiment, respondents were asked to choose their favorite peach among four alternatives. Each peach was described as imported from four specific countries (Italy, Spain, Turkey and France) and available at a specific price; some of the peaches were certified Organic or PDO. The stated choices are analyzed using a latent class choice model to derive estimates of preferences for peaches. Results indicate the presence of three distinct consumer segments in the German peach market. The largest segment (48%) showed a strong preference for Italian peaches as well as for organic and PDO certification. For this segment, price was not an important attribute. The second segment (41%) showed a strong preference for Spanish produce and organic certification. Price was important in this case.     Att spela samma verk på cembalo och orgel : Preludium i g-moll av Georg Böhm

    Detta är en undersökning om hur en musiker kan ta sig an samma musikstycke på cembalo och orgel. Verket som valts är Preludium i g-moll av Georg Böhm. Under renässansen och barocken komponerades mycket musik där inte ett specifikt klaverinstrument var angivet. Olika historiska källor som behandlar spelteknik nämns i arbetet, även moderna källor som behandlar historisk spelteknik. I arbetet undersöks hur instrumentens styrkor kan tas vara på i de olika framförandena och vilken spelteknik som är lämplig. Det är avslutningsvis en diskussion kring vilka musikaliska parametrar som hanteras olika på de olika instrumenten. Den ena inspelningen gjordes på en cembalo med en flamländsk Rückersmodell som förlaga. Den andra inspelningen gjordes vid Düben-orgeln i Tyska kyrkan i Stockholm.Ljudfilerna som är bifogade är inspelningar av Preludium i g-moll av Georg Böhm.
