Lactic acid fermentation of Brassica rapa: chemical and microbial evaluation of a typical Italian product (brovada)
Brovada is an ancient traditional product from the northeast Italian region, included in any list of typical Italian products, which is obtained by natural fermentation of turnips (Brassica rapa). Turnips are cleaned and put in vats, alternating them with a layer of grape skins. Before covering the vat a mix of water and salt or water only is added. The vegetable fermentation is a spontaneous process caused by the microorganisms present on the various components (turnip and grape skins). A total 225 lactic acid bacteria (LAB) and 63 yeasts were isolated during this natural fermentation process. The main heterofermentative population was identified as Lactobacillus spp. while the major homofermentative LAB were Pediococcus spp., Candida spp. was the main yeast present. During the first 24 h of fermentation, the pH decreased rapidly to 3.7. At different steps of fermentation the headspace aroma compounds of brovada were analyzed by solid-phase-micro-extraction/gas chromatography/flame ionization detection to define the characteristic aroma profile of this particular product

The research concerns the testing of new systems of representation of the project as a tools for communication of modern archi-tecture and its documents, in order to enhan-ce, with the use of a model Bim-oriented, the cultural heritage left by Adriano Olivetti and his company.
The object of the trial is the ‘Centro Studi e Esperienze’ designed by Eduardo Vittoria and that really wanted by Adriano; it is a bu-ilding with a huge symbolic significance for the company, which introduced the organic articulation of the space within up to this time the rationalist Ivrea

Natural risk assessment and managment
"Natural risk assessment and managment" is a chapter of the "Handbook on Urban Sustainability", edited by Nolberto Munier. A book which addresses the sustainable development of a city.
In particular Michela Tiboni deals with a subject rarely seen in the technical literature: Risk management. It refers to risks related with land uses, and as the author rightly states its aim is to reduce danger for human beings and the environment. Some projects are built on terrains that have characteristics that make then unsuitable for that kind of project. Others alter the natural flow of water during storms, paving the way to floods, and cave ins. Both can generate action-reaction response. This Chapter presents the necessary guidelines to evaluate a risk involved in the construction of a project. This is something that has to be carefully considered to avoid future consequences, which can turn to be catastrophic. Remember, most human activities modify the environment, and it is then necessary to evaluate the consequences of such actions
Artichoke By-Product Extracts as a Viable Alternative for Shelf-Life Extension of Breadsticks
The upcycling of agricultural by-products and the extension of the shelf-life of staple foods represent crucial strategies for mitigating the consequences of food losses and enhancing the competitiveness of the agri-food industry, thus facilitating the attainment of higher financial revenues. This is particularly relevant for global artichoke cultivation, where 60–80% of its biomass is discarded annually. The present study investigated the potential of using non-stabilized polyphenol-rich extracts from the main artichoke by-products (bracts, leaves, and stems) to fortify and extend the shelf-life of breadsticks. The incorporation of hydroalcoholic extracts at two addition levels (1000–2000 ppm) resulted in an increased antioxidant capacity and oxidative stability of fortified breadsticks. Rheological tests revealed that the fortification did not affect the dough’s workability, with the exception of the leaf extract. While a slight deterioration in texture was observed, the shelf-life of breadsticks was significantly extended, particularly at the highest levels of addition, without any visible alteration in their appearance. The stem extract demonstrated the most promising outcomes, exhibiting a maximum increase of 69% in antioxidant capacity (DPPH) and an extension of the estimated shelf-life by 62% in the resulting breadsticks, prompting the potential for utilizing them to develop nutritious and healthy snacks with extended shelf-life
BIS and BAS correlates with psychophysiological and cortical response systems during aversive and appetitive emotional stimuli processing
The present research intended first to confirm psychophysiological and cortical responses to valence- and arousal-manipulated stimuli and second to show how the BIS and BAS (Behavioural Inhibition and Activation System) personality characteristics correlated with these psychophysiological and cortical responses. Multiple measures were recorded, such as psychophysiological (skin conductance response, heart rate, and electromyography) and ERPs (event-related potentials) responses, during viewing IAPS figures, that varied in terms of pleasantness (appetitive vs. aversive) and arousing power (high vs. low intensity). Autonomic variables and two ERP positive deflections (P3 and LPP ERP effects) were found to be modulated by valence and arousal rating, with an increased response for high arousing and negative or positive stimuli in comparison with low arousing and neutral stimuli. Moreover, high BAS subjects were more responsive to positive than negative emotions, whereas high BIS subjects responded in greater measure to negative and arousing emotions. Findings were discussed in light of biphasic model of emotion comprehension
ACERCA DEL REALISMO PERSPECTIVISTA DE MICHELA MASSIMI
In Perspectival Realism (2022), Michela Massimi seeks to make compatible two positions usually presented as irreconcilable: pluralistic perspectivism and scientific realism. It is shown that the strategy adopted by the author in pursuit of the proposed objective is unsuccessful. However, this does not imply that both positions are decidedly incompatible. We put forward an alternative proposal that allows scientific realism and pluralism to be coherently reconciled.
