    ALTERNATIF PROTEASE PADA ENZIM RENNET DALAM PEMBUATAN KEJU

    Rennet merupakan kombinasi dari enzim protease seperti kimosin dan pepsin yang didapatkan dari abomasum anak sapi. Enzim kimosin sendiri merupakan enzim yang memiliki pengaruh dominan terhadap peristiwa koagulasi pada susu menjadi curd dan whey dalam pembuatan keju. Beberapa alternatif dari enzim rennet dapat berasal dari bahan pangan non-hewani, seperti enzim papain (dari ekstrak getah buah pepaya), enzim zingibain (ekstrak rimpang jahe), enzim cucumisin (ekstrak bagian sarkokarp melon), dan bromelin (ekstrak batang dan buah nanas). Parameter yang diamati dari beberapa jurnal berkaitan dengan sumber, pH dan suhu optimum, rasio antara milk clotting activity (MCA) dengan proteolytic activity (PA), persentase cheese yield serta hardness keju. Hasil yang didapatkan dari akumulasi beberapa jurnal dan ditabulasikan untuk mengetahui perbedaan karakteristik dan kualitas dari masing-masing enzim. Keju yang dihasilkan oleh enzim papain memiliki karakteristik aroma manis, floral, dan fruity akibat pembentukan asam asetat dan aldehid, sedangkan penambahan enzim zingibain menghasilkan keju dengan senyawa aromatik yang cukup kuat. Enzim cucumisin yang ditambahkan pada proses pembuatan keju menghasilkan karakteristik hardness yang rendah dengan nilai minimum sebesar 1,97 N, sedangkan penambahan enzim papain mampu menghasilkan hardness yang paling tinggi pada nilai maksimum 13,79 N. Adapun penambahan enzim bromelain mampu menghasilkan keju dengan karakteristik pahit yang rendah pada keju yang dihasilkan

    Developing Arco Swing on Double Bass in Jazz

    Full Text is available to authenticated members of The University of Auckland only.This research aims to identify strategies for bassists who wish to develop their bowing skills in a jazz context. Documentation on learning and teaching strategies for arco bass are numerous and detailed in the world of classical performance, however the number of relevant resources pertaining to arco performance in jazz is reasonably small. The findings of this research could be useful for upright bassists who, like the author, have had considerable experience playing pizzicato in a jazz context, but have not previously used the bow in their music-making endeavours. The methods of inquiry are through personal practice, expert guidance, observation and exploration of selected practitioners, composition, and improvisation. A succinct analysis pertaining to relevant acoustic properties of the bowed bass tone is also included. This component exists as appendages to its respective aspects, where deemed necessary, to inform the practice process. Accompanying this thesis is a performance recital of repertoire directly relating to and chosen for its relevance to arco bass, and a composition portfolio created with the intention of integrating arco technique into my own performance and composition repertoire. Furthermore, I am reflecting on the recordings of my recital and compositions in order to critically assess my personal development, provide guidance for further improvement of my playing, and finally to refine the practice method applied in this project, aiming to assist bassists who potentially wish to use this approach in their development of bowing skills within a jazz context

    A presente dissertação propõe-se a realizar uma exegese sobre a obra Arquitetura do arco-íris, da autora sul-rio-grandense Cíntia Moscovich, de modo a reconhecer o símbolo do arco-íris como principal mediador de sentidos entre os contos que compõem a coletânea. À luz da teoria do Imaginário, sustentada pelo filósofo Gilbert Durand, percebe-se que é possível conjeturar uma poética do arco-íris, uma vez que a imagem do arco celestial surge como um eixo simbólico, que por vezes se dissolve em imagens caracterizantes dos espaços, das personagens e das ações dentro das narrativas. Busca-se compreender como os símbolos eufemizam os conflitos vividos pelas personagens principais, ao passo que aludem os dilemas existenciais que rompem a estabilidade na vida das mulheres que protagonizam os enredos. Assim, almeja-se estabelecer um novo olhar sobre o simbólico na escritura de Cíntia Moscovich, tendo em vista que tal abordagem ainda se encontra escassa na fortuna crítica da autora.This thesis proposes to realize an exegesis on the work Arquitetura do arco-íris by the southern author Cíntia Moscovich in order to recognize the symbol of the rainbow as the main mediator of meanings among the stories that compose the collection. In the light of the theory of imagery, supported by the philosopher Gilbert Durand, it is possible to conjecture a poetic of the rainbow, since the image of the celestial arc appears as a symbolic axis that, at times, dissolves into characterizing images of spaces, characters, and actions within the narratives. Thus, it is sought to understand how symbols euphemize the conflicts experienced by the main characters, whereas alluding to existential dilemmas which break the stability in the lives of the women who play the plots. Therefore, it is aimed to establish a new look on the symbolic in Cíntia Moscovich’s writing, considering that such an approach is still scarce in the author's critical fortune

    Lõputöö eesmärgiks oli analüüsida erinevaid veoringe ning nende võimalusi pisipakkide ja alusekauba koosvedamisest. Eesmärk põhines ettevõtte huvist laieneda ning pakkuda konkurentsi võimelisemat hinda. Esimese etapina korraldas autor veoringid ning samaaegselt kogus andmeid. Teise etapina suhtles autor ettevõtte partneritega antud teemal ning kaardistas sobivad laod ja terminalid. Kolmanda etapina analüüsis ettevõtte pisipakkide lisamise võimalusi alusekaupadele ning viimasena koostas järeldused antud andmete põhjal. Autori hinnangul on Arco Transpordil kasumlik alustada pisipakkide koosvedu alusekaubaga. Küll aga ei teeninud kõik veoringid vähemalt 31,5€ kasumit. Kasumlikkuse suurendamine ei ole ainult tingitud ettevõtte töökorraldusest vaid kaubanõudlusest ja kaupade asukohast. Seetõttu ei ole võimalik määratleda kindlaid kriteeriume, vaid tuleb vaadata olukorra kriitiliselt ning käituda vastavalt. Pisipakkide lisamine alusekauba transporti annab võimaluse ettevõttel siseneda väikesaadetiste turgu. Autor sai ka kinnitust, et veoringidel oli täidetud ainult laadimismeetrite maksimeerimis kriteerium, ning analüüsides igat veoruumi eraldi, sai autor kinnitust, et on võimalik täita rohkem kriteeriume olenevalt kauba iseloomust. Hetkel ei ole ettevõte teinud samme pisipakkide lisamiseks alusekauba transporti, kuna ettevõte ei ole süvitsi analüüsinud antud temaatikat. Lõputöö analüüsi ja järelduste osas arvutas autor läbi antud tegevuste rahalised väärtused ning tulemused oli positiivsete näitajatega, mis viitab kasumlikule tegevusele. Autor esitab oma lõputöös koostatud arvutused ja ettepanekud ettevõtte juhtkonnale ning sellest tulenevalt ollakse valmis arendama pisipakkide veoteenuseid. Ettevõttel on hea rahaliste näitajate abil teada, kui palju on võimalik aasta lõikes lisakasumit teenida.. Lõputööd läbi viies sai ka autor rohkem teadmisi pisipakkide koosveo võimalustest ning sellega võimalus kaasa aidata Arco Transpordi edasisele laienemisele. KOKKUVÕTEIt is possible to maximize cargospace already when moving products out of the production plants. By adding smaller parcel goods to pallets a transport company has the ability to optimize trailer space and provide more competetive prices. Using the phrase full trailer load usually people think about the criteria of floorspace, but there are also volume and weight limitations. When maximizing all these criterias a transport company can offer more competetive prices and also make more profit while doing so. The focus of the thesis is to analize the possibility of mixing parcel transport with pallet transport by the example of Arco Transport AS German department. Arco Transport AS is an Estonian capital based company that provides road transport services all across Europe. Arco Transport AS transports goods all across Europe and has many partners, but they only work on maximizing the floorspace of trailers. The goal is to expand the company in it's respective field and provide more competitive prices. In order to achieve these goals the author will analize different freight rounds and the possibility of mixing smaller parcel goods with pallets. The author has three hypothesis to prove his theory: • In addition to floorspace one can also maximize wight and volume of a trailer • By adding smaller parcel cargo to pallet transport it is possible to earn more profit • Combining smaller parcel cargo with pallet transport a comapany can earn 31,5€ more profit per freight round The focus of the thesis was to analize diffrent freight rounds and the possibility of combining parcel transport with pallet transport. The thesis is based on Arco Transport AS-s interest to expand and provide more competetive prices. Firstly the author collected data from Arco Transport AS-s freight routes. Secondly the author communicated with different business partners and marked down suitable places for warehouses and terminals. For the third step the author analized the possibility of mixing SUMMARY 34 parcel goods with pallets and lastly, using all the collected data, made an conclusion. The auhor has concluded Arco Transport AS can increase their profit by mixing parcel transport with pallet transport. Although all the freight rounds did not make a 31,5 profit, the possibility of making profit is still there, it just depends on the current demand and the positioning of cargo. This shows that it is not possible to set certain critererias but one has to assess the situation and act accordingly. By adding smaller parcel cargo to pallet transport a company has a way into a completely different market. The author got confirmation from analizing different freight routes and currently only the floorspace criteria is being met and depending on the cargo other critereias can be met aswell. Currently Arco Transport AS hasn't started smaller parcel transport, because of insufficient data. In the thesis the author brings out different calculations of combining parcel and pallet transport which indicate a positive outcome and shows it is possible to make a profit. The author is certain that Arco Transport AS will look into these possibilities when moving forward with their expansion. It is good for the company to to see these possible profit margins in one years time. By analizing combining parcel and pallet transport the author learn a great deal about parcel transport and will be a key factor on the development of Arco Transport AS

    Käesoleva töö eesmärgiks oli analüüsida Arco Transport AS Prantsusmaal olemasolevate terminalide kasutamise võimalusi alternatiividena otsevedudele Prantsusmaa suuna kokkuvedude optimeerimiseks. Autor on püstitanud endale uurimisülesanded, mis aitasid töö eesmärgini jõuda. Nendeks oli välja selgitada ettevõtte hetkeolukord ning sellest tulenevalt kaardistada kitsaskohad ning võimalused Prantsusmaal terminalide kasutamiseks, analüüsida võimalusi terminalide rakendamisel ning teostada veosuundade kulukalkulatsioonid ning anda hinnang, kas Arco Transport AS olemasolevaid terminale on võimalik kasutada Prantsusmaa veosuuna kokkuvedude optimeerimiseks Töö esimeses peatükis andis autor edasi kirjandusallikatele tuginevalt töö teoreetilise baasi. Teises osas kirjeldas lõputöö autor empiirilise uuringu teostamise aluseks olevat uurimismetoodikat ning uurimisobjekti. Kolmandas osas teostas töö autor analüüsi selgitamaks välja võimalused olemassolevate terminalide kasutusvõimaluste kohta Kalkuleerides välja olemasolevate terminalide kuluefektiivsed teeninduspiirkonnad hindas töö autor kas sellise teeninduspiirkonnaga terminalide kasutamine ka reaalselt ettevõtte kokkuveo kulusid Prantsusmaa suunal vähendab. Võrdlusest selgus, et selliste hindadega nagu praegused terminalid Prantsusmaal on, ei anna terminalide kasutamine ettevõttele kulusäästu. Hetkeolukord, kus veokid teostavad otsevedu on kõigist võrreldud variantidest soodsaim. Autor analüüsis ka võimalust, kui veoringil kasutada intermodaalset transpordilahendust st, et kui osa põhiveost, mis hetkel toimub mööda maanteed, asendada haagise veoga laevas. Võrdlevas tabelis oli selgelt näha, et intermodaalse lahenduse kasutamine on kulusäästlikum kui terminaliteenuse kasutamine ¬+ maanteevedu Eestisse. Samuti on selline lahendus praegusele olukorrale, kus veoauto teostab ise kokkuvedu ja põhivedu Eestisse on mööda maanteed, sarnane. Veoaeg jääb laevavedu kasutades samaks ja ka kulud on peaaegu samad, mis hetkeolukorral. Lõputööga selgitas autor välja, et ettevõtte hetkel kasutuselolevad terminalid Prantsusmaal ei ole kulusäästlikud ja ei anna ettevõttele võimalust kuludelt kokku hoida, kuna terminalide kuluefektiivne teeninduspiirkond on väike ja ei kata peamisi importtellimuste asukohti. Autor teeb ettepaneku hakata pidama läbirääkimisi hinnas olemasoleva terminaliteenuse pakkujaga või siis otsida uus terminaliteenuse pakkuja.The following thesis Optimization of France's collections on the example of Arco Transport AS is to analyze the possibilities of using existing terminals in Arco Transport AS in France as alternatives to direct shipping, to optimize the French directories. The author set up research tasks that helped to reach the goal of the work: • Identify the company's current situation and map the difficulties and opportunities for using terminals in France • Analyze options for terminal implementation and make cost estimates for transport directions • Provide an assessment of whether the existing terminals of Arco Transport AS can be used to optimize France's shipment collections In the first chapter, the author gave a theoretical basis for the work based on literature sources. In the second part of the thesis, the author describes the research methodology and research object underlying the empirical study. In the third part, the author of the work carries out an analysis to determine the possibilities of using existing terminals. When calculating the cost-effective service areas for existing terminals, the author of the work assessed whether the use of terminals with such a service area would reduce the costs of the Arco Transport. The comparison showed that the prices of terminals, such as the current ones in France, do not give the company cost savings. The current situation where trucks carry direct transport is the most advantageous of all the variants compared. The author also analyzed the possibility of using an intermodal transport solution for the haulage, ie that as part of the main freight that currently takes place only along the highway, is replaced by trailer shipping by vessel. The comparative table clearly showed that the use of an intermodal solution is more cost-effective than using terminal services + road transport to Estonia. Also, this solution is similar to the current situation where a lorry carries the main transport to Estonia along the highway. The shipping time by vessel remains the same and the costs are almost the same as the current situation. In the final thesis, the author explained that the terminals which are currently used in France are not cost effective and do not allow the company to save costs. The author proposes to negotiate with the existing terminal service provider about the terminal costs or to look for a new terminal service provider
