Alternative Food Networks and Short Food Supply Chains: A Systematic Literature Review Based on a Case Study Approach
Alternative food networks (AFNs) are commonly defined by attributes of local production and short supply chains, which integrate dimensions of spatial and social proximity. This new form of food chain is emerging as a response to the crisis in conventional agribusiness. This article presents a systematic review of the academic literature on the alternative food network and short supply chain in order to understand the main elements and topics explored in the empirical studies conducted from 2014 to 2021. This review only considers research using a single or multiple case study approaches. The Scopus and Web of Science databases were used for the literature search. The identification and eligibility processes were performed following the Preferred Reporting Items for Systematic Review and Meta Analysis (PRISMA) method. Six core topics were identified: motivation of actors; collaborative governance; social relations and trust; sustainability; boundary negotiation; and resilience. Most of the studies were developed in European countries. The results show that motivation to join the AFN and sustainability are the more explored topics, followed by the study of the different models of governance that characterize the AFN. In addition, the connection between different actors emerges, in a transversal manner, as an important pillar of AFNs. AFN features may change depending on social-economical, cultural, and geographical factors. There is therefore a need to explore other forms of AFNs; future research should conduct cross-analysis on AFNs in different countries and socio-economic contexts
SINTESI ANALITICA SULLA SOSTENIBILITÀ AMBIENTALE FILIERE BOVINE DA CARNE ITALIANE
L’importanza dei prodotti di origine animale per l’alimentazione umana a livello
globale è indubbia, ma la loro sostenibilità ambientale è soggetta ad ampio
dibattito. Il contributo delle filiere zootecniche alle perturbazioni ambientali di
origine antropica è oggetto di numerosi studi. In questa breve sintesi analitica
sono riportati alcuni aggiornamenti relativi: a) alle emissioni di gas climalteranti
(GHGs) e al loro effetto sul cambiamento climatico, b) alle nuove metriche di
stima del contributo dei diversi GHGs al riscaldamento globale in funzione della
loro permanenza in atmosfera, c) all’applicazione di tali metriche all’allevamento
italiano, con particolare riferimento al settore bovino, da cui risulta una situazione
virtuosa a fronte di una valutazione di segno opposto se condotta con le vecchie
metriche; d) al rilascio di azoto, sia in forma gassosa che solida, nell’ambiente
da parte della bovinicoltura nazionale italiana e ai progressi compiuti nella mitigazione
degli impatti dello stesso
Customers’ Perception of Fish Fast-Casual Restaurants
The objective of the research is to explore Italian customers’ perceptions of fish and seafood fast-casual foodservice restaurants, so to identify expected food, environmental, and organizational attributes’ importance. The sample includes 600 fish and seafood customers interviewed face to face. Data elaboration included an exploratory factor analysis on fast-casual food and restaurant attributes, followed by chi-square and ANOVA to profile customers’ perception towards the level of importance of the factors. Hygiene, personnel, and sensorial attributes are the three most important factors for all groups of
customers. Gender and age are the most differentiating socioeconomic characteristics. This study is a pioneering research on a restaurant format expanding in European countries and validated an attribute assessment scale for fast-casual restaurants.
Results suggest the following managerial implications useful to define investment strategies: guaranteeing high hygiene standards, investing on personnel quality, offering tasty and good food, and targeting strategies focused on customers’ lifestyle
An overview of the biodynamic wine sector
The wine industry is currently shifting toward more sustainable production practices. Due to the growing globalized wine market and the increasing environmental impacts, producers have begun to pay more attention to organic and biodynamic products. Using a systematic literature review, this review aims to investigate the biodynamic production system in the viticulture and winemaking process. In particular, the review examines, 1) the biodynamic practice and its main characteristics including the certification system; 2) the biodynamic market characteristics and the recent trends, the production costs and the marketing strategies adopted by wineries; 3) the demand attributes and wine consumers' perception on sustainable practices and "green products" such as biodynamic products; and 4) the association between the biodynamic wine chain and the environment. The review highlights the research progress in this field and reflects on the potentiality and needs of the biodynamic viticulture and wine sector. The literature clearly indicates the lack of knowledge regarding, mainly, the biodynamic farming concept and the label. Moreover, while it is clear that consumers are willing to spend more for an organic wine than for a conventional one, there are no data about the willingness to pay for biodynamic wines. Finally, the review concludes with implications and suggestions for further research
A short review on willingness to pay for novel food
Alternative proteins, especially plant- and insect-based proteins, are becoming very popular in recent years for adapting and facing the future challenges of food production and consumption. In the European Union (EU) regulation, a “novel food” is defined as a newly developed, innovative food; a food produced using new technologies and production processes; or a food that is or has been traditionally eaten outside of the EU and has not been consumed within the EU to a significant degree (The European Parliament and the Council of the European Union, 2015). Today, it is necessary to understand the consumers’ perception about these products, considering especially economic aspects such as willingness to pay for this category of products. Willingness to pay (WTP) is a monetary measure of the utility perceived by individuals for a specific good/service or for specific attributes. Through a literature review, this work aims to understand the most important factors affecting the consumers’ perception and WTP for novel food
Il Danno. Elementi giuridici, urbanistici e economico-estimativi
La stima del danno è un oggetto di studio classico dell’estimo, molti sono i contributi che nell’ambito delle stesse attività del Ce.S.E.T. sono stati prodotti sull’argomento. Nonostante l’ampia letteratura disponibile, i recenti disastri naturali e le implicazioni sempre più complesse esistenti nella società fra beni di mercato, beni pubblici, esternalità sia dal punto di vista della generazione attuale sia delle generazioni future, ci hanno indotto a dedicare a questo tema anche il XLIV Incontro di Studi del Centro. L’obiettivo è proprio quello di giungere, in una prospettiva multidisciplinare, a sistematizzare gli approcci estimativi della quantificazione del danno e a confrontarci su alcune delle principali questioni ancora aperte. In particolare si è voluto dedicare una specifica attenzione a quelle del mass appraisal, ossia la stima speditiva di numerosi beni, problematica particolarmente avvertita con il tragico terremoto che ha colpito proprio questa regione, e della valutazioni dei danni ambientali, anch’essa problematica sempre più sentita dalla società.
Per approfondire dal punto di vista estimativo e dell’economia territoriale i principali aspetti di questi fenomeni, il XLIV Incontro di Studi del Ce.S.E.T. di Bologna è stato organizzato in una prospettiva multidisciplinare che ha consentito il confronto e l’integrazione di tutti i diversi approcci disciplinari e operativi all’argomento.
Al convegno hanno partecipato i principali studiosi italiani in materia estimativa. I loro contributi sono stati integrati in un quadro dialettico con relazioni sia giuridiche sia dei principali soggetti direttamente operanti sul territorio quali la Regione Emilia Romagna e l’Ordine dei dottori Agronomi e Forestali sia a livello locale che nazionale. Molto interessante sono stati i lavori condotti nelle sessioni parallele, che hanno affrontato il tema della stima dei danni dal punto di vista giuridico, economico estimativo e urbanistico-territoriale. Numerosi sono stati gli spunti di ricerca, i reciproci arricchimenti conoscitivi
emersi durante il convegno, l’auspicio è che per almeno una parte di questi sia possibile continuare a percorrere la strada qui intrapresa di dialogo e di
confronto fra tutte le componenti coinvolte. Il Ce.S.E.T. ha nella sua natura il principio della multidisciplinarietà e quindi si impegna fin da ora a continuare
a promuovere occasioni di studio e di confronto che favoriscano questo processo.
In ultimo voglio esprimere, anche a nome di tutto il Comitato Scientifico del Ce.S.E.T., il sentito ringraziamento agli organizzatori del convegno e in particolare ai colleghi prof. Alessandro Ragazzoni Prof.ssa Alessandra Castellini e Dott.ssa Lucia Devenuto per la qualità dell’evento, sia come accoglienza sia, soprattutto, come livello scientifico dei contributi, formalizzato anche con il processo di certificazione ISI degli Atti, che è diventato ormai da qualche anno una caratteristica dei nostri convegni
Consumers' Willingness to Pay for Quality and Safety in Clams
The aim of the research is to estimate the potential demand for certified clams in Italy and to investigate the determinants of maximum amount that respondents are willing to pay for this product. Quantitative analysis was used based on 1,067 face-to-face interviews collected in 3 Italian regions in the north bordering the Adriatic Sea (Friuli-Venezia Giulia, Veneto, and Emilia-Romagna) carried out during 2008. The consumers' willingness to pay (WTP) is measured using a contingent valuation method. In order to estimate separately the determinants of the probability that respondents are willing to pay and the maximum that they are willing to pay, a generalization of Tobit model was adopted. The results indicate that consumers are willing to pay a premium price mainly to purchase better quality products. The research provides some initial insight into consumers' WTP that can be useful for certified fish farming. © 2014 Taylor & Francis Group, LLC
Going Beyond Counting First Authors in Author Co-citation Analysis
The present study examines one of the fundamental aspects of author co-citation analysis (ACA) - the way co-citation
counts are defined. Co-citation counting provides the data on which all subsequent statistical analyses and mappings
are based, and we compare ACA results based on two different types of co-citation counting - the traditional type that
only counts the first one among a cited work's authors on the one hand and a non-traditional type that takes into
account the first 5 authors of a cited work on the other hand. Results indicate that the picture produced through this non-traditional author co-citation counting contains more coherent author groups and is therefore considerably clearer. However, this picture represents fewer specialties in the research field being studied than that produced through the traditional first-author co-citation counting when the same number of top-ranked authors is selected and analyzed. Reasons for these effects are discussed
Variations on the Author
“Variations on the Author” discusses two of Eduardo Coutinho’s recent films (Um Dia na Vida, from 2010, and Últimas Conversas, posthumously released in 2015) and their contribution to the general question of documentary authorship. The director’s filmography is characterized by a consistent yet self-effacing form of authorial self-inscription: Coutinho often features as an interviewer that rather than express opinions propels discourses; an interviewer that is good at listening. This mode of self-inscription characterizes him as an author who is not expressive but who is nonetheless markedly present on the screen. In Um Dia na Vida, however, Coutinho is completely absent form the image, while Últimas Conversas, on the contrary, includes a confessional prologue that moves the director from the margins to the center of his films. This article examines the ways in which these works stand out in the filmography of a director who offers new insights into the notion of cinematic authorship
