Production of Kvass Using Substances of Sugar from Vegetable Raw Materies Grown in the Conditions of Yaroslav Region

новейших технологий продуктов питания и напитков с использованием натурального растительного сырья и заменителей сахара. В настоящее время во многих странах активно проводится замена сахара в рецептурах разных продуктов и напитков, что обусловлено необходимостью
оптимизации питания человека, а также возможностью решения вопросов рационального
питания людей с определенными заболеваниями. На настоящем этапе развития мировой индустрии безалкогольных напитков определены основные недостатки, вызывающие
проблемы со здоровьем, при их употреблении, к ним относится высокое содержание сахара
и влияние искусственно введенного углекислого газа в газированных безалкогольных напитках на слизистую желудка. В работе разработана рецептура кваса на основе брожения с использованием в качестве заменителя части сахара сухих листьев стевии. Замена части сахарозы
гликозидными соединениями (стевиозидом, стевиолбиозидом, ребаудиозидим А и Е, дулкозидом) не оказывает отрицательного влияния на деятельность чистой культуры дрожжей,
а произведенный по разработанной рецептуре и технологической схеме квас соответствует
требованиям действующей нормативной документации по органолептическим, физикохимическим,
микробиологическим и токсикологическим показателям. Использование разработанной
рецептуры и технологической схемы предприятиями пищевой промышленности повысит потребительское внимание категорий людей. предпочитающих традиционные напитки,
и сниженное содержание сахара в их рецептурах. Использование местного растительного
сырья и сухих листьев стевии в качестве заменителя части сахара при производстве кваса
расширяет ассортимент данного напитка в отечественной и мировой индустрии производства
безалкогольных напитков. A successful solution to the problem of healthy nutrition depends on the development and implementation
of the latest technology of food and drinks using natural plant materials and sugar substitutes.
Currently, many countries are actively replacing sugar in the formulations of various foods and drinks, due to the need to optimize human nutrition, as well as the ability to address the rational nutrition of people with certain diseases. At the present stage of development of the global soft drinks industry, the main disadvantages that cause health problems when used are identified, they include
high sugar content and the effect of artificially introduced carbon dioxide in carbonated soft drinks on the gastric mucosa. In the work, a kvass-based fermentation formulation was developed using
dry stevia leaves as a substitute for sugar. Replacing part of sucrose with glycoside compounds (stevioside, steviolbioside, rebaudioside A and E, dulcoside) does not adversely affect the activity of a pure yeast culture, and kvass produced according to the developed recipe and technological scheme meets the requirements of the current regulatory documentation on organoleptic, physico-chemical, microbiological and toxicological indicators. The use of the developed recipe and technological scheme by food industry enterprises will increase consumer attention of categories of people who prefer traditional drinks and reduced sugar content in their recipes. The use of local plant raw materials
and dry stevia leaves as a substitute for part of sugar in the production of kvass expands the range of this product in the domestic and world soft drinks industry

В повседневной жизни люди отдают предпочтение безалкогольным напиткам из-за их способности покрыть потребность организма в воде, утолить жажду и удобства употребления.
Одним из наиболее распространенных безалкогольных напитков является холодный черный чай, в рецептуре которого используемся сахароза - нежелательный компонент для людей, живущих с определенными заболеваниями. Поэтому целью наших исследований явилось
изучение возможности использования в качестве заменителя сахара сухих листьев сте- вии [Stevia rebaudiana BERTONI (L.)] (далее - стевия) и традиционного местного растительного
сырья в рецептуре при производстве холодного черного чая. Приведены результаты оценки органолептических и физико-химических показателей, содержания макро- и микроэлементов
в холодном черном чае, произведенном по разным рецептурам. С целью использования
отечественного, традиционного местного растительного сырья, содержащего широкий спектр веществ различной фармакологической направленности и с целью корректировки органолептических
показателей, использованы дополнительные составляющие рецептурного набора (сухая трава мяты перечной, мелисы, листья малины, красной и черной смородины). Применение традиционного местного растительного сырья и заменителя сахара - стевии при производстве холодного черного чая расширяет ассортимент данного продукта в мировой индустрии производства безалкогольных напитков. diseases. Drinks are the most convenient for eating. People prefer soft drinks every day. The most common non-alcoholic beverage is cold black tea. Therefore, the purpose of the research was to study the possibility of using sugar substitute - stevia and traditional local plant materials in the recipe for the production of cold black tea. The results of the assessment of organoleptic, physical and chemical indicators, the content of macro and microelements in cold black tea, produced
according to different recipes are given. A promising direction in the creation of new types of soft drinks is the use of domestic, traditional local plant materials containing a wide range of substances of various pharmacological orientations. Due to the wide range of polyphenolic substances
in the composition, they increase the body tone, the adaptive capabilities of the nervous system, the body's resistance to adverse environmental factors, and have antioxidant properties. For this purpose, and in order to adjust the organoleptic characteristics, additional components of the prescription set (dry herb peppermint, melissa, currant leaves of red, black and raspberries) were used. The use of traditional local plant materials and sugar substitute stevia in the
production of cold black tea expands the range of this product in the global soft drink industry. The blend of a new drink has a full bouquet of taste and aroma characteristics, the organoleptic and physico-chemical indicators comply with the requirements of GOST 28188-2014. Drinking a single portion of the drink in 237 ml. will meet the daily recommended intake rate of mineral substances

SILENCING MICAL2 REPRESSES HUMAN CANCER CELL GROWTH AND INVASION INDUCING MESENCHYMAL TO EPITHELIAL TRANSITION
MICAL (Molecules Interacting with CasL)2 belongs to an
evolutionarily conserved family of proteins that catalyze actin
oxidation-reduction reactions destabilizing F-actin in cytoskeletal
dynamics. Here we show for the first time that MICAL2
mRNA is significantly over-expressed in aggressive, poorly differentiated/
undifferentiated, primary gastric and renal human
epithelial cancers. Immunohistochemistry showed MICAL2-
positive cells on the cancer invasive front and in metastasizing
cancer cells inside emboli, but not at sites of metastasis, suggesting MICAL2 expression was “on” in a subpopulation of primary
cancer cells seemingly detaching from the tissue of origin,
enter emboli and travel to distant sites, to be turned “off” once
homing at the metastatic site occurred. In vitro, MICAL2
knock-down was clearly associated with induction of mesenchymal
to epithelial transition, causing reduction of viability and
loss of motility and invasion properties of human cancer cells.
Moreover, expression of MICAL2 cDNA in MICAL2-depleted
cells induced epithelial to mesenchymal transition. All together
our data indicate MICAL2 over-expression is associated with
cancer progression and metastatic disease. MICAL2 might be
an important regulator of epithelial to mesenchymal transition
and therefore a promising target for anti-metastatic therapy
Study of a TGF associated with an elve using extremely low frequency electromagnetic waves
A terrestrial gamma-ray flash (TGF) associated with an Elve was recently reported by the Atmosphere-Space Interactions Monitor (ASIM) (Neubert et al., 2020, https://doi.org/10.1126/science.aax3872). An extremely low frequency electromagnetic field pulse coinciding with this event was detected by two stations of our World Extremely Low Frequency (ELF) Radiolocation Array (WERA) project from a distance of more than 10,000 km. The recorded signal allowed us to radiolocate the source, determine its polarity, and calculate the charge moment of the associated atmospheric discharge. MODERN FEATURES OF THE EPIDEMIC PROCESS OF VIRAL INFECTIONS WITH AEROSOL TRANSMISSION IN SUMY OBLAST
Relevance. Viral infections with aerosol transmission are one of the most common infectious diseases in the world. Their relevance is due to the wide distribution and socio-medical consequences. Objective. To study the dynamics of the incidence of viral infections with aerosol transmission in Sumy Oblast, to determine the level of influence of social and natural factors on the intensity of the epidemic process. Materials and methods. Data from the sectoral statistical reporting of the Ministry of Health of Ukraine, Sumy Regional Laboratory Center, the Main Department of Statistics in Sumy Oblast, Sumy Regional Center of Hydrometeorology were used. Epidemiological and statistical research methods were used. Conclusions. It was established that in Sumy Oblast the epidemic process of aerosol viral infections was characterized by a pronounced tendency to reduced incidence of influenza (Rinc.aver.= -6.2 %) and rubella (Rinc.aver.= -22.7 %), moderate reduction tendency ‒ to mumps (Rinc.aver = -2.4 %); high intensity with no reduction in incidence ‒ for other acute respiratory diseases (Rinc.aver = 0.2 %); a sharp increase in the incidence of measles (Rinc.aver.= 23.1 %). Coronavirus infection caused by SARS-CoV-2 was found in 3% of the population. The average long-term rates of measles, rubella, and mumps vaccinations with MPR-1 and MPR-2 vaccines were 70.9 % and 61.2 %, respectively.
