KAJIAN LAMA REAKSI TERHADAP RENDEMEN MASSA DAN AKTIVITAS ANTIMIKROBA PRODUK GLISEROLISIS
The study was conducted to determine the effect of glycerolysis reaction time (48, 72, 96, 120 and 144 hours) on yield and antimicrobial activity of glycerolysis products from palm kernel oil (PKO) using rice bran as biocatalyst. The result showed that fractionation of glycerolysis products at all reaction time levels were yielding fraction A (61,8%) that higher than fraction B (21,8%) and fraction C (16,3%). Generally, all fractions (A, B and C) from all treatments have antimicrobial activity. Average of inhibition zone diameter (d) values of fraction C for all reaction time levels against S. aureus, B. subtilis, E. coli, and S. cerevisiae, i.e. 7,66; 6,81; 1,33; and 9,09 mm/6 mg fraction, respectively. Antimicrobial activity of fraction C was higher than fraction A and B, especially against S. aureus, B. subtilis, and S. cerevisiae at 72 and 96 h. of reaction times. Escherichia coli is more resistant bacteria to all fractions than another microbes in this study. All fractions from all reaction time levels be able to reduce of total mold (A. orizae) colony with each average percentage of 79,6 (fraction A); 81,0 (fraction B); and 78,2% (fraction C). PENGEMASAN PUREE CABE MERAH DENGAN BERBAGAI JENIS PLASTIK YANG DIKEMAS VAKUM
This research was aimed to find the best type of plastic packaging to prolong the shelf life of chilli (Capsicum annuum L.) puree in the vacuum packaging system. The research was done in the laboratorium of Rekayasa dan Proses Pengolahan Hasil Pertanian Fakultas Pertanian Universitas Jambi. The types plastic use were thick polypropilen, thin polypropilen, and high density polyetilen. The storage time was 60 days. The samples were analyzed for their water content, vitamin C, total soluble solid, pH, capsaicin content and total microba every 15 days (0, 15, 30, 45, 60). The results show that the type of plastic packaging significantly affected the quality of the chilli puree stored for 60 days. The best treatment was found in chilli puree vacuumly packed in thick polypropylene and stored for 2 months. The puree has the characteristic of 79,10% water content, 36 mg/100 gr of vitamin C and pH of 4,14. Keywords: red chilli, vacuum packaging, polypropilen

Breadfruit (Artocarpus communis) could be used as food subtitute which currently is quite popular . Breadfruit is generally consumed as snack food in the form of boiled or fried chips. One effort to widen utilization of breadfruit as a source of food, it can be processed into natural starch as well as modified starch. PENENTUAN BAHAN KERING BUAH SAWO SECARA TIDAK MERUSAK MENGGUNAKAN NIR SPECTROSCOPY
This work was conducted to develop a new measuring system for nondestructive dry matter prediction in sawo fruit using short wavelength near infrared (SW-NIR) spectroscopy. In this research, a number of 100 sawo fruits were used as samples. Spectra were acquired using a portable spectrometer (VIS-NIR USB4000, The Ocean Optics, USA) with 100 ms integration time and 50 scans for number of scanning. Dry matter was measured using oven drying. The calibration and validation model was developed using the partial least squares (PLS) regression method. The result showed that the best calibration model could be developed for original spectra in the wavelength range of 700-990 nm with F= 8, r = 0.92, SEC = 0.68 and SEP = 0.86. PENGARUH SUHU, LAMA PEMASAKAN, KONSENTRASI METANOL DAN SUHU PEMURNIAN TERHADAP BILANGAN IOD DAN BILANGAN ASAM SURFAKTAN DARI MINYAK INTI SAWIT
Methyl Ester Sulfonates surfactant is produced from sulphonation process between methyl ester and sulphonating agent, such as NaHSO3. The purpose of these research were to obtain the optimum conditions (reaction temperature, sulphonation time, methanol concentration and purification temperature) of sulphonation process in producing MES from Palm Kernel Oil methyl ester and to investigate the characteristic of MES produced. Measurements conducted included iodine value and acid value. The experimental design used was Response Surface Methode (RSM) and Central Composite Design (CCD) of four factors. The analysis of resulted response surface indicated that the optimum conditions at MES production from methyl ester of PKO was obtained from the reaction temperature of 96,5oC, the sulphonation time of 4,3 hours, the methanol concentration of 26,6%, and the purification temperature of 45,5oC. The result of validation of optimum condition showed the acid value of 16,32 mg KOH/g sample and iodine value of 7,84 g iodine / 100 g sample. ATRIBUT KEPUASAN KONSUMEN PRODUK MINUMAN RINGAN COCA COLA DI KOTA BANDARLAMPUNG
The Objective of this research is to analyze the attributes that influence Coca Cola customer satisfaction. Gap analysis shows that the priority attributes must be improved performance were: interesting promotion (-0.83), color of the product (0.61), attractive design (-0.59), refill packaging (-0.58) and product safety (-0.08) while the other attributes have accordanced with customer expectations. Importance-Performance Analysis showed the top priority attributes (quadrant A) were an interesting campaign, the next priority for the enhanced importance (quadrant C) were the product color, attractive design, packaging, rechargeable and affordable prices. Coca Cola has been able to meet consumer expectations in reaching the level of satisfaction ( multi-attribute test : 1.78, total value of satisfaction (13,508). KAJIAN AKTIVITAS ANTIBAKTERI PRODUK ETANOLISIS DARI CAMPURAN MINYAK INTI SAWIT (Elaeis quineensis Jacq.) DAN MINYAK BIJI MENGKUDU (Morinda citrifolia L.)
The objective of this research was to measure antibacterial activities of ethanolysis products that produced through ethanolysis reaction of mixture of palm kernel oil (PKO) and Morinda seeds oil (25:1 and 50:1, w/w) in ethanol solution contained 1% NaOH (v/w based on oil weight) at ratio of 5 : 6 (b/v) and shaken on a shaker (300 rpm, room temp.) for 3, 6, 9 and 12 minutes. Fractionation of ethanolysis products using absolute ethanol (1:3; v/v) and centrifuged at 4.000 rpm for 30 min, yielding Fraction 1 (upper layer) and Fraction 2 (lower layer). Generally, all ethanolysis products showed antibacterial activities against four test bacteria (E. coli, S. aureus, B. cereus and S. enteritidis) at range of d values (mm) from 0,93 (B. cereus; 3 min) up to 3,87 (E. coli; 9 min). Fraction 1 showed the highest antibacterial activity with d values (mm) from 1,20 (B. cereus; 9 min) up to 5,63 (E. coli; 9 min), while Fraction 2 for all treatments had no antibacterial activity, relativelly. Ethanolysis products and its fraction (Fraction 1) were resulted from ethanolysis reaction for 6 and 9 min showed higher antibacterial activities than those for 3 and 12 min. MONITORING ON PLANT LEAF WATER POTENTIAL USING NIR SPECTROSCOPY FOR WATER STRESS MANAGEMENT
The performance of the calibration model with temperature compensation for on-plant leaf water potential (LWP) determination in tomato plants was evaluated. During a cycle of water stress, the on-plant LWP measurement was conducted. The result showed that the LWP values under water stress and recovery from water stress could be monitored well. It showed that a real time monitoring of the LWP values using NIR spectroscopy could be possible. ANALISIS SENSORI RUSIP DARI SUNGAILIAT-BANGKA
The objective of this work was to analyze the sensory properties of rusip from traditional market in Sungailiat-Bangka. Purposed sampling was used to collect the samples, and sensory analysis was done by using free choice profiling (FCP) and focus groups method. The Results shows that sensory properties of raw rusip were opaq, thick, and partly mashy.. The colors were grey, brown and very dark brown. The dominant taste were salty, sour, bitter, and the sensation to the tongue was burned and ichy. The aromas formed were fishy, acidic, and rotten. ANALISIS TEKNIS DAN FINANSIAL AGROINDUSTRI SKALA KECIL PADA BERBAGAI PROSES PEMBUATAN KERIPIK TALAS DI KABUPATEN LAMPUNG BARAT
Taro (Xanthosoma spp.) is widely grown in West Lampung area. The average productivity one 40 ton per hectare per year. The best technique to process taro crisp on a small scale in West Lampung regency, based on consumer preference, was Tiga Putra. If based on the yield, Kelompok Maju Tani was found the best, in addition , the traditional method was found more efficient if compared to semi-modern method. The analysis of financial showed that small scale talas crisp industry at West Lampung regency was considered to be feasible both processed using traditional and semi-modern methods. This was based on the fact that all criteria required for financial aspects met with positive results NPV, IRR resulting discount factor is greater than the bank discount factor, Pay back period (PP) is faster than the set time (10 years), and the Net B / C greater than 1 (one)
