RETENSI ASAM EIKOSAPENTAENOAT (EPA) TORTILLA TEPUNG IKAN LELE SELAMA PENGOLAHAN DAN PENYIMPANAN PADA SUHU RUANG
A research on the retention of eicosapentaenoic acid (EPA) on theprocessing and storage of functional tortillas.This study aims to determine the retention of eicosapentaenoic acid (EPA)flour tortillas catfish during processing and storage at room temperature.The research method includes the step of making flour catfish, processing tortillas and tortilla storage at room temperature.Analysis eicosapentaenoic acid in the tortilla is done every 7 days for 56 days using Gas Chromatography.The Results obtained indicated eikosa penta enoic acid were demaged during processing tortillas with the level of demage 9,17%. Tortillas storage at room temperature for 56 days lead to demage 31,97% EPA.Keywords: Eicosapentaenoic Acid, Retention, Tortill
SINTESIS DAN KAREKTERISASI SENYAWA KIRAL HASIL REAKSI ANTARA METILEUGENOL KASAR DENGAN ASAM ASETAT
The research about synthesis and characterization of chiral compounds from the rough methyleugenol with acetic acid as the catalyst has been done. The goal is to determine the content of 1-(3,4-dimetoksifenil)-2-propanil acetate compound which is produced in the reaction process of metileugenol with acetic acid and to characterizased the chemical compound of the product. The results showed that the content of 1-(3,4-dimetoksifenil)-2-propanil acetate compound that has been obtained was 45.87% with a molecular weight of 238.Keywords : Methyleugenol, Chiral, FT-IR, GC-M
PENGGUNAAN SELULOSA-DIETILENTRIAMINA SEBAGAI LAPISAN PENGIKAT LOGAM Cu(II) DENGAN METODE GRADIEN DIFUSI DALAM FILM TIPIS
This researh aims to application of cellulose-diethylenetriamine as a binding layer on the diffusive gradients in thin films method with modification of cellulose with diethylenetriamine. The method of diffusive gradients in thin films in principle uses a simple instrument such as round plastic with a diameter of 2.5 cm, which is filled with metal binding gel, diffusive gel, and membrane filter of      0.45 µm. The metal ions were diffuse through the membrane filter and diffusive gel according to the Fick's Law I, and then is accumulated in the binding layer gel. Based on the results of FTIR analysis, the formation of the binders of the copper ions at the binding layer of cellulose-dietilentriamina involves amine and hydroxyl functional groups.The results of the application of cellulose- diethylenetriamine using as binding layer with polyacrylamide diffusive gel showed a liniar concentration up to 12 hours of contact time and initial copper ion concentration up to 1000 mg/L. EKSTRAKSI DAN KARAKTERISASI GLUKOMANAN DARI TEPUNG BIJI SALAK (Salacca edulis Reinw.)
This research aims to determine the shaking time and ratio of salak seed flour : anti-solvent isopropyl alcohol to produce glucomannan extract with high yield and high quality. Glucomannan extraction process from salak seed flour is done by aquadest solvent at temperature of 95 °C with shaking speed of 700 rpm for 30, 60, 90, 120, 150, and 180 minutes. Glucomannan precipitate was gained with anti-solvent isopropyl alcohol 95% with salak seed flour : anti-solvent ratio is 1:9, 1:11, 1:13, 1:15, and 1:17 (w/v). Then research using Completely Randomized Design (CRD) at the level of 95%. The results showed the best extraction time was obtained at shaking time of 120 minutes with yield of 21.47% and the best ratio of salak seed flour : isopropyl alcohol is 1: 17 (w/v) with yield of 40.19%. Characteristics of glucomannan is a water content of 11.18%, ash content of 1.2%, and the molecular weight 2.057 x 104 g/mol.Keywords : salak seed flour, shaking time, glucomannan
OPTIMALISASI PRODUKSI SEMI REFINED CARAGINAN (SRC) DARI RUMPUT LAUT( Eucheuma cottonii)
ABSTRACT The investigation about the optimization of SRC Production (semi refined caraginan) from Eucheuma cottonii has beendone. The study aim to find whether or not there is interaction beetween consentration KOH and cooking time on rendamen and SRC purity degree and to find at which consentration KOH and cooking time yield the highest SRC Purity degree. It was done by applying completely randomized design (CRD) i. e factorial design. It was consist of 2 factors ( consentration KOH and cooking time ). Each factors consist of 3 levels and all of experiments where done in duplo, so the total there ware 18 experiments. The result showed that The highest Rendaman and the highset degree of piyurity were obsained at consentration KOH and cooking time were 8 % and 60 minutes respectively. PENGARUH JENIS ASAM ALAMI TERHADAP PENURUNAN KADAR LOGAM BERAT TIMBAL DALAM DAGING IKAN TERI (Stelophorus indicus Sp) ASAL TELUK PALU
Research on the effect of type natural acid against decline of content heavy metals plumbum in meat anchovy (Stelophorus indicus Sp) origin bay Palu. The purpose of this study was to determine the best type of acid used in dissolving levels of plumbum as heavy metals for 1 hour immersion and to determine the number of levels of heavy metals of lead that can be dissolved during immersion 1 hour. This study begins with a sample digestion using nitric acid, further qualitative test reagents dithizon 0.005% (positive), potassium iodide (positive) and sodium carbonate (postitif). Qualitative results test that showed a positive result then measured in metal content of plumbum  using atomic absorption spectrophotometer (AAS) at λ 283.3 nm. Then soaking using tamarind are 5%, acetic acid 10%, the filtrate pineapple 100%, starfruit 100% and lime 25% for 1 hour at room temperature, after measuring the metal content of plumbum with atomic absorption spectrophotometer (AAS) in λ 283.3. The results show levels of heavy metals plumbum before immersion average of 0.8 mg/kg, the average concentration of heavy metals plumbum after soaking tamarind 5% amounting to 0.787 mg/kg (1.64%), 10% acetic acid at 0.789 mg/kg (1.39%), pineapple filtrate 100% of 0.7882 mg/kg (1.49%), starfruit 100% 0.789 mg/kg (1.39%) and lime 25% of 0.7916 mg/kg (1.06%). Thus tamarind 5% is the best type of acid to reduce levels of plumbum metal in Palu bay anchovy origin.Keywords: Acid, Anchovy (Stelophorus indicus Sp), Content, Plumbu
KAJIAN SINTESIS GIPSUM DARI BATU GAMPING ASAL SULAWESI TENGAH
ABSTRACT Research has been done for synthesis gypsum from limestone in Central Sulawesi. This Research aims are to know the best ratio of sulphuric acid of limestone that producer the highest CaSO4 and which areas in the Central Sulawesi as a producer of best limestone for the raw materials CaSO4. Variation ratio of sulphuric acid used is 70:25, 80:25, 90:25, 100:25, and 110:25. This Research using a group randomized design (GRD). The treatment was applied variations from limestone on the 3 areas, that is limestone from Bangkep (group 1), limestone from Buol (group 2) and limestone from Donggala (group 3). The purity of CaSO4 be analiyzed using AAS and uv-vis Spectrofotometri. The result showed that the best ratio of sulphuric acid is 110:25 and producer area of the best limestone for the raw materials of CaSO4 in the Bangkep. KAJIAN KADAR FENOLAT DAN MUTU ORGANOLEPTIK BUBUR INSTAN DARI UBI BANGGAI JENIS BAKU MAKULOLONG (Discoreabulbifera var celebica bukill) DAN BAKU PUKUS (Discorea of alata)
ABSTRAK Penelitian mengenai “Kajian Kadar Fenolat dan Mutu Organoleptik Bubur Instan dari Ubi Banggai Jenis Baku Makulolong (DiscoreaBulbifera Var Celebica Bukill) Dan Baku Pukus (Discorea Of Alata.)telah dilakukan. Penelitian ini bertujuan untuk mengetahui kadar fenolat kedua jenis ubi Banggai tersebut sebelum dan sesudah diolah menjadi bubur instan dan mutu organoleptiknya. Hasil penelitian diperoleh adalahBaku Makulolong basah (hasil glatinasi) memiliki kadar fenolat 2,381 % dan Baku Pukus basah (hasil glatinasi) memiliki kadar fenolat 2,162 %. Sedangkan saat kering (hasil glatinasi) memiliki kadar fenolat 1,638 % dan 1,395 %. Kadar fenolat yang terkandung pada buburBaku makulolong 1,852 % dan kadar fenolat yang terkandung pada bubur Baku Pukus 1,671 %. Dari hasil uji mutu organoleptik  pada parameter rasa, aroma dan tekstur menunjukkan bahwa tidak ada perbedaan yang nyata antara bubur instan Baku Pukus dengan bubur instan Baku Makulolong. Sedangkanpada parameterwarnamenunjukkanadanya perbedaan nyata antara warna bubur instan Baku Pukus dengan bubur instan Baku Makulolong. KAJIAN AKTIVASI ARANG AKTIF BIJI ASAM JAWA (Tamarindus indica Linn.) MENGGUNAKAN AKTIVATOR H3PO4 PADA PENYERAPAN LOGAM TIMBAL
ABSTRAK Penelitian tentang penyerapan logam Pb menggunakan biji asam sebagai adsorbat telah dilakukan. Metode yang digunakan dalam penelitian ini adalah aktivasi karbon dengan H3PO4 sebagai aktivator. Hal itu dilakukan dengan menerapkan 5 variasi berat ( 1, 2, 3, 4, dan 5 g) dan konsentrasi (1, 2, 3, 4, dan 5 N ). Untuk melihat penyerapani Pb terhadap waktu kontak, maka 5 variasi waktu kontak telah diterapkan yaitu dari 10, 20, 30, 40, dan 50 menit. Hasil penelitian menunjukkan bahwa karbon aktif mempunyai kapasitas adsorpsi terbaik (89,59 ppm) pada berat 5 gram , sementara waktu kontak optimum dicapai pada 50 menit dengan 69,02 ppm dari Pb yang terserap. Aktivasi karbon aktif dengan H3PO4 pada konsentrasi optimum  2 N telah meningkatkan kapasitas adsorpsi sebesar 11,11%.                                         Katakunci : Absorben, Biji Asam Jawa, Karbon Aktif
