Isolasi dan Identifikasi Metabolit Sekunder dari Ekstrak Etil Asetat Batang Nangka (Artocarpus heterophyllus Lmk.) dan Aktivitasnya Sebagai Antibakteri: Isolation and Identification of Secondary Metabolite from Ethyl Acetate Extract of Jackfruit Stem (Artocarpus heterophyllus Lmk.) and Its Antibacterial Activity
Isolation and identification of secondary metabolite of ethyl acetate extract of jackfruit stem (Artocarpus heterophyllus Lmk.) as well as its activity as antibacterial have been carried out. The purpose of this study was to know the characterization and antibacterial activity of secondary metabolites from ethyl acetate extract of the Jackfruit stem. Ethyl acetate extract was fractionated and purified using several chromatographic techniques. The identification of the isolated compound was elucidated by spectroscopic UV-Vis, IR, and NMR. Based on data analysis of UV, IR, and NMR spectra showed that the isolated compound was a flavonoid derivative. Antibacterial activity test of the isolated compound to Escherichia coli and Staphylococcus aureus was done by a well diffusion method. The inhibitory zone values of flavonoid compound in concentration series of 1000 µg/ml, 3000 µg/ml, and 5000 µg/ml against E. coli were 9.65 mm, 10.25 mm, and 11.00 mm, respectively. While, the inhibitory zone values in the same concentration series against S. aureus were 9.00 mm, 10.75 mm, and 11.38 mm.

Karakterisasi Simplisia dan Uji Aktivitas Antioksidan Ekstrak dan Fraksi Daun Pidada Merah (Sonneratia caseolaris L): Characterization and Evaluation of Antioxidant Activity of Red Pidada Leaves (Sonneratia caseolaris L)
Research on red Pidada leaves (Sonneratia caseolaris L.) which is a mangrove plant with antioxidant potential has been carried out. This study aims to determine the simplicia characterization and activity of red Pidada leaf extracts and fractions as antioxidants. The results of the simplicia characterization were: water-soluble extract content of 11%, ethanol-soluble extract content of 16%, water content of 9%, ash content of 8.17%, and acid insoluble ash content of 0.48%. The antioxidant activity test was carried out using the DPPH (1,1-diphenyl-2-picrylhydrazyl) method. The antioxidant activity was determined by the IC50 (Inhibition Concentration) value. The results showed that the ethanol extract had an IC50 value of 24.22 ppm (very strong), n-hexane fraction 88.18 ppm (strong), ethyl acetate fraction 15.39 ppm (very strong), and ethanol fraction 38.41 ppm (very strong)

Uji Potensi Nefropati Diabetes Daun Sirih Merah (Piper croatum Ruiz & Pav) pada Tikus Putih Jantan (Rattus norvegicus): Potential Test of Diabetes Nefropative of Red Betel Leaf (Piper croatum Ruiz & Pav) on Male White Rats (Rattus norvegicus)
This study aims to determine the type of secondary metabolite compounds in red betel leaf ethanol extract, the potential of red betel leaf ethanol extract on blood glucose, creatinine, and urea levels of male white rats induced by streptozotocin. This study used 30 white male rats which were divided into 6 groups: normal control, negative control, positive control, the dose of 150, 250, and 350 mg/kg BW. The showed that results ethanol extract of red betel leaves contained alkaloids, flavonoids, phenols, saponins, and tannins. Ethanol extract of red betel leaf at a dose of 150 mg /kg BW is an effective dose in reducing levels glucose blood with an average value of decreased blood glucose levels of 238.25 mg/dL, and has an effect on creatinine and ureum, with an average dose of 350 mg/kg BW with a mean creatinine level of 0.64 mg/dL and mean ureum of 39.68 mg/dL.

Mikroenkapsulasi Ekstrak Kulit Buah Naga Super Merah (Hylocereus costaricensis) pada Berbagai Massa Maltodekstrin dan Aplikasinya Sebagai Antioksidan: Microencapsulation of Super Red Dragon Fruit (Hylocereus costaricensis) in Various of Maltodextrin Mass and its Application as an Antioxidant
Red super dragon fruit peel (Hylocereus costaricensis) extract has capability to scavenge DPPH and the activity could be maintained by using maltodextrin as coating. The aims of the research are to determine ratio of red super dragon fruit peel ethanol extract toward maltodextrin producing microcapsule with the highest coating efficiency and DPPH scavenging content by microcapsule of red super dragon fruit peel extract. Microencapsulation was carried out using freeze drying technique. Comparison of red super dragon fruit peel extract and maltodextrin were 1: 8, 1: 10, 1: 12, and 1:14 (w / w). The results show that the highest efficiency ratio of coating extract of red super dragon fruit peel with maltodextrin was 1: 8 with percentage of 90,77%. Level of DPPH scavenging content of red super dragon fruit peel extract microcapsule with ratio of 1:8 on 5 minutes and 60 minutes each is 27.36% and 46.62%.

Fermentasi Kelapa Parut Bebas Protein dengan Aspergillus niger untuk Menghasilkan Lipase: Fermentation of Protein-Free Grated Coconut with Aspergillus niger to Produce of Lipase
The research about the fermentation of protein-free grated coconut with Aspergillus niger to produce of crude lipase enzyme has been carried out. This study aims to determine the effect of water content on fermentation medium and the incubation time which results lipase enzyme extract with the highest activity. This study used a Completely Randomized Design (CRD) consisting of 2 factors, i.e. variations of water content in medium of 40%, 50%, 60%, and 70% and incubation times of 48, 96, 144, and 192 hours. The parameters observed were lipase enzyme activity produced in each treatment. The results showed that the highest medium water content was 70% with the lipase enzyme activity 4.33 µmol/mL.minute and the best incubation time was 96 hours with the lipase enzyme activity of 0.83 µmol/mL.minute.

Aktivitas Antioksidan Akar Bawang Merah Lokal Palu (Allium cepa Var Aggergatum L.) dengan Berbagai Kepolaran Pelarut: Antioxidant Activity of Local Shallot Roots (Allium cepa Var Aggregatum L.) in Palu City with Various Solvent
Research on the antioxidant activity of the local onion roots of Palu (Allium cepa Var Aggregatum L.) with various polarity solvents has been carried out. This study aims to determine the potential of Palu local shallot root extract as an antioxidant and determine the IC50 value of the Palu local shallot root antioxidant activity. The method applied in this research is maceration using n-hexane, ethyl acetate, and ethanol. The extracts from each solvent were tested for their antioxidant activity by the DPPH method. The results of the study showed that the IC50 value in n-hexane extract, ethyl acetate extract, and ethanol extract were 579.98 ppm, 518.28 ppm 315.83 ppm and as a comparison used ascorbic acid obtained IC50 of 53.69 ppm. Based on the results obtained, the best antioxidant activity is in polar solvents (ethanol extract) compared to other solvents.

Retensi Antosianin dari Ekstrak Daun Bayam Merah (Alternanthera amoena Voss) pada Pengolahan Mie Basah: Retention of Anthocyanin from Red Spinach Leaves Extract (Alternanthera amoena Voss) in Processing Wet Noodles
Research about the retention of red spinach leaves extract (Alternanthera amoena Voss) as a natural coloring and preservative in wet noodles has been done. The study aim is to determine the anthocyanin retention of red spinach leaves extract in the processing of wet noodles and determine the organoleptic quality of wet noodles by adding pigment red spinach leaves extract. The extraction method used the maceration method by ethanol solvent. Anthocyanin levels on an extract that obtained by using a UV-Vis spectrophotometer were 33.34%. Anthocyanin retention of red spinach leaves extract on wet noodle processing at storage times of 0, 6, 12, 18, 24, 30, 36, 42, and 48 hours was 100%, 75.87%, 75.37%, 74.95%, 74.62%, 74.12%, 73.28%, 71.70%, and 70.61%. Organoleptic quality of wet noodles that was added with extract has “like†to “really like†grade with score detail of the best color of 4.37 at 18 hours storage, whereas the odor, texture, and taste for 0 hours storage have the highest score of 4.63, 4.63, and 4.57, respectively. The wet noodles with red spinach leaves extract more preferred than the noodles without extracts.

Penyerapan Ion Logam Merkuri Menggunakan Arang Aktif Limbah Kulit Pisang Kepok (Musa paradisiaca Formatypica): The Adsorption of Mercury Metal Ion Using Kepok Banana’s Peel Waste (Musa paradisiaca Formatypica) Charcoal
This research aimed to determine the percentage of mercury metal ion adsorbed in kapok banana peel’s activated carbon. It was done by applying Completely Randomized Design (CRD) with 6 variations of contact time, pH, and mercury concentration (i.e 10, 20, 30, 40, 50, 60 minutes; pH of 1, 2, 3, 4, 5, 6; and concentration of 10, 20, 30, 40, 50, 60 ppm, accordingly). The result showed that the equilibrium time was reached at 30 minutes, the maximum pH was reached at pH 5 and the maximum of adsorbed mercury ion at 40 ppm of mercury ion concentration. The adsorption percentages of those parameters were 61%, 98%, and 99%, respectively.

Analisis Kualitatif dan Kuantitatif Metabolit Sekunder Ekstrak Etanol Buah Okra (Abelmoschus esculentus L. Moench) dengan Metode Spektrofotometri UV-Vis: Qualitative and Quantitative Analysis of Secondary Metabolites in Ethanol Extract of Okra (Abelmoschus esculentus L. Moench) Fruit with UV-Vis Spectrophotometry Method
This study aims to determine the content of secondary metabolites and the levels of total secondary metabolites in ethanol extract of Okra (Abelmoschus esculentus L. Moench) fruit with UV-Vis Spectrophotometry method. Okra (Abelmoschus esculentus L. Moench) fruit extract was prepared by maceration method with 96% ethanol. The extract was concentrated using a rotary evaporator that followed by a qualitative test for alkaloids, flavonoids, saponins, and tannins using suitable reagents with the test parameters, while for the qualitative assay using a UV-Vis Spectrophotometry. Qualitative analysis of alkaloids using test parameters of total alkaloids equivalent to quinine, flavonoid using parameter of total flavonoids equivalent to quercetin, saponin using parameters of standard saponins total from the Quillaja Bark, and tannin using test parameters of total tannins equivalent to tannic acid. Qualitative test results indicated that the ethanol extract of Okra fruit tested positive for alkaloids content wich characterized by the orange deposition, flavonoids characterized by the formation of an orange-yellow color, a stable foam for saponins and tannins marked in black. The quantitative analysis resulted alkaloids of 2228.06 mg/gram, flavonoids of 2.79 mg/gram, saponins of 10.03 mg/gram, and tannins of 1973.27 mg/gram.

Analisis Kualitatif dan Kuantitatif Metabolit Sekunder Ekstrak Biji Kelor (Moringa oleifera Lam.) dengan Metode Spektrofotometri UV-Vis: Qualitative and Quantitative Analysis of Secondary Metabolite of Moringa Seed Extract (Moringa oleifera Lam.) with UV-Vis Spectrophotometry Method
This study aims to determine the content and total levels of secondary metabolites of ethanol extract of moringa seed (Moringa oleifera Lam.). Extraction of moringa seed using the maceration method to obtain a filtrate. The filtrate obtained was concentrated using a rotary evaporator to obtain a concentrated extract. The extract was tested qualitatively for alkaloids, flavonoids, saponins, and tannins using a suitable reagent with the test parameters. The quantitative test was using UV-Visible spectrophotometry. Alkaloids using test parameters equivalent total alkaloid quinine, flavonoids use parameter test equivalent of the total flavonoids quercetin, saponin using test parameters from Quillaja total saponins and tannins quantitative bark using test parameters total tannin tannic acid equivalent. The result showed that moringa seed positive for alkaloids characterized by orange deposition, flavonoids are characterized by the formation of the yellow color orange, saponin their stable foam, and tannins are marked in black. Quantitative test results alkaloids of 916,87 µg/g, flavonoids of 0.255%, saponin of 6.367%, and tannin of 3,724.5 µg/g.
