    THE INFLUENCE OF THE USE OF VARIOUS FILLERS TOWARDS THE PALATABILITY    OF CHICKEN NUGGET. The objectives in this research is to observe and study the fillers that vary in producing the formulation of chicken nugget which were received by the consumers observed from the physical. This research was conducted at the Laboratory of Animal Science Sam Ratulangi University Manado, The Laboratory of Nutrient Fakulty of Animal Husbandry Sam Ratulangi University Manado. The material used in this research was meat and fat of non-productive layer (culled) as much as 6400 gram, devided into 16 samples, each sample weighed 100 gram fat and 300 gram meat. The research was carried out through an experient, a completely randomized design with four replications. The fillers Used in this treatment are; T1 (Sago), T2 (Tapioka) T3 (Maizena), T4 (Glutten Rice). The Quality of chicken nugget according to the parameter ini this research was as follows; the palatability (Taste, texture, tenderness and general acceptance). From the result of this research it was concluded that the filler which used tapioca (T2) and Sago (T1), had produced chicken nugget which was much better, compared to the use of maizena (T3), glutten rice flour (T4), and generally accepted by the consumers, supported by their characteristics.Keyword: Palatability, Filler, Chicken Nugget, Organolepti

    KECERNAAN NDF DAN ADF YANG MENDAPAT SUPLEMENTASI UREA MOLASSES MULTINUTRIENT BLOCK (UMMB) DARI BEBERAPA JENIS LIMBAH PERTANIAN DAN RUMPUT LAPANG PADA SAPI PERANAKAN ONGOLE (PO)

    NDF AND ADF DIGESTIBILITY WHICH GET THE SUPPLEMENTED UREA MOLASSES MULTINUTRIENT BLOCK (UMMB) OF SOME CROP RESIDUES TYPE AND LOCAL GRASS ON ONGOLE CROSSBRED CATTLE. A research evaluating dry matter (DM) and organic matter (OM) digestibility of crops residues and local grass supplemented urea molasses multinutrient block (UMMB) on Ongole crossbred cattle (PO). Four male PO cattle, 12 – 18 months of age with ± 100 kg of body weight were used in this experiment. Latin Square Design 4 x 4 with 4 cows and 4 treatments was used. The treatments were : R1 : UMMB + local grass, R2: UMMB + Corn straw, R3: UMMB + Rice straw, and R4: UMMB + peanut straw. The results showed that there were significant effect (P<0.01) of treatments on NDF and ADF digestibility. C1 showed that NDF and ADF digestibility of local grass (68.44% and 61.37%) were higher (P<0.05) compared to crop residues (corn straw 65.25% and 58.59%, rice straw 62.63% dan 52.80%, and peanut straw 67.53% and 59.81%) respectively. C2 showed that NDF and ADF digestibility of legume straw was higher than grasses straw; and C3 showed that  NDF and ADF digestibility of rice straw was lower than corn straw. The results have concluded that : 1. NDF and ADF digestibility of local grass were higher compared to crop residues. 2. NDF and ADF digestibility of legume straw (peanut straw) was higher than grasses straw  (corn straw and ricce straw);3.     UTILIZATION OF ENSILAGE KEPOK BANANA PEELS REPLACING PART OF CORN IN THE DIET ON BROILER PERFORMANCE. The study was conducted to determine the extent of the effect of partial replacement of corn with ensilage kepok banana peels in the ration on broiler performance. This study uses a 60 head broiler unsexed strains Cobb age of 1 day. The study design used completely randomized design (CRD), which consists of 4 treatments and 5 replications. The composition of experimental treatments in part the following: R0 = 50% of  yellow corn and 0% ; R1 = 42.5% of yellow corn and 7.5% ; R2 = 35% of  yellow corn and 15% ensilage kapok banana peels ; R3 = 27.5% of yellow corn and 22.5% ensilage kepok banana peels . The results showed that the treatment effect highly significant (P <0.01) on feed consumption, significantly different (P <0,05) on body weight gain and feed conversion. Based on the results it was concluded that the ensilage kapok banana peels can replace  yellow corn up to 45% or used in the ration of broiler chickens up 22.5%. Keywords:,Broiler, ensilage kepok banana peels, Performance

    DRIED MATERIALS AND ORGANIC MATERIALS WHICH ARE SUPPLYING UREA MOLLASES MULTINUTRIENT BLOCKS OF (UMMB) FROM SEVERAL AGRICULTURAL WASTE AND EQUIPMENT GRASS. The common forages are given for ruminants in the form of grasses coming from pastures or lawns, bunds, and roadside. In addition, there are still sources of animal feed that has not been utilized optimally the agricultural waste. Some obstacles to the utilization of agricultural waste as animal feed is caused by the generally low quality of agricultural waste with high fiber content, low protein, and low digestibility so that when it is used as a basal feed it is necessary to add other feed ingredien ts that have good quality to meet the needs livestock in improving productivity. One way to optimize the nutritional value of agricultural waste is by providing feed supplements such as urea molasses multinutrient block (UMMB). The research was conducted in Tonsewer Village, Tompaso Barat District for 40 days starting from November 2016 until December 2016. The animals used in this study were male PO cattle, aged 12 - 18 months as many as 4 tails with weight ± 100 kg and feed given is field grass (RL), corn straw (JJ), rice straw (JP), and groundnut straw (JKT), and UMMB as a supplement feed. This study used a 4 x 4 Latin Square Design experiment with 4 cattle and 4 treatments. The results of this study indicate that the diversity analysis showed that the treatment had significantly different effect (P <0.05) on the consumption and digestibility of BK and BO. The digestibility of feedstuff DM was R1 (67,51%), R2 (68,57%), R3 (63,51%) and R4 (72,78%) and BO digestibility was R1 (72,78%) , R2 (74.22%), R3 (67.33%), and R4 (67.33%). Key words: crop residues, UMMB, DM, OM digestibility and ongole crossbred cattl

    EFFECT OF PARTLY SUBSTITUTION OF BASAL DIET WITH SWEET POTATO VINES (Ipomoea batatas)  MEAL ON ENERGY AND PROTEIN DIGESTIBILITY OF PIGS. Pork is one of the meat producer animals that can contribute to satisfy animal protein requirements. Sweet potato vines is considered as an agricultural waste product and can be used as feedstuff for pigs. The present  study was conducted to determine the utilization of sweet potato vines  substituting basal diet on energy and protein digestibility of finisher pigs. Five ‘Duroc X Spotted Poland China’ castrated male pigs, aged 3.5 to 4.0 months with an initial body weight 50 kg (±2.5 kg) were assigned to four treatments as follow: R0 = 100% basal diet + 0% sweet potato vines meal; R1 = 92.5% basal diet + 7.5% sweet potato vines meal; R2 = 85% basal diet + 15% sweet potato vines meal; R3 = 77.5% basal diet + 22.5% sweet potato vines meal; and R4 = 70% basal diet + 30% sweet potato vines meal. Parameters measured were: energy and protein digestibility. Research reasults showed that there is no significant differences  (P > 0.05) among treatments on energy and protein digestibility of pigs in the present study. This indicated that utilization of sweet potato vines meal up to 30% replacing basal diet did not affect digestible energy and protein of finishing pigs. It can be concluded that substituting basal diet with sweet potato vines meal up to 30% has no negative effect on energy and protein digestibility of finishing pigs.   Keywords: Sweet potato vines, energy digestibility, protein digestibility, pig

    THE EFFECT OF SWEET POTATO LEAVES (IPOMEA BATATAS) ON THE PERFORMANCE OF RABBIT. This study aims to examine the extent to which the use of sweet potato leaves on the performance of rabbit cattle include feed consumption, body weight gain and feed conversion. The study used 20 rabbits of New Zealand White rabbit aged 4-6 weeks with initial body weight 400-600 g / tail. The design of this study using Completely Randomized Design with 5 treatments and 4 replications with the level of sweet potato leaves in the feed that is R0: 0%, R1: 25%, R2: 50%, R3: 75%, R4: 100%. The data were tested by multiform analysis, if there is a real effect of further test using Test of Honest Significance Difference (HSD).     EFFECT OF SUBSTITUTION OF RICE BRAN WITH COFFEE HUSK MEAL IN THE DIETS ON ENERGY AND PROTEIN DIGESTIBILITY   OF GROWING PIGS. A study was conducted todetermine the effects of substitution of rice bran with  coffee husk meal in the diets on energy and protein digestibility of growing pigs. The present study was conducted for 60 days, using 20 castrated male Duroc X Spotted Poland China, aged 2.5–3.0 months with an averaged body weight of 30.1–40.0 kg. Treatment diets were formulated as follow: R0 = 25% rice bran + 0% coffee husk meal (without coffee husk meal); R1 = 18.75% rice bran + 6.25% coffee husk meal (substitution of 25%); R2 = 12.5% rice bran + 12.5% coffee husk meal (substitution of 50%); R3 = 6.25% rice bran + 18.75% coffee husk meal (substitution of 75%); and R4 = 0% rice bran + 100% coffee husk meal (substitution of 100%). Completely Randomized Block Design (CRBD) with 5 treatments and 4 replications (blocks) was used as a statistical analysis (Anova). An Orthogonal Contrast test was further employed to analyze treatment differences. Different between treatment (s) was declared at P < 0,05. Parameters measured were energy and protein digestibility. Research results showed that there was no significant differences (P > 0,05) were found among treatments on energy and protein digestibility. It can be concluded that coffee husk meal can be used up to 100% to replace rice bran or 25% in the diets of growing pigs.Key words: Pig, rice bran, coffe husk, energy, protein digestibilit

    THE UTILIZING OF RENNET ENZYMES and Lactobacillus plantarum YN 1.3 BACTERIA ON SENSORY CHARACTERISTICS OF CHEESE. This research aims to determine the utilizing of rennet enzymes and Lactobacillus plantarum YN 1.3 bacteria on sensory characteristics of cheese. This experiment using  a completely randomized design (CRD) with treatments level of rennet enzymes 10%, 8%, 6%, 4%, 2% and Lactobacillus plantarum YN 1.3 bacteria on 0%, 2%, 4%, 6%, 8% levels, which is each treatment repeated as much as 40 of replications (panelists) with hedonic method used. The result showed that the utilizing of rennet enzyme and Lactobacillus plantarum YN 1.3 bacteria gives highly signifant different effects (P<0,01) on cheese color, aroma, texture and  flavor. Based on the results of data analysis and discussions, can be concluded that cheese with rennet enzyme 2% and Lactobacillus plantarum YN 1.3 bacteria 8%, is the best performs and most preferred to panelists.Key words: Cheese, Rennet Enzyme, Lactobacillus plantarum YN 1.3

    PERFORMANCE PRODUCTION AND EGG SHELL THICKNESS OF QUAIL (Coturnix coturnix japonica) AT 6-14 WEEKS OLD AT DIFFERENT LIGHTING LENGTH. This study was done to determine the effect of the lighting length on the performance of quail production at 6-14 weeks old. This research was conducted at the experimental laboratory of Animal Production Department, Faculty of Animal Husbandry Sam Ratulangi University Manado, during the period from January 7, 2017 to March 3, 2017. The ration used was SP-22 commercial feed by PT. Sinta Fredmill. The total of quails used were 80 birds. Birds were maintained in a 60cm x 40cm baterrey system, using 5 watts power light. The variables measured were feed consumption, egg production and peak production, egg weight, and thickness of the egg shell. The design used in this study was a completely randomized design with 4 treatments and 5 replications. Each replication of experiment involved 4 quails with the treatments; R0 = 12 hours of illumination; R1 = 16 hours of illumination; R2 = 20 hours of illumination; R3 = 24 hours of illumination. Feeding and drinking water were prepared ad libitum. The result of the analysis showed that duration of lighting did not affect the averages of feed consumption, egg production, egg weight and egg shell thickness, but peak production could be reached more than 80% at the thirteenth week. Therefore, it can be concluded that the addition of light for female quail production at 6-14 weeks old did not affect feed consumption, peak production, egg weight, and thickness of the egg shell Keywords: Quail, performance production, lighting length illuminatio
