Iodine and Selenium Consumption and Its Relationship with Iodine Status of School Children in Endemic and Non Endemic Coastal Areas
The specific objectives of this research were to study food consumption; iodine and selenium content of foodstuffs; intake of nutrients (energy, protein, vitamin A, iodine and selenium); and status of iodine among elementary school children living in coastal areas of Pasuruan District, East Java Province. The study was also purposed to observe the correlation between nutrients consumption and iodine status. Kalirejo Village was chosen purposively to represent a non endemic area of IDD in which the Total Goitre Rate (TGR) was 45%, while Tambak Lekok Village represented a non endemic area of IDD with no cases of goiter signs. Sixty elementary school children in each area were randomly selected as samples to whom 24 hours food consumption recall and early morning urine were collected. Urinary Excretion of Iodine (UEI) was analysed from each sample to measure the status of iodine. Statistical method called t-test was applied to judge any difference between the data of consumption, nutrient adequacies, UEI level (iodine status) in both areas. Correlation between variables was also examined statistically by multiple linier regression test. For all kind of food of animal origins, samples living in IDD-non endemic area consumed more in term of quantity than that in IDD-endemic area. The adequacy levels for energy, protein, vitamin A, iodine and selenium in IDD-endemic area were 89.61%, 234.24%, 269.92%, 23.33% and 78.79% respectively; while those in IDD-non endemic area were 107.59%, 208.68%, 151.99%, 103.07% and 239.18% respectively. No significant (p>0.05) difference was observed between data of nutrients consumption, energy adequacy level and protein adequacy level obtained from an IDD-endemic area and those obtained from non endemic area. In contrast, consumption and adequacy level of vitamin A, iodine and selenium of IDD-endemic area were significantly different from those observed in IDD-non endemic area. Generally, iodine and selenium content of foodstuffs obtained from IDD-endemic area were lower than those from IDD-non endemic area. UEI of samples living in IDD-endemic area were 108,50 u/l. These was significantly different from those living in with non endemic area, which were 192 u/l. Consumption of energy, protein and vitamin A showed no significant influence on iodine status. Iodine and selenium consumption were very significantly influenced by iodine status. Iodine status was very significantly influenced by iodine consumption. Keywords: iodine, selenium, chool childre
Mothering and Nutritional Status of Under Five Children
The study aims to determine relationship between mothering and nutritional status of under five children at Desa Rancamaya Kota Bogor. The samples of the study were children within the age range of 13 – 60 months. Thirty eight children and their mothers served as respondents of this study. The result of this study showed that average family income was Rp 100.708, with family sizes consist of 5 – 6 people. Duration of father’s education was 6,8 years while mother’s education was 6,2 years. It was found that most children suffered from low Protein Energy Malnutrition (78,9%) and severe PEM (10,5%). On the average mothers spent 5,7 hours/day, in-which 2,59 hours were allocated for playing and interacting with their children. The quality of mothering, either feeding practices (50,0%) or caring practices were (65,8%) categorized in moderate level. There was negative correlation between age of parents, age of children, and family size with quantity of mothering, while positive correlation was established between feeding practices with age of mothers. Significant and positive correlation was also established between feeding practices and nutritional status of the children. Therefore the study recommended to revitalize \u27posyandu\u27 in order to improve mother’s knowledge about nutrition especially feeding and caring practices and to empower the family as well. Keywords: mothering, nutritional status, childre

Study On the Storage Life span of Several Traditional Indonesian Chili : Sambal Terasi, Sambal Pecel, Sambal Rujak
The goal of study is to investigate the long-term effect of storing chili in term of storing chili in term of its quality. Emphasis will be specifically focused on three (3) types of chili, Sambal Terasi, Sambal Pecel, and Sambal Rujak. Treatment of product follows a single uniform methodology process; storing in regular room temperature without preservatives, packed in a thin plastic wrap, and sealed in a thick plastic wrap. This study began in April of 1999 and ended in May of 2000. The emphasis of this study concentrates on physical and microbiological analysis. Sambal Kacang can be stored up to five (5) months, where the acceptance capacity by panelists is in the range of 87 ¡V 100 %. Sambal Terasi can only be stored up to 1 (0ne) month. In terms of taste and aroma, Sambal Terasi has an acceptance rate of 50-60% by the second month, but demonstrates an increase of water level and protein, which is expected to increase bacterial growth. Sambal Rujak has the longest storage capacity exceeding eight (8) months. Panelists give an acceptance rate of 83 ¡V 100 %. Sambal Rujak can reach this storage life span due to its high level of sugar. On the other hand, Sambal Kacang spoils faster because of the presence of the rancidity development. In conclusion, the microbiological analysis of Sambal Kacang seems to be complex because its month-to-month development fluctuates, whereas the microbiological analysis of Sambal Terasi and Sambal Rujak supports organoleptic testing results
Subject Matters of Nutrition Consultation and Claim of Food Advertisements in National Magazines and Tabloids
The objectives of this study were to identity 1) nutrition complaints of youths and adults through Indonesian magazines and tabloids, and 2) the claims of advertisements of foods and food supplements in magazines and tabloids. Prior to 1997 there were only 4 national magazines and 3 national tabloids offered nutrition consultation column, and they were used as samples in this study. The results showed that readers profile of selected magazines and tabloids are mostly adult women, living in urban communities, blue and white collars, and housewives hold senior high school background. Most of the nutrition consultation clients were women (20-40 years old). There was no difference in nutrition status between men and women. Some questions (13,2%) considered they were overweight. The questions given were about food substitutes, ways to get healthy food, nutrient source foods and nutritional status. Most of the questions asked by the younger client were related to kinds and the way to get good food. The most frequently answers for the questions were given by explanation with suggestion (57,4%). The complete answer, which contains explanation, suggestion and menu instances, was only 24,4% from the whole answers. Food product advertisements consisted of 27,6% foods, 47,7% drinks, 13,8 % supplements and 10,8% foodstuffs. Generally, the advertisement¡¦s target were women. The most frequently claim is about ¡¥delicacy¡¦ and ¡¥the right nutrition¡¦. ¡¥The delicacy¡¦ and ¡¥the right nutrition¡¦ was claimed by 40,8%; ¡¥substance with specific function¡¦ is claimed by 28,7%, and ¡¥safety¡¦ was claimed by 6,3% of advertisements
