Relationship between Children’s Thoughts on School Lunchtime with COVID-19 Countermeasures and the Dietary Education Provided by Nutrition Teachers
application/pdfWe conducted an analysis of“ Dietary Habit Survey in 2020” and“ Dietary Education Implementation Survey in 2019” with the aim of clarifying children’s thoughts on school lunchtime with coronavirus disease 2019 (COVID-19) countermeasures and associations with dietary education provided by nutrition teachers. As a result,“ eat”,“ talk”,“ silence”,“ quiet”,“school lunch”,“ fun”,“ turn face”, and“ corona” were extracted as frequent words used in the responses to the item,“ What I felt and noticed about the way I was spending school lunchtime” in nutrition teacher arrangement and non-arrangement groups. The characteristic words of the nutrition teacher arrangement group were“ school lunch”,“ fun”,“ group desk”,“front facing”, and“ delicious”, while those of the nutrition teacher non-arrangement group were“ eat”,“ silence”,“ talk”,“ quiet”, and“ mask”. In a co-occurrent network diagram,“ talk”,“silence”, and“ quiet” co-occurred with“ eat” in both the nutrition teacher arrangement and non-arrangement groups, and the centrality of“ eat” was high in the nutrition teacher arrangement group. In addition,“ school lunch” co-occurred with“ eat”,“ silence”, and“ quiet” in the nutrition teacher arrangement group only;“ fun” and“ delicious” also co-occurred, and the centrality of“ school lunch” was high. From among the selective answers, regarding“ I value my food and try to eat it all”, the proportion of“ it is well applied” was higher in the arrangement than in the non-arrangement group. Also, regarding school lunchtime in the arrangement group, guidance on dietary education was provided for“ enjoying meals”,“ ways to eat a healthy diet”,“ diet and culture”, and“ labor and gratitude”. These results indicate that during school lunchtime with COVID-19 countermeasures, children in the nutrition teacher arrangement group had strong thoughts toward school lunchtime up to the previous fiscal year and accepted the situation in which infection risks were considered. Among the guidance carried out by nutrition teachers during school lunchtime up to the previous fiscal year, guidance on“ enjoying meals”,“ diet and culture”, and“ labor and gratitude” unconsciously encouraged comparisons of school lunchtime between the previous and current fiscal years, suggesting that school lunchtime with COVID-19 countermeasures provided an opportunity to confirm and establish the ideal way to enjoy school lunchtime, the necessary etiquette, and feelings of gratitude toward people and the blessings of nature.departmental bulletin pape
The Degradation of Eating and the Ecological View of Nature in Raymond Carver
application/pdfToday's discourse of the contemporary experience of eating―that is, what we should eat and how our foods should be produced―is a highly political issue rather than merely a matter of personal taste and choice. What Tigner and Carruth call“ gastropolitics” refers to the various social activism for“ food justice” and wide-ranging academic discussions, including gastronomy, sociology, cultural studies, environmental criticism, and other related disciplinary fields. In the 1960s, mirroring the increasing public attention to ecological concerns, hippies took on their attempt to realize a self-sufficient diet in their communities as an alternative to industrial agriculture with the widespread use of chemical fertilizer. Growing social awareness of the various problem caused by the fast-food industry gave worldwide momentum to the slow food movement in the 1980s and the popularity of locavorism. Following these activisms, the multitude of publications on the experience of contemporary eating since around the 2000s took shape as an interdisciplinary academic field known as“ food studies,” such as Eric Schlosser's Fast Food Nation (2001), Michael Pollan's The Omnivore's Dilemma ( 2006), and Amy L. Tigner and Allison Carruth's Literature and Food Studies ( 2018). Our ordinary daily act of eating and choosing food is political. It should be understood as a part of a larger social environment, as the feminist activists in the 1960s once said,“ Personal is political.”
When considered in this context, Raymond Carver's representation of eating and food calls for sociopolitical examination and should be reinterpreted under the new light of food studies' discourse. The preceding studies on Carver overlooked how his fiction employed the image of junk foods, which have been socially condemned from nutritional, sociocultural, and environmental points of view. This study connects Carver's use of grotesque images of junk food to his lower-class characters' daily experience of poverty and their social positions as captives of capitalist exploitation in reference to Pollan's criticism against the contemporary food industry and Tatsushi Fujihara's thought-provoking discussion on the degradation of modern eating. In the analysis, this grotesque portrayal of junk foods and the unnatural culinary practice of characters ironically uncover Carver's ecological view of nature. In the final section of this paper, I will examine how Carver's ideal of pastoral food is seamlessly interconnected with the nature inhabited by various non-humans by exploring his two poems, “Eagles” and“ The Fields.”departmental bulletin pape
Transition in the perception of health and a consideration of health policy for the elderly
application/pdf健康の捉え方の変遷から人々の健康を保つためには疾病治療のための医学的介入に始まり,19 世紀以降は疾病予防のための公衆衛生的介入が重要となり,20 世紀後半以降は健康格差是正と健康向上のための社会・政策的介入が必要になったといえる。またWHO の健康憲章からも健康は個人の努力,国の責任,専門職の活動により達成できると捉えることができる。高齢者の健康政策としては,社会活動への参加を促すための行政的支援活動とともに高齢者自身が社会的役割を担い生活の満足感を感じる意識を持つことが重要である。特に高齢女性の自立した生活の維持が今後の課題の一つであると考える。This paper reviews the transition over time of the public’s way of thinking about health. In the 19th century, health, beginning with recognition as medical treatment of illness, became perceived as public health interventions for the prevention of illness. Since the latter half of the 20th century, social and policy interventions became necessary for reducing health inequalities and promoting health. The WHO Charter of Health declares that health can be achieved through individual efforts, state responsibilities, and professional activities. As a health policy for the elderly, it is important that the elderly have a social role and feel a sense of satisfaction in their lives. In order to do that, public administration is required to support and encourage the elderly to participate in social activities. In particular, health policies which support elderly women in maintaining an independent lifestyle as they age are indispensable.特別寄稿departmental bulletin pape
