    The effect of mindful nutrition educational video on knowledge levels and attitudes related to nutrition among overweight women Background: High consumption of food without emotional control or mindless eating has been identified may increase the prevalence of overweight among urban women. Mindful eating intervention has been identified may improve nutritional status among overweight. However, the mechanism of whether this intervention may influence nutritional knowledge and attitude remains unknown. Objective: The study investigates the effectiveness of mindful eating videos on nutritional knowledge and attitude among urban women with overweight. Methods: The research method was used pre-experimental with a one-group pretest-posttest research design on 42 overweight women aged 20-29 years in West Java and Jakarta. The intervention was carried out for 5 weeks using validated mindful eating videos. Knowledge and attitudes were measured by pre-test and post-test questionnaires. Data analysis was carried out by paired sample t-test and Wilcoxon test. Results:  The results of this study indicate that the provision of mindful nutrition education video is not effective in increasing knowledge related to nutrition (p-value= 0.082) while effective in improving attitudes related to nutrition (p-value=0.0001).Conclusions: Nutrition awareness education with online videos can be used as a media for nutritional intervention that affects attitudes related to nutrition, but does not affect the increase in knowledge of women with overweight

    Orthorexia nervosa tendency in nutritional studentsBackground: Orthorexia nervosa (ON) is a condition when someone is over obsessive about healthy food, and focus on food quality can lead to disturbed life. One of the vulnerable group is health related student which include health nutrition student. There is no research about this.Objectives: The study aims to  evaluate the prevalence of ON tendency on nutritional student, and explore and investigate the related factors between common characteristics and ON tendency.Methods: This study is descriptive research with a cross-sectional design involving 100 samples of nutrition students chosen by proportional random sampling. Questionnaire-based on an Indonesian version of ORTO-15 which has been validated. Data were analyzed using Mann-Whitney, Spearman Rank, and multivariate.Results: Orthorexia nervosa tendency was documented in 38% of the sample (using cut-off point 40). The mean score of the participants from the ORTO-15 test is 39.99± 3.221. Meal frequencies were associated with ON tendency (p=0.040). While no significant correlation between orthorexic tendencies with sex, allergy, dietary pattern, frequent exercising, amount of social media accounts, and accessing social media duration (p>0.05).Conclusions: The prevalence of ON tendencies in nutritional students is 38%.     The social determinants associated with stunting in children from the Lauje tribe (aged 24-59 months) Palasa District, Parigi Moutong RegencyBackground: Stunting is a chronic nutritional problem caused by multiple factors. Stunting is a threat to the achievement of human resource progress. Handling stunting requires an approach according to the characteristics of the region.Objective: This study aims to analyze the social determinants associated with the incidence of stunting in children from the Lauje tribe (aged 24-59 months) Palasa District, Parigi Moutong Regency.Methods: This type of research is observational with a cross-sectional study design and total sample obtained is 130 people. Statistical analysis using Chi-Square test to determine the significance of the relationship between variables.Results: The results of the bivariate analysis showed that the social determinant variables that had a significant relationship with the incidence of stunting were family food security (p=0.0208, OR= 2.56; CI 95%=1.06-6.35), food diversity (p=0.0005, OR=3.61; CI 95%=1.57-8.46), mother’s education (p=0.0002, OR=4.73; CI 95%=1.86-12.68), and family income (p=0.003, OR=2.9; CI 95%=1.33-6.49). While the variables of access to health facilities and access to clean water and sanitation were not related to the incidence of stunting in Lauje children aged 24-59 months.Conclusions: The incidence of stunting in Lauje children was found to be associated with several social determinant variables. So that stunting handling efforts are needed by increasing multi-sectoral collaboration and involving local community leaders

    Fe intake, hepcidin levels, and hemoglobin levels in obese and normal female studentsBackground: The most common anemia is related to problems with nutritional status. Obesity increases the risk of anemia because of the accumulation of fat in adipose tissue that triggers inflammation which can lead to anemia.Objective: This study aims to determine differences in iron (Fe) intake, hepcidin levels, and hemoglobin (Hb) levels in obese and normal female students.Methods: This research is an observational study with a comparative cross-sectional research design. Sampling was done by systematic random sampling. Data assessment of Fe intake, hepcidin levels, and Hb levels was carried out by SQ-FFQ interview, ELISA method, and cyanmethemoglobin method. Normality test and data analysis were performed using the Shapiro-Wilk test, independent t-test, Mann-Whitney, and Chi-Square.Results: The mean intake of Fe in obesity was 14.39±6.87 mg higher than the normal female students' 14.14±7.50 mg (p=0.726). The median hepcidin level in obesity was 322.32 pg/mL higher than normal female students 315.67 pg/mL (p=0.677). The mean hemoglobin level in obesity was 11,2±1,1 g/dL lower than normal female students 12,1±1,09 g/dL (p=0.001).Conclusions: There was no significant difference in Fe intake and hepcidin levels in the obese and normal female students. However, there was a significant difference in hemoglobin levels in obese and normal female students

    Potassium is one of the advantages of local Indonesian soybean tempeh (Grobogan variety) compared to imported soybean tempehBackground: Fulfilling high potassium needs can be done by replacing portions of food that have a low potassium content with foods that have a high potassium content, one of which is from legume products or processed products such as tempeh. Indonesian people are considered to prefer imported soybean tempeh products compared to local soybean tempeh, even though local soybean tempeh is thought to have better nutritional content than imported soybean tempeh. Objective: This research was conducted to analyze the potential advantage of local soybean tempeh compared to imported soybean tempeh based on potassium content. Method: This experimental research was carried out in Yogyakarta from June–December 2022. The objects of this research included local soybean tempeh and imported soybean tempeh. The independent variable of this research was the variation between local soybean tempeh and imported soybean tempeh, while the dependent variable was potassium content. Data were analyzed univariately and bivariately using the Independent T-test.Results: The Independent T-Test to analyze the difference in potassium content of local soybean tempeh flour and imported soybean tempeh flour showed a p-value=0.000 (p<0.05), the mean difference between the two groups showed a result of 106.45.Conclusion: The potassium content in local soybean tempeh flour is 106.45 mg/100 g significantly higher than the potassium content in imported soybean tempeh flour

    Formulations of biscuits from kedawung seed tempeh flour (Parkia roxburghii G. Don) for diabetes mellitus patientsBackground: Diabetes mellitus (DM) is a metabolic disease characterized by hyperglycemia. Blood glucose can be controlled with food consumption with low glycaemic index (GI) and glycaemic load (GL) values. Kedawung seeds contain high protein and fiber and can be an alternative to low GI and GL food sources for DM patients. Objectives: This research analyzed total protein, crude fiber, glycaemic index, and glycaemic load levels from biscuits by substituting kedawung seed tempeh flour.Methods: The study was an experimental study with four treatments. The substitution of kedawung seed tempeh flour in biscuits was 0%, 10%, 30%, and 50%. Protein content was analyzed using the Kjeldahl method, and crude fiber was analyzed using the gravimetric method. Statistical analysis was done using the One Way ANOVA and Tukey posthoc test. A hedonic test on 25 semi-trained panelists was conducted to determine the best formulation, and the results were analyzed using the Kruskal Walls and Friedman post-hoc test. IAUC analyzed the glycaemic index from 10 respondents. Results: Biscuits substituting kedawung seed tempe flour affected protein content (p=0.00) and crude fiber (p=0.00). The best acceptance was biscuits with a 10% substitution of kedawung seed tempeh flour, which has a 32.28% glycemic index value and a 9.98% glycemic load. Conclusions: The biscuits substituting kedawung seed tempeh flour significantly increased protein and crude fiber content. Biscuit formulation with 10% kedawung seed tempeh flour had a low glycemic index and glycemic load

    Mother’s perception and knowledge of functional food in IndonesiaBackground: Non-communicable diseases (NCD) is the highest cause of death in the world. At the end of 2019, the COVID-19 virus (Coronavirus disease) emerged and became a pandemic in various countries. Consumption of functional food is believed to become an alternative therapy for NCD and increase immunity amid the pandemic. A mother's perception of purchasing functional food is essential because of its main role as a food provider in the family. Objective: This research was conducted to determine the factors related to the mother's purchase of functional food. Methods: An online cross-sectional survey was carried out among 406 mothers and distributed through the social media platform for two weeks from November to December 2021. Each subject answered questions on general data, basic knowledge, motivation, and buying patterns of functional food products, and ten questions about the perception of functional food. The questionnaires were tested for validity and reliability before being distributed. Data were processed using univariate and bivariate analysis using the Pearson correlation test with STATA software version 15.0.Results: 55.91% of mothers have an excellent knowledge of functional food. Purchasing functional food was not significantly related to socio-demographic (age, occupation, and education) with p-value>0.05 (0,9088; 0,4413; 0,7451) but significantly associated with knowledge (p-value=0.0161) and behavior which analyzed using the theory of planned behavior including attitudes, subjective norms, and perceived behavioral controls (p<0.05). Mothers purchase functional food products mainly because of health and taste reasons. At the same time, the barriers are due to high prices and lack of information regarding the health benefits contained. Conclusion: Mother's purchasing behavior is not influenced by socio-demographic conditions because they already have a good awareness of functional food. Mother's knowledge and behavior toward functional food are good because of their high educational level, and healthy food awareness increased during the pandemic. Intensive education and product innovation are still needed to support functional food development in Indonesia

    Iron dan prebiotic fortification in cookies towards intestine histology anemia ratsBackground: Anemia can also cause damage to small intestinal villous cells. Iron fortification can be an alternative prevention of anemia. Prebiotic additives can reduce the effects of fortification and improve intestinal villous.Objective: The study aims to determine the effect of breadfruit and soybean-based cookies with prebiotic and iron fortification on the small intestine's histology, especially the intestinal villous's height and width.Methods: Experimental study with posttest control group design with a total sample of 48 rats. Rats were divided into eight groups, given breadfruit and soybean-based cookies with the addition of FOS and NaFeEDTA (K1), FOS and FeSO4 (K2), FOS (K3), FeSO4 (K4), NaFeEDTA (K5), without fortification (K6). In addition, K- is a healthy mouse with standard feed, and K + is an anemia mouse. Anemia induction is for two weeks, and intervention is for 28 days. Intestinal histology was observed using an optilab microscope and measured using ImageRaster 4.0.5.Results: There were no significant differences in duodenum villous height, jejunum villous height, and ileum villous width (p>0.05). However, there were significant differences (p <0.05) for duodenum villous width (K- and K3), jejunum villous width (K1 and K4) and ileum villous height (K1, K2 and K +).Conclusions: Giving breadfruit-based and soybeans with prebiotic and iron fortification can increase the height and width of small intestinal villi

    The impact of providing nutrition education on the nutritional knowledge of young athletes in IndonesiaBackground: A lack of nutritional knowledge can lead to poor eating habits and nutritional deficiencies in young athletes. One of the issues leading to athletes' need for more knowledge is the absence of professional assistance in educating them about nutrition. Objective: This research was analyzed to investigate the impact of nutrition education through counseling and group-based nutrition education on the nutritional knowledge of young athletes in Indonesia. Methods: This study is a pre-and post-experimental study without control. One hundred eighty-five young athletes who trained in PPLP and SKO received nutrition intervention for two months, including three nutrition education sessions using sports nutrition module media, nutritional counseling, and eating assistance based on eating etiquette. A modified Abridged Nutrition for Sport Knowledge Questionnaire (ANSKQ) questionnaire assessed athletes' nutritional knowledge before and after the intervention. Data was examined by comparing scores before and after the intervention. The Kolmogorov-Smirnov test was used in the normality test, and a paired t-test was used to compare nutritional knowledge before and after the intervention. Results: Before the intervention, 88.65% had a low level of knowledge about nutrition. The scores for sports nutrition and overall nutritional knowledge increased significantly (p0.05). Conclusions: There was a significant increase in sports nutrition knowledge but not general nutrition knowledge. The provision of nutritional education assisted by nutritionists impacts athletes' nutritional knowledge.

    Giving Dietary Approaches to Stop Hypertension-like diet messages via WhatsApp to improve dietary compliance and blood pressure in hypertensive patientsBackground: Dietary Approaches to Stop Hypertension-like diet (DASH-like diet) is a non-pharmacological management of hypertension. The delivery of health information is currently being developed through social media such as WhatsApp.Objective: To determine the effect of giving DASH-like diet messages via WhatsApp on the compliance of DASH-like diet and blood pressure in hypertensive patients. Methods: This study used a quasi-experiment by one group pretest-posttest design approach. The location was taken at Kasihan II Health Center Community with 26 hypertensive patients for the sample. Univariate analysis using the Shapiro-Wilk test. Wilcoxon test for analysis of the compliance scores of DASH-like diet and diastolic blood pressure analysis. Systolic blood pressure analysis used paired sample t-test with a 95% confidence level. Results: There was a significant difference in DASH-like diet compliance score (p=0,001) and systolic blood pressure (p=0,021) between before and after the intervention. In contrast, there was no significant difference in diastolic blood pressure before and after the intervention (p=0.110). Conclusion: Giving a DASH-like diet message can significantly increase compliance with a DASH-like diet and systolic blood pressure and reduce diastolic blood pressure, although not significantly
