Ketahanan Pangan Sebelum dan Selama Pandemi Covid-19 di Kabupaten Bandung
The World Food Programme said that in 2020 there were 768 million people who experienced chronic hunger due to the increase in world poverty during the Covid-19 pandemic. In facing the spread of Covid-19, the agricultural sector is a priority because it is directly related to national food security. As a national food barn, West Java is affected by the increase in poor people. Pada in 2021, Bandung Regency experienced extreme poverty, which is 2.64%; this will affect food security in particular, in terms of affordability. Therefore, the availability of accurate and fast food security information is needed to prevent and handle food insecurity in order to provide direction and recommendations for preparing programs and policies, especially during the Covid-19 pandemic. This study was based on analyzing differences in food security before and during the Covid-19 Pandemic in Bandung Regency regarding food availability, affordability, and utilization. The analysis used a descriptive quantitative method with a paired sample t-test. The data source is secondary data from the Food Security and Vulnerability Atlas report of Bandung Regency. The analysis shows a noticeable difference between the food security of Bandung Regency before and during the Covid-19 pandemic, namely the decrease in the composite value of food security, especially in affordability. The most significant average increase occurred in the lowest welfare ratio indicator in 2020.

Karakterisasi Bakteri Penyebab Busuk Lunak pada Umbi Porang (Amorphophallus muelleri) Menggunakan Primer PCR Spesifik
Porang is one of the export commodities whose production is currently intensive by the Indonesian Government. Soft rot disease is one of the obstacles in cultivation and post-harvest of porang, which results in a decrease in productivity and quality of porang. This study aims to isolate pathogenic bacteria that infect porang tubers and determine their morphological and molecular characters. A total of 43 bacteria were isolated from porang tubers with soft rot symptoms from Malang Regency. Ten isolates of them showed positive reactions in the hypersensitivity test. Amylolytic, pectinolytic, mannanase, and proteolytic activities were shown by three bacterial isolates, including B4, B7, and BLUB15, by forming a clear zone around the inoculation point. The results of the decay test showed that B4 isolate had the most severe signs of decay, up to 97.88% in potato tubers and 37.12% in the porang frog. A pair of ExpccR/ExpccF PCR primers successfully detected B4 isolate as Pectobacterium carotovorum subsp. carotovorum (Pcc) in the 550 bp band. Unexpectedly, identifying the other two isolates did not show any similarity to the bacteria that cause soft rot, which was previously known. The two isolates showed similarities to Empedobacter sp. B7 (98.7%) and Pseudomonas sp. BLUB15 (97.6%) as a result of 16S rRNA gene analysis. So far, based on the existing literature, this is the first report of phytopathogenic bacteria causing soft rot outside the genus Pectobacterium and Dickeya.

Diversitas Pangan Fermentasi Berbasis-Susu di Indonesia dan Kandungan Gizinya
Indonesia has abundant and diverse food commodities, including fermented food. However, metadata analysis about the diversity of fermented foods has not been reported. In addition, a comparison of the nutritional content of milk-based fermented foods is also not yet available. Therefore, this study aims to reveal the diverse status of fermented foods, to determine the nutritional content, especially of fermented milk-based foods, namely dangke, and their comparisons between milk-based fermented products. The research method included literature study, making dangke, proximate analysis of dangke, and statistical data analysis. Literature studies show that fermented foods and beverages in Indonesia were most reported in 2017, 2018, and 2019 respectively. Although most fermented foods are not known for their area of origin, the microbial groups involved in their processing come from the bacterial group rather than fungi, mainly through the lactic acid fermentation mechanism. Microbes\u27 role in fermented products is diverse and can be grouped into five groups. The primary role of microbes is to support bioprocesses. Among milk-based fermented products, dangke is one of the traditional products with a fat content that is significantly different fat content from yogurt, kefir, and dadih, and the protein is not significantly different from yogurt, kefir, dadih, and mozzarella cheese. This nutritional content analysis indicates differences in fat and protein content among fermented milk-based food products.

Efisiensi Teknis Usaha Tani Bawang Merah di Provinsi Aceh
This study aimed to estimate the level of efficiency and socio-economic factors that predispose the technical efficiency of shallot farming in Aceh Province based on differences in growing seasons. The data analysis method was estimated using the Stochastic Frontier Cobb-Douglas production function with the maximum likelihood estimation (MLE) approach. The 2014 Horticultural Crops Household survey data from the Central Statistics Agency (BPS). The number of samples was 143 shallot farming units. The results showed that seed production, fertilizer, labor, and the harvested area positively and significantly affected shallot output. Shallot farming in this province has been efficient at around 85,09%. Based on the growing season, the value of efficiency in the dry season is 90,08%, which is more efficient than farming in the rainy season, which is 70,03%. However, the technical efficiency value of shallots in the dry season and rainy season can still be improved. In addition to seasonal variables, significant factors affecting the efficiency of shallots are participation in farmer groups and land type, while education and seed sources have no considerable effect. The government\u27s role is to provide quality seeds and conduct cultivation during the dry season to increase the technical efficiency of shallot farming.

Karakteristik Kefir Susu Sapi Dengan Penambahan Ekstrak Bunga Telang (Clitoria ternatea)
Kefir is made from a kefir seed starter consisting of L kefiri, genus Leuconostoc, Lactococcus, and Acetobacter that grow side by side. The addition of butterfly pea flowers extract to kefir can improve functional properties and sensory. The aim of this study was to investigate the physical characteristic, chemical characteristics, microorganisms, antioxidant activity, and organoleptic properties of cow’s milk kefir with the addition of butterfly pea flowers during storage at refrigerator temperature (1‒4°C). The research analysis used a completely randomized design with a 3x3 factorial pattern with three repetitions. The first factor was the addition of butterfly pea flowers (0%, 3%, and 6%), and the second factor was storage time (0, 3, and 6 days). The physical, chemical, antioxidant activity, and microorganism characteristics were tested using two-factor ANOVA and further tested by the Duncan test. Data on organoleptic properties were analyzed by the nonparametric Kruskal-Wallis and then verified using the Mann-Whitney test. The results showed that during storage the kefir increased the pH value and TAT value and decreased the viscosity and fat content. The inhibition of DPPH and the antioxidant capacity of the addition of butterfly pea flowers extract increased and decreased with the length of storage. Lactic acid bacteria (LAB) and the yeast did not change. Sensory hedonic test panelists prefer the color and aroma of kefir with the addition of telang flower extract. Sensory test of hedonic quality with the best characteristics, namely the addition of 6% butterfly pea flowers extract.

Keanekaragaman Undur-Undur Laut (Anomura: Hippidae) Dari Kepulauan Banda
Mole crabs are part of the superfamily Hippoidea and members of the family Hippidae Latreille,1825, which inhabit sandy beaches, particularly the swash zone. This condition is commonly found in the Banda Islands. The purpose of this research was to determine the species diversity of the genus Hippa Fabricius, 1787 in the Banda Islands. We identified the species by its morphological characters. Sample collection was done by purposive sampling method. Based on the study\u27s findings, four of the five previously reported species in Indonesia were identified. Hippa ovalis (A. Milne-Edwards, 1862), H. adaactyla Fabricius, 1787, H. marmorata (Hombron & Jacquinot, 1846), and H. celaeno (De Man, 1896) were the species obtained. Hippa cf. ovalis and Hippa cf. marmorata are both presumed to be new species. This study includes descriptions of the two species.

Perbaikan Kualitas Kimia Vertisol Melalui Pemberian Bahan Organik Mucuna, Crotolaria, dan Dosis Pupuk Hayati
The purpose of this study was to evaluate the effect of the treatment of organic material sources Mucuna and Crotolaria and the dose of vesicle arbuscular mycorrhizae (VAM) on the chemical quality of vertisol, nutrient uptake and maize yield in dry land. The research was carried out in the experimental field of the Kupang State Agricultural Polytechnic, in the village of Oesao, East Kupang District, Kupang Regency, East Nusa Tenggara. The study took place from May to September 2021. The study design used a factorial randomized block design. The first factortreatment was source of organic matter (B) of ground cover plant biomass, namely: B0 = no ground cover plant biomass; BM = Mucuna and its biomass are immersed; BC = Crotolaria and its biomass immersed. The second treatment was dose of VAM biofertilizer (D), namely: M0 = 0 g plant-1 (without VAM); M1 = 10 g plant-1; M2 = 20 g plant-1. The results showed that the application of organic material sources and the dose of VAM, respectively, could significantly improve the chemical properties of vertisol. The results showed that the use of organic matter and dose of VAM independently was proven to be the most effective in improving the chemical quality of vertisol. Application of organic matter Mucuna and Crotolaria at a dose of VAM 20 g plant-1 significantly increased N uptake in maize by 53.26‒54.45%, maize P uptake by 27.83% and 28.85%, and the yield of dry shelled corn by 146.92% and 146.92% compared to other treatments.

Ketebalan Daun dan Laju Transpirasi Tanaman Hias Monokotil
Leaves are the main organ in plants. In general, leaf thickness varies amongst plants and is related to the transpiration rate. This study measured leaf thickness and transpiration rate in six ornamental monocotyledon plants. The experiment used Factorial Completely Randomized Design (CRD) with three replications. The main factors were six monocotyledon plants and three plant parts; combination factors were interactions between plant species and plant parts. Leaf thickness was measured from the upper to the lower epidermis before and after measuring the transpiration rate. The transpiration rate was measured by weighing. The data were analyzed using SAS with the Factorial CRD model and continued with LSD if the treatment was significant. The plant types and parts significantly affected the leaf thickness and transpiration rate. However, the combination treatments between plant types and plant parts significantly affected only the transpiration rate. Chlorophytum comosum L. had the highest transpiration, followed by Dracaena reflexa, Aglonema crispum, Cordyline fruticosa, Crymum asiaticum, and Rhoeo discolor. The leaves of the lower parts of the plant had the highest transpiration rate compared to the middle and upper parts of the plant. Rhoeo discolor had the thickest leaves and lower transpiration rate than other plants. The leaf thickness ranged from 95.94 µm to 147.03 µm. This phenomenon indicated that the thickness of the leaves was inversely correlated to the transpiration rate.

Seleksi, Karakterisasi Morfologi, dan Identifikasi Aktinobakteri Penghasil Mananase Asal Hutan Tanah Jambi untuk Produksi Mananoligosakarida
As the world\u27s largest producer of crude palm oil, Indonesia also produces high palm kernel cake (PKC) by-products. PKC has a high mannan content, so it can be used to produce prebiotic mannan-oligosaccharides (MOS). Enzymatic MOS production can be carried out using actinobacterial mannanase\u27s microbiological approach. The HJ45B-1 isolate was the best isolate, with a peak enzyme production of 0,338 U/mL on the 10th day of incubation. The mannanase enzyme was stable in storage at 27°C. MOS production using 1% PKC substrate produced MOS with the best degree of polymerization (2-4) with incubation for 1-3 hours. Morphological characteristics and molecular identification based on the 16S rRNA gene indicated that the HJ45B-1 isolate was Streptomyces spp.

Preprocessing Factors Affected Free Fatty Acid Content in Crude Palm Oil Quality
The quality of CPO (Crude Palm Oil) is determined by the Free Fatty Acid (FFA) with the standard value below 5%. High FFA in CPO will cause further difficulties due to low refining rate and quality like rancidness and odor. The objective of this research was to determine the factors that affect the FFA content in CPO. This research was conducted from January until April 2021. Fruit samples were collected from BKLE and PNRE East Kotawaringin and analyzed to Analytical Laboratory PT BGA. The FFA value was determined using the titration method according to Indonesian National Standard (SNI). Based on this research, several factors such as rat and moth attacks, fruit maturity, fruit handling, and delayed delivery to the palm oil mill affected the FFA value. These factors caused an increase in the FFA value up to 41.10%‒204% compared to the average FFA value is only 0.77%‒1.29%. Therefore, minimizing the pre‐processing problem will reduce the potential of FFA value increment so that good quality CPO can be obtained.
